Apple Jelly Making with Peelings
It's the time of year when apples are dripping from the trees and there are so many ways to make the most of them from freezing to chutney or jam making. Home made mincemeat made now will be perfect to use by Christmas and so much nicer than store bought. Even if you peel, core and prepare your apples for freezing there is the makings of jelly in the peelings so don't throw them away until they have been boiled up first to make a delicious preserve. Crab apples make the best jelly as they have the highest pectin content but cooking apples come a close second. Here is a basic recipe for Apple Jelly, delicious on scones and toast or slightly melted to pour over ice cream....
3 lbs cooking or crab apples. Small batches can also be made from cooking apple peelings and cores!
1½ - 2 pints water
Wash the fruit, remove any bad bits then chop roughly. Place in a cooking pan with just enough water to cover, bring to the boil and simmer gently for 1 hour.
Pour the pulp and juice into a jelly bag and drain preferably overnight into a clean bowl without pressing the fruit or the jelly will be cloudy. Measure the juice and allow 1 lb sugar for each pint of juice. Place the juice and sugar in a preserving pan and bring to the boil slowly stirring until the sugar is dissolved. Boil rapidly until setting point is reached, skim and put into hot clean jars and cover immediately.
Apple Ginger Jelly
Place 1-2 oz bruised root ginger in a muslin bag and add at the beginning of cooking.
Apple Lemon Jelly
Place the thinly peeled zest from two lemons in a muslin bag at the beginning of cooking.
Apple Clove Jelly
Place 8 cloves in a muslin bag at the beginning of cooking.
Apple Cinnamon Jelly
Place 1 cinnamon stick in a muslin bag at the beginning of cooking
Apple Mint Jelly or Apple Sage Jelly
Add the juice of 2 lemons to the apples when cooking. Place a bunch of fresh mint (or sage) in a muslin bag at the beginning of cooking and green colouring can be added with the sugar. If you want herb flakes in the jelly use dried mint or sage to taste instead and put it straight into the jelly after skimming.
It's that time of year. Yes, tis' the season for family, joy, love, and, well, gift giving. But gift giving doesn't need to be all about money! It can be about time, and love. Make your favorite cookies or baked good, wrap a dozen of them up nicely, and give it to someone you love. Or why not make some jam with fruits that are in season, put it in a mason jar, slap on a bow, and voila! A wonderful gift that says I love you.
Sold? Me too.
Here's what you need:
8 medium sized apples, half gala, half granny smith
2 1/2 cups of water
2 cups sugar
1 teaspoon lemon juice
6 teaspoons ground cinnamon
1 1/2 teaspoon cloves
2 teaspoons ginger
1 teaspoon nutmeg
1/2 teaspoon salt
1. Peel and core the apples. Cut them into cubes, small to medium dice and place them in a large pot.
2. Add the water, sugar, lemon juice and spices to the pot.
3. Stir it all together and bring it to a boil. Once boil, turn the meat to medium so that the mixture can simmer vigorously for 35-40 minutes. Stir every 5-7 minutes to keep the jam from sticking.
4. After 35 minutes, spoon out a small amount of jam and place into a small bowl. Place the bowl in the freezer for about 10 minutes, or until set. If you like the consistency, your jam is ready! If not, let the jam continue cooking and reducing, doing the freezer test every 5 minutes until you get the consistency you want.
5. Once done, remove from the stove and cool completely. Gift the jam by placing it into sterilized mason jars, or just place the jam in a glass, airtight container. Stays in the fridge for up to one month, and in the freezer for up to 1 year.

Making homemade jelly is easy and tasty, too!
How to Make Homemade Crabapple Jelly
Crabapple jelly is fun and easy to make! It takes a little longer than jam as you have to strain it first, but it's definitely worth the extra effort.
Equipment you may need:
Jars (4oz) -
Muslin/Cheese Cloth -
Jelly bag -
Waterbath Canner Starter Set -
Potato Masher -
I used 5.5 lbs of crabapples, which made 10 x 125ml (1/4 pint) jars.
- place trimmed crabapples in a large saucepan and add 1 cup of water for every pound of crabapples.
- bring to a boil over medium-high heat.
- boil for 15 min and then crush crabapples with a potato masher and boil for a further 5 min.
- strain the crabapples through a jelly bag or cheese cloth into a container for at least 2 hrs or overnight.
- place a small plate in the freezer for checking set point later.
- place juice in a saucepan and add 2/3 cup sugar for every cup of juice.
- bring juice and sugar gently to a boil while stirring constantly. Continue to boil for 15-18 min while stirring.
- after 15 min, remove the plate from the freezer and add a small amount of jelly onto the plate and return to the freezer for 1 min.
- remove plate again and run finger through the jelly. If the jelly wrinkles, it's ready. If not, continue to boil jelly for another couple of minutes and test again.
- remove jelly from heat and skim any foam/scum off the top.
Smaller pan for lids
Large pan/stockpot for canning – I use a 21 qt. canner that has a jar rack as well.
- wash jars and lids with hot and soapy water and rinse well.
- to sterilize jars, place jars in canner with just simmering water. Leave the jars in there until ready to use.
- warm lids (do not boil) in smaller pan.
- pour hot jelly into jars.
- make sure there's no jelly on the rim of the jars that could affect the seal. Clean with a damp cloth.
- place lids on top of jars and screw on bands until finger tight.
- place jars in canner and lower into water. Make sure there's at least 2 inches of water over the top of the jars. Bring water to a boil and process jars for 10 min. Use the following chart to adjust water canning times for different altitudes:
Altitude (feet) Increase processing time
1001 - 3000 5 minutes
3001 - 6000 10 minutes
6001 - 8000 15 minutes
8001 - 10000 20 minutes
- remove jars from water and place on a towel for at least 12 hrs. During this time you'll hear each of the lids pop as they seal.
- check the jars have sealed properly – they shouldn't move up and down when you press in the middle of the lid. If a jar hasn't sealed, you can refrigerate it and eat it or you can process the jar again using a new lid.
- keep processed jars in a cool, dry and dark place. They will last for about 1 year. Enjoy!

Make your own, quick & easy APPLE JAM! Homemade apple jam.
Hi! welcome to another video, where I share my favourite apple jam that I use for breakfasts and desserts! This video was made for fun. It is not a cooking channel, but I wanted to share my favourite easy apple jam in a creative, fun way and that's how I hope you will treat this video. If you're looking for comprehensive cooking instructions, please refer to cook books and such channels before you leave negative feedback here, thank you!
Music by super talented Ross Bugden! Make sure to check out his channel, lots of amazing compositions.
You will need:
- Apples, sugar, a little bit of water, cinnamon if you like.
- Pot, jars, decorating tape.
Prepare the apples and cut them into small pices (the smaller pieces, the faster they will be ready). Put them in the pot and add a little bit of water and add sugar (as much as you wish). It's best to use coconut or brown sugar.
Boil the water and lower the heat, then cook on low temperature for a while. Check when apples are soft (you can speed it up by smashing them). If you feel that apples are getting dry, you can add more water. Remember to stir! :)
When ready, place your delicious jam into jars and decorate!
And there you have it, extremely useful and healthy homemade jam, which you can:
add to fruit salad
add to porridge/granola/yoghurt
use as a regular jam on toast, bread, pancakes...
give to someone as a gift :)
The jam can be stored in the fridge for a few days but be careful and do not exceed it. Up to three days should be just fine!
