6 eggs large, room temperature, separated
¾ cup sugar divided
⅛ teaspoon salt
1 teaspoon lemon juice
7 ounces semisweet chocolate best quality, chopped
6 ounces unsalted butter room temperature, plus more for pan
⅛ teaspoon almond extract
2 cups almond flour 7 ounces
½ teaspoon baking soda
4 tablespoons seedless raspberry jam optional
1 tablespoon water
GANACHE ICING
¾ cup heavy cream
8 ounces semisweet chocolate best quality, finely chopped
1 teaspoon instant coffee powder
1 tablespoon honey
OPTIONAL
Cocoa powder for dusting cake pan
Chopped Almonds decoration
Fresh Raspberries decoration
Extra Baking Chocolate (White and Dark) for chocolate curls

1:07 Whip the egg whites with sugar until stiff peaks form. I love my KitchenAid stand mixer for this.
2:00 Melt chocolate with butter.
2:30 Whip egg yolks until thick, pale and stable. Stir in the melted chocolate-butter mixture.
3:06 Add almond flour in 3 batches, adding just enough whipped egg whites to soften batter.
3:50 Carefully fold in remaining egg whites into the batter.
4:50 Transfer batter to springform pan and bake.
5:25 Make jam syrup and chocolate ganache.
6:23 Level off the cake on the top using a sharp long knife. Invert it and place on a cake plate. A nice cake lifter comes in handy for this.
7:19 Spread jam syrup and followed by ganache icing. An offset spatula is useful for this.
8:32 Decorate with chopped almonds, fresh raspberries and chocolate curls.

For the sponge cake
- 5 eggs
- 120 gr granulated sugar
- 160 gr all purpose flour
- 1 tsp baking powder (can be skipped if you don't have any left)
- 40 gr melted butter
For the filling
- 160 gr chocolate buttercream or frosting of your choice (can also be whipped cream)
- 40 gr roasted chopped almonds (I had whole almonds that I blanched to peel easily, gave a quick pan roast and chopped)
For the glaze
- 100 gr dark chocolate (can be bittersweet chocolate chips or a dark chocolate bar)
- 200 ml sweetened condensed milk

I took Julia Child's amazing Reine de Saba avec Glaçage au Chocolat (Chocolate Almond Cake), and put my spin on it. I made it a two layer cake and added an amazing marzipan buttercream filling. Rich cake, almondy center with dark chocolate on top. Must make, must eat!
Ingredients:
For the Cake:
4 ounces or squares semisweet chocolate melted with 2 Tb rum or coffee
1/4 lb. or 1 stick softened butter
2/3 cup granulated sugar
3 egg yolks
3 egg whites
Pinch of salt
1 Tb granulated sugar
2/3 cup pulverized almonds
1/4 tsp almond extract
1/2 cup cake flour (scooped and leveled) turned into a sifter
For the Icing:
4 ounces semisweet baking chocolate
1/2 cup coffee
5 to 7 Tb unsalted butter
For the Filling:
1/2 cup grated marzipan
1 stick salted butter
1 cup confectioner’s sugar
1 tablespoon hot water

Torta Caprese is a traditional cake of the beautiful island of Capri from Italy. It is a dense, moist flourless chocolate cake enriched with ground almonds that bring a great flavor and texture. Also as no flour is used makes this dessert a perfect choice for those in search of gluten-free dessers.

Ingredients
Makes about 8 servings
7 oz (200g) peeled almonds
7 oz (200g) semisweet chocolate
2/3 cup (150g) butter
3/4 cup (150g) sugar, divided
4 eggs
1/4 tsp (1g) salt
1. Grease and line with parchment paper a 8 or 9 inch (20-23 cm) springform pan (with a removable base). Preheat oven to 180°C (350°F).
2. Place the peeled almonds into a food processor and process until finely ground but with still some remaining chunky pieces for a crunch texture
3. Melt chocolate and butter over a bain-marie until smooth. Let it cool slightly.
4. Meanwhile separate egg yolks from whites.
5. Mix yolks with ½ cup (100g) sugar and salt until thick and pale yellow colored.
6. Mix in cooled chocolate and add ground almonds.
7. Whip egg whites until foamy using a mixer. Gradually add ¼ cup (50g) sugar and whip until stiff peaks form. Gently fold the whipped whites into chocolate mixture.
8. Pour batter into prepared pan and bake for 30-40 minutes until a toothpick inserted into the center comes out with few crumbs attached
9. Let it cool completely in the pan over a cooling rack.
10. When cooled invert onto a serving platter and dust with powdered sugar.
11. Serve if desired with whipped cream and fresh berries.

