Ingredients:
2½ pounds (1.2kg) Potatoes
4 tablespoons (60g) Butter, room temperature
3 Egg yolks
Salt to taste
Black pepper to taste
1/4 teaspoon Nutmeg
2-3 tablespoons Chives, chopped
Directions:
1. Peel and cut potatoes into chunks. Place in a large pot, cover fully with cold water, add 1-2 teaspoons of salt. Bring to a boil. simmer until tender, about 30 minutes.
2. Preheat oven to 400F (200C).
3. Drain and let the potatoes to dry few minutes. Transfer to a large bowl and mash, add butter and stir until incorporated. Add egg yolks and stir until smooth. Season with salt, pepper, nutmeg and chives.
4. Transfer the mashed potato into a piping bag fitted with a wide star tip. Pipe mashed potato mixture on a baking tray lined with parchment paper.
5. Bake for minutes 15-20, until golden brown.
Notes:
• When you adding to egg yolks make sure that the potato mixture is not too hot, otherwise the egg yolks will cook.

How To Make Pommes Dauphine: (French potato puffs recipe)

The Pomme Dauphine (French potato puffs) is a very old side dish ( 1900's) made out of a blend of potato mash and choux paste that is then deep fried to transform into fluffy and crunchy potato puffs.
The Pomme dauphine are very versatile and can be made with flavored mash , with cheese, ham or filled with any ingredients you like once they are cooked.

Three important points to remember to make sure you get your Pomme Dauphine right:
1- Temperature control if key! from what I tested, an oil temperature of 160 degrees Celcius /320 F should be kept steady at all time.
2- Size matter. do not be tempted to deep fry large amount of dauphine potato dough at any one time as it won't have time to cook fully and will just be uncooked inside and will become overcooked on the outside.
the right size to use is about the size of a wine bottle cork. or the size of a large walnut if using a spoon.
when you start making Dauphine potatoes if may be better to use a pipping bag to be able to easily control how much dough you are putting in the oil.
3- Patience is key. deep frying choux pastry based product always take time to be fully cooked. The average time it takes to cook is about 6 to 7 minutes per Dauphine potato. To make sure it is cooked, you need to wait for the Potato puff to be just about to crack open ( as shown in the video) this is the sign that the potato puff is ready.

And while their name sounds fancy, these potatoes are a cinch to prepare. In fact, I think the hardest part about making this dish is waiting to eat it. Bring a little royalty to your holiday table and give this recipe a try!

INGREDIENTS
2 1/2 pounds Yukon Gold potatoes (about 10 medium), peeled and cut into 1-inch pieces
Salt and pepper
3 tablespoons cold unsalted butter, plus more for parchment
3 large egg yolks, divided
1/4 cup plus 2 teaspoons heavy cream, divided
Ground nutmeg
COOK'S NOTE
These mounds of soft, buttery spuds with crisp golden crusts have indented centers made to hold pools of gravy.
DIRECTIONS
STEP 1
In a large pot, cover potatoes with cold salted water by 2 inches. Bring to a boil; reduce to a rapid simmer and cook until tender, 15 minutes. Drain in a colander, let sit 5 minutes, then return to pot. Add butter and, with a potato masher, mash until smooth. Season with salt and pepper. Add 2 egg yolks, 1/4 cup cream, and pinch of nutmeg; stir until combined.
STEP 2
Preheat oven to 450 degrees. Line a baking sheet with parchment and lightly butter paper. Dollop mixture in 8 equal portions on sheet, 2 inches apart. Using the back of a spoon, create a small well in the center of each. Freeze until firm, 15 minutes. Whisk together remaining egg yolk and 2 teaspoons cream. Brush on potatoes and bake until golden, 15 minutes.

