How to make an authentic Egyptian khoshaf which is a very popular starter at the Holy month of Ramadan.
No sugar, Orange juice, rose water, apricot juice added for flavor. This dried fruit compote reflects that tradition, but it also combines other highly nutritional dried fruits and nuts.

Pudding make with rice and milk topped with fresh cut fruits.
RICE PUDDING WITH FRESH FRUITS
2 cups milk
2 tbsps rice flour mixed with ¼ cup lukewarm water till smooth
2 tbsps sugar
3-4 tbsps raspberry jam
3-4 tbsps chopped mixed fruits
1. Heat milk in a pan. When it comes to a boil, add 3 tbsps rice flour paste and mix well. Cook till mixture thickens a little.
2. Add sugar and mix till sugar dissolves completely.
3. Cool and pour into thin long glasses.
4. Drizzle some raspberry jam on top and garnish with chopped mixed fruits of your choice and serve.

Hoşaf - is a Turkish dessert made of dried fruits like raisins, dried prunes, apricots, figs and etc..boiled in water with some sugar and left to cool. Hoşaf may also contain cinnamon or cloves.
It is often consumed with dishes without juices, such as pilaf and makarna, just like cacık. It is especially consumed during Ramadan as tradition.
Differently from kompot, hoşaf is always served cold. Whereas the similar and more universal, fresh fruit compote is called komposto in Turkish..

Summer Berry Compote Recipe!
Compote (French for mixture) is a dessert originating from 17th century France made of whole or pieces of fruit in sugar syrup. Whole fruits are immersed in water and with sugar and spices added to the dish, over gentle heat. The syrup may be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, ground almonds, grated coconut, candied fruit, or raisins. The compote is then served either warm or chilled arranged in a large fruit bowl or single-serve bowl for individual presentation. The dessert may be topped with whipped cream, cinnamon, or vanilla sugar. Other preparations consist of using dried fruits which have been soaked in water in which alcohol can be added, for example kirsch, rum, or Frontignan. Summer Berry Conserve

Cook Time: 10 minutes to 2 hours (depending on your preference)
• 4 cups of quartered strawberries, blackberries and raspberries
• peel of ½ a lemon with white part
• ¾ cup of sugar
• pinch of salt
Mix all ingredients in a saucepan and let sit for at least 2 hours (Not necessary though). Bring to a simmer and cook fruit for 3 to 4 minutes. Remove fruit from syrup with slotted spoon and reduce fluid by at least half or until it coats a spoon and a finger drawn through the syrup holds its edges. Pour syrup over fruit and refrigerate for up to a month. Add the berry conserve to ice cream, dessert empanadas…ANYTHING.

Spicy Dried Fruit Compote
- Vanilla sugar (1 package),
- water (5 l),
- dried pears (200 g),
- dried apples (200 g),
- dried plums (200 g),
- dried smoked plums (4 pcs.),
- dried apricots (200 g),
- dried figs (200 g),
- cloves (2 teaspoons),
- cinnamon stick (4 pcs.),
- anise stars (4 pcs.)
Fill all ingredients with water. Boil. Cook on low heat for 20 minutes. Leave to cool.

How to make an authentic Egyptian khosha which is a very populat starter at the holly month on Ramadan.
Use equal parts of the following or what appeals to you, we usually increase the amount of dried plums.
1/2 cup dried figs- use whole or cut into small pieces.
1/2 cup dried apricots- use whole or cut into small pieces..
1 cup dried plums- use whole .
1/2 cup dried cranberries or raisins.
5 cup hot water or to cover.
1 Tablespoon sugar.
1/2 teaspoon orange blossom water.
Nuts of your choice, preferably almonds and pine nuts.

So if you are anything like me you have a ton of dried fruit in your pantry that has been sitting there for months and months. You've probably got dried apricots, dried prunes, dried figs, dried cranberries, and that right there is a perfect combination to make a fruit compote. You want to take your fruits, put them in a stock pot like this. You add all the ingredients, cover them with water. You can use sugar, I don't, I think it's sweet enough as is. I usually put a splash of Sherry and a peel or two of orange. Bring it to a boil, then turn it to a simmer. It's going to go for about twenty to thirty minutes and you're going to notice it becomes syrupy and that's when it's done. I serve it over yogurt, ice cream; sometimes I just eat it plain. Voila, something to do with all those wonderful dried fruits that costs you too much to throw away.
