Cherry Tomatoes = 1 can 400 ml
Capers = 1/2 handful - (I did not put them in -but really they are needed to round out the flavors)
Chickpeas = 1/2 a can
Garlic = 1 clove - with olive oil to get it started
Salt and Pepper
White wine - that's your diluter and flavorer. Remember you're making a stew not a fish in a red sauce.

You can do fresh - to impress - but really this is a peasant dish popular along the Adriatic and in Portugal. That means you can use any fish or seafood that you have.
Fish: My favorite is Cod - I look for taste and texture. Haddock, Tilapia - and more...no rules
Seafood: Go with shrimp, clams, mussels - you can even get a packet of flash frozen seafood variety.
Yep - even flash frozend fish - in a stew - you will never tell the difference.
Again - no rules !!!
Homemade Fish stock | for sauces and seafood soups
Fish stock forms the basis for seafood sauces, soups, seafood meals and more. This is a basic version with the addition of optional white wine. Make a big batch, then freeze it, ready to use. If you're using flat style fish like sole, flounder etc then only cook it for 20 minutes otherwise you may get bitterness out of the bones. It's also professionally know as Fish Fumet, or Fumet de poisson. Ask your fish monger for the freshest heads and bones you can get. If you're a regular customer, chances they won't even charge you. Never buy stock again.

HOW TO MAKE FISH BROTH | DOMINICAN BRAFF | FISH SOUP || FRUGALLYT
Today I’ll be showing you how I make my favorite Dominican one pot meal. My method is not traditional and may be what you’re used to but it’s what works for me.
Chicken part of choice
1 tbsp green seasoning
1 tsp black pepper
1 tsp salt
1 tsp garlic powder
1 tsp green seasoning

1 tsp salt
3-4 carrots sliced
1 onion chopped
6 cloves garlic chopped
1 tsp olive oil
1-2 tsp fresh lime juice

How To Make Fish Stock
3 to 4 whole carcasses, including heads, of non-oily fish (sole, turbot, rockfish, snapper, or halibut, mullet, spadefish)*
2 tablespoons butter
1 onions, coarsely chopped
1 carrot, coarsely chopped
fresh or dried parsley
1 bay leaf
1/2 cup dry white wine
1/4 cup raw apple cider vinegar
3 quarts water
Adapted from Nourishing Traditions
Melt butter in a large stainless steel pot. Sauté vegetables until just soft. Add white wine and bring to a boil. Add whole fish carcasses and cover with water. Then add vinegar and bring it to a boil once more. Add parsley stems and bay leaf. Skim off any scum that rises to the top.
Reduce heat, cover, and simmer for at least 4 hours or as long as 24 hours. Strain liquid. Store in fridge or freezer.
Pick meat away from the bones. Refrigerate or freeze to add to soup later.
Oily fish like salmon shouldn’t be used for making fish broth, because the highly unsaturated fish oils may become rancid during the long cooking process.
Fish Head Soup
3 quarts fish stock
4 potatoes, peeled and cubed
3 carrots, peeled and cubed
3 stalks of celery, chopped
4 green onions, chopped
4 garlic cloves, grated
2-inch section of Ginger, grated (2 Tablespoons)
1/4 cup freshly squeezed lemon juice
3 T freshly chopped flat leaf parsley
3 T freshly chopped dill
Salt and pepper to taste
Leftover fish meat from picking the bones
Bring broth to a simmer and add in all vegetables, potatoes through green onion. Simmer for 20 minutes or until tender. Now grate the garlic and ginger and add the lemon juice. Turn off the heat and stir in freshly chopped dill and parsley. Garnish with green onion.

