Chocolate Truffle Recipe
This easy no bake recipe makes the most scrumptious chocolate truffle! They come together in a snap, are beyond addictive and yes they’re brimming with brandy!
Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.

How to make chocolate truffles with Curtis Stone
Get a load of these! Chef Curtis Stone shows how to make easy chocolate truffles using just two ingredients for the base ganache recipe: chocolate buttons (or finely chopped chocolate) and cream. CHOCOLATE TRUFFLES RECIPE
Makes: 50 small truffles
Prep time: 25 mins
Cooking: 2 mins
1 cup thickened cream
200g high-quality chocolate buttons or dark chocolate (71% cacao), finely chopped
2 tbsp Chambord (raspberry liqueur) or Grand Marnier (orange liqueur), if desired
Cocoa powder, for coating
1. In a small heavy saucepan, heat the cream over medium heat until hot but not boiling. Remove the pan from the heat and add the Chambord and chocolate. Set side for 2 minutes then whisk until smooth. Pour the mixture (ganache) into a shallow dish, cover, and refrigerate for about 1 hour, or until set.
2. Dip a 2.5cm melon baller into a cup of hot water, shake off the excess water, and scoop out the ganache to form a small ball. (Dipping the baller into hot water makes it easier to scoop up the ganache and release the truffle.) Transfer the truffle to a baking tray lined with baking paper. Repeat to form the remaining truffles, dipping the baller into the hot water as needed. Refrigerate for about 20 minutes, or until the truffles are firm.
3. Roll the truffles between your palms to shape, then coat the truffles in the cocoa powder, shaking off any excess cocoa. Serve the truffles or transfer them to a container, cover, and refrigerate. Let stand at room temperature for about 10 minutes before serving.

Scooping Ganache for Chocolate Truffles
Preparing your delicious ganache for it's final dip in premium chocolate requires shaping each piece. You can create a rustic, natural, organic shape (the traditional truffle method dipped in cocoa powder) or you can create small uniform more formal balls. The size of your finished center is completely up to you. Remember that your centers will be coated in tempered chocolate and possibly rolled in another ingredient like nuts, coconut etc. so take that extra layer or two into consideration when deciding the size of your ganache center. Consider starting with a 1/2 diameter and work from there. Another rule of thumb is to have a one ounce finished weight per truffle. Using a melon baller is an easy way to measure the amount of ganache and create a nice round shape. A basic table spoon is another very easy method of scooping the right amount for rolling. Liquor and Wine Filled Chocolate | Filled Chocolates (gift idea)
Liquor and Wine Filled Chocolate
250g semisweet chocolates
20g white chocolate(optional)
1/8 cup Tanduay ice(blue)
1/8 cup vodka chocolate(Mudshake)
1/8 cup red wine
1/8 cup whisky
5 tbsp hot water
1 1/4 tsp gelatin, clear and unflavored
1) Melt chocolate(bain marie)
2) To temper: Mix until chocolate is nice and cool to touch
3) Fill molds with melted chocolate
4) Tap few times to release air bubbles
5) Pour excess chocolate
6) Scrape off excess chocolate
7) Turn it upside down on a flat surface. freeze for 10 min.
8) Repeat steps for the remaining chocolate
9) Fill the chocolates
10)Chill or freeze until fillings are firm to touch
11)Cover it with melted Chocolate
12)Scrape off excess chocolate and freeze for 10 min.
13) Unmold chocolates
14)Melt white chocolate and let it cool
15)Decorate the chocolates with the white melted chocolate
1) Vodka Chocolate:Combine 1/4 tsp gelatin and 1 tbsp hot water. Mix until gelati dissolves
2) Add vodka chocolate and mix well
3) Same procedure for the Tanduay Ice and whisky
4) Red wine filling: Dissolve 1/2 tsp gelatin in 2 tbsp hot water
5) Add red wine and mix wel
Fillings without gelatin:
1) Freeze liquor for 1 to 2 days

Grand Marnier Fudge
Here's a really great recipe for some fudge that will be sure to turn some heads! If you love the delicious orange flavor of Grand Marnier, then try this recipe on for size!
Grand Marnier Fudge
3 1/2 cups chocolate chips (I used half milk chocolate and half semi sweet)
1 cup sweetened condensed milk
1 tsp vanilla extract
1/4 cup Grand Marnier (or whisky)
Melt the chocolate per package instructions. Mix in the rest of the ingredients. Pour into a foil lined 8x8 baking dish and cover with foil. Let sit at room temp for 4 to 8 hours until completely cooled. Toss in the fridge for an hour to chill before slicing into squares.

