INGREDIENTS FOR CLAM CHOWDER SOUP:
►6 slices bacon, cut into 1/2″ strips
►2 medium carrots, sliced into thin rings or half rings
►2 celery ribs, finely diced
►1 small onion, finely diced
►4 Tbsp all-purpose flour
►2 cups chicken broth or stock
►1 cup chopped clams with their juice (from 2 small cans)
►1 bay leaf
►1 1/2 tsp Worcestershire sauce
►1/2 tsp Tabasco sauce
►1/2 tsp dried thyme
►1 1/2 tsp salt and 1/4 tsp black pepper, or to taste
►1 1/2 lbs (6 medium) potatoes (Yukon gold or russet), peeled
►2 cups milk (any kind)
►1 cup whipping cream or heavy whipping cream

How to Make the Best Clam Chowder. Full recipe
3 cans clams (6.5 oz) minced
1 pc onion (medium size) minced
2 stalks celery diced
2 pcs potatoes (large size) cubed
2 cups water
3/4 cup butter
3/4 cup all-purpose flour
1 quart half-in-half cream
1 tsp salt
1 tsp ground black pepper
1 tsp parsley flakes
1. In a large skillet over medium heat, put onion, celery, and potatoes. Drain juice from clams and then add water. Cook for 15 minutes then remove and set aside.
2. In another saucepan, melt the butter. Add all-purpose flour then whisk until smooth. Slowly pour cream and stir constantly. Cook for 5 minutes.
3. Add vegetables and clam juice mixture. Simmer for 5 another minutes.
4. Ready to serve!

East Hampton Clam Chowder

12 tablespoons (1 1/2 sticks) unsalted butter, divided
2 cups chopped yellow onions (2 onions)
2 cups medium-diced celery (4 stalks)
2 cups medium-diced carrots (6 carrots)
4 cups peeled medium-diced boiling potatoes (8 potatoes)
1 1/2 teaspoons minced fresh thyme leaves (1/2 teaspoon dried)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 quart (4 cups) clam juice
1/2 cup all-purpose flour
2 cups milk
3 cups chopped fresh chowder clams (1 1/2 pounds shucked clams)
Melt 4 tablespoons (1/2 stick) of the butter in a large heavy-bottomed stockpot. Add the onions and cook over medium-low heat for 10 minutes, or until translucent. Add the celery, carrots, potatoes, thyme, salt, and pepper and saute for 10 more minutes. Add the clam juice, bring to a boil, and simmer, uncovered, until the vegetables are tender, about 20 minutes.
In a small pot, melt the remaining 8 tablespoons of butter and whisk in the flour. Cook over very low heat for 3 minutes, stirring constantly. Whisk in a cup of the hot broth and then pour this mixture back into the cooked vegetables. Simmer for a few minutes until the broth is thickened.
Add the milk and clams and heat gently for a few minutes to cook the clams. Taste for salt and pepper. Serve hot.

Here is what you'll need!
New England Clam Chowder
4 slices bacon, about 4 ounces, chopped
2 cups onion, diced
1 cup celery, diced
1 cup carrots, diced
⅓ cup all purpose flour
1 teaspoon black pepper
1 teaspoon thyme
4 cans minced clams with juice
1½ cups chicken stock
2 potatoes, peeled and cubed
2 cups heavy cream
1 bay leaf
Oyster crackers for garnish
Place a fine mesh strainer over a medium bowl and stain the 4 cans of minced clams, separating the meat from the juices.
Using a 6-quart dutch oven or pot of similar size, fry bacon over medium-high heat until fat renders and the edges begin to crip. Add onion and sauté until softened and translucent, about 3 to 5 minutes.
Reduce heat to low and add carrots, celery and flour, stirring constantly for 3-5 minutes as to avoid lumps.
Add black pepper, thyme, reserved clam juices, chicken stock, diced potatoes, and bay leaf. Stir to incorporate, then cover and bring to a boil. Reduce heat to a simmer and let cook until potatoes are tender, about 15 to 20 minutes.
Remove bay leaf and add cream. Allow chowder to simmer for an additional 10-20 minutes until soup has thickened to an appropriate consistency.
Add in reserved clam meat and cook for an additional 2-4 minutes.
Remove from heat and serve with oyster crackers

This New England clam chowder recipe is wicked easy to make. It is not health food but it is nice for once in a while. Creamy and loaded in flavor. Great for cold winter nights or as a starter for celebrations.

