Rose Poached Pear Pie
As John Lennon once said, Life is what happens when you're busy making pie Well, this pie is gonna make you cancel all your plans. Christa whipped up a mind-blowing Rose Poached Pear with toasty meringue & there's a video to prove it! With a nod to Julia Child, this pie is a thing dreams are made of. This not too sweet, bright and toasty babe leaves you with a little syrup at the end that is PERFECT to start a sangria.There's one more video on the way this month & it's a great one!
Poaching Liquid:
1 C sugar
1 ½ C Rose Wine
1 ½ C water
4 whole cloves
1 cinnamon stick
4 allspice
½ orange and 1 lemon Zest
1 tsp vanilla
Simmer 20 Minutes
The Crust:
1 1/4 C Flour
1TBSP Sugar
1/4 TBSP Salt
4 TBSP Butter
1 1/2 TBSP Shortening
2-3 TBSP Ice water with a splash of vodka
Chill 30 Minutes
Roll out and bake @ 375 for 20 Min. with pie weights 5 Min without.
4-5 pears (depending on their size.)
Poach 10 min turning 1/2 way.
Slice and cover pears with
1 pinch of Salt
1 TBSP Sugar
1 1/2 tsp Cornstarch
Bake @425 for 3-5 Minutes
Reduce 2 cups of the pear-poaching syrup to 1/2.
3 egg yolks
2 tsp cornstarch
2 Tb cool cooking syrup
Remove from heat.
2 Tb butter
3 to 4 Tb orange liqueur
Pour sauce over pears and bake for an additional 3-5
Meringue:
3 egg whites
Big pinch each of salt and cream of tartar
½ cup sugar
1 tsp vanilla extract
Top and bake for an additional 5-10
British Classic - Steamed Pudding With Cherry Sauce Diplomat
Steamed puddings have very delicate texture. They are sponge cakes that slowly steamed in a special pudding bowl, submerged in hot water bath. They normally served with vanilla custard on a side ans extremely delicious and delicate.I am stepping away from traditional recipe a little bit and making two-toned steamed pudding, that I call :Diplomat. I am serving it with home made cherry sauce. Enjoy!
Ingredients:
9 tbsp(150g) soft butter( plus extra for greasing bowl)
½ cup granulated sugar
2 large eggs
1¼ cups self-rising flour
1 tsp baking powder
5-7 tbsp milk
2 tbs cocoa powder
1-quart size pudding bowl:
Method:
Lightly grease pudding bow. You can use metal mixing bowl and cover it with foil.
Cream together: butter, sugar and eggs.
Gradually add flour with baking powder.
Add vanilla.
Separate batter in half.
Add milk to white half enough(2-4 tbsp) for the dough to be right consistency: glossy and smooth. And it has to fall off spatula. Set aside.
Add cocoa powder to other half and add milk to reach right consistency.
Transfer chocolate dough at the bottom of pudding bowl, follow with light dough. Close lid and put pudding bowl in a large stock pot.
Cover half way with boiling water.
Steam for 2 hours.
Add more hot water so it always cover half of pudding bow.
If your bowl starts to float, weight it down with smaller pot lid.
After 2 hours, remove from the pot and let cook slightly.
Turn upside down onto a platter.
Cherry sauce:
Ingredients:
2 cups frozen cherries
½ granulated sugar
2 tbsp tapioca flour
5 tbsp Amaretto liqueur
Method:
Put frozen cherries in a small sauce pan.
Add sugar and tapioca flour.
Place on the heat , mix well and wait for it to boil.
Add liqueur(optional)
Cook for couple minutes until alcohol evaporates.
Serve with warm pudding.

How to make the best-ever Christmas pudding
Whip up the perfect centrepiece to your festive feast with our traditional Christmas Pudding (RECIPE BELOW). It’s fruity, rich and deliciously moist.

