Caramelized Shallot Pasta, a pantry pasta that is better than the sum of its parts (although the parts are good, too). The two best pieces of advice I can give you while making this are to take the shallots to a more frizzled, caramelized place than you think (do not be afraid!), and please, whatever you do, do not skip the garlic/parsley topping. Re: the half of the shallot paste, save it for more pasta. Spread it onto buttered toast. Spoon it over scrambled eggs. Sautee your shrimp in it. Put it on an avocado. Give it as a gift. While I can technically say that the paste keeps for up to six weeks refrigerated, I can also say that I have kept my shallot paste refrigerated for up to two months and counting.

Welcome back to another video where I will show you how my garlic and shallots are getting on (not bad actually!) as well as a general update on everything else that been going on. Hope you like.
Scallops with Creamy Shallot Sauce - Best Sauce for Scallops
Today we are making a pan seared scallop dish with an easy and creamy sauce with shallots and tarragon. The sauce is prepared with reduced white wine and cream and packed full with flavors and pairs perfectly with seared scallops. In this recipe, I'm using smaller bay scallops which take less time to cook compared to great scallops, but they are absolutely sweeter.
I've used a carbon steel pan to sear the scallops, if you are using a teflon pan, add 20 or more seconds to the searing time!

Follow me on:
• 5-6 scallops
• 1/2 cup heavy cream
• 1/2 cup white wine
• 2 shallots (finely sliced)
• 2 tsp tarragon (finely chopped)
• 100 g butter (unsalted, cold), + 1 tbsp for the scallops
• ½ tsp crushed black pepper
• Salt to taste
• 1 tbsp of rapeseed or canola oil
• 1 tsp chopped chives to garnish
• ½ tsp lime zest to garnish

Bougey Shallot Jam - Bougey Cooking 1

BOUGEY SHALLOT JAM
2 Tablespoons Olive Oil (or any cooking oil your prefer)
6 Shallots - Thinly Sliced
6 Tablespoons Apple Cider Vinegar (or balsamic Vinegar)
6 Tablespoons White Wine
1/3 Cup Brown Sugar
Salt and Pepper - To Taste
1 Heaping Tablespoon Honey (Or Agave)
1) To a hot pan, add Olive Oil (or any other cooking oil) and Shallots. Cook until transparent or lightly browned/caramelized (About 10 minutes or so)
2) To the cooked Shallots,, lower the heat to medium-high and add the remaining ingredients (minus the Honey) and allow to reduce.
3)*OPTIONAL* Add the Honey. Contiunue to reduce.
4) Once the jam has reduced and thickened to your liking, remove from the heat and allow to sit a couple minutes
5) Add Jam to a bowl or container to keep in the fridge until use.
*** Makes a great condiment for sandwiches, cheese platters, addition to your charcuterie spread***
Thanksgiving Turkey with Cherry Shallot Sauce
Serves 10-16 people
1tablespoon canola oil
1teaspoon garlic powder
1/2teaspoon black pepper
1teaspoon fresh sage, chopped
2teaspoons fresh thyme, chopped
1teaspoon fresh rosemary
CHERRY SHALLOT SAUCE
2tablespoons olive oil
1cup cherry jam
salt, to taste
pepper, to taste
1.Preheat The Big Easy® Oil-Less Turkey Fryer to high heat.
2.Remove turkey giblets and neck, then rinse the bird thoroughly and pat dry with paper towels.
3.Brush the turkey on both sides with 1 tablespoon of canola oil.
4.Combine Seasoning ingredients and generously apply to all sides of the turkey.
5.Place turkey in The Big Easy® fryer and insert an Instant Read Digital Thermometer in the deepest part of the breast. Cook until internal temperature reaches 165°F.
6.Sauté shallots in olive oil for 2 minutes and deglaze with pomegranate juice. Add the cherry jam, salt and pepper to taste and boil for 5 minutes. Set aside at room temperature until the turkey is ready to serve.
7.Remove the turkey fromThe Big Easy® fryer and let rest for 10 minutes before serving.