6 slices bacon -- cut into pieces
2 – 10 oz. (283 grams) cans of clams (baby or chopped)
1 – 8 oz. (236 ml) bottle of clam juice or 1 cup chicken stock
1 small onion – finely chopped
2 small celery stalks – finely chopped
About 1 tsp. of fresh thyme leaves
1/3rd cup (43 grams) all-purpose flour
10 baby potatoes – scrubbed and quartered or 1 large russet potato (peel and chop)
1 ½ cups cream
Salt & Pepper
Drain the clams and reserve the liquid. Mix the liquid from the can with the clam juice or chicken stock. You will have about 2 ½ cups of liquid.
Cook the bacon in a pot until crisp. Remove the bacon but leave the fat. Add the onions and celery to the pot and cook for 5 to 6 minutes until the onions are softened and translucent. Add the thyme and mix.
Add the flour and mix well. Cook, stirring constantly, for about 2 minutes. Whisk in the mixed liquids and whisk thoroughly until you have no flour lumps. Add the potatoes and most of the bacon. Leave some for garnish. Simmer the broth for 15 to 20 minutes until the potatoes are tender. Stir occasionally.
Add the cream and the clams. Mix well and heat through. Do not let it boil. Taste for salt and adjust if necessary. Add pepper.
Serve with some crisp bacon on top and a nice piece of bread. Enjoy!

How to make New England Clam Chowder, The Best Clam Chowder. Prepared with whole not chopped clams.
This IS the best clam chowdah. Inspired by how my mom would prepare hers I load this chowder up with whole soft shell clams not chopped or minced clams.
3 cups whole shucked and cleaned soft shelled clams
3 slices of thick sliced bacon
3 stalks of celery fine chopped
1 large sweet onion chopped
2 potatoes diced
1/2 stick of butter
Salt and Pepper to taste
about 4 tbsp flour
1/4 cup chopped fresh parsley
1 tsp dill
about 3 cups reserve clam broth
about 3 cups of heavy cream
to make this gluten free omit the flour and thicken chowder with a cornstarch slurry.
to cut down on fat you may substitute the heavy cream with fat free half and half

Quick & Easy Clam Chowder Recipe
• 4 slices bacon, diced
• 2 tablespoons unsalted butter
• 2 cloves garlic, minced
• 1 onion, diced
• 1/2 teaspoon dried thyme
• 3 tablespoons all-purpose flour
• 1 cup milk
• 1 cup vegetable stock
• 2 (6.5-ounce) cans chopped clams, juices reserved
• 1 bay leaf
• 2 russet potatoes, peeled and diced
• 1 cup half and half
• Kosher salt and freshly ground black pepper, to taste
• 2 tablespoons chopped fresh parsley leaves
• Heat a large stockpot or Dutch oven over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, reserving 1 tablespoon excess fat; set aside.
• Melt butter in the stockpot. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. Stir in thyme until fragrant, about 1 minute.
• Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, vegetable stock, clam juice and bay leaf, and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in potatoes.
• Bring to a boil; reduce heat and simmer until potatoes are tender, about 12-15 minutes.
• Stir in half and half and clams until heated through, about 1-2 minutes; season with salt and pepper, to taste. If the soup is too thick, add more half and half as needed until desired consistency is reached.
• Serve immediately, garnished with bacon and parsley (optional)

