Chocolate Truffle Recipe
This easy no bake recipe makes the most scrumptious chocolate truffle! They come together in a snap, are beyond addictive and yes they’re brimming with brandy!
Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.

Fruit and Nut Balls, or you may know them as Sugarplums, are made with a variety of pureed dried fruits and nuts held together with a little honey (golden syrup or corn syrup) and a splash of alcohol (or fruit juice). I think what makes them so tempting is all the ways they can be decorated. You can roll them in different sugars (white, brown, or powdered), unsweetened cocoa powder, dried sweetened or unsweetened coconut, grated chocolate, and/or finely chopped nuts. But I must admit that my favorite way is to dip them in melted dark chocolate as I love the combination of dried fruits, nuts, and chocolate. They store very well, and while perfect for Christmas giving, they also make an excellent snack to take along on picnics or hikes when you need a quick boost of energy.

Easy Chocolate Truffles Recipe
Chocolate Truffles are a must make recipe for any chocolate lover. This Easy Chocolate Truffle Recipe is made with only 5 ingredients and has a unique and amazing flavor. If you’ve wondered how to make chocolate truffles, this recipe is for you. Softer than fudge, bite-sized, and utterly perfect; this is a chocolate dessert recipe you simply can’t miss.
PIN FOR LATER:
1/2 pound bittersweet chocolate (good quality)
1/2 pound semisweet chocolate (good quality)
1 cup heavy cream
1/2 teaspoon vanilla extract
2 tbsp Orange Liqueur (Grand Marnier) OPTIONAL *See Note
sprinkles, chocolate, powdered sugar, cocoa or nuts to roll the truffles
Chop the chocolate roughly and place in a heat safe bowl.
Heat the cream in a small saucepan over medium high heat just until it begins to come to a boil.
Remove cream from heat.
Pour the cream through a fine-meshed sieve into the bowl with chocolate.
Whisk the cream and chocolate together until the chocolate is completely melted and smooth.
Add the liqueur (if using) and vanilla. Continue Stirring.
Place in the fridge for 1 hour to stiffen.
With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper.
Roll each ball of chocolate in your hands to roughly make a round ball.
Roll in powdered sugar, or whatever toppings you choose (sprinkles, chocolate, nuts, etc)
These will keep in the fridge for two weeks, but are best served at room temperature.

Grand Marnier Fudge
Here's a really great recipe for some fudge that will be sure to turn some heads! If you love the delicious orange flavor of Grand Marnier, then try this recipe on for size!
Grand Marnier Fudge
3 1/2 cups chocolate chips (I used half milk chocolate and half semi sweet)
1 cup sweetened condensed milk
1 tsp vanilla extract
1/4 cup Grand Marnier (or whisky)
Melt the chocolate per package instructions. Mix in the rest of the ingredients. Pour into a foil lined 8x8 baking dish and cover with foil. Let sit at room temp for 4 to 8 hours until completely cooled. Toss in the fridge for an hour to chill before slicing into squares.

These Orange Chocolate Mousse Domes are one of the most elegant dessert you can prepare for upcoming holidays. Not only it looks impressive but the flavor combination is simply amazing, as oranges and chocolate are making a special combination perfect for holiday season.

Makes about 6-8 domes
1/3 cup (80ml) orange juice (from about 1 orange)
1 tsp (5g) orange zest (from one orange)
1 tbsp (15g) sugar
2 tbsp (30g) cream
1 egg yolk
1/2 tsp (2g) gelatin powder
1 tbsp (15ml) orange juice
Candied orange peel , chopped
1/3 cup (70g) sugar
3/4 cup (95g) all-purpose flour
1 1/2 tbsp (20g) butter, melted
1 tsp (5g) orange zest (from one orange)
For soaking the genoise
2 tbsp (30ml) Orange liqueur (Grand Marnier or Cointreau)
5.5 oz (150g) semi-sweet chocolate
1/2 cup (120g) whipping cream
2/3 cup (160g) whipping cream (35% fat), chilled
1 tsp (4g) gelatin powder
1 tbsp (20ml) cold water
6 oz (175g) white chocolate, small pieces
1/3 cup (80g) water
3/4 cup (150g) sugar
3.5 oz (100g) sweetened condensed milk
1 tsp (5g) vanilla extract
1 tbsp (10g) gelatin powder
1/4 cup (60ml) cold water

