Perfect English Muffin Bread
This easy english muffin bread recipe has all of those nooks and crannies and craters of a perfect english muffin but in a quick, no-knead toasting bread. There's only one rise so it's completely done in just a little over an hour.
NOTE: It's not baking powder. It's baking soda... an absolute slip of the tongue for me.

English Muffin Recipe in grams:
- 350 grams of All Purpose Flour
- 115 grams of warm Water (make sure you are NOT using hot water)
- 115 grams of warm Milk(make sure you are NOT using hot milk)
- 12 gr Fresh Yeast ( or 5 grams dry Yeast)
- 5 grams of Sugar
- 5 grams of Salt
English Muffin Recipe in cups:
- 2 3/4 cups All Purpose Flour
- 1/2 cup of warm Water (make sure you are NOT using hot water)
- 1/2 cup of Warm Milk (make sure you are NOT using hot milk)
- 1 3/4 tsp Dry Yeast
- 1 tsp Sugar
- 1 tsp Salt

2-1/2 cups bread flour
1 package of active dry yeast or 2- 1/4 teaspoons
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon baking soda
1 cup milk
1/4 cup water

English Muffin Bread
Makes 2 Loaves
1 lb, 10 oz (5-1/4 cups) bread flour*
4 tsp sugar
1/2 oz ( 4 tsp) RapidRise yeast
2 tsp salt
1/4 tsp baking soda
2 cups milk
1/2 cup water
In a saucepan, heat milk and water to 120-130F. Place all dry ingredients (including yeast) in a mixer bowl; combine ingredients. Pour warmed milk mixture into mixer bowl with dry ingredients. With a dough hook, beat at low speed until dry ingredients are moistened. Continue beating at low to medium speed for 8 to 10 minutes, until well combined and kneaded. This bread dough is VERY active, so it's OK to form loaves right away. No need to let this dough rest before forming loaves.
Divide dough into 2 equal portions and form each part into a loaf. Place in a loaf pan that has been greased and sprinkled with cornmeal. Spray top of loaves with nonstick spray and sprinkle additional cornmeal on the top of each loaf. Allow bread to rise in an oven proof box (see video link below), or cover with waxed paper then a towel and let rise briefly over an oven that is preheating to 375F.
Check loaves often, as they will rise quickly. Allow to rise about 20 minutes, until doubled, or until an indentation remains after a finger is lightly pressed into the loaf. When ready, bake at 375F for 25 minutes, until loaves are golden. Remove from pans and cool on a wire rack. Enjoy!
* Note: All-purpose flour or a combination of bread and all-purpose flour may be used in this recipe. The more all-purpose flour used, the less chewiness the bread will have, but the end product will still be fine. A combination of both types of flour is often what I used at The Spice Rack. jk

