How to make an authentic Egyptian khoshaf which is a very popular starter at the Holy month of Ramadan.
No sugar, Orange juice, rose water, apricot juice added for flavor. This dried fruit compote reflects that tradition, but it also combines other highly nutritional dried fruits and nuts.

Pudding make with rice and milk topped with fresh cut fruits.
RICE PUDDING WITH FRESH FRUITS
2 cups milk
2 tbsps rice flour mixed with ¼ cup lukewarm water till smooth
2 tbsps sugar
3-4 tbsps raspberry jam
3-4 tbsps chopped mixed fruits
1. Heat milk in a pan. When it comes to a boil, add 3 tbsps rice flour paste and mix well. Cook till mixture thickens a little.
2. Add sugar and mix till sugar dissolves completely.
3. Cool and pour into thin long glasses.
4. Drizzle some raspberry jam on top and garnish with chopped mixed fruits of your choice and serve.

Compote is a traditional and popular beverage served at the end of Christmas Eve. It is made from cooked dried and smoked fruits, typically plums, apples, pears, raisins and apricots.
Ingredients for our dried fruit compote recipe:
- 100g dried apples
- 100g dried plums
- 100g dried pears
- 50g raisins
- 50g dried cherries
- 3 cinnamon sticks
- 3 whole cardamom seeds
- 1 teaspoon cloves
- 2 tablespoons sugar
- 3 litres water
Spicy Dried Fruit Compote
- Vanilla sugar (1 package),
- water (5 l),
- dried pears (200 g),
- dried apples (200 g),
- dried plums (200 g),
- dried smoked plums (4 pcs.),
- dried apricots (200 g),
- dried figs (200 g),
- cloves (2 teaspoons),
- cinnamon stick (4 pcs.),
- anise stars (4 pcs.)
Fill all ingredients with water. Boil. Cook on low heat for 20 minutes. Leave to cool.

How to make an authentic Egyptian khosha which is a very populat starter at the holly month on Ramadan.
Use equal parts of the following or what appeals to you, we usually increase the amount of dried plums.
1/2 cup dried figs- use whole or cut into small pieces.
1/2 cup dried apricots- use whole or cut into small pieces..
1 cup dried plums- use whole .
1/2 cup dried cranberries or raisins.
5 cup hot water or to cover.
1 Tablespoon sugar.
1/2 teaspoon orange blossom water.
Nuts of your choice, preferably almonds and pine nuts.

Summer Berry Compote Recipe!
Compote (French for mixture) is a dessert originating from 17th century France made of whole or pieces of fruit in sugar syrup. Whole fruits are immersed in water and with sugar and spices added to the dish, over gentle heat. The syrup may be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, ground almonds, grated coconut, candied fruit, or raisins. The compote is then served either warm or chilled arranged in a large fruit bowl or single-serve bowl for individual presentation. The dessert may be topped with whipped cream, cinnamon, or vanilla sugar. Other preparations consist of using dried fruits which have been soaked in water in which alcohol can be added, for example kirsch, rum, or Frontignan. Summer Berry Conserve

Cook Time: 10 minutes to 2 hours (depending on your preference)
• 4 cups of quartered strawberries, blackberries and raspberries
• peel of ½ a lemon with white part
• ¾ cup of sugar
• pinch of salt
Mix all ingredients in a saucepan and let sit for at least 2 hours (Not necessary though). Bring to a simmer and cook fruit for 3 to 4 minutes. Remove fruit from syrup with slotted spoon and reduce fluid by at least half or until it coats a spoon and a finger drawn through the syrup holds its edges. Pour syrup over fruit and refrigerate for up to a month. Add the berry conserve to ice cream, dessert empanadas…ANYTHING.

For this recipe I'm making a Strawberry Compote. It is so easy to make. Just take fresh strawberries and some sugar, and cook them until the strawberries soften and their juices become wonderfully thick and syrupy.

Easy Dried Fruit Compote
Tea Infused Fruit Compote
Makes 2 cups
3 chai tea bags or 2 tablespoons loose chai tea
2 tablespoons honey
1/2 cup chopped dried apricots
1/2 cup chopped dried apple rings
1/2 cup raisins
1/2 cup dried cranberries
1/4 cup chopped pitted prunes
1/4 cup dried wild blueberries
Bring 2 cups water to a boil in a large saucepan. Turn off the heat, add the tea bags, and steep for 5 minutes. Strain or discard the tea bags.
Add the honey, apricots, apple rings, raisins, cranberries, prunes and blueberries to the saucepan and bring to a boil over high heat. Reduce the heat to medium low and simmer, uncovered, stirring occasionally, until the liquid thickens to a light syrup, 18 to 20 minutes. (It will thicken further as it cools.) Transfer to a bowl, cover, and chill for at least 4 hours and up to 3 days.
Serve the compote warm or cold over yogurt or oatmeal. Top with the toasted almonds if desired.

During the holy month of Ramadan, Egyptian used to make the khoshaf to make up for the amount of water lost during the daytime period, It is often the first thing that Egyptians eat when breaking their fast. The khoshaf is composed of a group of dried fruits, so it is of nutritional value important to human health. It provides the body with minerals and elements that were lost during the fasting period, fights thirst, and moisturizes all parts of the body. Preparing the Ramadan ritual is considered a simple matter, as it does not require much effort.

●cup (30g) dried apple rings
●cup (75g) dried peaches
●cup (75g) dried apricots
●cup (85g) pitted prunes
●Low fat natural yogurt, to serve, optional

So if you are anything like me you have a ton of dried fruit in your pantry that has been sitting there for months and months. You've probably got dried apricots, dried prunes, dried figs, dried cranberries, and that right there is a perfect combination to make a fruit compote. You want to take your fruits, put them in a stock pot like this. You add all the ingredients, cover them with water. You can use sugar, I don't, I think it's sweet enough as is. I usually put a splash of Sherry and a peel or two of orange. Bring it to a boil, then turn it to a simmer. It's going to go for about twenty to thirty minutes and you're going to notice it becomes syrupy and that's when it's done. I serve it over yogurt, ice cream; sometimes I just eat it plain. Voila, something to do with all those wonderful dried fruits that costs you too much to throw away.
Australian Dried Fruit Muffin Recipe
Aussie muffins are so called because they contain so many good Australian grown ingredients,such as macadmia nuts and dried fruits. Use whichever fruits you prefer.
1 cup bran
1 cup plain flour
1 tsp bicarbonate soda
1 large egg
3 tbsp light oil,
(canola or sunflower)
(warmed through to soften)
1 cup reduced fat milk
1 tsp vanilla essence
1 tbsp chopped dried apricots
1 tbsp chopped dried dates
1 tbsp chopped dried peaches
1/2 tbsp chopped sultanas
2 tbsp chopped macadamia nuts,
(or blanched almonds)
Mix the bran, flour and bicarbonate of soda together, set aside.
Mix the egg, oil, honey and milk together, then add it to the dry ingredients. Mix well.
Finally stir through the vanilla essence, dried fruits and macadamia nuts. Cover with plastic wrap and leave overnight or at least 2 hours.
Give the mixture another stir before spooning it into patty pans. Allow a little room for expansion.
Bake in 180C oven for 25-30 minutes.
Keepability: keeps for 2-3 days in an airtight container.
Serve with... a little yoghurt, honey and a grating of orange rind.