NOTE: This cake must be kept in the refrigerator.
To make the cake you will need:
2 sticks (250 grams) vegan butter sticks or unsalted butter, softened to room temperature
125 grams organic sugar
125 grams coconut sugar or brown sugar
3 eggs
130 grams whole wheat pastry flour, sifted
1 tsp baking powder
30 grams cocoa powder, sifted
100 grams almond flour
5 tbsp instant coffee mixed with 1 to 2 tbsp hot water, to make a paste.
130 grams melted dark chocolate. Semi-sweet, bittersweet or a mixture of the two work well.
Stabilized Whipped Cream
To make the stabilizer: Mix 1 tsp powdered gelatin with 1-1/2 tbsp cold water. Let it sit for 5 minutes. Add 1-1/2 tbsp boiling water and stir to dissolve.
2 cups heavy whipping cream
1/4 cup confectioner’s sugar. (In the video I used 1 tbsp stevia)

A cake made in the slow-cooker? You bet! (RECIPE BELOW) This mouth-watering mandarin and almond cake is cooked to perfection in the slow-cooker. Sarah Hobbs, Coles Magazine’s Food Editor, shows you how to make this delicious cake step by step. Moist and fluffy, this citrus delight is part pudding and part cake and 100 per cent irresistible.

MANDARIN & ALMOND CAKE
Serves 12 Prep 15 mins (+ cooling time)
Cooking 5 hours
4 mandarins
4 Coles Australian Free Range Eggs
²⁄³ cups (150g) caster sugar
1¹⁄³ cups (160g) almond meal
²⁄³ cup (100g) self-raising flour
2 mandarins, extra
½ cup (110g) caster sugar, extra
1. Place the washed unpeeled mandarins in an 18-cup (4.5L) slow cooker. Cover with hot water. Cook, covered, on high for 2 hours. Trim the ends from mandarins and discard. Halve the mandarins and discard the seeds. Place in a food processor and process until the mixture is pulpy.
2. Grease and line the base of a 20cm round (base measurement) cake pan with baking paper. Use an electric mixer to beat the eggs and sugar in a bowl until thick and creamy. Add the almond meal, flour and mandarin pulp and use a large metal spoon to gently fold until just combined. Spoon into the prepared pan. Top the pan with a sheet of baking paper and foil, pleated in the centre. Secure with kitchen string. Place the pan in the slow cooker. Add enough boiling water to come halfway up the side of the pan. Cook, covered, on high, adding more boiling water to the slow cooker as necessary, for 3 hours. Stand cake in the pan for 5 mins to cool before turning onto a wire rack to cool completely.
3. Meanwhile, use a small serrated knife to cut the extra unpeeled mandarins into thin slices. Combine the extra sugar and ¼ cup (60ml) water in a small saucepan over medium-low heat. Cook, stirring, for 6-8 mins or until sugar dissolves. Add the sliced mandarin and reduce heat to very low. Cook for 3 mins or until mandarin is tender and the syrup thickens. Set aside to cool. Place the cake on a platter. Top with mandarin and syrup to serve.

INGREDIENTS:
1 1/4 cups (156 grams) almond flour*
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons (2 ounces) unsalted butter, softened
1/3 cup almond butter (no salt preferred)
3/4 cup + 2 TB (6 ounces) dark brown sugar

Banana Cake Chocolate Almond - Easy Recipe
How to make Banana Cake Chocolate Almond. Moist banana cake glazed with chocolate and toasted almond slices for topping.