Puffed Potatoes - Pomme Soufflé Recipe - 2 Ways
Pomme Souffle Recipe - Puffed Potatoes
In this video, I will show you 2 different ways to make pommes souffles.
*method 1.* The first method requires you to cut russet potatoes to 1 mm thickness, then covering one set of the potatoes with cornstarch or potato starch and evenly coating the second set with egg white, place the two slices together then cut them with a 4cm/1.6inch diameter cutter. When frying you have to lift the side of the pan closest to you up by 1cm and rock the pan back to front, the temperature of the oil should be 140ºc/284ºf and you should have little oil in the pan, about 2cm depth of oil thats 0.8inches deep. Keep moving the pan till the potato slices puff up, then baste them in the oil until they become crispy.
*method 2.* For the second method cut the russet potatoes in a rectangular shape then use a mandoline to cut into slices of 2.5mm-3.5mm thickness. Use the same oil moving technique as in method one and place these slices in an oil bath at 130ºc/266ºf moving them constantly until the slices blister then transfer them to the 180ºc/356ºf oil and they should puff up, after that keep basting them until crispy then they are done.

Potato Soufflé Recipe
Potato Soufflé is an easy recipe for such a comforting dish perfect for fall tables. Love the way it puffs in the oven and how the steam comes out when you start dig in it. The breadcrumbs form a delicious crust on the bottom and edges and the cheddar and Parmesan cheese bring such an amazing flavor. The chives are not to be forgotten as well as they bring color and their unique taste.
Ingredients:
Makes 4 servings
2 tbsp (30g) butter, plus extra for greasing
3 tsp breadcrumbs, for coating the ramekins
1 large potato (300g), cooked with peel on
1 1/3 cups (85g) mature Cheddar, grated
1/3 cup (30g) Parmesan Cheese, grated
2 tbsp fresh chives
2 eggs
freshly ground black pepper
6 tbsp milk
paprika, for garnish
Directions
1. Preheat the oven to 450F(220C) and put a baking sheet in the oven to heat up. Butter 4 ramekin dishes and dust with breadcrumbs.
2. Peel the cooked potato and place in a medium bowl. Use a potato masher to mesh it well.
3. Grate the cheese and separate egg yolks from the whites. Add cheese, chives, black pepper and egg yolks over the mashed potato.Stir to combine.
4. In a small pan warm the milk with butter until the butter melts and pour over the potato mixture. Stir to combine.
5. Whisk egg whites until stiff peaks form. Gently fold the egg whites into the potato mixture.
6. Fill the prepared ramekins with potato mixture and sprinkle paprika on top. Place in the oven on the preheated baking sheet and bake for 15-17 minutes until puffed and golden.

Duchess Potatoes are a beautiful way to serve potatoes for any occasion

Ingredients:
3lbs of russet potatoes peeled and cubed
3/4 cup of half and half
2 TBS of butter
1/4 tsp of grated nutmeg
1/2 tsp pepper
1/4 tsp pepper
3 egg yolks
Directions:
Boil potatoes until fork tender. After you strain them add them back in the pot for 5 minutes to cook out any additional moisture. After that you can mash them with a potato masher or put them through a ricer. Add the half & half, butter, nutmeg, pepper, salt and egg yolks and mix well. Place in piping bag, using large star tip, and form mounds. Bake at 450 for 20 to 25, minutes until golden on top. Make sure to turn pans half way through cooking time.

Beef Tenderloin With Homemade Bacon Butter, Duchess Potatoes & Spinach Parmesan Sauce | As any meat lover will tell you, meat is a vegetable, there's no such thing as too much meat, and you can never get enough. So if you consider meat to be your one and only true love, you should definitely try this recipe. Even if you're not such a big fan of meat, you have got to try the homemade bacon butter – this smooth and smoky spread will take all your dishes to a whole new level.

