Coffee Ice Cream Cake
Learn how to make my coveted coffee ice cream cake! This ice cream cake is pretty simple to make but loaded with so much rich warm flavor with all the coolness of summertime ice cream fun. We start off with a crisp oreo almond crust crowned with a layer of Guittard ganache and caramel drizzle. Generous layers of vanilla bean, coffee, and chocolate Häagen-Dazs ice cream make up the bulk of this cake and topped off with another layer of chocolate and caramel with some almond slices for a nice crunch!

Kadhai/Cooker(No whistle & gasket): Preheat at medium flame for 10 min. Bake at medium flame for 10 min & then at low flame for 10-15 min
OTG/Convection: Preheat at 180°C for 10 min. Then bake for 15-20 min.

1/2 Cup All Purpose Flour (Maida)
6 Tbsp Powdered Sugar
2 Tbsp Cocoa Powder

Ice Cream:
1/2 Cup Milk
1 Tsp Instant Coffee Powder

INGREDIENTS & PROCESS:
1.5 CUP ALL PURPOSE FLOUR
1/3 CUP COCOA POWDER
1/4 ALMOND FLOUR
1 CUP POWDER SUGAR
1 TEASPOON BAKING POWDER
1/4 TEASPOON BAKING SODA
1/4 TEASPOON SALT
2 TEASPOON INSTANT COFFEE
MIX ALL INGREDIENTS
3/4 CUP MILK
1/4 CUP MELTED DARK CHOCOLATE
1/2 CUP OIL
1/2 CUP CONDENSED MILK
MIX THE OIL & MILK MIXTURE GRADUALLY
8 INCH OVAL SHAPED GLASS MOULD (OVENPROOF)
POUR THE MIXTURE INTO THE MOULD
COOK IT IN MEDIUM LOW HEAT FOR 40-45 MIN.
CAKE IS READY, COOK COMPLETELY
1 CUP WHIPPING CREAM
BEAT FOR A WHILE
2 TEASPOON SUGAR
BEAT UNTIL STIFF PEAKS
1/2 CUP MELTED CHOCOLATE
MIX IT WITH THE CREAM
PRICK THE CAKE USING A FORK
1/2 CUP MILK
4 TEASPOON DRINKING CHOCOLATE
POUR THE MILK OVER THE CAKE
WAIT FOR SOAK THE MILK
POUR THE CHOCOLATE CREAM OVER THE CAKE
DECORATION WITH THE CHOCOLATE SYRUP

Ingredients:
• Sugar 3-6 tbsp (as per taste) (powdered)
• Glucose biscuit 20-15 no.
• Cocoa powder 4 tbsp
• Walnuts ½ cup (roasted and crushed)
• Butter 150 gm
Method:
• Take a zip lock bag and add the glucose biscuits, crush them with a rolling pin. You can prefer any kind of biscuit they can be chocolate biscuit or any tea time biscuits.
• In a bowl add the crushed biscuits, cocoa powder, powdered sugar, walnuts and butter, mix well. Its better if you use soft butter that will save you your effort and time in mixing the mixture evenly and well.
• Line a bowl with butter paper or just simply grease the bowl with butter and pour in the mixture, press the mixture with a spatula and set it in the fridge for 10-15 minutes.
• take it from the fridge and demould the cake, decorate the cake with either cocoa powder, chocolate shavings, chocolate syrup, any fruit jam or anything that suits your palate.
• You cake is ready to be served.

Recipe for the cake in grams and cups:
- 80 gr All Purpose Flour( 1/2 cups + 2 tbsp)
- 50 gr Unsweetened Cocoa Powder ( 7 tbsp)
- 150 gr Sugar (3/4 cup)
- 60 gr Butter or any flavorless Oil (1/2 stick butter OR 4 tbsp flavorless oil)
- 1/2 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1 Egg
- 125 gr Hot Milk (1/2 cup)
- 2 tbsp Hot Coffee
- Pinch of Salt
For the Chocolate Caramel/Syrup:
- 100 gr White Sugar (1/2 cup)
- 50 gr Water( use milk for a richer caramel) (1/4 cup)
- 1 tbsp Cocoa Powder
NOTE: To avoid crystallization, try to not stir your chocolate caramel. If you'd like a more in deapth explanation on how to make caramel, click here:
For the Ganache:
- 200 gr Dark Chocolate (7 ounces)
- 150 gr Heavy Cream (2/3 cup liquid heavy cream)