King Arthur Flour's English Muffin Toasting Bread
3 cups (361g) King Arthur Unbleached All-Purpose Flour
1 tablespoon (14g) sugar
1 1/2 teaspoons (9g) salt
1/4 teaspoon baking soda
1 tablespoon instant yeast
1 cup (227g) milk
1/4 cup (57g) water
2 tablespoons (25g) vegetable oil or olive oil
cornmeal, to sprinkle in pan
1. Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Whisk together the flour, sugar, salt, baking soda, and instant yeast in a large mixing bowl, or the bowl of a stand mixer.
2. Combine the milk, water, and oil in a separate, microwave-safe bowl, and heat to between 120°F and 130°F. Be sure to stir the liquid well before measuring its temperature; you want an accurate reading. If you don't have a thermometer, the liquid will feel quite hot (hotter than lukewarm), but not so hot that it would be uncomfortable as bath water.
3. Pour the hot liquid over the dry ingredients in the mixing bowl and mix until thoroughly combined.
4. Using an electric beater, or stand mixer with beater attachment, beat at high speed for 1 minute; the dough will be smooth and very soft. If you don't have an electric mixer, beat by hand for 2 to 3 minutes, or until the dough is smooth and starting to become elastic.
5. Lightly grease an 8 1/2 x 4 1/2 loaf pan, and sprinkle the bottom and sides with cornmeal.
6. Scoop the soft dough into the pan, leveling it in the pan as much as possible.
7. Cover the pan, and let the dough rise till it's just barely crowned over the rim of the pan. When you look at the rim of the pan from eye level, you should see the dough, but it shouldn't be more than, say, 1/4 over the rim. This will take about 45 minutes to 1 hour, if you heated the liquid to the correct temperature and your kitchen isn't very cold. While the dough is rising, preheat the oven to 400°F.
8. Remove the cover, and bake the bread for 22 to 27 minutes, till it's golden brown and its interior temperature is 190°F.
9. Remove the bread from the oven, and after 5 minutes turn it out of the pan onto a rack to cool. Let the bread cool completely before slicing.
Jalapeño Cheddar English Muffin Toasting Bread!!!
Makes the best grilled cheese, or even toast with a little cream cheese!
Just Ry’s Jalapeño English Muffin Bread
- 5 ½ Cups Flour
- 2 Tablespoons Dry Yeast
- 1 Tablespoon Honey
- ¼ Cup Warm Water
- 2 teaspoons Kosher Salt
- ¼ teaspoon Baking Powder
- 2 ¼ Cups Warm Milk
- 6-8 Jalapeños
- 8oz Yellow Cheddar Cheese (I use Yellow Cheddar so you can see the cheese in the bread!)
1. Grease 2 loaf pans heavily
2. In large mixing bowl mix yeast, honey, and water. Set aside to let yeast bloom.
3. In separate bowl mix flour, salt, and baking powder
4. Use food processor chop up cheese into small chunks and set aside in third bowl – without washing food processor chop jalapeños into small pieces and add to cheese.
5. Add Warm Milk to the yeast mixture along with 1 cup of flour mixture, cheese, and jalapeños. Mix until incorporated.
6. Add remaining flour mixture, using hands, dough scraper, or rubber spatula mix until all flour is incorporated, and no dry pockets remain.
7. Divide mixture evenly between 2 loaf pans, cover with plastic wrap (sprayed with PAM) and let rise until it crests 1 inch above rim – about 1 hour.
8. Halfway through rise time preheat oven to 400 degrees.
9. Bake for 30-35 minutes until top is deep golden brown and temperature reaches at least 190 degrees.
10. Remove from oven and remove from pan – let cool.

Shrimp Toast Recipe for Super Shrimpiest Toast
Here's a baked shrimp toast recipe based on a Vietnamese deep fried shrimp bread dish. This is a tasty shrimp recipe that works as an appetizer, party food snack, or a main dish. It doesn't take a lot of shrimp to make, so this recipe can be a pretty economical shrimp choice for your wallet. I like to use English muffins for this shrimp toast because half muffins are the perfect size, and they toast up super well in the oven. I use a mix of chopped and whole shrimp for maximum shrimpiness and visual effect, but experiment with your own shrimp bread recipes and find the perfect version that you like.

Shrimp Toast Recipe Ingredients
12-15 SHRIMP peeled and deveined
3 ENGLISH MUFFINS
2 EGG WHITES
1 clove minced GARLIC
1 tsp dried ITALIAN SEASONING
1 tsp PAPRIKA
SALT and PEPPER to taste
some OLIVE OIL
How to Make Shrimp Toast
Peel and devein shrimp.
In a bowl, lightly toss shrimp with olive oil, season with salt, pepper, and paprika and set bowl aside.
Lightly coat English muffin halves with olive oil and slightly toast face down in a skillet.
Then place muffin halves face-up on a baking pan.
In a small bowl, whisk 1 or 2 egg whites with dried Italian seasoning and minced garlic.
Place a spoonful of this egg white mix on each muffin half.
Place shrimp over the egg white and cover the muffin half. Use whole shrimp, or chop them, or use a combo. I like using some chopped and whole shrimp, that way I can entirely cover the muffin with shrimp, but also have a whole shrimp on top so it looks extra cool and tasty.
Top the shrimp with another spoonful of the egg white mix. This will bake and form a seal to hold the muffin and shrimp together.
Bake in an oven at 400 degrees Fahrenheit for about 20 minutes, or until toasted golden.
That’s it. A healthier version Shrimp Bread that really works. Give it a try and let me know what you think. I’m still tinkering with the recipe a bit, but I’m pretty happy with this version of a twist on Vietnamese baked banh mi tom chien. If you find a tasty twist of your own, let me know! It’s an interesting recipe to experiment with.