Seared scallops with crème d'échalote (French creamy shallot sauce for fish and scallops)
Join my online French cooking classes ????????: Seared scallops with crème d'échalote is a delicious and simple sauce. With a base of butter and cream blended with shallots, tarragon and wine reduction it's very similar to beurre blanc. The crème d'échalote goes well with any white fish or, as shown in today's recipe, with seared scallops. A perfect match!
Ingredients needed for the sauce:
(This recipe will produce enough sauce for 4 or more people, depending on how much sauce you use.)
150 ml of dry white wine (like a muscadet or sauvignon blanc)
250 ml of liquid cream (heavy whipping cream or double cream)
50 grams of finely sliced shallots
1 gram of fresh tarragon (finely chopped)
125 grams of plain unsalted butter, cut in small cubes (must be fridge cold)
Half a teaspoon of crushed black pepper (mignonette)
A pinch of salt ( or add to your taste)
A pinch of cayenne pepper
Notes and tips:
- In this video, only half the quantities listed above were used
- The butter used in the sauce must be cold
- Reducing the cream with the quantity above might take up to 10 minutes
- If you use a julienne of citrus, plunge the julienne in boiling water for a few minutes before using

Today's dish is seared scallops with crème d'échalote. This french recipe tutorial focuses on teaching you how to make this classic French sauce that can be served with fish or scallops.
The culinary technique we will learn today is a sauce that starts with a reduction a sec (reduction of an acidic liquid to an almost dry state) which is then binded by a reduction process (no thickening agent are added).
This particular sauce starts with a reduction of white wine shallots and fresh tarragon and black peppercorn (mignonette).

TRUFFLE EDAMAME DUMPLINGS with SHALLOT BROTH
2 C frozen shelled edamame, thawed
1/4 C raw cashews, soaked for a few hours or overnight in
water, to soften
3/4 C unsweetened soy milk or
Non-dairy milk of choice
1/4 C truffle oil
2 cloves garlic
3 T Earth Balance vegan butter
1/2 t sea salt
White pepper, or freshly ground black pepper, to taste
1 pack of vegan round dumpling skins (you can find these in
many health- food stores or Asian markets. Read the ingredients to ensure they are vegan, many of these have eggs.) or just make your own so you know exactly what's in them!
1. Prepare dumpling filling: In a blender or food processor, add all ingredients, except the dumpling skins. Blend on High until the mixture has a coarse texture.
2. Prepare dumpling assembly: First, transfer dumpling filling to a bowl and place it on a work surface alongside a cup of water, dumpling skins, and a sheet pan. Lightly sprinkle flour or cornstarch over the sheet pan (this will keep your dumplings from sticking to the pan during assembly).
3. Prepare dumplings: Place about a tablespoon of filling in the center of each skin. Dip your finger in water and trace a half circle around one side of the dumpling skin. Pick up the dumpling and fold it into a taco. Starting with one corner, crimp around the edge. Place on sheet pan and continue until all dumplings assembled.
4. In a sauté pan on medium heat, add small amount of oil, or spray oil on pan, and sear dumplings until golden on the bottom. Don’t crowd the pan or the dumplings may stick to each other.
5. Steaming time! Using a bamboo steamer basket, or your favorite steamer, place a few leaves of cabbage, or other leafy green, on the bottom of the steamer. This will keep your dumplings from sticking.
6. Bring water to a boil, and place the dumplings in the steamer. Steam for about 3 minutes. Remove from heat.
7. To serve: Place 4 to 6 dumplings in shallow bowl. Pour about 1/4 cup Shallot Broth over the dumplings. Serve with a spoon and enjoy.

2 T olive oil
1 1/2 C finely minced shallots or white onions
2 cloves garlic, minced
1 C Sauternes
wine (preferred) or sweet cooking sherry
2 sprigs of thyme
2 C vegetable stock
Freshly ground black pepper, to taste
1. In sauté pan, heat oil on medium heat. Add shallots and garlic and sauté until golden and translucent. Continue to caramelize and add a touch of the vegetable stock to brown the onions more.
2. Add the thyme, and continue to sauté the onions for 10 minutes, stirring frequently, to caramelize. Add wine to deglaze. Simmer for 8 minutes or until the liquid is reduced by about half.
3. Add the vegetable stock and pepper and continue to cook down until reduced by half again, which will take about another 15 minutes.
4. Remove from heat.
5. Strain the broth using a fine mesh strainer until it is clear.
Pour over the Edamame Dumplings.
