BUTTERNUT SQUASH SOUP | how to make roasted butternut squash soup
Butternut squash soup is a classic fall and winter soup recipe. But today we're roasting the butternut squash, which gives so much more depth of flavor and makes the soup easier to prepare (as you don't have to peel and cut the butternut squash).
My butternut squash soup recipe is made from roasted #butternutsquash, onions, garlic, maple syrup, cinnamon, nutmeg, vegetable broth, salt and pepper. It's naturally ultra-creamy (without any cream). But if you do tolerate dairy, adding just a tablespoon or two of fresh butter definitely boosts the creaminess factor.
This soup is gluten-free, vegetarian and paleo friendly. It can also be made vegan. It's delicious for Thanksgiving and other holidays. Enjoy!

• 8 carrots peeled and chopped
• 2 shallots sliced
• 1 white onion diced
• 1/2 tsp salt or to taste
• 8 cloves garlic sliced
• 2 tsp Thai red curry paste
• 4 tablespoons butter
• 1 cup heavy cream
• 6 cups vegetable broth

1️⃣ 00:00:38 - In a large saucepan, melt the butter over medium heat. Add in the shallots and onions and saute for about 5 to 7 minutes. Season with a little salt. Add in the garlic and thai red curry paste and saute for just another minute or two to allow the flavors to be released.
2️⃣ 00:01:26 - Add in the carrots and vegetable broth and bring to a boil. Reduce heat and simmer until the carrots are soft, about 20 minutes.
3️⃣ 00:01:56 - Use a hand blender to puree the soup, or puree in batches in a food processor or blender. After the soup has been pureed, return to a low heat and add in the heavy cream. Taste and add salt if necessary. Hold soup warm to serve.

CURRY GINGER CARROT SOUP
For the soup:
2 Tbs. olive oil
2 lbs carrots, peeled and cut into 2” pieces
1 large yukon gold potato, cut into 2” pieces
1 onion, diced
2 tsp. curry
1” piece fresh ginger, grated
1 quart chicken or vegetable broth
Salt and pepper
For the roasted chickpeas
1- 15 oz can chickpeas, drained and rinsed
1 Tbs. olive oil
1 tsp. smoked paprika
1/2 tsp. cumin
salt and pepper
Creme fraiche for garnish
In a large pot or Dutch oven over medium heat, warm the olive oil. Add the onion carrots and potato and cook covered stirring occasionally, until very soft, about 15 minutes.Add curry, ginger and a large pinch of salt and pepper, and continue cooking for another 2 minutes. Add 2 cups stock and reduce heat to medium-low and simmer, uncovered, until the vegetables are very tender, about 30 minutes.
While the vegetables are cooking, make the crispy chickpeas. Pre-heat oven to 400°F. Line a sheet tray with parchment paper.
In a bowl combine the chickpeas, olive oil, smoked paprika, cumin and large pinch of salt and pepper. Place chickpeas on prepared sheet tray and bake for 20 minutes or until the chickpeas are crispy. Set aside until ready to eat.
Using a blender and working in batches, puree the soup on high speed until smooth, 3 to 4 minutes per batch, adding remaining stock as needed. Return soup to pot and place over low heat and reheat to serving temperature. Season with salt and pepper.
Garnish bowls of soup with crème fraiche and a handful of crispy chickpeas
Makes about 2 quarts of soup.

One medium size butternut cut in small cubes
4 medium size carrots cut in small cubes
One onion chopped
4 to 5 cloves of garlic
Salt to taste
Black pepper powder 1/2 tsp
Oil 1 tbs
Water 3 cups (measuring cups)
Fresh cream 2 tbs optional
Milk 1/4 cup
As you can see in the video how to prepare the soup it’s very easy take oil in a pressure cooker and sauté the garlic cloves... add chopped onion to it let it cook for few minutes and add carrots again let them cook for 3 minutes and finally add ur chopped butternut,salt and pepper. Let it cook for 5 minutes.
Add water and close the pressure cooker lid and wait until for the cooker whistle to blow for 4 times and switch off the gas. Let the soup get cool and blend it until it’s creamy. Then put it in another pan and let it boil so you can add milk or cream at this point. Then taste it and add if you need to add anything to it. Enjoy it with the garlic bread or fresh salad.

1 cauliflower head, cut into florets
3 carrots, diced
1 onion, finely diced
3 garlic cloves, minced
1 tsp ginger, freshly grated
2 tbsp curry powder
6 cups vegetable broth
1 can coconut milk
Salt and pepper to taste
¼ cup coconut yogurt to serve
Cilantro for garnish
On a parchment lined baking sheet, toss cauliflower and carrots with oil, salt & pepper and curry powder. Bake at 425ºF for 15-20 minutes, or until golden and tender. In a large Dutch oven over medium-high heat, add oil. Add onions and cook until softened. Add garlic and ginger and cook until fragrant. Add roasted cauliflower and carrots and cover with coconut milk and broth. Bring to a boil and reduce to a simmer. Cook for 5-10 minutes, or until vegetables have completely softened. Remove from heat and use an immersion blender to purée soup until smooth. Season with salt and pepper to taste.

Carrot and Spinach Soup
Picture a basketful of carrots and spinach. How vibrantly colourful it looks! Indeed, this sumptuous soup reflects the same freshness. The complementary flavours of carrots and spinach, perked up further with ingredients like onions and pepper make this soup a great hit. The method of adding some of the ingredients like onions and spinach in sautéed form rather than blending everything gives the Carrot and Spinach Soup a nice mouth-feel too.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes 4 servings
1 1/2 cups peeled and roughly chopped carrots
1/2 cup shredded spinach (palak)
1/2 cup peeled and roughly chopped potatoes
1/2 cup roughly chopped onions
2 tsp butter
1/4 cup finely chopped onions
1/2 cup milk
Salt and freshly ground black pepper powder to taste
1. Combine the carrots, potatoes, onions and 1½ cups of water in a pressure cooker and pressure cook for 3 whistles.
2. Allow the steam to escape before opening the lid.
3. Allow it to cool completely.
4. Once cooled blend in a mixer to a smooth paste. Keep aside.
5. Heat the butter in a kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.
6. Add the spinach, mix well and cook on a medium flame for 1 minute, while stirring continuously.
7. Add the prepared carrot-potato mixture and approx. ¼ of cup water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
8. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
9. Add the salt and pepper, mix well and boil on a medium flame for 5 to 10 minutes,while stirring occasionally.
