150 g butter (softened)
1 cup caster sugar
1/2 cup ground almonds
1/2 teaspoon vanilla extract
6 small eggs
2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/8 teaspoon salt
1. Heat oven to 250°F. Grease 8-inch round pan with butter or oil and line with baking sheets.
2. In large bowl, beat butter, caster sugar with electric mixer on medium speed until light and fluffy. Beat in eggs until well blended. On low speed, beat in flour, baking powder salt, vanilla extract and almonds just until blended. Spread batter in pan.
3. Depending on your oven's heat, bake for 30 minutes or until tooth-pick inserted in the center comes out clean. Cool completely in pan on cooling rack, about 1 hour.
For the Icing:
1 cup of confectioners sugar
1/4 cup ground almonds
1 tablespoon of coffee (melted)
*Cream the butter, sugar and melted coffee and ice your cake as desired decorations.

40g caster sugar (细砂糖）
70g corn oil（玉米油）
70g milk （牛奶）
1 tbsp instant coffee powder （即溶咖啡粉）
1 tbsp boiling water (沸水）
120g plain flour（普通面粉或低筋面粉）
4 egg whites （蛋白）
80g caster sugar （细砂糖）
Bake in a preheated oven at 140°C for 50 minuets. Then bake at 160°C for 10 minuets.
Swiss Meringue Buttercream （瑞士奶油霜）:
100g egg whites （蛋白）
140g caster sugar（细砂糖）
250g unsalted butter（无盐牛油）
1 1/2 tbsp instant coffee powder （即溶咖啡粉）
1 tbsp boiling water （沸水）
100g almond flakes （杏仁片）

20 g all-purpose flour
Chocolate ganache: (to the top of the sponge cake)
100 g dark chocolate 65%
100 ml hot whipping cream
450 ml sweetened whipping cream
130 g cold coffee
100 g white chocolate, chopped
8 g gelatin powder
Chocolate ganache: (topping)
120 g dark chocolate 65%
120 ml hot whipping cream
ground almond brittle

Almond Coffee Cake Eggless is moist, soft, and very delicious. With coffee and almond, it gives an entirely different experience. This recipe is simple and very easy to make. But the outcome is heavenly delectable cake. A combination of almond, oil, and buttermilk makes it very moist. While the coffee provides a nice flavor and aroma, it also gives a nice color to this cake.
Detailed Recipe at
1 & ¼ Cup all purpose flour
½ Cup ground almonds
1 & ½ Tsp baking powder
½ Tsp baking soda
½ Tsp salt
¾ Cup milk + 1 Tbsp white vinegar or lime juice
½ Cup neutral flavoured oil (like sunflower, canola or vegetable oil)
½ Cup brown sugar tightly packed
¼ Cup granulated sugar
1 & ½ Tbsp coffee granules + 1 Tbsp hot water
2 Tsp pure vanilla extract
½ Tsp pure almond extract (optional)
3-4 drops of brown gel color (optional)
2 Tbsp roughly chopped almonds

Eggless Rich Coffee Sponge Cake – This cake turned out so soft and moist. I did another variation for the cream cheese frosting but you can definitely go for whipped cream frosting like in the egg version. It’s really an easy and simple cake and it’s delectable at the same time. I hope you’re inspired to make this ultimate eggless cake. Enjoy!

