How To Make Refreshing Cold BLUEBERRY SOUP Recipe
INGREDIENTS:
2 cups fresh blueberries - rinsed and drained
1/2 cup fresh squeezed orange juice
1/4 cup sugar
1/4 tsp. nutmeg
1 tbsp. fresh lemon juice
1 cup cold half and half
Mint leaves, blueberries, orange slices and zest for garnish
Makes 2-4 servings depending on serving size.
You can double the recipe.
In a sauce pan on medium heat add berries, sugar, orange juice and nutmeg.
Cook, stir and bring up to a boil.
Simmer one minute, remove from heat and let cool.
Add blueberry mixture to blender along with tbsp. lemon juice.
Blend until smooth.
Refrigerate until completely chilled.
Right before serving add cold half and half and mix well.
Garnish as you wish.
Enjoy.

Ingredients:
1 - Deseeded & Chopped Watermelon
3 soaked dates
1 tbsp soaked raisins
1 tsp chopped ginger
10 Mint leaves
1/4 cup lemon juice
3/4 tsp - basil seeds
3 cups watermelon
Salt to taste
Ice cubes
Method of preparation:
In a mixer jar, add dates, raisins, chopped ginger, mint leaves, lemon juice, basil seeds, 3 cups of watermelon and salt to taste.
Blend it nicely.
In a mixer jar add rest of the watermelon, ice cubes and some salt to taste. Blend them well.
Pour both the mixture in a bowl and mix them well.
Once you're done mixing them, pour it in a handmade bowl.
Our Cold Watermelon Soup is ready.
Tip:
Slit the watermelon horizontally, scoop out all the flesh and use the outer layer of the watermelon as a serving bowl.
Slice the base a little bit so that it remains stable.
Soak the raisins and dates for 3 hours before using.

On a sweltering summer’s day this healthy concoction of fruit, juices and honey is an ideal replacement for breakfast, or even lunch.
Hungarian Sour Cherry Soup (Meggyleves)
This is a light, slightly sweet, cold summertime soup made with whole fresh sour cherries, cream and/or sour cream. It can be served as an appetizer or dessert. It might be strange to have a sweet soup but this is a very traditional Hungarian dish. Some people put whipped cream on top, but I prefer without it. When fresh sour cherries are not available, a canned version can be used. In this video I show you how to make it – and I hope you'll like it.
Ingredients (for 4)
500 gr (1lbs) fresh (or canned) sour cherries
100 gr (1/2cup) sugar
pinch of salt
2 small cinnamon sticks (whole or break into pieces)
5 cloves
1 small lemon
180ml (3/4cup) sour cream
150ml (2/3 cup) cream
1 heaped tbsp flour
1tsp vanilla extract
1 liter (4,2 cup) water
1. The first step is pitting the sour cherries. I used an un-bent paperclip to remove the pits. Using this technique the cherries remain whole, undamaged. (of course, you can use pitted sour cherry compote) TIP: Use rubber gloves preventing your hands becoming purple.
2. Cut 3-4 slices of lemon
3. Put the cinnamon pieces and cloves into a tea infuser ball. (it will be much easier to remove them later from the soup)
4. Put the sour cherries into a pot and pour 1 liter water over. Add the salt, sugar, lemon slices and the spices. Cook on medium heat for 15-20 minutes.
5. Place the sour cream into a bowl, add the flour and stir well until smooth. Add the cream and stir again thoroughly.
6. Remove the lemon slices and tea ball from the pot.
7. Pour 1-2 ladles of soup into the sour cream mixture and stir well. (you can add some more soup if the mixture is too thick)
8. While the soup is still cooking on low heat, slowly pour the mixture into the pot, stirring continuously.
9. Add 1 tsp of vanilla extract, stir again and cook it for another 5-8 minutes.
10. Remove from the heat, let it cool then refrigerate until cold.
11. Serve it with or without whipped cream on top.

Learn how to make a tropical fruit soup with our online culinary school chef in this tutorial video.
TROPICAL FRUIT SOUP RECIPE:
Ingredients
4 ripe mangoes
1 ½ cups coconut milk
Flesh from 1 young coconut
1 cup plain yogurt
Zest of 1 lime
2 tbsp honey
1 dragon fruit
1 cup pineapple juice
3 cups chopped pineapple
Mint leaves
Preparation
1. Peel and pit three mangoes and roughly chop. Place in a blender along with the pineapple chunks and coconut. Add coconut milk, yogurt, honey and pineapple juice. Puree until you get a very smooth soup. Add half the lime zest.
2. Strain the soup mixture into a bowl and discard the stringy parts. Chill for a couple hours before serving.
3. Cut the last mango and dragon fruit into small cubes and serve on the side to garnish the soup. When ready to serve, pour into cold serving bowls and garnish with mango, dragon fruit segments and lime zest. You can also use shredded coconut, edible flowers and other tropical fruit.

