I made a really simple and creamy dill sauce recipe which is perfect to eat with tender, juicy salmon!

60g salted butter
30g plain flour
425ml whole milk (for a thicker sauce) 500ml if you prefer a less thick sauce
pinch of nutmeg
salt and pepper to taste
small handful fresh dill

The Gribiche is a French sauce based on a mayonnaise made with boiled eggs (which is good news if you don't want or cannot eat raw eggs product). The mayonnaise is then garnished with a mix of chopped capers, gherkins, fresh parsley and tarragon. this sauce is used in France especially with cold meats or fish.
Ingredients needed to make enough sauce for 4 people:
150 ml of sunflower oil (or equivalent)
2 boiled eggs,
1 generous tablespoon of Dijon mustard
a pinch of salt and pepper
1 tablespoon of white wine vinegar
1 tablespoon of fresh tarragon (chopped)
1 tablespoon of fresh parsley (chopped)
3 or 4 sliced ghurkins (standard sour type, not sweet)
1 or 2 tablespoon of capers (chopped roughly)

Tuna Melt Recipe:
1 can skipjack tuna, drained
14 cup organic celery, finely diced
2 or 3 green onion, diced
Pinch of salt
Squeeze of fresh lemon juice
1 Tbsp. fresh organic parsley, chopped
2 slices cheddar cheese
Butter from grass-fed cows
Add the tuna, celery, onion, garlic powder, salt, lemon juice, and mayonnaise to a bowl and stir to combine well.
Place a good amount of tuna mix onto one slice of bread and add the cheese on top. Place the 2 nd piece of bread on top. Add some softened butter to the outside of the bread and place it butter side down onto a cast iron grill pan.
Add more butter to the top piece of bread and cover with a lid or piece of foil. This will help the cheese melt.
Once golden brown, turn over the sandwich with a spatula and cook on the second side (covered) until the bread gets a nice golden brown and the cheese is melted.

1kg / 2.2lbs Clams
1 Cup Salt
½ Cup Butter, softened
2 Tsp Lemon zest
1 Tsp Cracked black pepper
2 Tbs Capers, drained
1 Tbs Garlic chives, chopped
Half-fill a large mixing bowl with cold water and add ⅓ cup of salt. Stir until dissolved.
Add the clams to the bowl and allow to soak for 15 minutes. Drain and repeat twice more.
While the clams soak, add all of the other ingredients to a jug. Using your stick blender, mix these until smooth.
Heat your barbecue until medium hot and grill the clams for 5-8 minutes. Remove the clams from the heat as soon as they have opened more than 12mm / ½ inch.
Discard any clams that do not open within 8 minutes.
Transfer the clams to serving platters and serve with the caper butter.

1. Spider Veins
Spider veins are often a sign of liver disease. Also known as spider nevus, these are small, dilated blood vessels clustered together on the surface of your skin.
Do you ever feel strange irritation in and around your feet? Do you find that you’re constantly scratching the bottom of your feet? Believe it or not, this may be another sign that your liver is in trouble.
3. Red Dots
Have you been noticing redness in your skin? Not just rashes, but strange, tiny red dots? This is another sign that liver damage may have taken place, and is affecting your body.
Are you going through undeniable pain every time you walk? Are your feet hurting even when you're sitting down? Liver disease will cause you to feel terrible pain in your feet. It sometimes gets to the point where you can’t even walk properly. Well this can normally mean Hepatitis C.
Along with your foot pain, you will notice your feet starting to swell. This is known as edema. With edema, areas of your body will see a buildup of fluid. It usually happens in the feet, ankles and legs. You can sometimes even press your finger against your foot and see a small dent left in your skin. This is known as pitting edema, and indicates a build up of excess fluid.

Phil Fanning's Bouillabaisse of Turbot, Salmon & Mussels
A good bouillabaisse is a true labour of love, and this very fine example of the southern French dish by Phil Fanning is one of the best we’ve ever seen. Turbot, salmon and mussels sit alongside poached fennel hearts in the rich soup, which is made by roasting marinated fish trimmings and creating a tomato and fennel fondue. The result is wonderful bowlful of sunny, summery flavours.
You can make certain elements of this dish, such as the fennel and tomato fondue, the croutons and the roasted soup base in advance, so have a good read of the recipe before starting. • 30 ounces canned chickpeas, drained and rinsed
• 1 pint red grape or cherry tomatoes, halved or quartered
• 1 English cucumber, diced
• 1 green bell pepper, diced
• 1 small red onion, thinly sliced
• ½ cup sliced kalamata olives
• ½ cup crumbled feta cheese
• 2 tablespoons freshly chopped basil
• 2 tablespoons freshly chopped mint
• 2 tablespoons honey
• 3 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 2 tablespoons white wine vinegar
• ¼ teaspoon salt
• ¼ teaspoon black pepper
1️⃣ In a large mixing bowl, toss together chickpeas, tomato, cucumber, bell pepper, red onion, olives, feta, basil, and mint.
2️⃣ For the dressing, pour honey into a microwave-safe mixing bowl. Microwave 10-15 seconds to liquify honey. Whisk in olive oil, lemon juice, vinegar, salt, and pepper.
3️⃣ Pour dressing over chickpea salad. Toss to combine. Refrigerate until ready to serve.