You'll Need:
For the bacon butter:
- 3½ oz bacon
- 9 oz butter
- 1 tbsp paprika
- 1 bunch of parsley
- 1 tbsp honey
- salt & pepper
For the duchess potatoes:
- 1½ lbs floury potatoes (russet/Idaho potatoes)
- 3½ oz butter
- 1 egg yolk
- salt, pepper, and nutmeg
- 1 egg yolk for the egg wash
For the spinach parmesan sauce:
- 9 oz mushrooms
- 10½ oz baby spinach
- 7 fl oz cream
- handful of parmesan cheese
- salt, pepper, and nutmeg
You'll also need:
- 1 beef tenderloin
Here's How:
1. Fry the bacon strips on both sides until nice and crispy and then blot them between two paper towels to remove excess grease.
2. Chop the bacon into small pieces and add them to a bowl with warm butter, paprika, salt, pepper, fresh parsley, and a spoonful of honey, and mix everything together. You can also add the leftover bacon grease from the pan if you're feeling especially decadent.
3. Lay out some plastic wrap and spoon the bacon butter mixture into the middle. Roll up the butter in a log shape and refrigerate.
4. Mash the boiled potatoes in a bowl. Add butter, an egg yolk, salt, pepper, and nutmeg and mix well.
5. Fill a piping bag with the mashed potato mixture and create spiral mounds on a sheet pan lined with parchment paper. Brush the duchess potatoes with an egg yolk wash and bake at 350°F for 15 minutes.
6. Fry the mushrooms and then stir in the baby spinach, cream, salt, pepper, nutmeg, and a small handful of parmesan cheese.
7. And now for the crowning glory! Add a bit of oil to a pan and briefly sear the beef tenderloin on each side. Then pop the fillet in an oven set to 265°F for 30 minutes.
8. Take the hardened bacon butter roll out of the fridge, remove the plastic wrap, and cut the roll into 1 inch thick slices.
9. Now you're ready to assemble the mother of all dishes – this is definitely a Sunday Dinner type of meal!

Duchess Potato is a classic french recipe, traditionally served for dinner as a side dish.We gave an Indian twist to the classic recipe by adding familiar spices to the creamy potatoes. This is a very unique recipe in its own way, and nothing like you have seen/eaten before.
Ingredients
Potato - 1/2 kg
Garlic - 3 pods (optional)
Melted butter - 1tsp
Egg yolk - 1
Pepper -1/2 tsp
Tumeric Powder -1/2 tsp
Hing - a generous pinch
Curry leaves - 1 tbsp , chopped
Whole milk - 2.5 tbsp
Salt - To taste
For vegan version of duchess potato replace egg yolk with 1.5 tbsp of melted butter.
Serve these royal beauties with a curry of your choice.

These go together really fast and have ingredients that you have on hand. They are delicious and they can be dressed up with just about anything you like! Let's make some Duchess Potatoes!
These are fabulous and when you serve these people are going to be seriously impressed! These are mashed potatoes dressed up for the ball. Just a few simple additions of butter, cream, cream cheese and egg and you are in business. I made mine in the mixer but you can mash them by hand with no problem. You can also run these through a pastry bag with a star tip to make an amazing presentation, but this time I used a large 4 ounce or 1/2 cup scoop to make the prep even easier.
These can be made in advance and frozen before they are baked. Just pop the baking sheet in the freezer until the potatoes are completely frozen and then pop them into a zip top bag and then you can pull them out as needed. You could make these this weekend in preparation for Thanksgiving. When you get ready to use them just put them into a 400 degree oven for 30 to 45 minutes until they are golden brown and then they are ready to serve. They are great plated or on a buffet for people to serve themselves.
I put a well in my potatoes using a large tablespoon, for gravy later, but you can do whatever you like. They are beautiful and delicious any way you choose to make them. What could be better than making a great potato dish ahead of time and already have them ready already?
These are also versatile to your menu. You could make them with cheddar cheese, or bacon and cheese or chives or other fresh herbs or Parmesan cheese or anything you like to make these as simple or as complex as you like.