Christmas Pudding
Serves 16 Prep 40 mins (+ 10 mins standing & overnight soaking time) Cooking 6 hours 5 mins
800g mixed dried fruit
½ cup (70g) slivered almonds
1 tbs finely grated orange rind
½ cup (125ml) orange juice
½ cup (125ml) orange-flavoured liqueur or orange juice, extra
250g butter, softened
¾ cup (165g) dark brown sugar
2 tsp mixed spice
4 Coles Brand Australian Free Range Eggs
3 cups (210g) fresh breadcrumbs (made from day-old bread)
½ cup (75g) plain flour
Vanilla ice-cream, to serve
Candied orange (optional), to serve
Orange butter
125g unsalted butter, softened
¾ cup (165g) brown sugar
¼ cup (60ml) orange-flavoured liqueur or orange juice
1 tsp finely grated orange rind
½ tsp mixed spice
1 Place mixed fruit, almonds and orange rind in a large bowl. Bring orange juice and liqueur to a simmer in a saucepan over low heat. Pour over mixture. Cover and place in the fridge overnight to soak.
2 Use an electric mixer to beat the butter, sugar and mixed spice in a bowl until pale and creamy. Add the eggs, 1 at a time, beating after each addition. Add to the fruit mixture and combine. Stir in the breadcrumbs and flour.
3 Grease a 2L (8 cup) pudding basin. Line base with a disc of baking paper. Dust sides with flour. Spoon in mixture. Smooth the surface. Cut a 30cm square of baking paper and foil. Place paper on top of foil. Fold the centre to pleat. Place over basin, foil-side up. Use a lid or tie string twice around the top to secure. Scrunch paper and foil tightly around the rim of the basin.
4 Place an upturned heatproof saucer in the base of a large saucepan. Place the pudding basin on saucer in the pan. Add enough boiling water to the pan to come halfway up side of the basin. Bring to a simmer over medium heat. Cook, covered, adding more boiling water as necessary, for 6 hours or until a skewer inserted into centre comes out clean. Set aside for 10 mins before turning on a serving plate.
5 To make orange butter, use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add liqueur or orange juice, orange rind and mixed spice and beat until well combined.
6 Serve pudding with ice-cream, orange butter and candied orange, if desired.
Candied orange
Thinly slice 1 orange and zest 1 extra orange. Stir ½ cup (110g) caster sugar and ½ cup (125ml) water in a saucepan over low heat for 2 mins or until sugar dissolves. Add sliced orange and cook, turning occasionally, for 5-8 mins or until rind softens and becomes translucent. Transfer to a baking tray lined with baking paper. Add orange zest to saucepan and cook for a further 1-2 mins or until softened. Use forks to transfer to the tray. Set aside to cool.

Fruit Custard
Ingredients
Custard Powder-2tbsp
Milk -21/2 cup
Sugar-3tbsp
Salt-one pinch
Fruits of ur choice
Vanilla Essence
Method
Mix custard powder in 1/2 cup milk and keep aside .
Boil 2 cup milk in medium flame ,When cooked well,reduce the flame and add sugar ,mix well.
Now add 1/2 cup of custard powder milk and stir well ..add vannila essence.
Increase the heat to medium and cook well by stirring continuously.
When it reach a semi-thick consistency switch off the flame and transfer to a bowl .
After reaching room temperature keep in the fridge for one hour .
To the chilled cutstard add cut fruits mix well and again chill.
Then serve ..

Orange Date Cardamom Preserves ~ Holiday Canning ~ Christmas Gifting
Looking for something different?... give these preserves a try. All the flavors of the season... citrusy orange, sweet chewy dates, warm cardamom and gooey honey make for a delicious and exotic preserve.
4 lbs. oranges, sectioned
1/2 c. water
1 lemon (zest and juice)
1 vanilla bean, split
2 c. dates, pitted and coarsely chopped
2 c. sugar
1/2 c. honey
1 1/2 t. ground cardamom
1/2 t. cinnamon
Ladle hot sauce into hot jars leaving 1/4 headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12 hours. Remove bands, check seals, wash and label jars. Store in a cool dark place.

My southern baked candied yams recipe is a easy one. It is more of a southern and soul food version. I use garnet yams, which are red sweet potatoes. The candied mixture for my baked yams is made out of butter, granulated sugar, brown sugar, cinnamon, nutmeg, and other spices. After I make the candied mixture, I pour it over the yams, and bake the candied yams until the are super tender. This recipe is perfect dish to cook for holidays. Especially Thanksgiving and Christmas.

1 CAN - Evaporated Milk
6PCS - Egg Yolk
MERINGE INGREDIENTS
6pcs - Egg White
1tsp - Vinegar or cream of tartar
1/4cup - Sugar
CAKE INGREDIENTS
1 1/2cup - Cake Flour / All Purpose Flour
6pcs - Egg Yolk
1/2cup - Sugar
1/2tsp - Baking Powder
1/4cup - Milk
1/4cup - Water
CUSTARD / LECHE FLAN PROCEDURES
1. Caramelized Sugar (Low Fire)
2. Separate Bowl Combine Egg Yolk, condense Milk and evaporated Milk and Mix.
3. Pour into Baking Pan with Caramelized Sugar (And set aside)
CAKE PROCEDURES
1. On a bowl add Egg yolk, water, sugar and Milk. And Mix.
2. Separate bowl add flour and baking powder and Mix.
3. Pour the wet Ingredients and mix until smooth.(Use cut and fold method for mixing)
4. Set aside
MERINGE PROCEDURES
1. On Mixing bowl add egg white and vinegar. Beat until Foamy and add Sugar Gradually until Stiff Peak Form.
2. Get Small amount and mix to Cake Mixture.
3. Pour the Cake Mixture to Meringue Partially and Mix using cut and fold method until and soft (Dont over mix)
4. Pour the Cake Mixture to Custard Mixture.
5. Cover Baking Pan with Aluminium Foil
6. Pre Heat 180°C
7. On baking Tray pour water Hot water and Place the Baking Pan with cake mixture.
8. Bake for 45-60mins.