Saint Nicholas fish soup | La zuppa di pesce per San Nicola
(Italian below) Many gastronomic traditions have religious origins. They may be dishes associated with feasts, to celebrate the most important moments of the year, saints' days or other venerated figures. Among the most well-known in Western Europe is Saint Nicholas, a saint of the Catholic and Orthodox churches and other Christian denominations.
Saint Nicholas is the protagonist in several legends of miracles that help the poor and defrauded. And perhaps this is the reason for his popularity. In Viridin, Bulgaria, every December 6 they celebrate Saint Nicholas with religious rituals and a recipe to be shared: it's a fish soup called kurban, which means sacrifice or offering. It's made with freshwater fish from rivers, they are different types of carp or zander that may be used, grilled and then boiled in a broth made with the heads and tails of the fish, together with grilled vegetables.
Once ready, the soup is taken to the river port at Viridin, and shared among the people as a common meal, with much dancing and flowers. This too, is part of the recipe: conviviality.

San Nicola è protagonista di molte leggende riguardanti miracoli a favore di poveri e defraudati. E forse proprio qui sta il motivo della sua popolarità. A Viridin, in Bulgaria, ogni 6 dicembre lo si celebra con funzioni religiose e anche dedicandogli una ricetta che diventa cibo di condivisione. Si tratta di una zuppa di pesce, chiamata kurban, che significa sacrificio o offerta. La si realizza con pesce di fiume: possono essere impiegati diversi tipi di carpa o il lucioperca, grigliati e poi posti in un brodo ricavato dalle teste e dalle code dei pesci al quale si aggiungono le verdure grigliate.
Una volta pronta, la zuppa viene portata al porto fluviale di Viridin, e condivisa in un pasto comune, tra lanci di petali di fiori e danze. Anche questo, in fondo è parte di una ricetta: la convivialità.

Fish broth soup made with Salmon head. (Braff)
This is a fish head soup or fish braff with hot peppers, lots of vegetable and seasonings. I am using a Salmon head but you can use any large fish head. It is a quick easy recipe that you can make for a big family. You can add any vegetable are root crop as you like but I wanted to keep it less starchy.
2 lbs fish washed with salt and lime juice and seasoned with garlic powder, jerk powder seasoning, black pepper, paprika and salt
To cook I used
6-8 cups of water
1 packet of fish tea mix
2 chicken cube as I don't have broth
add salt to taste if needed at then end when you taste the soup
1/4 tbsp black pepper
1/2 tbsp dry jerk seasoning
1 tbsp crush garlic
1 tbsp crush ginger
1 tbsp paprika
2 green onion
hot pepper as much as you like
1 stalk of celery
1 med carrot
chopped cabbage as much as you want
1 cup coconut milk
okra as many as you like

This week I am sharing a lovely variation on the classic creamy Norwegian Fish Soup, with a touch of dashi and oat cream instead of regular heavy cream. Extra delicious and even healthier ^_^

Ingredients (skip directly to 1:10 for the instructions):
- 2 carrots, sliced in thin sticks
- 1/3 swede, sliced in thin sticks
- 4 medium sized potatoes, cubed
- 1 leek, sliced in thin semicircles
- 1 clove of garlic, minced
- 1/2 cup of dry white wine
- About 1 litre of high quality fish stock
- 1 dl dashi (optional)
- 400 g each of red and white fish (for example salmon and cod or halibut)
- 250 ml oat cream or heavy cream
- 50 g of butter
- A handful each of dill and flat leaf parsley, roughly chopped
- One or two handfuls of peas
The Ultimate Fish Soup Recipe.
Here's a classic Caribbean fish soup or fish broff as it's called in Trinidad and Tobago. Not as heavy and thick as traditional Caribbean soups, but loaded with vegetables and flavored with herbs and thick slices of marinated fish.The ideal way to finish off this soup is to adda tablespoon of golden ray butter to the pot 2 minutes before you take off the stove. You may notice that the recipe is very similar to Jamaican fish tea as well.

Portuguese Style Fish Soup - Low Galore - Magic Diet
I brought you back this awesome Fish Soup from a Traditional Portuguese recipe from my trip. With all the taste but none of the work. Normally it would be served with a day old bread in the bowel and pour the soup, but it goes just great with potatoes or vegetables.
Now if you use fresh fish like the Traditional way then you will have to do some work. First remove all the scales and gut it. Separate the fish into parts, the head, tail, and the middle bone will all got into the pot with water and boiled until you get a fish broth in about 40 min's, then strain out the contents and use the broth for your soup stock. The rest of the body can be added to the soup hole, skinless or in pieces.
Either way, it is just awesome.

