Perfect Chocolate Mousse Recipe
This chocolate mousse recipes is delicious, incredibly easy to make and is the perfect dessert to serve up to guests or loves ones.
Ingredients for this recipe:
• 8 ounces semi-sweet chocolate
• ¼ cup unsalted butter
• 4 egg yolks
• 4 egg whites
• 1/3 cup sugar
• whipped cream
• berries
Serves 8
Prep Time: 15 minutes
Cook Time: 5 minutes
Cool Time: 90 minutes
Procedures:
1. Heat a medium size pot of water over low heat to the halfway mark until simmering.
2. Add the chocolate to a large metal bowl and place directly over the pot to make a double boiler.
3. Stir the chocolate using a rubber spatula to keep the chocolate moving around to help melt.
4. Remove the bowl from the double boiler and stir in the butter until completely melted and mixed in.
5. Next whisk in 1 egg at a time until mixed in. Set aside.
6. In a stand mixer add in the egg whites and mix on medium speed until soft peaks are formed, about 3-4 minutes. See note on what to look for.
7. Slowly pour in the sugar and mix on medium until stiff peaks are formed, about 3-4 minutes.
8. Remove the egg white mixture (a.k.a. merengue) from the stand mixer and add it to the bowl with the chocolate and gently fold in using a rubber spatula until completely mixed in. Don’t over mix.
9. Place the bowl in the refrigerator for 90 – 120 minutes or set.
10. Serve with whipped cream and berries.
CHEF NOTES:
Make Ahead: You can make this recipe up to 3 days in advance, simply keep covered in the refrigerator until it is ready to serve.
How to Store: Keep covered in the refrigerator for up to 5 days.
How to Freeze: You can keep it in the freezer covered for up to 2 months and eat it like ice cream, but if you thaw it, it will break and become too liquidy to eat.
When making your merengue, soft peaks will fall right over when pulling up your whisk in the stand attachment.
For stiff peaks, the merengue will stand straight up and hole when when pulling up your whisk in the stand attachment.

Ingredients:
1 cup bittersweet chocolate chunks
1 3/4 cups heavy cream, chilled
3 large egg whites
1/4 cup sugar
Bittersweet chocolate, shaved, for garnish
Steps:
1. Temper chocolate, stirring until melted. Turn off the heat and let stand.
2. Beat heavy cream until it forms soft peaks. Set aside.
3. Whip egg whites with a hand mixer until soft peaks form, gradually adding in sugar.
4. Using a whisk, fold the tempered chocolate into the egg whites. Once fully incorporated, fold in the whipped cream. Transfer to a baking dish if desired, cover and refrigerate until set (about 1 hour).
5. Serve with shaved chocolate and enjoy!

1 tsp baking powder [4 g]

2 tsp vanilla extract [10 mL]

Chocolate Mousse:
8 oz bittersweet chocolate [225 g]
6 tbsp of unsalted butter [85 g]
3 large eggs, separated [60 g yolk + 90 g whites]
1 tbsp brandy (optional) [15 mL]
1 cup very cold heavy cream [240 mL]
2 tbsp granulated sugar [25 g]
1/4 tsp salt [1.5 g]
Whipped cream:
4 oz cream cheese (cold) [113 g]
1/3 cup granulated sugar [67 g]
1 tsp vanilla extract [5 mL]
2 cups heavy cream (very cold) [480 mL]
Topping:
Handful of bittersweet chocolate chips
French Chocolate Mousse: Simple Steps to Get It Right
Join my online French cooking classes ????????: How To make a French chocolate mousse: The chocolate mousse recipes never gets old with it's light and airy texture, when served as a dessert, a chocolate mousse is a real delight to eat.
Note that chocolate mousse recipes have many variants and this is just one of the many ways to make it.
Ingredients you need for 4 to 6 people (depending on serving size)
- 180 grams of 70% cacao dark chocolate ( best quality possible)
- 100 ml of full fat cream 35 % minimum (also called heavy
whipping cream)
- 50 ml of full cream Milk
- 60 grams of caster sugar
- A pinch of salt
- 7 eggs whites (have to be beaten into a meringue)
Note: If you want something sweeter you can increase the amount of sugar shown in the recipe below.

