Gluten Free Banana Bread Recipe
2 cups Bob’s Red Mill Gluten Free 1 to 1 Baking flour
3 large bananas, very ripe with brown spots
1 stick butter from pasture raised cows
2 eggs, from pasture raised chickens
1 tsp. Vanilla extract
½ cup sugar
¼ cup raw honey
1 tsp. Baking soda
½ tsp. Salt
¾ tsp. Cinnamon
½ cup walnuts, chopped
Preheat oven to 350 degrees F.
Take some butter about 1 tsp or 2 and grease the inside of a 9 inch by 5 loaf pan.
In a medium size bowl add the flour, sugar, baking soda, salt and cinnamon. Whisk until completely combined.
In a large mixing bowl, add the bananas and mash with a potato masher until almost liquidy. Melt the butter on the stove in a saucepan or in the microwave. If you use the microwave place the butter in a microwave safe bowl for 45 seconds on power 3. Stir. Go longer if needed until the butter is melted.
Add melted butter to the bananas and mix to combine. Then add the vanilla extract and stir again.
In a separate small bowl, add the eggs and whisk with a fork until blended and add this to the banana mixture and stir until well combined. Now add the honey and mix well.
Pour the dry ingredients into the wet ingredients and fold in. Don’t overmix here, just fold until all the dry ingredients are wet. Add the walnuts and fold those in. I usually add these just before the flour is completely mixed in so I don’t overmix.
Pour batter into prepared loaf pan and spread it into the corners of the pan with a spatula.
Bake in the center of the oven at 350* F. for 45 minutes. Bread is done when a toothpick, inserted into the center of loaf comes out clean. If it’s not done in 45 minutes, continue to cook for 5 minute intervals until the toothpick comes out clean.
Let the banana bread cool for 10 to 15 minutes before cutting if, like me, you enjoy it warm out of the oven. I love mine topped with a bit of butter.

GLUTEN FREE BANANA BREAD Recipe with CHOCOLATE and Almond Butter - Healthy & Delicious!
Abbey has partnered with HP Canada ( to create the cookbook she's been working on as a gift to her family to commemorate her upcoming wedding. This time she's come up with a delicious recipe for Banana Bread that is not only gluten free but incorporates chocolate and almond butter.
As you may have noticed from her last video Abbey has partnered up with HP to make sure her cookbook is not only printed correctly but ends up looking great as well. This is Abbey's first DIY cookbook but she has always done a lot of printing at home. Their instant ink subscription service has turned out to be a real godsend for her. All that time saved running to the store to buy ink has allowed her that little bit of extra time she needs to focus on more important matters.
This recipe was inspired by her mother's banana bread. Growing up Abbey loved banana bread because it was essentially an opportunity to eat cake for breakfast and not feel guilty about it. There are however certain rules when it comes to making banana bread in Abbey's house. The first rule is that there will be no walnuts included in the recipe. No walnuts, no exceptions. The second rule is that the bananas used must be extremely ripe, the more freckles the better. The third rule, and some would say the most important one, is that even if it is healthy it can't taste healthy. Abbey's mom did not have the same rules regarding banana bread that she does which is a big part of what makes this recipe truly unique.
It was important to Abbey that this recipe be gluten free as her sister has a gluten free diet. To start things off you will put some gluten free oats into your food processor and process them until they reach a flour-like consistency. These oats are a replacement for any type of refined white flour you might normally use. Once processed add them to a medium sized mixing bowl. In addition to the oats add in about a cup of coconut flour. Coconut flour is much higher in nutritional value than typical flour so it's a great addition to the recipe. Next you will add some flax seed, baking soda, baking powder, cinnamon, and finally some salt. Whisk that altogether and set it aside for now.
Now that you have your dry ingredients assembled it's time to move on to the wet ones. Start with 2 cups of mashed up extra ripe bananas. The beauty of using extra ripe bananas is that you don't need to add a lot of extra sugar to your recipe as they are already quite sweet. Add your bananas to a medium sized mixing bowl then add in honey, coconut sugar, vanilla, almond milk, 3 eggs, and lastly some natural almond butter. The almond butter really holds everything together and keeps your banana bread nice and moist. Whisk all these ingredients together well and then slowly whisk your dry ingredients in as well. When you have all that mixed together it's time to add in your chocolate chips, use your own discretion on the amount added.
Now get out your baking pan and put a piece of parchment paper in it then give it a quick spritz with some cooking spray to prevent sticking. The next step is to pour your banana bread mixture into your pan and spread it evenly. Take another one of your bananas and cut it in half, take one of the halves and nestle it right down into the center of your pan. Decorate the top with a few more chocolate chips and you are all ready to bake. Preheat your oven to 350' and bake your banana bread for about an hour.
Now that you have created the most delicious, not to mention healthy banana bread your family has ever had feel free to invite them over for a taste test.