1. Potato Sandwich
You'll Need (for 3):
- 3 potatoes, peeled and cooked
- 4 tbsp bread crumbs from a baguette
- 2 tbsp grated parmesan
- salt & pepper to taste
- 2 eggs
- 6 slices of Gouda cheese
- 6 slices of salami
Here's How:
1.1 Heat some oil in a pan over medium heat while you cut the cooked and peeled potatoes lengthwise. Mix the bread crumbs with parmesan and season with salt and pepper. Dredge the potato slices in whisked egg and then the bread crumb mixture.
1.2 Fry the breaded potato slices on both sides. Place 2 slices of Gouda and 3 slices on each fried potato slice and then top with another fried potato slice.
1.3 If you want a crispier potato sandwich, let them sit in the pan for a while or pop them in a preheated oven set to 350°F for about 15 minutes.

2. Potato Egg Nest
You'll Need (for 4):
- 14 oz potatoes, peeled and cooked
- 4 tbsp bread crumbs
- 3 tbsp bacon bits
- 3 oz shredded cheese
- 1 tbsp chopped parsley
- salt & pepper to taste
- 4 egg yolks
- bread crumbs to garnish
Here's How:
2.1 Preheat the oven to 350°F. Mash the potatoes, season with salt and pepper, and mix in the bread crumbs, bacon, parsley, and about half of the cheese. Make 4 potato patties from the mixture, place them on a pan lined with parchment paper, and sprinkle bread crumbs on top.
2.2 Press a small glass into the center of each potato nest.
2.3 Spread the rest of the cheese in the holes, add one egg yolk to each center, and cook for 15 minutes.

3. Stuffed Duchess Potatoes
You'll Need (for 4):
- 14 oz potatoes, peeled and cooked
- 4 tbsp bread crumbs
- 4 oz grated parmesan cheese
- 2 egg yolks
- 1 tbsp parsley
- salt, pepper & nutmeg to taste
- 4 mini mozzarella pearls
- 4 tbsp bacon bits
Here's How:
3.1 Preheat the oven to 375°F and line a sheet pan with parchment paper. Mash the potatoes, mix them with the bread crumbs, parmesan, egg yolks, and parsley, and season with salt, pepper, and nutmeg. Spoon the potato mixture into a piping bag, pipe 4 circles onto the pan, and smooth the surfaces with a spoon.
3.2 Place a mini mozzarella pearl in the center of each potato circle, surrounded by some bacon bits.
3.3 Pipe the rest of the potato mixture around the mozzarella balls and bacon in the shape of a tower.
3.4 Cook the stuffed potatoes for 15 minutes and you'll be treated to a surprise at dinner!

Silky Potato Swirls a.k.a. Duchess Potatoes | Eggless recipe
A fun way to serve boring mashed potatoes. Is funky to look at, eat, and prepare – a 3-way win! Check out the recipe below.
-TIME REQUIREMENT –
30-40 minutes
-INGREDIENTS-
4-5 large potatoes, Yukon gold or yellow
50 g butter
¼ cup of heavy cream
1-2 tbsp. salt
green onions, chopped, and
feta cheese, finely grated for garnish
-HOWTOs -
1. Boil water in the kettle and preheat the oven to 425° F / 220 C°.
2. Peel potatoes, rinse and roughly chop.
3. Put them into a pot and add boiling water. Add salt and cook on medium heat about 10 min or until tender.
4. Drain immediately once cooked and room temp butter and heavy cream. Mash and mix using a potato masher.
5. Push the mash through a sieve to get rid of even from the smallest clumps so that the texture gets super silky and easily goes through the piping bag with a frosting tip.
6. Scoop the mash into a piping bag and squeeze into swirls onto a baking tray lined with parchment paper. Start with a circle as a base and slowly move up in a spiral motion creating a tip at the top.
7. Turn your oven off and turn on the broil setting. Put the swirls into the oven for 4 minutes.
8. Take them out and let them cool. Carefully transfer on the platter using a flipper. Garnish with grated feta cheese and chopped green onions, and enjoy!