Learn to bake a classic devil's food cake with Anna. Click on 'SHOW MORE' below for recipe ingredients and baking instructions.
Makes a 2-layer, 8-inch cake.
Devil's Food Cake ingredients:
1 ½ cup (195 g) cake and pastry flour
1 ⅓ cup (295 g) superfine (quick dissolve) sugar
½ cup (60 g) Dutch process cocoa powder
¾ tsp (4 g) baking soda
¼ tsp (2 g) salt
½ cup (115 g) cool, unsalted butter, cut into pieces
½ cup (125 ml) hot, strong brewed coffee
½ cup (125 ml) milk
1 tsp (5 ml) vanilla extract
2 large large eggs, room temperature
Ingredients for the Fudge Frosting:
12 oz (340 g) semisweet chocolate, chopped
1 ¾ (425 ml) cup whipping cream
½ cup (125 ml) sour cream
½ (3 ml) tsp vanilla extract
1 pinch salt
Baking Directions for the Cake:
1. For the cake, preheat the oven to 350ºF (180ºC). Grease 2 8-inch cake pans and line the bottoms with parchment. Dust the sides of the pans with flour, tapping out any excess flour.
2. Sift the flour, sugar, cocoa powder, baking soda and salt into a large mixing bowl or into the bowl of a stand mixer fitted with the paddle attachment. Add the butter cutting it in (if in a large bowl, use electric beaters) until the mixture is a fine crumble (like the texture of fine breadcrumbs) and no large pieces of butter are visible.
3. Stir the hot coffee, milk and vanilla together and add it all at once to the flour mixture, blending until smooth. Break the eggs into a small dish and stir them with a fork and then add them to the batter, again blending on medium speed just until smooth (the batter will be very fluid). Divide the batter evenly between the prepared pans and tap them on the counter to eliminate any bubbles.
4. Bake the cakes for about 30 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cakes for 20 minutes in their pans, then tip out onto a cooling rack to cool completely to room temperature. The cakes can be baked a day ahead, wrapped and stored at room temperature before frosting.
Directions for the Fudge Frosting
1. For the frosting, place the chocolate and cream in a metal bowl and place it over a pot of barely simmering water. Stir the chocolate and cream occasionally and gently until all the chocolate has melted and the mixture is smooth. Remove the bowl from the heat and whisk in the sour cream, vanilla and salt. Let the mixture cool completely to room temperature, stir occasionally (you can chill the mixture for just a few minutes to start it setting, then let it continue to cool naturally at room temperature). Once cooled to a thicker consistency, whisk by hand to thicken just until spreadable consistency (do not whip vigorously or with electric beaters).
2. Place the first cake layers on your serving plate and, if needed, trim the cake to level it. Spread a generous layer of the frosting over the top of the cake. Trim the second cake, if needed and place this on top of the first cake layer. Spread frosting over the top and then the sides of the cake, using swirling motion with your spatula to create a nice design. Chill the cake for at least 2 hours, or until ready to serve.
3. The cake will keep, refrigerated, for up to 3 days.

This cake is a special cake for Ferrero Rocher lover. This Ferrero Rocher cake is rich, delicate, full of hazelnut and chocolate flavors. Perfect cake for birthdays, holidays or just a cake for the weekend. This beautiful cake contains 3 layers of chocolate-hazelnut cake, chocolate-hazelnut frosting, wafers and Ferrero Rocher candies.

Ingredients:
For the cake:
6 Eggs
1/2 cup (100g) Sugar
180g (6oz) Ground hazelnuts
3 tablespoons (25g) Flour
3 tablespoons (22g) Cocoa powder
2½ teaspoons Baking powder
Pinch salt
For the frosting:
260g (1 cup + 2 tablespoons) Butter, room temperature
2/3 cup (200g) Nutella
170g (6oz) Dark/milk Chocolate
Also:
40g crushed wafers
8 Ferrero rocher candies
100g (3.5oz) Chopped hazelnuts
Directions:
1. Preheat oven to 350F (175C). Line three – 8 inch (20cm) round pans with parchment paper and grease with butter.
2. Place the hazelnuts in a food processor and process until finely ground.
3. In one bowl sift flour, cocoa powder, baking powder. Stir in the ground hazelnuts.
4. In a large bowl whip eggs on high speed, slowly add sugar and whip until tripled in volume, about 10 minutes.
5. Using a spatula, gently fold the dry ingredients into the eggs in 3 additions.
6. Divide the batter between three pans and bake for 40 minutes. until a toothpick inserted in the center comes out clean.
7. Let cool for 10 minutes in the pans, release from the pan and let cool completely on cooling rack.
8. Make the frosting: in a heatproof bowl, melt the chocolate over a double boiler or in a microwave (in a 30 sec pulses) and let cool to room temperature. Add room temperature butter and Nutella. Whip until fully incorporated and fluffy.
9. Assemble: transfer 5-6 tablespoons of the frosting to a piping bag and keep for later. Place one cake layer on your serving dish, spread a layer of frosting and sprinkle with half of the crushed wafers. Place another layer of cake and repeat the process. Spread the remaining frosting on top and side of the cake.
10. For final decoration: toast the hazelnuts on a pan, crush them and coat the side of the cake. Pipe starts on top of the cake and place 1 Ferrero rocher on each star.
11. Refrigerate for 2 hours before serving.
Notes:
• I forgot to show it in the video BUT to make the cake more moist, before you spread the frosting over the cake layers brush the cake with some syrup, rum, jam+water or some other liquid. Otherwise your cake will be too dry!
• Recipe for a simple syrup to soak the cake: In a medium saucepan combine ½ cup sugar and 1/2 cup water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool.
• You can make this cake with only two layers.
• If your oven is big enough, you can bake all 3 cake pans together. My over is too small for that.
• For the decoration: I chopped the hazelnuts coarsely, But Looking back I think it is better to finely chop them.