- 3 very ripe bananas
- 1 large cup sliced dates (tightly packed / seeds removed) (this equals approx 3/4 cup date paste*)
- 1/2 cup melted coconut oil
- 1 tbsp almond milk
- 1 egg
- 1 tsp vanilla extract
- 1 cup of GF flour (I used almond)
- 1 cup oats
- 1 cup walnuts (halved) (can also use pecans)
- 1 tbsp cinnamon
- 2 tsp cardamom (optional, but I love it!)
- 2 tsps baking powder
- 1 tsp baking soda
- 1/2 cup dark chocolate chips
- Pinch of sea salt
(Optional toppings: shredded coconut (unsweetened), more halved walnuts & dark choc chips)
Preheat oven to 350’ F / 180’ C
(*To create the date paste - place 1 heaping, tightly packed, cup of dates in food processor, or blender, with a touch of water, blend until smooth and creamy)
1. In a large bowl, mash bananas with fork
2. Add in all wet ingredients (coconut oil, date paste, vanilla extract)
3. In a separate bowl, combine the dry ingredients (GF flour, oats, baking powder, baking soda, cinnamon, cardamom, salt + walnuts and dark choc chips)
4. Gently stir in the dry ingredients to the wet ingredients
5. Grease pan with coconut oil, line with parchment paper, place mixture inside and let bake for approx 60 mins (or until a toothpick inserted comes out clean and top is golden brown)
6. Remove from tin and let cool on a baking rack for 30 mins, slice and ENJOY!! ♥
- To make this recipe vegan, you can substitute the egg for a chia egg (1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before.)
- If you want to make the banana bread sweeter, just add more dates to make more date paste
- If you don’t have dates, you can use 3/4 cup of maple syrup or honey
- To melt coconut oil, first fill measuring cup with solid oil, place cup in hot water / or on a very light temperature on the stove to allow the oil to melt. As oil begins to melt, add more solid oil until perfect amount is reached

Easy Gluten Free Banana Bread (paleo & naturally sweetened!)
This easy banana bread is gluten-free, paleo and naturally sweetened, but it tastes just like grandma’s recipe!!
Get the recipe here:
I’ve been on the hunt for a delicious, easy-to-make gluten free banana bread for years (six years, to be exact, when I first had to cut gluten out of my diet!). Banana bread is one of my favorite foods. When I was growing up we made my Grandma’s recipe (which is featured in my first book, The Food Processor Family Cookbook - link below!). It’s a marvel, with a sweet, rich crumb and addicting sticky top (my favorite part!). Her recipe is perfection, but it’s a bit of an indulgence. It happily incorporates generous amounts of butter and sugar, and while it definitely deserves a place on every table, I was seeking a more nutritious loaf that could stand in as a healthy breakfast or school snack. I also was also determined to find an easy recipe that required only one bowl and minimal ingredients.
AhhhAhhhAhh (that’s me singing, and yes, I’m as tone deaf as it looks), I finally hit the nail on the head. This is a one-bowl, easy gluten free banana bread that tastes likes Grandma’s but that’s far more nutritious.
The bread is naturally sweetened with just mashed bananas and honey and uses almond flour as its base (along with 2 tablespoons of arrowroot flour for structure), making it both gluten free and paleo. The result is an ultra-tender gluten free banana bread with a creamy, cake-like texture. Best of all, it still has that irresistible sticky top that I loved as a kid (woohoo!). This banana bread tastes like my childhood favorite but has enough protein and fiber to keep us going until lunch.

Instant Pot Best Banana Bread (Gluten-Free)
Banana Bread is one of those things that qualifies as both dessert and breakfast. But even though the name gives the illusion of it being a guilt-free treat, it's usually loaded with sugar and carbs.
And so I decided to make a gluten-free Banana Bread that not only significantly cuts the carbs down thanks to replacing the all-purpose flour with almond flour, but this will also be one of the richest, moistest most superb Banana Breads you'll ever sink your teeth into. Just ask my sister who's a gluten-free lover. Or my 3 year-old-niece who devoured it (we just called it Banana Cake instead of bread and she was all over it).
No monkeying around here. The Instant Pot sees that it's done with ZERO dry edges and without heating up your kitchen!

Here's the recipe that we teased you with a few weeks ago. We've been eating this more often than is necessary or safe
2 tbsp chia seeds + 2 tbsp liquid
1 1/2 cups very ripe bananas (about 3 bananas)
1 cup plant milk
1 1/2 tsp apple cider vinegar
1/4 cup melted coconut oil
1/4 cup liquid sweetener (we used maple syrup)
1 cup buckwheat
1 cup brown rice flour
1 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
1 tsp all spice
1/3 cup sweetener (we used coconut sugar)
1/2 cup almond meal
Combine wet and dry ingredients
Mix in some chocolate and nuts
Bake at 180˚C/350˚F for about an hour
We like to check on it after 30 mins, 45 mins and then an hour