How to make a Healthy Bone and Fish Head Broth in your Instant Pot
This is super EASY and so nutritious. Definitely worth giving a try!!
This was my very first video and yes, my husband said it's very jumpy. I have learned that one needs to actually practice what you are going to say before you become good at it the first take. Also, you need to say the SAME thing on the different takes so that you don't miss some important information or steps, LOL! I realize that I don't have the recipe listed anywhere in the video and I aim to type it up below very soon.
Bone Broth Recipe
1/2 Salmon Fish Head
4 to 5 Leg Bones
1 TBSP of Apple Vinegar
5 Dried Shitake Mushrooms
4-5 slices of ginger
salt to taste
1. Put everything into the Instant Pot (the bones and fish head can even be frozen!)
2. Fill up filtered water to 2 inches from the top of the inner pot.
3. Turn Lid to lock, Switch to Sealing, Set Manual High up to 90 minutes
4. Natural release or Quick release (depending on how high you fill it, it might spray out!)

Chef Jason teaches Kezzianne how to 'bubble' a 'Trinbagonian' Fish Broth/Broff:
*Yield: 8 – 10 Portions
2 Lbs of King Fish/Red Snapper
Juice of 1 Lime
1 Tsp Salt
¾ Tsp Black Pepper
3 Tbsp Fresh Green Seasoning
2 Tbsp Vegetable Oil
½ Cup Onions, chopped
1 Tbsp Garlic, minced
6 Pimento Peppers, minced
2 Sprigs of Fine Thyme
2 Medium Carrots, peeled and sliced ¼ inch thick
¼ Cup Celery, medium chopped
¾ Cup Pumpkin, medium diced
¼ Cup Tomatoes, medium diced
8 Cups of Water
6 Small Ochros/Okras, sliced in half, head and tips removed
5 Oz Potatoes, peeled and largely diced
5 Greens Figs, peeled and sliced ½ inch thick
1 ½ Tbsp Salt
1 ½ Tbsp Chadon Beni/Culantro, minced
3 Tbsp Chives, chopped
3 Oz of Macaroni
1 Tbsp Salted Butter
2 Tbsp Fresh Lime Juice
Salt & Black Pepper, to taste
1. Have fish scaled, cut into ¾ inch thick pieces with head and tail retained.
2. Place fish pieces into a bowl of gentle running water to cleanse and squeeze fresh lime juice onto fish to aid in the washing process. Strain all water properly and season with salt, black pepper and fresh green seasoning. Let sit to marinate.
3. Meanwhile, place a large high sided sauce pan over high heat and add the vegetable oil.
4. When heated, add the onions, garlic, pimentos, thyme and sauté for 2 minutes.
5. Add the carrots, celery, pumpkin, tomatoes and cook for an additional 3 minutes on medium heat.
6. Add in the fish’s head and tail and allow to sear in the pot to develop a light brown colour for 3 minutes.
7. Add in the water, okras, potatoes, green figs and salt. Stir, cover and increase heat to bring to a boil.
8. Once boiling, reduce heat to medium and bring to a simmer. Add the chadon beni, chives and break macaroni strands into three and add to the simmering broth. Continue to simmer for 10 minutes.
9. Remove cover and insert fish pieces to cook for 8 minutes.
10. Once fish is cooked, add the salted butter and some of the lime juice. Taste and add more lime juice if needed and season with salt and black pepper to your desire.
11. Once happy with flavors, remove immediately from stove and serve in soup bowls.
12. Enjoy on its own or with a slice of crusty bread on the side.

