Homemade Chunky Apple Sauce
This is the perfect side dish for Fall! It warms up the whole house with cinnamon and sweet apple aromas! What more could you want?!
Here is the recipe I used! If you like a more sweet applesauce add a 1/2 cup brown sugar!
6 apples
1 C water or apple cider
Juice of 1 lemon
1 t. cinnamon
And that's it! Super simple! You will probably never go back to store bought again!

If you cut the apples in large pieces, the texture of the cake is preserved, while the apples are baked gently.
- 재료
22cm 원형 케이크틀
버터 60g - 녹여서 식히기
(또는 코코넛오일, 기, 아보카도 오일)
달걀 2개
설탕 150~155g (3/4컵=180ml)
럼주 또는 코엥트로 3큰술 (또는 바닐라 익스트랙트 1/2작은술)
중력분 118~120g (3/4컵=180g)
베이킹 파우더 3작은술 (약 5g)
소금 1꼬집
사과 3개
- 만드는 방법
1. 베이킹 틀에 유산지 깔아 놓기.
케이크가 단단하지 않기 때문에 사각틀을 사용한다면 유산지가 가장자리위로 올라오도록 깔아서 다 굽고 난 뒤 유산지를 잡아서 케이크를 분리할 수 있도록 한다.
원형틀을 사용한다면 스프링폼 틀을 사용하면 바닥면에 유산지를 깔고 옆면은 버터를 발라둔다.
2. 달걀을 볼에 깨서 넣고, 설탕을 3차례에 나누어 넣어주며 설탕이 녹아 고루 섞이고 부피가 3배로 부풀고 흰빛이 돌도록 저어준다. (핸드블렌더로하면 편하지만 손거품기로 해도 상관없다.)
3. 2에 럼을 넣어 잘 섞고 중력분, 베이킹파우더, 소금을 체에 담고, 2에 두차례에 나누어 체쳐 넣어 주걱으로 섞어준다.
4. 녹여서 식힌 버터도 조금씩 흘려 넣은 후 부드럽게 섞는다.
- 오븐예열 180℃
5. 사과는 껍질을 벗기고, 씨 부분을 파 낸 후, 반으로 잘라 3cm 정도 크기가 되도록 덩어리지게 자른 후, 반죽에 섞는다.
6. 유산지를 깐 틀에 반죽을 붓고 윗면을 최대한 고르게 펴 준 후, 예열된 오븐에 50~60분간 굽는다.
7. 케잌이 무르기 때문에 부서지기 쉬우므로 5분간 식힌 후, 틀에서 분리한다.

(of coconut oil, ghee, avocado oil)

3Tbsp rum or cointreau
(or 1/2 tsp vanilla extract)
3/4cup all purpose flour
3tsp baking powder
a pinch of salt

- instruction
1. Line the baking pan with parchment paper.
The cake isn’t that much hard, so if you use a square pan, place the parchment paper out of the pan. After baking, grab the paper to separate the cake.
If you use a round cake pan, it’s good to use a round springform pan. Place the parchment paper on the bottom and butter on the sides.
2. Add the eggs and beat with a hand blender. Add the sugar in three times, beat until the mixture becomes thick, fluffy, and triples in volume.
3. Mix the rum and sift the all purpose flour, baking powder and salt in twice. Mix well with a spatula
4. Pour the butter little by little, and mix well.
- preheat the oven to 350 ℉
5. Peel the apples and seeded. Slice them in half and cut into 1.2inch square chunk. Add the batter and mix well.
6. Pour the batter into the lined baking pan, and flatten the top of the batter. Bake 50~60 minutes.
7. Cool the cake on the wire rack in the pan for 5 minutes then remove from the pan.

Chunky Apple Cake Recipe! Noreen's Kitchen
Greetings! I want it to be fall so badly that I have resorted to trying my best to urge it along! Actually I need to make a lunch treat for the week so that my girls have something yummy to take in their lunches and this is what we are going with. Chunky apple cake is a spiced cake filled with apple sauce, chunky apples, pecans and raisins. Really amazing flavor and it doesn't need any frosting!
This is a very sturdy cake and is perfect for packing in your lunch box or your kids lunch. A little piece goes a long way.
I have served mine with a little bit of powdered sugar and that is really all it needs. In fact you don't even need to do that, you can just serve this all by itself, it is perfect.

Chunky Applesauce Muffins!! Hello Autumn! Noreen's Kitchen
Greetings! After having so many requests for an applesauce muffin, I am finally doing one! Here is a recipe that uses the bulk muffin mix for a start on these great muffins. I added some eggs, milk, applesauce and cinnamon along with a chopped apple and these turned out amazing!
I baked them for 15 minutes, allowed them to cool in the pan for 5 minutes and then removed them to enjoy for breakfast. I spread them with some homemade cinnamon butter and they were fantastic!
let me know if you would like to see a video of the cinnamon butter and I will do one for you soon. It really is wonderful on these muffins or toast or English muffins or bagels! Molly was the inspiration for the spread because she had a store bought version at a friends house and when I looked at the ingredients, I knew I could do better. So I did. So let me know!
I hope you give these muffins a try! They are full of great fiber and nutrition and they will be nice as a lunchbox treat for your kids as well as yourself!