Method:
In a large mixing bowl add all your sifted dry ingredients and give them a quick whisk.. Next add in the wet ingredients except the Hot water, and give all of this a good mix with a hand mixer or a stand mixer. Fold in the hot water and give a final mix with the mixer till everything is well combined. Give one last scrape to the bowl to make sure no dry ingredients are left at the bottom of the bowl.
Divide this batter equally between 2 6 round tins, which are greased with butter, dusted with cocoa powder and lined with parchment paper.
Bake at 350 f / 180 C for about 30-35 minutes or until a skewer inserted in the center comes out clean.

1 cup(200 g) granulated white sugar

CHOCOLATE BROWNIES l EGGLESS & WITHOUT OVEN
INGREDIENTS & PROCESS:
1/2 CUP DARK CHOCOLATE
MELT THE CHOCOLATE IN DOUBLE BOILER
1/2 CUP MELTED BUTTER
MIX WELL
1 CUP ALL PURPOSE FLOUR
1/4 CUP COCOA POWDER
1/2 TEASPOON BAKING POWDER
3/4 CUP POWDER SUGAR
MIX WELL
1/2 CUP MILK MIX GRADUALLY
1 TEASPOON VANILLA EXTRACT
7 INCH OIL GREASED SQUARE MOULD
POUR THE BATTER INTO THE MOULD
COOK IT IN MEDIUM LOW HEAT FOR 35-40 MIN.
BROWNIE IS READY, COOK COMPLETELY
REMOVE IT FROM THE MOULD
1/4 CUP HOT WHIPPING CREAM
1/2 CUP MILK CHOCOLATE
MIX UNTIL THE CHOCOLATE MELT
POUR IT OVER THE CAKE
SPREAD EVENLY
1/4 CUP WHITE & 1/4 CUP DARK CHOCOLATE

Ingredients
1 ½ (22 ml) Tbsp honey
5 tsp (25 g) baking soda
½ tsp (2 g) cream of tartar
1 cup (250 ml) water
3 ½ cups (700 g) granulated sugar
1 ½ cups (375 ml) golden corn syrup
Directions
1. Grease and line a 9-x-13-inch (23-x-33 cm) pan with parchment paper so that the paper comes up higher than the sides.
2. Have the honey measured in one dish and stir the baking soda and cream of tartar together in another dish. Have these on hand, along with a sieve, by the stove before you start cooking the sugar.
3. In a large* saucepan, place the water (water first allows the sugar to dissolve evenly), sugar and corn syrup and bring the mixture to a boil over high heat, stirring just once or twice to ensure everything is dissolving evenly. Continue boiling, without stirring, until the mixture reaches 284ºF (140ºC) on a candy thermometer. At this point, stir in the honey, and continue boiling until 300ºF (150ºC) is reached (the liquid will only be a pale amber colour, not caramelized fully). Remove the pot from the heat and using a wooden spoon quickly sift in the baking soda mixture, stirring quickly and vigorously to make sure it has been incorporated, but once the baking soda is no longer visible, stop stirring so as not to deflate the toffee. Quickly scrape the frothing mass (it will keep growing and growing!) into the prepared pan and let it set (do not spread it) until cool – this can take up to 2 hours, and it will continue to grow a little more before it sets.
4. Crack the toffee with a rolling pin to break into bite-sized pieces.
5. The toffee will keep up to 4 weeks in an airtight container.
6. *You need a large saucepan to factor in room for the sponge toffee to expand.

2 cups Sifted AP flour (I used cake flour be sure you spoon and level your flour)
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
3 tbsp Unsweetened coco powder
1 2/3 cups Granulated Sugar

INGREDIENTS :-
- Chocolate Sponge Cake
- Chocobar Ice Cream (any ice cream of choice)
- Milk (as per how many glasses required)
[We have used about 50ml for 1 glass]
- Chocolate Sauce
- Cake Crumbs (just crumble the slices of the sponge cake & u get cake crumbs :D )
- Caramel centre filled Chocolate of choice
- Blender
- Spoons/Knives
- Serving Glass
- Mixing Bowl
METHOD :-
- Add the chocolate & milk & blend it.
- Add the ice cream & blend again.
- Crumble about 4 - 5 slices of the sponge cake & add it in. Blend well until smooth.
ASSEMBLY :-
- Dress the sides of glass with chocolate sauce & swirl beautiful patterns.
- Pour the shake into the glasses.
- Top it off with cake crumbs, chocolate sauce or even a scoop of chocolate ice cream.