I am using 6-inch pan
75g (1/4 cup + 1 tbsp) whole milk, hot
2 tsp instant espresso
240g (2 cups) cake flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
150g (¾ cup) fine sugar
112g (½ cup) vegetable oil
122g (½ cup) plain yogurt
Coffee Cream Cheese Frosting
2 ½ tsp instant espresso
1 tbsp hot water
250g (1 cup + 2 tbsp) unsalted butter, softened
113g (1/2 cup) cream cheese
150g (1/2 cup) sweetened condensed milk
2 tsp coffee + 2 tsp sugar + 1 tbsp hot water
½ cup roasted crushed walnuts (to cover the cake sides)
Piping tip: 1M
Eggless Coffee Sponge Cake
1. Preheat oven at 180°C/355°F.
2. Dissolve the instant espresso in the hot milk. Set aside.
3. Sift the flour, baking powder, baking soda and salt. Set aside.
4. In another bowl, add sugar, oil and yogurt. Mix vigorously until combined.
5. Add in the sifted dry ingredients in 3 batches. Mix until combined, do not over mix.
6. Add in the coffee milk mixture in 3 batches, alternate with the sifted dry ingredients. Mix until combined. Do not over mix.
7. Transfer the batter into a 6-inch pan, greased and lined with parchment paper. Tap the pan on the table a few times to release air bubbles.
8. Bake in preheated oven at 180°C/355°F for about 30-35 min, or until inserted skewer comes out clean.
9. Let the cake cool completely before slicing.
10. Slice into the 4 sheet about 1cm height each.
Coffee Cream Cheese Frosting
1. Dissolve the instant espresso in the hot water. Set aside.
2. In a bowl, add butter. Set aside and wait until it’s softened. Once it’s softened, mix until creamy fluffy and pale.
3. In another bowl, add cream cheese. Mix until it’s soft and creamy. Add in the condensed milk. Mix until it’s well combined.
4. Add the cream cheese mixture into the creamed butter. Mix until combined.
5. Add the coffee mixture. Mix until combined.
Assemble the cake
1. Spread the coffee syrup on each layer of the cake.
2. Cover cake sides with roasted crushed walnuts.
3. Grate some chocolate on top.

½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

• 1 tsp (5g) VANILLA EXTRACT
• 1 tbsp (15g) BUTTER (room temp soft)
• 1/4 cup (35g) CHOPPED ALMOND (add some into the batter as well)
• POWDERED SUGAR
• COCOA POWDER
• FRESH BERRIES
• CHOCOLATE/VANILLA ICE CREAM
HOW TO MAKE IT:
1. In a small cup or bowl, mix coffee, cocoa powder and hot water then set it a side
2. In a bowl, whisk flour, baking powder and baking soda to combined
3. In large mixing bowl, beat eggs and sugar for about 2 minutes. Then add oil and vanilla and mix to combine. Add the chocolate coffee mixture and beat about 15 seconds
4. Sift in the flour mixture, one half at a time, beating about 10-15 seconds with each add. Be sure to scrape the sides and bottom
5. Greased and lined your pot/pan with butter, going up about 2 inches (6 cm) high. Then sprinkle chopped almonds to coat the sides and bottom
6. Pour batter on top of the chopped almonds and cover with paper towel to catch condensation
7. Bake for 2 Bake Cycles (1 hour) then check. Rice cooker varies so bake longer as needed
8. Cool for 20-30 minutes before flipping it onto a serving tray. Enjoy as it or top with your favorite toppings
Bake in pre-heated oven of 350F (175C) for 35-45 minutes. Ovens varied so check around 35 minutes and bake longer as needed.

It is a rich butter cake flavored with espresso (or coffee) and chopped walnuts. The cake is sandwiched together and frosted with a delicious whipped mixture of espresso (or coffee), mascarpone cheese, powdered sugar, and heavy cream.

Full Written Recipe for Eggless Almond Cake
Almonds ½ cup (65 gm)
Softened Salted butter 1/4th cup (45 gm)
Powdered sugar/castor sugar 3/4th cup (120 gm)
Milk 1 cup (250 gm)
Vanilla extract 1 tsp
Refined flour 1 cup (150 gm)
Baking powder 2 tsp (6 gm)
Almond (slivered) 3 tbsp + for garnish
Add the whole almonds in a grinding jar and grind well to make almond flour/powder, keep aside to be used later.
In a bowl, add soften salted butter and powdered/castor sugar, whisk well with a electric beater, till its soft, pale and fluffy.
Next, add milk and vanilla extract to the beaten sugar and butter mixture, make sure you add the milk slowly and gradually so there are no lumps, mix well.
Further add almond flour/powder and mix well.
Further add refined flour and baking powder in a sieve, sift well and add it to the mixture, mix and fold well, make sure you just mix until the ingredients come together and don’t end up overmixing at this stage.
Add slivered almonds in the mixture and mix well.
Line a loaf pan with butter paper and transfer the cake mixture in it, tap to release excess air. Top it with some slivered almonds on top.
Bake it in preheated oven at 180℃ for 30-35 minutes. Check whether the cake is done by pricking toothpick in centre of the cake, if it comes out clean it’s done, or else bake further.
Remove it from the oven and cool down to room temperature, only then the cake will come out clean.
Your tea time almond cake is ready, slice and enjoy it with your family with tea or coffee, you can also choose to put on some chocolate ganache, and further top it some chopped nuts of your choice.