My Clam Chowder recipe is the New England type of clam chowder. It will warm your belly and is the best I have ever made. I hope you try it!
3 thick slices of bacon OR you can use 2 Tablespoons butter if you want to skip the bacon
1 cup shopped onion
2 celery stalks
2 bay leaves
3 Tablespoons flour
2 cups clam juice or you can use low salt chicken broth or vegetable broth
1 cup heavy cream (double cream or whipping cream) or milk
2 decent sized Russet potatoes
2 cans of clams.... see the note below
I bought 3 different brands of canned clams for this and I only used 2 of them, the other brand was not very good.
Here are the two brands that were just great:
Gordon's ... it was a 15 ounce can
Haddon House... it was a 6.5 ounce can

4 cloves chopped garlic
1/4 cup chopped onions
1 cup bacon in small slices
1 cup chopped celery
1 1/2 cup russet potatoes into cubes
4-6 cups clam juice
2-3 cups clams (can)
1-2 cups heavy cream
1 cup chopped parsley
1/2 or 3/4 cup all purpose flour
2 tbsp thyme
1 tsp salt
3-5 tbsp bacon fat/oil (add more if you like)

Healthy Homemade Clam Chowder
Number of servings: 4
Calories per serving: 135Kcal
130g (4.6oz.) canned shelled Asari clams in water
100g (3.5oz.) chopped onion
80g (2.8oz.) Komatsuna (Japanese spinach)
40g (1.4oz.) chopped bacon slices
100g (3.5oz.) potato
2 tbsp. flour
150ml soy milk
1/4 tsp. salt
1 tbsp. Sake *water is okay
300ml = water + the liquid from the canned Asari
1 tsp. butter
cracked black pepper
*You don't have to parboil Komatsuna (Japanese spinach) because it doesn't contain that much oxalic acid content compared to the regular spinach. If you are using the regular spinach, please parboil it!
1. Chop Komatsuna and separate stalks and leaves. Dice potato and soak in water (to prevent from changing color & remove starch).
2. Heat butter in a pot and cook the chopped onion until tender. Add the chopped bacon and cook until done. Then add the Komatsuna stalks and chopped potatoes, and cook until coated with oil.
3. Add Sake, cover, and steam until the potatoes are cooked.
4. Add flour and mix until blended.
5. Add water + the liquid from the canned Asari, then bring to a boil. Add Asari and Komatsuna leaves. When it becomes to a boil, remove the foam.
6. Mix in salt, pepper, and soy milk. Cook until hot and serve in a dish.

New England Clam Chowder
Fatback (or 5 slices of bacon)
2 tablespoons unsalted butter
1 large onion finely diced
2 rib celery finely diced
½ teaspoon thyme (or 1 teaspoon fresh thyme)
2 bay leaves
2 cloves of garlic chopped
3 medium-size peeled and cut into ¼-inch cubes
1/3 cup all-purpose flour
4 cups bottled clam juice
1 pound frozen clams
2 cups heavy cream
1 teaspoon white pepper
Kosher salt to taste
Set a 4- to 6-quart pot over medium-low heat. Add the fatback and cook, turning occasionally. Remove the fatback, leaving the grease in the pot.
Add the butter, onion, celery, thyme, and bay leaves to the pot. Cook, stirring often, until onions are tender and translucent, about 3-5 minutes. Add the flour gradually and cook for 3 minutes.
Increase the heat to medium and slowly add the clam juice, 1 cup at a time, incorporating it into the mixture before adding more.
Add the diced potatoes and cook until almost tender, increase the heat to medium-high add clam meat. Keep stirring 5 minutes. Once potatoes are tender add the cream slowly; then stir in the white pepper, bring to a gentle boil. Serve with Oyster Crackers.
Discard the bay leaves before serving. Serve hot.
Notes: Most grocery store carry frozen, clam meat. Its a great alternative to fresh clams and fresher than canned.