I've recently taken interest in baking, I bake simple and easy things, and use no fancy baking equipment. I live in an apartment with faulty small size oven and have to work my way around and I own no mixer!
I'm also trying to bake things that are LESS sweet. Through my learning, I found that most baked goods recipes are overly sweetened! (seriously!)
The recipe below have been tested (by me) and modified, using several recipes I found online and used about 60-70% of sugar. The cake comes out sweet, moist and delicious! Try it and let me know!
- 3 medium size apples or about 3 to 3.5 cups of apples (gala, fuji, golden delicious, or granny Smith/green) - peeled, core removed and cut into small chunks (don't slice too thin).
- 1/2 cup Butter (melted) or substitute with Veggie oil
- 2 Eggs (For Vegan, you can use egg substitute)
- 1 cup All Purpose Flour
- 1.5 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup + 1 tablespoon Brown Sugar (if using sweeter apples like gala and fuji) or 2/3 cup of Brown Sugar (if using all granny smith, more tart apples)
- 1/2 teaspoon vanilla (optional) or 1 teaspoon of Syrup (optional)
- 1 teaspoon of Cinnamon powder
- 1 teaspoon of nutmeg powder
The video used 1.5 recipe (the cake is higher and thicker, I used about 5 cups of apples).
Oven setting: 350 degrees F, baking time approximately 27-35 minutes (depending on your oven), check the cake by inserting a toothpick after 25-30 minutes, if it came out dry (nothing sticking on the toothpick), it means your cake is done.

Apple Turnovers Recipe
Traditional puff pastry requires enclosing butter in dough. In the inverted puff pastry the butter encloses the dough. One thing for sure is that inverted puff pastry bakes rather light and produces very flaky results and the ideal choice for filled applications such as apple turnovers and galettes, it stands up really well to the steam produced from the filling and therefore leaves virtually no traces of under baked dough. Puff pastry should be handled in a cool kitchen; below 70ºF (21ºC). Puff pastry freezes very well. Making your own is definitely something worth mastering. The best way to handle it is to make beurre manié and dough on day1. The foldings on day2 and the chaussons and filling on day3.
Inverted Puff Pastry
Makes ≈ 16 Servings.
Beurre manié
0.9 lb. (400g) unsalted European style butter* softened
1.1 cups (175g) all-purpose flour.
*European style butter (EB) has more fat, less water. It contains 84 to 86% fat content and it really makes a difference in laminated doughs such as puff pastry. It makes things flakier and tastier.
Dough / Détrempe
0.6 cup (150ml) cold water
1 tsp (5ml) white vinegar (optional but it prevents dough discoloration)
1 Tbsp (15g) salt
1 stick (110g) unsalted butter, melted but at room temp
1.2 cups (175g) all-purpose flour
1.2 cups (175g) bread flour.
Compote /Applesauce
6 ea. /1lb. (450g) Golden Delicious apples, preferably organic and washed
1 tsp (5ml) vanilla extract or paste
1/4 cup (60ml) water
Chunky Apples
0.8 lb. (350g) Granny Smith apples, preferably organic and washed
1 Tbsp (15g) unsalted butter
1/3 cup (60g) brown or granulated sugar.
The BEST Apple Pie Recipe
This easy to make and delicious apple pie recipe has a flakey butter crust and tender apple filling that’s bursting with flavor and perfectly sweet! Instead of adding lots of flour or cornstarch to thicken the filling I cook the juices down into an apple caramel, which holds all those apple pieced together and really amps up the flavor and makes a tasty pie!

1/4 cup of PURE APPLE JUICE
2 TBLS - LEMON JUICE
1/2 CUP of LIGHT BROWN SUGAR
( or to your taste )
CINNAMON STICKS
2-3 TBLS of GROUND CINNAMON
1 TBLS of CROWN ROYAL REGAL APPLE FLAVORED
WHISKEY ( AMOUNT USED IS TO YOUR DISCRETION )
TALENTI GELATO TAHITIAN VANILLA BEAN ICE CREAM
( used in video)
Cooking Directions
1. Wash your apples in cold water
2. Peel, core & chop the apples
3. Put the apples in a bowl & add the lemon juice
4. Add 1/2 cup of light brown sugar ( or to your taste )
5. Add 2 to 3 TBLS of cinnamon & mix well
6. On medium heat add apple mixture & cinnamon
7. Add 1/4 cup of apple juice
8. Cook on medium heat for 45 minutes ( stir every 15 minutes)
9. Check for apple tenderness & drain liquid
10. Remove pot from the heat & add apple liquor to taste & stir
11. Return the pot to low heat & cook for 20 minutes.
( continue to stir )
12. Mash the apples with a fork.
( For a thinner consistency add apple juice , apples to a
blender )
Cool & Enjoy !!