CHOCOLATE TRUFFLES RECIPE
Makes: 50 small truffles
Prep time: 25 mins
Cooking: 2 mins
1 cup thickened cream
200g high-quality chocolate buttons or dark chocolate (71% cacao), finely chopped
2 tbsp Chambord (raspberry liqueur) or Grand Marnier (orange liqueur), if desired
Cocoa powder, for coating
1. In a small heavy saucepan, heat the cream over medium heat until hot but not boiling. Remove the pan from the heat and add the Chambord and chocolate. Set side for 2 minutes then whisk until smooth. Pour the mixture (ganache) into a shallow dish, cover, and refrigerate for about 1 hour, or until set.
2. Dip a 2.5cm melon baller into a cup of hot water, shake off the excess water, and scoop out the ganache to form a small ball. (Dipping the baller into hot water makes it easier to scoop up the ganache and release the truffle.) Transfer the truffle to a baking tray lined with baking paper. Repeat to form the remaining truffles, dipping the baller into the hot water as needed. Refrigerate for about 20 minutes, or until the truffles are firm.
3. Roll the truffles between your palms to shape, then coat the truffles in the cocoa powder, shaking off any excess cocoa. Serve the truffles or transfer them to a container, cover, and refrigerate. Let stand at room temperature for about 10 minutes before serving.

How to Make Chocolate Truffles
Shelley shows us how to make Chocolate Truffles and flavor them to your liking. They also make great holiday gifts!
Yield: 3 dozen
Active time: 30 minutes
Start to finish: 2 hours
1 cup heavy whipping cream
10 ounces best quality semi- or bittersweet chocolate (we recommend Callebaut or Scharffenberger), chopped
1-2 tablespoons liqueur (suggestions: Grand Marnier, Chambord, Frangelico, Kahlua, or rum)
Your choice of coatings: cocoa powder, powdered sugar, chopped nuts, toasted coconut, cookie crumbs or crushed candy canes
1. Heat the cream in a small saucepan until it just begins to simmer. Remove from heat.
2. Add the chocolate to the hot cream. Let sit for 1 minute, and then add the liqueur and whisk until smooth.
3. Pour the ganache into a shallow dish, and chill until fully set, 1-2 hours.
4. Use a small scoop to portion ganache, and quickly roll between your hands into balls. (Wearing gloves will help protect the ganache from the heat of your hands, and also keep your hands clean!)
5. Put cocoa or other coating in a small bowl and roll truffles to coat.
6. Place on a parchment-lined sheet pan and keep chilled until served.
Scooping Ganache for Chocolate Truffles
Preparing your delicious ganache for it's final dip in premium chocolate requires shaping each piece. You can create a rustic, natural, organic shape (the traditional truffle method dipped in cocoa powder) or you can create small uniform more formal balls. The size of your finished center is completely up to you. Remember that your centers will be coated in tempered chocolate and possibly rolled in another ingredient like nuts, coconut etc. so take that extra layer or two into consideration when deciding the size of your ganache center. Consider starting with a 1/2 diameter and work from there. Another rule of thumb is to have a one ounce finished weight per truffle. Using a melon baller is an easy way to measure the amount of ganache and create a nice round shape. A basic table spoon is another very easy method of scooping the right amount for rolling. Dipping Chocolate Truffles
Recipe for centers - makes 100:
1 cup fluids (3/4 c ricemilk/soymilk/half & half), 2 T liqueur or Kirsch (Grand Marnier, Kahlua ...), 2 tsp. vanilla extract, a few drops of orange and/or bitter almond extract)
500 grams dark, bittersweet chocolate
1 cup toasted almond meal
1 tsp. cinnamon
Heat fluids to almost boiling, switch off. Break up chocolate, melt in fluids, stirring frequently. Add almond meal and cinnamon, stir together. Let cool to barely lukewarm and thick. Pour into 9x9 pan, lined with waxed paper. Let cool in fridge for a few hours or overnight.
Cut into 10x10 cubes, squeeze corners a bit, roll between your palms into balls. Freeze in plastic containers. Dip as needed.
Dipping: Melt about a pound of chocolate for about 70 truffles.