Cake Pan 8 inch - 20 cm:

Make one 20 cm (8 inch) cake, about 10-12 servings:
100 g (1/2 cup) Light Brown Sugar Cane
1 teaspoon Vanilla Paste (or Vanilla Extract)
200 ml (3/4 cups) Whipping Cream/Heavy Cream (35% fat)
50 ml (3 tablespoons) Espresso Coffee (or Coffee made with Instant Coffee)
200 g (7 oz) Dark Chocolate
100 g (3,5 oz) Milk Chocolate
Sweetened Cocoa Powder
Prepare a 20 cm (8 inch) cake pan: grease the pan with flavorless vegetable oil (I use Sunflower Seed Oil), flour the edges with sweetened cocoa powder, line with round and greased parchment paper. Set aside.
Chop the chocolate, place it in a heat proof bowl and microwave until melt (for about 1,30 or 2 minutes) or melt over a bain marie. Mix until smooth and set aside to cool a bit.
In a large bowl place Sugar, Eggs and Vanilla: mix with an hand mixer for at least 10 minutes (be patient :) ), or until pale, creamy and foamy.
Add Whipping Cream, Coffe, melted Chocolate and mix at low-medium speed just until well combine, don’t overmix.
Pour the cake batter in the prepared pan and bake in water bath at 180°C (350° F) for 30 minutes, then at 160°C (320° F) for 40-50 minutes: the cake surface will be dry and firm at the edges (in the middle will be a little softer).
Remove from the oven and cool completely at room temperature.
Cover with plastic wrap and refrigerate overnight.
Run a knife along the sides of the cake; place a large dish lined with parcment paper on top of the cake and invert to unmold. If you can’t unmold the cake, don’t be afraid: use an hair dryer for about 1 minute to heat the bottom and the edges of the cake pan, then you can easily unmold the cake. Invert on the serving plate.
Sprinkle the top with some Sweetened Cocoa Powder, decorate with some fresh Raspberries.
Cut using a hot knife and serve it with some whipped cream (optional).
Store it in refrigerator for 3-4 days.

PIN FOR LATER:
1/2 pound bittersweet chocolate (good quality)
1/2 pound semisweet chocolate (good quality)
1 cup heavy cream
1/2 teaspoon vanilla extract
2 tbsp Orange Liqueur (Grand Marnier) OPTIONAL *See Note
sprinkles, chocolate, powdered sugar, cocoa or nuts to roll the truffles
Chop the chocolate roughly and place in a heat safe bowl.
Heat the cream in a small saucepan over medium high heat just until it begins to come to a boil.
Remove cream from heat.
Pour the cream through a fine-meshed sieve into the bowl with chocolate.
Whisk the cream and chocolate together until the chocolate is completely melted and smooth.
Add the liqueur (if using) and vanilla. Continue Stirring.
Place in the fridge for 1 hour to stiffen.
With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper.
Roll each ball of chocolate in your hands to roughly make a round ball.
Roll in powdered sugar, or whatever toppings you choose (sprinkles, chocolate, nuts, etc)
These will keep in the fridge for two weeks, but are best served at room temperature.

White Chocolate and Coconut Truffles are smooth, flavorful, delicious and easy to make at home. It is a perfect elegant dessert for a dinner in two, for holiday tables or friend gatherings and also can be a wonderful homemade gift idea. Everybody will love these, there is no doubt about that.

Makes about 20 truffles
1/4 cup (60ml) whipping cream (35%fat)
7 oz (200g) white chocolate, good quality, broken into chuncks
1 tbsp (14g) butter
1/2 tsp vanilla extract, optional
1/3 cup (33g) unsweetened coconut flakes
zest from an orange, optional
20 hazelnuts, toasted or not
1/3 cup (33g) unsweetened coconut flakes for rolling
1. Melt chocolate with cream in a bain marie over low heat. Stir continuously until the chocolate is almost melted. Add butter and continue stirring until smooth. Remove from heat. Add vanilla extract and orange zest if using.
2. Stir in coconut flakes, let it cool, cover and refrigerate for a couple of hours until the mixture gets firm enough to roll it into balls.
3. Using a teaspoon roll the mixture into small balls adding a hazelnut inside. Roll each ball into coconut flakes. Serve or refrigerate until ready to serve. They keep well refrigerated in an airtight container for up to 2 weeks.
