Oysters Rockefeller Recipe: fresh oysters on the half shell coated in cream, spinach and cheese for an unbelievable flavor that is sure to wow your guests.
I remember the first time I saw an oysters Rockefeller. I thought it was beautiful the way the oyster shells were still being used on the bright white plate. The extra parmesan cheese everywhere. It just, caught my eye. I never in a million years wanted to eat an oysters Rockefeller because it was an oyster so no way.

Oysters Rockefeller Recipe
• 2 tablespoons of olive oil divided use
• 1/2 whole small diced yellow onion
• 2 cloves finely minced garlic
• 2 cups heavy cream
• 4 cups packed baby spinach
• 24 whole shucked oysters on the half shell oysters and shells divided
• 1/4 cup chardonnay wine
• ½ ounce julienne prosciutto ham
• 2 ounces shredded asiago cheese
• ½ cup breadcrumbs
• shredded Parmesan cheese
• sea salt and fresh cracked pepper to taste
Prep Time: 20 minutes
Cook Time: 10 minutes
1. Preheat the broiler to high heat. In a large sauté pan on medium-high heat with 1 tablespoon of olive oil, caramelize the onions and garlic. Once brown add in the cream, turn the heat down to medium and reduce until the cream is the consistency of Alfredo sauce.
2. Once the heavy cream is to the desired consistency add in the baby spinach and cook until mixed in and slightly wilted. Season the mixture with salt and cracked black pepper. Set pan aside.
3. In a separate medium sauté pan on medium-high heat with 1 tablespoon of olive oil add in the raw oysters (without the shell) and sauté for 1 to 2 minutes to slightly cook. Add the Chardonnay wine to deglaze the pan while you sauté the oysters for a further 2 minutes.
4. Place the oyster shells on a sheet pan that you’ve lined with parchment paper and divide the cooked oysters amongst the shells. There should be 1 oyster for 1 shell.
5. Top each oyster with a little bit of the cream-baby spinach mixture followed up with julienne prosciutto ham and shredded Parmesan cheese. Note: Simply divide all the ingredients between the oysters.
6. Broil the pan of oysters in the oven on high for 2 minutes or until the cheese is melted and golden brown.
7. To Plate: Remove oysters and shells from the pan and add to a tray along with lemon slices.
How to Make Creamy Oyster Chowder (Recipe Updated only not the video)
This recipe has evolved over the past year or so as noted with asterisks next to items that have been added or changed. I advise you to only use the oyster juice if you have a sieve, coffee filter, or cloth to strain out the sand and shell debris first. Also, rinse your oysters gently several times under cold running water. This will remove 99% of the grit and any remaining will be undetectable. I do plan to make a follow-up video with all the changes. This chowder is not for the health-conscious among us. It is fatty, greasy, high in calories, and carbs. But, that is also why it is so delicious and why we only eat this in our home during the winter holidays once or twice during the entire year. Make certain to plan your next cholesterol screening either before or 3 months after this meal. Enjoy!

3-4 green onions sliced thinly (reserve one for garnish)
*1 Leek thinly sliced
4 slices of bacon plus the grease
*2 lbs diced white potatoes
*8 oz portabella mushrooms
*3 to 4 Shitake mushrooms if available.
*2 tbsp chopped fresh parsley
1 tbsp paprika
1 heaping tsp Cajun seasoning or Old Bay
1 cup chopped white or yellow onion
*coarse ground black pepper to taste
*2 stick of unsalted butter (or salted butter)
1 tbsp of fish sauce or a tablespoon of smashed anchovies
1 small bunch (4-5 stalks) celery thinly sliced
32 ounces half and half (or 16 ounces milk and 16 ounces heavy cream)
Final tip: NEVER boil the cream or oysters! The cream will curdle. It will taste fine but look a little weird.
Side note: For this recipe, I used the NuWave induction hot plate because it is so much easier to control the temperature and keep the chowder from boiling.