No bake Chocolate Mousse Cake | Chocolate Mousse in a cup (Business recipe)
No bake Chocolate Mousse Cake| Chocolate Mousse in a cup (Business recipe)
Chocolate cake ingredients:
1 1/2 cups all purpose flour
3/4 cup cocoa powder(unsweetened)
1 1/2 cups white sugar
3/4 cup powdered milk
1/2 tsp coffee powder
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp vanilla extract
1/3 cup vegetable oil
1 tbsp white vinegar
1 cup hot water
Chocolate Mousse ingredients:
740ml all purpose cream(chilled overnight)
390ml condensed milk(chilled overnight)
1/2 cup cocoa powder(unsweetened)
2 tbsp gelatin (clear & unflavored)
hot water: 10 tbsp for cocoa powder(more if needed)
1/4 cup for gelatin
Toppings:
200g baking chocolates
1 cup whip cream powder
1/3 cup cold water
cocoa powder or chocolate flakes
Chocolate Cake Procedure:
1) Bring 1 liter of water to a boil
2) In a bowl combine all purpose flour, cocoa powder, sugar, powdered milk, baking powder, baking soda, salt and coffee. mix well
3) In a separate bowl combine oil, white vinegar, hot water and vanilla extract
4) Combine dry and wet ingredients. Mix well
5) Pour cake batter into the pan
6) tap few times to release air bubbles
7) Steam over med. low heat for 25-30 min.
8) Cool in a pan for 5 minutes
9) Remove cake from the pan
10)Peel the parchment paper off and cool completely
11)Cut cake into small circles
12)Place cakes into the cups
Chocolate Mousse Procedure:
1) Mix cocoa powder and 10 tbsp hot water(more if needed).
2) Combine condensed milk and chocolate paste. Mix well
3) Combine gelatin and 1/4 cup hot water
4) Mix until it dissolves. set aside
5) Whip cream on high speed until doubled in size
6) Gradually add chocolate mixture
7) Add dissolved gelatin
8) Pour 3 tbsp of chocolate mousse mixture into each cup
9) Chill for 12hr. or overnight before adding toppings
Melt Chocolates:
1) Melt Chocolate using the baine marie method
2) Let it cool down
Whipped Cream:
1) Combine whip cream powder and cold water
2) Whip until it turns creamy and doubled in size
Assemble:
1) Apply thin layer of melted chocolate
2) Let the chocolate harden in room temperature
3) Dust with cocoa powder
4) Pipe whipped cream on top
5) sprinkle with chocolate flakes
6) Cover and serve cold

Chocolate Mousse Cake using Fudgee Barr
Chocolate Mousse cake Ingredients:
7-10 pcs. Chocolate Fudgee Barr(chocolate cake bar) or baked chocolate cake, brownies or grahams
740 ml all purpose cream (chilled)
1 big can condensed milk
1/2 cup cocoa powder
pinch of salt
20g gelatine clear and unflavored
hot water : 1/4 cup for cocoa powder
1/8 cup for gelatine
2 tbsp white sugar(optional)
chocolate chips for toppings(optional)
Whipped Cream Ingredients:
370 ml all purpose cream (chilled)
1/4 or 1/2 cup powdered sugar
2 tsp or 1 tbsp gelatine clear and unflavored
1/8 cup hot water
Procedure:
1) Crumble the cake bars into fine crumbs
2) transfer crumbs into the springform pan or any cake pans
3) distribute the crumbs evenly and pack it firmly.Set aside
4) mix cocoa powder and 1/4 cup hot water until it makes thick paste
5) in a pan combine condensed milk, chocolate paste and sugar
6) cook over low heat and stir constantly until smooth and combined
7) Set aside amd let it cool. It gets thicker when it's cooled
8) beat all purpose cream until soft peaks form
9) Dissolve gelatine in 1/8 cup of hot water then set aside
10)add the chocolate mixture and dissolved gelatine into the whipped cream. (you can also fold it)
11)beat on low speed until well blended
12)pour the mousse mixture on top of the cake
13)chill for 20 min. or until the top part is firm before adding the whipped cream
14)Refrigerate for 4-5 hrs or overnight
to make the Whipped cream:
1) combine gelatine and hot water. Mix until the gelatine dissolves then set aside
2) combine all purpose cream and powdered sugar
3) whip on medium speed until soft peaks form
4) add dissolved gelatine and continue mixing
5) chill for 20 min. or until slightly firm
6) decorate the chocolate mousse using the whipped
