Ingredients for this recipe:
For the Hollandaise:
4 egg yolks
juice of ½ lemon
¼ cup chardonnay wine
4-6 ounces clarified butter
sea salt and cayenne to taste
For the Eggs benedict:
6 toasted English muffin halves
6 slices of Canadian bacon, heated
chopped fresh parsley and chives for garnish
sea salt and pepper to taste
Prep Time: 10 minutes
Cook Time: 15 minutes
1. Hollandaise: whisk together the gg yolks, lemon juice and wine in a large metal bowl until it becomes frothy, about 2 minutes.
2. Add the bowl over a double boiler and whisk vigorously until it is very foamy and no egg liquid at the bottom of the bowl.
3. Whisk while slowly drizzling in the clarified butter until completely emulsified. Remove from the double boiler, season with salt and cayenne and set aside.
4. Eggs Benedict: Add some vinegar to a medium size pot with water and simmer over medium-low heat.
5. Stir the water using a spoon for 10 seconds to create a vortex and add 1 egg to the center of it so the whites of the egg wrap around the yolk. Cook for 3 minutes or until the egg is cooked but the yolk is runny.
6. Remove the egg and season with salt and pepper. Repeat 5 more times with the rest of the eggs.
7. To Plate: Place the toasted English muffin halves on a plate and layer on with the Canadian bacon, poached eggs, hollandaise sauce and garnish of parsley and chives.

Mimi Weissenborn's Eggs Benedict Recipe
For the biscuits:
1/2 cup cake flour
1/2 cup bread flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tablespoon salt
1/2 tablespoon sugar
5 tablespoons butter
1/4 cup heavy cream
1/2 cup buttermilk
For the hollandaise:
4 egg yolks
2-3 tablespoons lemon juice
1 cup butter, melted
For the poached eggs:
2-3 tablespoons distilled vinegar
For the biscuits:
1. Preheat oven to 375 degrees.
2.Cut butter into small dice and place in refrigerator.
3. Combine all dry ingredients in a large mixing bowl. Using hands take chilled butter and start to incorporate into flour mixture, until all pieces have been broken down.
4. In a bowl combine buttermilk, heavy cream and eggs. Beat mixture together until well combined.
5. Add wet mixture into the dry, kneading the dough together ever so lightly until it comes together. Wrap dough mixture in plastic and let rest in refrigerator for a minimum of 30 minutes.
6. Roll out rested dough on a well floured surface, about an inch thick. Use a round or squared ring mold to cut the biscuits. Place on a parchment lined sheet tray.
7. Bake at 375 degrees for 10-12 minutes or until golden brown.
For the hollandaise:
1. In the top of a double boiler, whisk together egg yolks, lemon juice, white pepper, if you have it.
2. Add melted butter to egg yolk mixture, 1 or 2 tablespoons at a time, while whisking yolks constantly. If hollandaise gets too thick, add a tsp or two of hot water.
3. Continue whisking until all butter is incorporated. Whisk in salt, cover and store in warm place.
For the eggs:
1. Fill a medium sized pot with 3 inches of water, add vinegar and season with salt (to taste).
2. Bring to a simmer. Hint: it should never boil. Gently crack an egg into the center of pot, allowing the white to envelope the yolk. Check the eggs after 4 minutes.
3. Repeat steps with remaining eggs. Use slotted spoon to lift egg out of the water. The whites should be firm and the yolks still soft to touch; if the egg is still not quite done drop back in the water for an additional minute. When eggs have reached desired firmness remove from water and place on a paper towel lined plate.
4. Assemble your Eggs Benedict by cutting the biscuits in half, placing them cut-side up. Fry some Canadian bacon, flipping occasionally until both sides have browned. Place bacon on top of the biscuits, followed by a poached egg, a spoonful or two of hollandaise sauce, and some freshly cracked pepper. Serve immediately.

5 Minute Eggs Benedict - Topless Baker
Eggs Benedict in 5 minutes? You think I'm crazy but seriously it is that quick! This recipe is so easy to do, and is perfect for those weekend brunch dates or if you just fancy treating yourself.
For this eggs benedict recipe you will need:
2 English Muffins
White Wine Vinegar (add a tsp to the boiling water)
2 Egg Yolk
2 Tsp Water
2 Tsp Lemon Juice
200g Unsalted Butter
Salt & Pepper to taste
To make the shallots what you need to do is:
- Cut half a banana shallot and dice it nice and fine. Reduce it gently in a pan with about 2 tbsp of white wine vinegar. Put it on a LOW heat, you are looking to almost poach the shallot until all of the liquid evaporates, don't let them fry! Once it has evaporated take the shallows out and then they are ready to use!

How to Make Eggs Benedict the Classic Way; Kenji's Cooking Show
Hi there. I made eggs Benedict. I did not use the foolproof way I developed for my book, which you can find published here:
I made them the old-fashioned way, with a whisk and some technique. Also, there are more puns here than you could possibly enjoy, but I will not apologize for them.
The English muffins I made for them were *very* loosely based on this recipe from the amazing Stella Parks:
I didn't have half the ingredients. I used 300g of Caputo OO pizzeria flour, I used half buttermilk and half regular milk, and I used agave nectar instead of honey. I also skipped the second rise and cut it down to a single hour. They still came out... OK. Not the best English muffins ever but we ate them and were happy. Follow her recipe and you'll be happier.
The coronavirus has hit many folks hard, including first responders and hospital workers, individuals and families who were already food insecure, and service industry employees who are, for the large part, currently out of a job.
My goal is to help fix both these problems in the best way I know how to contribute: organizing people, and cooking food.
If you would like to donate to our free meal fund, head to where you can buy a boxed meal for someone in need. These boxes go directly to the frontline workers and food insecure families who have been hit hardest by the coronavirus pandemic. They also allow me to hire back my kitchen team to cook and pack these meals (in a safe, clean way). So far we have served nearly 500 meals, and the number goes up every week.