Homemade Oyster Stew
8-10 Oysters (based on size)
2 Shallots, diced
3-4 Celery stalks
3 oz (3-4 slices) Edwards Surryano Ham, thinly sliced
2 Tbsp butter
White Wine for deglazing
3-4 cups heavy cream
1-2 tsp tabasco
Coarse sea salt
Fresh black pepper
Sprouts to garnish
Annatto Oil (extra virgin olive oil, Annatto seed)
•Shuck oysters, saving liquid. Dice shallots and celery (including leaves). Set aside.
•Stack surryano ham slices and roll together, thinly slice strips.
•Add butter to sauce pan on medium heat. Once butter is melted, add ham and allow to slightly render fat.
•Combine shallots and celery in pan, cook for 1 minute.
•Add oysters, cook for about a minute and a half, stirring to combine ingredients.
•Turn heat to medium-high and deglaze pan with white wine (Chef David likes the Midsummer’s Night’s White for this recipe).
•Add 3 cups heavy cream (up to 4 for richer, looser stew) and cook at rolling boil for 8 minutes. Remove from heat.
Chef David’s plating tip: Place oysters and stew solids into bowl first, then add liquid. Garnish with sprouts and annatto oil.
To make annatto oil, combine 1 part annatto seed to 2 parts extra virgin olive oil. In small pan, heat oil on medium heat. Add seeds, cooking for about 30 seconds to infuse color, remove from heat and allow to cool. Once oil is cool, strain seeds and toss. Store oil until ready to use.

Rockefeller & Somerset oysters-
* 2 dozen raw oysters (in shell)
* 1 lb raw spinach
* 1/2 red onion, chopped
* 1 cup white wine
* 1/4 cup Perno liqueur
* 3 dashes Worcestershire sauce
* 1 cup parmesan cheese, grated
* 1/3 cup oyster liquor (juice from oyster)
* 1/2 cup whole milk
* 1/3 cup bread crumbs
* 1/2 tsp crab seasoning
* 1 tbsp smoked paprika
* 5 tbsp butter, salted
* 5 tbsp flour
* salt and pepper, to taste
* 1/2 cup ketchup
* 2 tbsp horseradish
* 1/2 lemon, juice only
* 1 tbsp sriracha
* 2 dashes Worcestershire sauce
* 1/3 tsp crab seasoning
* 4 tbsp red onion, small diced
* 1/2 cup red wine vinegar
* 1 tsp black pepper, freshly cracked
* 1/3 cup Old Bay seasoning
* 1 tbsp salt
* 1/2 tbsp black pepper
Crab Seasoning: Combine all spices in a bowl. Mix well.
Cocktail Sauce- Combine all ingredients in a small bowl. Mix well. Season and adjust sauce accordingly.
Mignonette Sauce- Combine all ingredients in a small bowl. Mix well. Season and adjust sauce accordingly.
Oyster Rockefeller- Shuck a dozen raw oysters. Preheat oven to 400ºF. Pour the juice from the oyster in a small bowl and set aside. KEEP THE SHELLS! Heat a pan over medium high heat. Melt your butter in the pan. Slowly incorporate you flour, whisking constantly, until you have made a roux. Add red onions and sauté for 2 minutes. Slowly pour in 1/2 cup of white wine. Continue to whisk until the wine is absorbed and the roux is no longer sticking to the pan. Remove half of the roux and set aside. With the remaining roux, begin tearing your spinach and adding it to the pan. Cook out all of the moisture from the spinach. Slowly whisk in whole milk until the sauce has a creamy consistency. Season with crab seasoning. Add Perno liqueur to taste! Remove sauce from heat and let cool. Once cooled, pour sauce over each oyster until the oyster is completely covered. Sprinkle parmesan cheese and bread crumbs on each oyster. Cook oysters in oven for about 8-10 minutes.
Somerset Oysters- Shuck a dozen raw oysters. Preheat oven to 400ºF. Reheat leftover roux in a medium high heat pan. Slowly whisk in white wine until sauce is smooth. Once smooth, begin whisking in the oyster liquor. Season with a few dashes of Worcestershire sauce. Mix well. Slowly incorporate grated parmesan cheese into sauce. Whisk constantly. Cook sauce until wine has cooked out. Season with salt and pepper to taste. Remove from heat and set aside to cool. Cover each oyster with sauce and sprinkle grated parmesan on each oyster. Lightly dust with smoked paprika. Place in oven, and cook for 8-10 minutes.

