CHOCOLATE SOUR CREAM CAKE
1 cup of pure butter (I use salted)
1/3 cup of cocoa powder
1 cup of water
2 cups of all purpose flour
1 1/2 teaspoon baking soda
1 3/4 cup of sugar
2 large eggs
1/2 cup of sour cream
Is it just me or everyone in the world can’t resist cake using sour cream?
Sour cream will turn cake into this melt in the mouth, fluffy and light texture.
I know, the name is a bit deceiving. Have you tried tasting sour cream? It is not that sour! It’s actually very creamy. A wee bit tangy-er than mascarpone cheese. But that’s only my personal opinion. How about you give it a try?

1. Sift
2 C. Sugar, 2 C. Flour, 1/2 t salt
2. Boil (Just barely)
2 Stick of butter, 1 C Water, 4 T Cocoa
3. Beat
2 eggs, 1/2 C sour cream,
1 T vinegar, 1 t vanilla, 1 t baking soda
Add steps 2 to 1, then add step 3 to 2 & 1. Pour into greased pan or cookie sheet (with sides) bake at 350.

Hi lovelies, this cake is very close to my heart and has now become my very favorite cake. It is a cake my boyfriend loved when he was a child and he never had it since. I was determined to re-create it and have tried so many different recipes during our already almost 10 year relationship???? I realized none of the recipes gave the outcome I would have liked, they were too sweet or too dry and I ust didn´t like it. So I went on a mission to create my own recipe which would tick all the boxes. I did have to adjust my recipe a couple of times until I got there, but my oh my!! ???????????? It is perfectly sweet, really creamy and the cake layers are super soft the just melt in your mouth and that milk chocolate ganache finish on top is like a cherry on top that makes the combination perfect???? I don´t want to seem arrogant, but I am proud about this recipe, it took me so long and now it is where I want it to be???? That is why I want to share it with you only now when it is perfected so that you can also have a piece of this heavenly cake???? • 1/2 cup butter (softened)
• 1 cup white granulated sugar
• 2 eggs
• 1 cup sour cream
• 1 1/3 cup all-purpose flour
• 1 1/2 teaspoon baking powder

• 1 teaspoon cinnamon
• 1 cup (6 oz) chocolate chips
• 2 tablespoons white granulated sugar
• 1/3 cup brown sugar
Instructions
1 - Preheat oven to 350 degrees Fahrenheit
2 - Prepare 9 x 13 pan with baking spray and lightly coat with flour
3 - Beat butter and white sugar until light and fluffy
4 - Add eggs and continue to beat
5 - Stir in dry ingredients.
6 - Fold in sour cream.
7 - Spread all batter into prepared pan
8 - Sprinkle all topping ingredients: 1 tablespoon white sugar, all chocolate chips, all brown sugar, and remaining 1 tablespoon white sugar
9 - Bake for 35 minutes or until a toothpick inserted comes out clean
10 - Place on a wire rack to cool
Serving this coffee cake it is still warm is perfection.
Don't like the edge crusts? Cut along the edges to remove before cutting pieces.

For the crust:
350g (12.34oz) Chocolate biscuits
130g (4.6oz) Butter, melted
For the filling:
2¼ cups (520g) Sour cream
3 Eggs
1 cup (200g) Sugar
4 tablespoons (30g) Cornstarch
2 teaspoons Vanilla extract
100g (3.5oz) Butter
Directions:
1. Make the crust: in a food processor or in a Ziploc bag, crush the biscuits into fine crumbs. Add melted butter and mix until combined.
2. Reserve 1/3 of the crumbs for later. Press the 2/3 of the crumbs into the bottom and up to the sides of a 8-inch (20cm) cake ring or a springform pan.
3. Make the cream: in a small saucepan whisk eggs, sugar and corn-starch. Whisk until smooth. Add sour cream and whisk until combined and smooth.
4. Place the saucepan over medium-low heat and cook, stirring constantly for about 5-7 minutes, until thickens, make sure you are scraping the bottom and sides of the pan. Remove from heat, add butter and vanilla extract, stir until incorporated.
5. Allow to cool slightly.
6. Pour over the crust and spread evenly. Spread the remaining 1/3 of the crumbs on top.
7. Refrigerate for at least 4 hours, or overnight.

