Coconut Shrimp, Simple, Crispy and Delicious
If you like coconut shrimp with a crispy coating than this recipe is made for you! A very simple recipe with delicious result. Too many recipes add a ton of ingredients, spices, herb, breadcrumbs etc. which takes away the integrity of the shrimp or prawn. (We call them prawns in OZ). This recipe is made simple so you can taste the real prawn flavour, enhanced with the tropical crunch of coconut. The prawn remains creamy inside with a crispy outer coating. You can certainly use your favorite dipping sauce, see my tips in the written recipe, but if you want to taste the real prawn flavour, then squeeze some lemon or lime juice for perfection.
These coconut shrimps are really simple to make, the butterfly cut is the hardest part, it does make a big difference so please, don’t skip that step. You can use the sweet or standard shredded coconut, that depends on your taste. Both are excellent, but if you have the option, chose the coarser variety rather than finer shred. Try and maintain the correct oil frying temperature, and don’t add to many at ones or it will cool it down. You want them to be crispy not greasy so stick to 375°F – 190°C.
Serve them with a crisp Asian salad with coriander leaves as a side dish. These are great as starter (entree) or appetizer. If making them in advance, you can reheat them by placing them in a cold oven, turned on at at 350°F – 180°C for 20-25 minutes. Enjoy my coconut shrimp, delicious!

1/2 cup all-purpose flour (for batter)

How to make Shrimp Po'boys:
1 lb shrimp
1 cup panko
1 cup unsweetened coconut
3/4 cup flour
1 cup buttermilk
½ teaspoon salt
½ teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons apricot jam
1 tablespoon chili sauce
1. Peel the shrimp, leaving the tails or not. Add buttermilk to the shrimp and marinate for up to 4 hours.
2. Mix panko, coconut, onion powder, garlic powder, salt and pepper.
3. Dip each shrimp into flour, then buttermilk, then the panko/coconut mixture.
4. Fry at 350°F for a couple minutes, until golden brown. Place on a rack to cool.
5. For the sauce, mix apricot jam and chili sauce. Add more chili sauce if you prefer it to be more spicy.

This Thai dish of Crispy Fired Coconut Prawns is wickedly delish with the coconut shining through the dish. The prawns are crispy and delectable.
CRISPY FRIED PRAWNS WITH COCONUT
16-20 jumbo prawns, shelled and deveined with tails intact
1 cup freshly grated coconut
Oil to deep fry
15-20 curry leaves
3 tbsps refined flour (maida)
1 tbsp ginger paste
1 tbsp garlic paste
Salt to taste
1¼ tsp red chilli powder
Juice of 1 lemon
1. Chop curry leaves and put them into a bowl. Add 2 tbsps refined flour, ginger paste, garlic paste, egg and mix well till smooth. Add salt and 1 tsp red chilli powder and mix again. Add the juice of 1 lemon and mix well.
2. Slit the prawns from centre and put them into the masala paste and mix well. Set aside to marinate for ½ hour.
3. Heat sufficient oil in a kadai.
4. Spread grated coconut in a plate, add 1 tbsp refined flour, salt and ¼ tsp red chilli powder and mix well.
5. Roll each prawn in this mixture and slide into hot oil. Deep fry till golden and crisp. Drain on absorbent paper.
6. Arrange them on a serving plate and serve hot.

Why go out for coconut shrimp when it's easy to make right at home?
Save this recipe:
For the shrimp:
1 lb shrimp, peeled and deveined with tails attached
2 large eggs
½ cup all-purpose flour
½ cup beer
½ tsp garlic powder
¼ tsp cayenne powder
Salt to taste
¾ cup sweetened shredded coconut
1 cup panko
For the dipping:
Apple cider vinegar
Butterfly the shrimp and keep the tails on. Season with salt and pepper.
In a bowl, combine eggs, flour, beer, and seasonings. In another bowl, combine shredded coconut and panko.
Heat oil to 350F. Dip shrimp in batter, shake off excess, and then coat in coconut crumbs. Fry several pieces at a time, until golden brown and crispy. Drain on paper towel.
Mix sauce ingredients together and serve on the side.

These crispy coconut shrimp are unbelievably delicious and easy to make. This is one of my favorite shrimp recipes. Serve them with chilli sauce and you have the perfect appetizer.