How to Make Fish Stock
Fish stock is hands down the simplest and most affordable bone stock to make at home. All you need is one hour and at most, a few bucks! Learn how to make more simple bone broth and stock recipes at
Fumetto di pesce: brodo di pesce per risotto e cous cous - ricette di cucina (fish fumet recip)
Il fumetto di pesce è un brodo di pesce (fish fumet recip) è una delle ricette di cucina di base , preparato con ritagli e scarti di pesce e crostacei, arricchito ed insaporito con vegetali, erbe aromatiche sale e pepe.
In cucina è molto utile per realizzare preparazioni a base di pesce in umido o comunque debbano cuocere con un liquido, come il caso del risotto e del cous cous, per questi è proprio indispensabile, a meno ché non si voglia utilizzare un brodo vegetale.
Si può realizzare con soli scarti di pesce lische, teste, ritagli), soli scarti di crostacei (teste, carapaci) oppure con entrambi, questo varia a seconda della preparazione in cui andremo ad utilizzarlo. È però importante non utilizzare assolutamente interiora e branchie che conferiscono un sapore amarognolo e per niente gradevole.
La preparazione del brodo di pesce è piuttosto semplice, basta soffriggere in poco burro cipolla o porro, aggiungere gli scarti dei pesci e lasciarli insaporire, poi sfumare con vino o altra sostanza alcolica ed aggiungere aromi vegetali ed acqua. Il resto del compito viene assolto dal fornello, che farà sobbollire il fumetto di pesce fino a quando sarà pronto, solitamente sono sufficienti ….
Possiamo comunque prepararlo anche nella stessa maniera in cui facciamo il brodo, ovvero poniamo tutti gli ingredienti in una pentola, copriamo con abbondante acqua e lasciamo cuocere. Così facendo otterremo un fumetto dal sapore meno deciso, che sarà più indicato per realizzare delle pietanze dal gusto più delicato, dove il fumetto non deve prevaricare o comunque coprirne il sapore.
Il fumetto di pesce è una preparazione che faccio spesso, e visti i lunghi tempi di cottura ne faccio sempre in quantità. Lo conservo poi per 3-4 giorni in frigorifero, oppure lo congelo in piccoli contenitori per averlo sempre a disposizione. Molto meglio che utilizzare preparazioni a base di glutammato che danno ai piatti sempre lo stesso sapore e come risaputo non sono così salutari.

Creamy Milky Fish Soup (奶白鱼汤)
Today, we are making Milky White Fish Soup, or what we call Naibai Yutang (奶白鱼汤). It got its name from the white look, the milky taste, and the creamy consistency. But there are no dairy products added to this soup. The recipe is extremely simple, and there is only one secret you need to know in order to turn the fish bones and water into this fabulous broth.

2-3 inches of Ginger
3 tbsp of Chinese cooking wine (Amazon Link -
4 tbsp of Cornstarch
12 oz of fish bones 3 oz of bones needs 1 cup of water
4 cups of water
3/4 tsp of salt or to taste
2 tbsp of oil to fry the fish bones
Chop the fish bones into 1.5-inch-wide pieces. Any type of white fish that has a mild taste will work beautifully. This recipe uses minimal seasonings to highlight the natural flavors of the fish. So, the freshness matters, do not use frozen sources. Set the fish bones aside.
Cut 6-8 scallions into 1.5-inch-long pieces. Slice 2-3 inches of ginger thinly.
Rub the fish with 2/3 of the scallion, 2/3 of the ginger, 3 tbsp of Chinese cooking wine, and 4 tbsp of cornstarch for 5 minutes. Be sure to wear gloves, otherwise, you might get hurt by the sharp bones.
Rinse the starch off with running water. Discard the aromatics. Drain completely. Dry the bones with paper towels. Set it aside.
Turn the heat to high and heat the wok until smoking hot. Add a drizzle of cooking oil and toss in the fish bones. brown the fish until golden brown.
Add the reserved scallions and ginger. Pour in 4 cups of boiling hot water and keep the heat on high the whole time. When the liquid is whitened, put on the lid and keep the heat at medium for 6-8 more minutes.
Use a sieve to get rid of the solid bits. season the fish broth with salt and pepper. Garnish with diced scallions. Enjoy!