This dessert will satisfy anyone with a sweet chocolate tooth!
Sour Cream Chocolate cake
Ingredients:
1 3/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup Crisco type shortening
1 1/2 cup sugar
1/2 tsp. vanilla extract
2 eggs
3 oz. unsweetened chocolate, melted and cooled
1/2 cup sour cream, full fat
1 cup cold water
1 box (3 oz.) instant chocolate pudding mix
Directions:
Preheat oven 350 degrees F.
Grease 2 round baking pans (either 8 1/2 or 9 inch round)
Stir together the flour, baking soda and salt in a separate bowl.
In a mixing bowl, beat shortening on low speed for 30 seconds. Then add sugar and vanilla and mix until well combined.
Add eggs, one at a time, mixing until each egg is blended in before adding the second egg.
Stir in the cooled chocolate and sour cream.
Add the dry ingredients starting with the pudding mix. Once incorporated, alternate adding the flour mixture and water just until combined.
Pour into baking pans and bake 30 to 35 minutes until a toothpick comes out clean when inserted in the middle of the cake.
Cool pans on a wire rack for 10 minutes before removing cake from the pans. Simply place a plate over the cake and invert. The cake should fall into the plate. Cool completely before frosting.
White Frosting
Ingredients:
3/4 cup shortening
1 1/2 tsp. vanilla extract
1/2 tsp. lemon extract
3 cups powdered sugar
1/2 cup semi sweet chocolate chips (optional)
3 to 4 Tbsp. milk
Directions:
Beat shortening for 20 seconds and then add the vanilla and lemon extracts and beat to incorporate.
Gradually add the powdered sugar and milk alternating, until combined. Adjust the amount of liquid until you get a consistency that is spreadable.
Spread the frosting on one layer of cake between 1/4 and 1/2 inch thick. Sprinkle chocolate chips on top.
Place the second cake layer on top.
Chocolate Butter cream Frosting
Ingredients:
1/2 cup butter, softened
4 cups powdered sugar
1/4 cup milk
1 1/2 tsp. vanilla extract
6 oz. unsweetened chocolate squares, 100% cocoa, melted and cooled
Directions:
Mix butter and vanilla until combined. Alternate the powdered sugar and milk until combined. Then add the cooled melted chocolate and mix in completely.
Frost the exterior of the cake and enjoy!

Part 1 - American Sour Cream Coffee Cake
Lisa makes her all time favourite cake.
Lisa's Favourite Sour (soured) Cream Coffee Cake:
This is an American classic. This cake is not coffee flavoured, it is called coffee cake, as it is to be had with a cup of coffee. This recipe is filled with cinnamon and chopped pecans, but you can change the nuts and spices to your taste. Just be sure to keep to the same quantities and chop the nuts finely.
Serves 10-12
250 grams unsalted butter, softened,
550 grams granulated sugar.
2 free range large eggs
250 grams plain flour
300ml soured cream
1 Tablespoon pure vanilla extract
1 Tablespoon baking powder
Pinch of salt
220 grams nuts (such as pecans, walnuts, almonds, hazelnuts) finely chopped
1 Tablespoon ground cinnamon
Preheat the oven to 350 degree F, 180 degrees C, Gas Mark 4
Grease and flour 10 bundt pan.
Beat the butter and 400 grams of the sugar in bowl of electric mixer until light and fluffy.
Add the eggs one at a time, beating well after each addition. It will appear curdled. That's ok. Next add the sour cream and vanilla.
Sift together the flour, baking powder and salt.
Fold the dry ingredients into the creamed mixture and beat until just blended. Do not over beat.
In a separate bowl, mix the remaining 150 grams of the sugar with the nuts and cinnamon.
Pour about half of the cake batter into the well greased pan and spread evenly. Sprinkle half of the nut mixture evenly over the batter, then cover with the remaining batter, spread it evenly and top with remaining nut mixture. Press the nut mixture down gently, so that they stick.
Bake for 1 hour or until a skewer inserted into the centre comes out clean. Leave to cool in pan for about 10 minutes before turning out on to a wire rack to cool completely. Serve warm with a cup of coffee.
***If top is getting too brown, cover with foil and continue baking until done. This is a very moist cake, so it is hard to over bake.
You can also make an optional glaze for this cake.
125 grams icing sugar
2 Tablespoons milk or water.
Mix together and add liquid slowly until you reach desired consistency.
Drizzle over top of cake if desired.

