Baking rainbow trout in foil packets helps the fish cook perfectly. While they bake, juices form at the bottom of the packet. This is delicious when spooned over the cooked trout when serving. Other ingredients to consider adding to the middle of the fish are thinly sliced garlic, onion, or greens (like spinach). We also share how to fillet your trout after it is done baking. It is really easy!
How to Make Grilled Trout: Follow the directions in the video to make each packet. Heat grill to medium-high heat. Place the packets over indirect heat. Grill 10 to 15 minutes, or until cooked through.

Mediterranean Grilled Whole Trout Recipe Ingredients:
3 large garlic cloves
1 rosemary sprig
1 tablespoon thyme leaves
1/2 cup soy sauce
1/4 cup maple syrup
1/2 teaspoon black pepper
1 tablespoon extra virgin olive oil
3-4 small trout fishes
Rainbow Trout Skewers with Honey-Lime Sriracha Sauce & Asian Slaw
Share this appetizer-style dish with friends or enjoy it as an entree, either way it's healthy and flavorful!
Honey-Lime Sriracha Sauce:
1/2 lime zest and juice
2 tablespoons honey
3 tablespoons Sriracha Sauce
Chili flakes (optional)
1 small red bell pepper, julienned
1 small yellow bell pepper, julienned
1 medium carrot, julienned
1 small zucchini, julienned
2 green onions, thin juliennes to make curls
1 small watermelon radish, sliced wafer thin and cut into halves
Chill in ice water and set aside.
Dressing for Slaw:
4 teaspoons rice wine vinegar
1 tablespoon sesame oil
1 teaspoon honey
Salt & pepper to taste
1 tablespoon sesame seeds (optional)
Micro greens for garnish (optional)
Sesame seeds for garnish
The Rainbow Trout:
4-6 ounce Clear Springs Rainbow Trout fillets
Mix lime juice and zest, honey, sriracha, and chili flakes together and set aside.
Fill a large bowl halfway with ice water. Add to it the red and yellow bell peppers, carrot, zucchini, onions, and radish; set aside.
Vegetables will crisp and begin to curl in ice water.
Mix together the rice wine vinegar, sesame oil, honey, salt and pepper, then set aside. Reserve micro greens.
Heat a grill or grill pan to medium high heat.
Lay each fillet skin side down on cutting board. Using a sharp knife, make a small horizontal slice at the tail end. Do not cut through the skin. Holding on to the tip of the skin, place knife at the slice and begin to separate meat and skin, running the blade evenly down the length of the trout. Discard the skin.
Slice each fillet into two halves, lengthwise. Thread each trout piece onto skewers and season with salt pepper. Brush with the Honey-Lime Sriracha sauce.
Cook for 2-3 minutes per side, brushing with more sauce while cooking, turn once and continue adding sauce until fully cooked.
Drain the julienned vegetables. Toss with the dressing and mound about 2 cups in the bottom of a wide bowl. Place the skewers on the side of the slaw and garnish with micro greens and sesame seeds.

I'm sharing my favorite recipe for easy fish tacos. They're delicious, full of all the creamy, crunchy fresh ingredients you could ask for with lots of perfectly seasoned baked fish in every bite, and surprisingly healthy!
Growing up in Los Angeles, I’ve had more than my fair share of tacos. These ingredients below happen to be my favorite! Peppery radishes, a flavorful salsa, creamy avocado and plenty of vegetables make for an unbeatable taco.
They’re the perfect meal, filling but won’t weigh you down! Let’s be honest… any reason is a GOOD reason to make fish tacos! You can batter and fry your fish but this way is som much easier and the cabbage and araddish give even better crunch.

2 tbsp soy sauce
2 tbsp fish sauce
2 tbsp brown sugar
2 cloves minced garlic
1 tsp grated ginger
1 tsp sambal / chili garlic sauce
1/2 lime's juice
2 tbsp olive oil
2 tbsp chopped cilantro
1/2 tsp dried thai basil
1 lb chicken thighs
In a bowl mix everything except chicken thigh in a bowl. Add chicken thigh and marinate for 30 minutes to overnight.
On a hot grill, cook each side of chicken for 5-7 minutes, or until cooked through.
*optional: To make glaze boil reserved marinade for 5 minutes until thicken. Brush over chicken.

Thai Steamed Fish With Lime and Garlic Recipe (ปลากะพงนึ่งมะนาว)

In this Thai recipe video I had the pleasure of hanging out with Pai from Hot Thai Kitchen - she’s a chef, a food lover, and she also makes awesome videos on YouTube - especially Thai recipes. We decided to cook one of both of our favorite Thai seafood dishes, in Thai called pla kapong neung manao (ปลากะพงนึ่งมะนาว), and in English a steamed barramundi fish (also called Asian sea bass), with lime sauce, garlic, and chilies. It’s actually quite easy to make this, it just takes a fresh fish and a few other common ingredients. It’s simple and delicious.
Join us in the Bangkok street food kitchen for an amazing recipe, and a dish that’s sure to be a stunner! Here are the ingredients you’ll need:
1 whole barramundi, about 1 - 2 kilos (or whatever size you can get) - you could also use a smaller fish if you’d like, or a different kind of fish
5 stalks of lemongrass
1 cup chicken stock or fish stock for the sauce
2 Tbsp finely chopped palm sugar
8 Tbsp lime juice
6 Tbsp fish sauce
2 head garlic, chopped
Thai chilies, to taste, finely chopped
20 - 25 sprigs cilantro, chopped
1- 2 stalks Chinese celery, cut into 1-inch pieces

TANDOORI SALMON (Serves - 4)
400 grams Salmon fish fillets, cut into thick slabs
1 cup hung yogurt
3 teaspoons degi red chilli powder + for sprinkling
1 tablespoon ginger-garlic paste
Salt to taste
1 teaspoon garam masala powder
1 teaspoon dried fenugreek powder (kasuri methi)
1 tablespoon mustard oil
Juice of ½ lemon
1 teaspoon ghee
1 teaspoon oil
1 tablespoon butter
Mint mayonnaise chutney for garnishing
1-2 lollo rosso lettuce leaves
Mustard micro greens for garnishing
Lemon slice for garnishing
Mini onion rings for garnishing
1. To prepare marinade, take hung yogurt in a bowl. Add chilli powder, ginger-garlic paste, salt, garam masala powder, dried fenugreek powder, mustard oil and lemon juice and whisk well.
2. Halve the fish fillets, add to the marinade and coat well from both sides. Refrigerate to marinate for 2 hours.
3. Place a piece of coal directly on heat.
4. Place the marinated fish fillets on the sides of a plate and place a small steel bowl in the center.
5. Put the hot coal in the steel bowl, add cloves and ghee in it and cover the plate. Set aside for 2 minutes.
6. Remove the steel bowl from the plate.
7. Heat a non-stick grill pan, add oil and butter. Place the prepared fish fillets and cook from both sides for 2-3 minutes each or till golden brown, basting with the hot oil-butter mixture in the pan. Transfer on another plate.
8. Put a spoonful of mint mayonnaise chutney on one side of a serving platter and spread using a brush. Place lollo rosso lettuce leaves on other side and place cooked fish fillets on top.
9. Garnish with some mustard micro greens, a lemon slice and mini onion rings. Sprinkle some chilli powder on one side of the mint mayonnaise chutney garnish and serve hot.