My favorite kitchen equipment:
1 pound (450g) raw shrimp, peeled and deveined with tails attached
1 cup (75g) Shredded coconut/coconut flakes
100 ml Sparkling water or beer
1 cup (125g) All-purpose flour, divided
1 teaspoon Baking powder
1 cup (90g) Panko breadcrumbs
1 teaspoon Salt
1/2 teaspoon Red chilli flakes
1/2 teaspoon Paprika
1 teaspoon Garlic powder
Chilli sauce for dipping
1. Butterfly the shrimp: insert a knife about three-quarters of the way into the shrimp at the top. Cut a slit down the center of the shrimp's back to the tail. Open the flesh of the shrimp slightly. Season with salt and pepper, set aside.
2. In a large bowl place egg, sparkling water, 1/2 of the flour (65g), salt, garlic powder, chilli flakes and paprika. Whisk until smooth.
3. In a separate bowl, mix shredded coconut and breadcrumbs.
4. In a third bowl place 1/2 cup (65g) all-purpose flour.
5. Coat the shrimp with flour and shake off excess, then dip in the batter and coat with coconut mixture, pressing gently to adhere.
6. Place coated shrimp on a baking sheet. Freeze for 30 minutes.
7. In a pan heat oil to 350F (175C). Fry shrimp in batches, about 2 minutes on each side, until golden. Transfer to a paper towel to drain.

Coconut Shrimp are super crispy on the outside with succulent juicy shrimp inside. This is an easy irresistible, fried appetizer that is incredibly delicious and always a crowd pleaser.
21-25 shrimp peeled and deveined(better to keep tails intact)
1/2 cup all-purpose flour (plain flour)
1 tbs corn starch
1/2 tsp garlic powder
1/2 tsp chilli flakes(optional)
1/2 tsp salt
2 large eggs
1 cup shredded coconut
1/2 cup panko bread crumbs
Canola oil/ vegetable oil for frying

Love coconut? What about shrimp? Well if you said yes to both, then you most definitely need to try this recipe. Just like bread and butter met and fell head over heels in love and made their marriage pop, so did shrimp and coconut...at least in my opinion. Coconut shrimp.
When we’re finally back to normal (God help us), this is one recipe you need up your sleeve when playing hostess????????. They will know for sure that you’re the real hostess with the mostess.

2 lb shrimp
1.5 cup shuddered coconut
1 cup plain Panko bread crumbs
1 cup flour (self rising or all purpose)

Ultra Crispy Fried Coconut Shrimp (with a Piña Colada Sauce!)
A healthier version of Red Lobster’s Parrot Bay Coconut Shrimp Recipe that is made with unsweetened shredded coconut, Panko bread crumbs, and then lightly pan-fried in coconut oil. Serve them with an easy pineapple and yogurt dipping sauce for dinner or in tacos for a quick lunch!
1 lb. shrimp peeled and deveined, tails on or off
⅓ cup flour gluten free 1-to-1 blend
½ tsp. paprika
¾ tsp. salt divided
¼ tsp. black pepper
1 large egg
1 Tbsp. milk almond or cashew
¾ cup unsweetened coconut finely shredded
½ cup Panko bread crumbs gluten-free
¼ - ½ cup coconut oil
Pineapple Dipping Sauce:
⅓ cup yogurt plain, Greek, or dairy-free
¼ cup crushed pineapple canned, drained
2 Tbsp. unsweetened coconut finely shredded
2 tsp. sugar or coconut sugar
⅛ - ¼ salt to taste
Place shrimp into a large bowl and add flour, paprika, ½ tsp. salt, and pepper. Toss until coated.
Whisk together egg and milk in a medium-sized shallow bowl.
Place shredded coconut, Panko breadcrumbs, and ¼ teaspoon of salt in a second, medium-sized, shallow bowl. Toss to combine.
Remove flour-coated shrimp from the bowl and dip in egg bowl. Let excess egg run off and then coat completely in shredded coconut/panko breadcrumbs. Place on a baking sheet or plate and repeat with remaining shrimp.
Add 1-2 tablespoons of coconut oil to a large non-stick or stainless steel skillet over medium heat.
Cook 5-6 shrimp for two minutes on each side, or until shrimp are done cooking. (You'll know this when they start to curl up!) Remove cooked shrimp and place on a paper towel to drain excess oil. Repeat this step with remaining shrimp.
Pineapple Dipping Sauce:
While shrimp are cooking, combine creamy pineapple dipping sauce ingredients in a medium-sized bowl. Stir until combined.
Serve shrimp immediately with creamy pineapple dipping sauce and enjoy!
Shrimp that are a 20-24 count size are recommended. You can use large or smaller, but make sure to adjust cooking time accordingly.
If you use smaller shrimp, you may run out of the coconut/breadcrumb mixture. If this happens, simply add additional coconut and breadcrumbs in a 3:2 ratio with a pinch of salt and continue breading your shrimp.
If oil looks brown after cooking a batch or two, drain coconut oil and add an additional 1-2 tablespoons of coconut oil.