Banana Chocolate Almond Cake
125ml melted butter
2 large eggs
200g sugar
190g all purpose flour/plain flour
1 tsp vanilla sugar (vanilla extract)
1-1/2 tsp baking powder
A pinch of salt
1 large ripe banana, mashed.
125g sour cream (we can use plain yogurt or buttermilk work too)
A handful of raisins.
75g almond slices, toasted.
In a bowl: sugar, melted butter, eggs. Whisk/mixer until pale and the sugar dissolved.
Sift into the egg mixture: flour, vanilla sugar, baking powder, and salt.
Using a spatula, fold the cake batter gently until combined.
Add sour cream (yogurt). Buttermilk work too.
Add mashed banana and raisins. Fold until well combined.
Pour the batter into a loaf pan lined parchment paper.
Bake at 180°C preheated an oven, for 30 - 35 minutes. An oven may vary.
Toothpick test! Cool in the pan 10 minutes. remove from the pan and peel off the paper. Cool completely on wire rack.
Melt chocolate glaze over simmering water. Pour over the cooled cake, sprinkle with toasted almond.

It's been a few weeks since I shared the picture of this cake on my Instagram (@shivesh17) but since then, I've been getting messages for it almost every day! I made it again to share the recipe with you guys because it's definitely the best chocolate cake I've eveeeer made!

I can promise you that you'd love this rich, decadent chocolate cake filled with the best chocolate pudding and topped with almond praline- it's indulgence at it's best!
Chocolate cake sponge
1 + ½ cups maida
¾ cup cocoa powder
½ tsp baking soda
1 tsp baking powder
¾ cup vegetable oil
1 + ½ cups castor sugar
1 cup hung curd
½ tsp vanilla extract
1/2 cup milk
Chocolate pudding
2 cups milk
1/2 cup fresh cream
1cup dark chocolate
1tsp instant coffee powder
3tbsp cornflour
6tbsp sugar
2tbsp cocoa powder
2tbsp butter
1tsp vanilla
Almond praline
1/2 cup almonds (whole)
3/4 cup granulated sugar
2 tbsp water

take 2 sticks of unsalted butter at room temperature
add 1/2 cup brown sugar
1/2 cup granulated sugar
mix for 2 minutes until fluffy
now add 1 egg
1 teaspoon almond extract
1/4 teaspoon salt mix to combine
once combined add:
2 cups all purpose flour
mix until flour is combined
grease a 9x13 baking dish
add the flour mixture to the dish and spread it out.
Use yours hands to help press the dough down!
bake at 350°F for 13 to 15 minutes
***once done baking turn the stove off***
immediately add 1 +1/2 cups of chocolate chips to the dough
return the tray to the oven for 10 to 15 seconds --- this is to help melt the chocolate!
keep the oven turned off when you return the tray with chocolate chips on top.
very gently using a spatula spread the melted chocolate chips out
add 1/2 cup sliced almonds on top
allow the chocolate to set for a couple of hours - I usually leave it out on the counter to set for 2 to 3 hours
once the chocolate has set slice and enjoy!

Chocolate Pound Cake Recipe
Chocolate Pound Cake - buttery and dense, with a moist crumb, and a great chocolate flavor. This recipe doesn’t use too much chocolate and uses more cocoa powder instead.

Ingredients
Makes 2 loaf pound cakes
1 cup + 2 tbsp (250g) butter
1 1/2 cup (300g) sugar
1/3 cup (40g) cocoa powder
7 oz (200ml) milk
1.5 oz (40g) semisweet chocolate
4 eggs
1 2/3 cups (200g) all-purpose flour
1/4 tsp (1g) salt
2 1/2 tsp (10g) baking powder
nuts, for topping
1. Preheat oven to 350F (180C). Grease and line with parchment paper two 9x5in (23x13cm) loaf pans.
2. Place butter in a sauce pan and melt over low heat. Add sugar, cocoa powder and milk and stir to combine. Bring to a boil for 1 minute. Remove from heat.
3. To make the chocolate glaze for the topping, place the chocolate pieces into a small bowl and add about 1 cup (220g) of the hot cocoa syrup. Stir to melt the chocolate and set aside until ready to use.
4. While the cocoa syrup cools down slightly separate the egg whites from yolks and whip the egg whites until foamy and stiff peaks form.
5. Incorporate yolks one at a time and then add flour, salt and baking powder to the cocoa syrup and stir to combine. Gently fold the whipped whites into the mixture and divide mixture evenly into the prepared pans.
6. Bake for about 30-35 minutes until a toothpick inserted in center of cake comes out with a few moist crumbs attached.
7. Pour the reserved chocolate glaze on the top and decorate with nuts if desired.
8. Let cool completely before serving.