Cream Dory and Bok Choy with Oyster Garlic Sauce
Total: 30 minutes
Prep: 5 minutes
Cook time: 25 minutes
Yield: 3- 6 servings
Bok Choy with Oyster Garlic Sauce
250 grams Bok Choy
2 tablespoon olive oil
6 cloves garlic minced
3 tablespoon oyster sauce
6 tablespoons water
-Preheat the pan
-Pour the olive oil
-Saute the minced garlic
-Saute until golden brown
-Put half of the sauted garlic it in a saucer with a paper towel to drain excess oil
-Put the oyster sauce
-Put the bok choy
-Cook it for 5 minutes
-Set it aside
Pan-fry Cream Dory
1 kg. Cream Dory (3pcs, 1 pc. cut into half)
1 tablespoon olive oil
⅓ cup Cornstarch
-Cut the cream dory in half
-Make sure cream dory is not frozen
-Pat dry your fish with a disposable paper towel to remove the excess water
-Preheat the pan
-Put the cornstarch, salt, pepper, oregano, spanish paprika in your shaker canister (any canister with lid)
-Shake your cream dory inside the canister
-Pour the olive oil
-Pan-fry the cream dory
-Fry the fish for 20 minutes, flip the fish every 5 minutes until golden brown
-Put it on a plate with a paper towel
-Arrange it on your plate the way you want it
-Set it aside
Refrigerator 2-3 days in an airtight food storage container

Oyster & Shrimp Bisque, Creamy, Cheesy Goodness
New Orleans style bisque is a creamy delicious dish served with French bread. This is a cross of Oysters Bienville and Oysters Rockefeller made into a dip or hearty soup and can be served as an appetizer. Call it what you want but this creamy seafood cheese sauce is perfect for toasted French bread and perfect for the holidays.
OYSTER SHRIMP DIP
1 STICK OF BUTTER
½DICED BELL PEPPER
½ DICED LARGE ONION
5 CLOVES MINCED GARLIC
3 SLICES OF BACON DICED
1 BUNCH OF CHOPPED SPINACH
4 TBS OF FLOUR
6 OZ OF SHRIMP STOCK
6 OZ OF OYSTER LIQUOR
16 OZ OF WHIPPING CREAM
½ CUP OF BREAD CRUMBS
2 TBS OF CAJUN SEASONING
2 OZ OF HOT SAUCE
FRENCH BREAD SLICES
SOFT BUTTER FOR BREAD
½ LB OF SHRIMP CHOPPED
1 QT OF FRESH OYSTERS
½ cup grated Parmesan cheese
½ cup of shred provolone/mozzarella cheese
Fry bacon till crispy and add chopped spinach. Cook till wilted and remove from pan.
Add olive oil and melt butter then add all vegetables to cook till tender,
Add flour to make a blonde roux then add the bacon and spinach back to the pan.
Saute for 5 minutes then add shrimp and oyster liquor while stirring.
Add whipping cream and simmer while stirring till it thickens up, maybe 5 minutes.
Turn off the heat and add the cheese while stirring
Fill up a stoneware dish ½ way with the cheese sauce then layer the oysters with more cheese and breadcrumbs, top it off with the rest of the cheese sauce, cheese and breadcrumbs.
Bake at 400 for 20 minutes then broil on high for 10 minutes.
Top with more cheese and serve with toasted French bread.

Although this classic dish has had a treasured spot on Southerners’ holiday tables, you’d be hard-pressed to find two cooks who make it the same way—or even call it the same thing. Depending on where you grew up, you might know it as oyster dressing, oyster pie, or even scalloped oysters. Recipes vary widely, with the exception of a few common components: oysters, a rich and creamy sauce, and a crispy topping, often Ritz Crackers, saltines, or breadcrumbs. Our Test Kitchen looked back at all of our recipes, and, after some tinkering, came up with what we think is the best version ever: plump oysters baked in a rich Parmesan cream sauce and topped with buttery breadcrumbs. Crumbled crackers often top this casserole, but we prefer homemade breadcrumbs because they soak up more butter.
Whatever name you give it, or however you serve it, it will remain a favorite decadent Christmas tradition.