1 teaspoon kosher salt
1 cup water
2 cups all-purpose flour, plus more for the pan
1 3/4 cups granulated sugar
1 1/2 teaspoons baking soda
2 large eggs
1/2 cup sour cream (or plain Greek yogurt)
1 teaspoon pure vanilla extract
FOR THE CHOCOLATE GLAZE:
4 ounces bittersweet chocolate, finely chopped
1 1/2 tablespoons corn syrup
1/2 cup heavy cream
1 1/2 tablespoons granulated sugar
►DIRECTIONS:
1-Position a rack in the center of the oven and heat to 350 degrees F. Butter and flour a 10 or 12-cup Bundt pan and set aside.
2-In a small saucepan, combine the butter, cocoa powder, salt, and water and place over medium heat. Cook, stirring, just until melted and combined. Remove from the heat and set aside.
3-In a large bowl, whisk together the flour, sugar, and baking soda. Add half of the melted butter mixture and whisk until completely blended. The mixture will be thick. Add the remaining butter mixture and whisk until combined. Add the eggs, one at a time, whisking until completely blended. Whisk in the sour cream (or Greek yogurt) and the vanilla extract. Whisk until smooth.
4-Scrape the batter into the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let the cake cool in the pan for 15 minutes and then invert onto a rack. Let cool completely before glazing.
5-While the cake is cooling, make the chocolate glaze. Place the chopped chocolate and corn syrup (or agave) in a medium bowl and set aside. Combine the heavy cream and sugar in a small saucepan and put over medium heat. Stir until the cream is hot and the sugar is dissolved. Pour the hot cream over the chocolate and whisk until smooth.
6-Generously drizzle the glaze over the cooled cake, allowing it to drip down the sides. Cut into pieces and serve.

Chocolate Sour Cream Bundt Cake
INGREDIENTS:
1-15.25 oz. Devil’s Food Cake Mix
1-3.4 oz. pkg Chocolate Instant Pudding
1 cup Sour Cream
4 Eggs
1/2 cup Warm Water
1/3 cup Vegetable Oil
1/4 cup Chocolate Syrup (like Hereshy’s Syrup for ice cream topping)
1 tsp. Vanilla
1 cup Mini Chocolate Chips
1 container Cream Cheese frosting of choice (you may not use it all!)
DIRECTIONS:
Pre-heat oven to 325.
Mix all ingredients, except chocolate chips
Add in chips and mix just until evenly dispersed.
Pour into well greased bundt cake pan.
Bake for 50-70 minutes until a toothpick inserted comes out slightly coated but not wet.
Remove from oven and let stand in pan for 20 minutes.
Invert onto plate or cake stand.
Let cool to touch before frosting

Ingredients for 3 8 inch cake layers
For the chocolate cake layers:
2 1/2 cups (312.5 g) all-purpose flour
1 3/4 cups (175 g) cocoa powder, sifted
3 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
1 cup (200g) white sugar
1 cup (200g) brown sugar
3 large eggs
2 egg yolks
1 1/2 cups (375 ml) whole milk
1/3 cup (80 g) sour cream
3/4 cup (180 ml) vegetable oil
1 tsp vanilla
1 1/2 cups (375 ml) hot water or coffee
1 cup mini chocolate chips + 1 tbsp flour to cover
For the chocolate fudge sauce:
1/2 cup (100 g) sugar
2 tbsp water
2 tbsp light corn syrup
1/2 cup heavy cream
3 oz (100 g) dark chocolate chips or chopped
1/4 tsp salt
1 tsp vanilla
For the chocolate buttercream:
5 sticks (565 g) butter, unsalted
3 1/2 cups (440 g) powdered sugar
3/4 cup (75 g) cocoa powder
1 tsp vanilla
6 tbsp chocolate fudge sauce
2 tbsp heavy cream, if needed
2 cups (320 g) mini chocolate chips

I've included the quantities that I used when making these delicious cupcakes:
220g plain flour
80g cocoa powder
1 3/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
135 ml grapeseed oil
150g caster sugar
165g brown sugar
2 large eggs
1 tsp vanilla
1/2 tsp almond extract
240 ml sour cream
180ml hot coffee - I used instant coffee

For the cake:

6 egg whites
1 1/2 c sugar
1lb (2 c) of butter