INGREDIENTS:
-For a delicious cold peach soup, puree peaches with organic apple or peach juice and some spices like cinnamon and cloves. Strain through a sieve. You can use fresh peaches or frozen, thawed peaches. Try a delicious bowl of strawberry kiwi soup by blending strawberries with kiwi fruit and your favorite flavor of yogurt. Thin it down with cranberry juice to a soup-like consistency. Cherry lovers will adore cold cherry soup. Simply puree frozen, thawed pitted organic cherries. Strain, if desired, to remove the skins. Thin the soup with grape, pomegranate, cranberry or cherry juice. Float some orange slices in the soup. Make honeydew melon soup by pureeing honeydew melon with lemon and honey to taste. Puree orange juice with lime juice and cantaloupe for a delicious cold soup. Add some mint and a dash of all natural ginger ale.

1 cup fresh raspberries
2 tbsp. lemon juice
1 can of drained apricot halves
Directions
Gather ingredients
Add water, sugar, and ginger to large pot
Stir occasionally until boiled
Get immersion blender and blend raspberries and lemon juice together
Once boiled add the raspberry mixture
If you want this served cold chill the soup then when ready to serve add apricot halves
If you want this served hot pour soup into bowl then add apricot halves
All done!
Substitutions
-you can substitute raspberries for blackberries
-you can substitute ginger for lemon zest
-you can substitute apricot for peaches
-you can substitute an immersion for regular blender,food processor, or you can smash with fork in a bowl
Tips
-taste soup then add more lemon juice to your liking
-strain out raspberry seeds for a more smooth soup
-the longer you boil the more ginger you would taste

Swedish fruit soup (Swedish: fruktsoppa, Swedish: blandad fruktsoppa (mixed fruit soup) is a fruit soup that is typically prepared using dried fruits, and usually served as a dessert dish. The dish has been described as a cold fruit pudding. It is a traditional dessert in Sweden and Norway. Historically, during the winter months in Scandinavian countries, fresh fruit was generally unavailable, so people used dried fruits for the preparation of various dishes, including Swedish fruit soup. The soup may be served hot or cold.
Swedish fruit soup is a staple food in Scandinavian countries. Consumption of cold fruit soups is also a tradition in the cuisine of Scandinavia. Swedish fruit soup is also a traditional soup served during the Christmas holiday season. The dish is also sometimes served as part of a smörgasbord. It may be served with cake, such as coffee cake.
Dried fruits used in the preparation of Swedish fruit soup have included apricot, apple, pear, raisins, currant cranberries, prunes grapes, cherry cloudberry, arctic raspberry and peaches. Additional ingredients may include tapioca, sago, red wine, sugar, lemon juice, cinnamon, and salt. Preparation involves soaking the dried fruits and various ingredients for some time to soften them, and then adding water and cooking the mixture until it thickens.
It may be served as a cold soup, and can be stored unrefrigerated for a reasonable amount of time. Its flavor may be enhanced by letting it sit for several hours prior to serving, which allows the flavors to better intermingle and incorporate into one another. Swedish fruit soup may be prepared using a slow cooker.
In the United States, it has also been prepared and served both hot and cold before meals as a sauce.

Instructions:
Remove the skin and seed from the mango and slice into small chunks and pretty much the same with the Pineapple. Cut the flesh and add to the water along with the chopped Spring onions and celery, garlic, lentils, lime juice and scotch bonnet chilli pepper pimentos which also known as All Spice this berry works well with savory and sweet dishes. I used coriander but you can also use herbs de provence. Bring to the boil then simmer approximately 30 minutes.
Be sure to taste as it's cooking so add the honey and salt at your discretion...
For the vegan option you can use Agave Syrup
Remove The Scotch Bonnet And Blend.

CREAMY AVOCADO SOUP RECIPE:
Ingredients
1 tbsp butter
½ cup chopped onion
1 garlic clove, minced
6 cups chicken stock
3 ripe avocados, peeled and mashed
1 tsp lime juice
1 jalapeño pepper
2½ cups heavy cream
¼ tsp ground cumin
¼ cup fresh cilantro, chopped
Salt and pepper
Preparation
1. Heat the butter in a medium pot over medium heat. Add the onion and cook for about 2 minutes. Add the garlic, jalapeño and cook for about 30 seconds more.
2. Add the chicken stock, lime juice and avocado to the sauce pot and bring to a boil. Reduce the heat to medium and cook for about 5 minutes.
3. Puree the soup and blend until smooth. Add the heavy cream, cumin, salt and pepper.
4. Cook over medium heat for about 5 minutes. Add the fresh cilantro and serve warm.

Betty demonstrates how to make Cool Summer Fruit Soup. This is a refreshing fruit soup that consists of fresh peaches, fresh strawberries, and fresh blueberries, with a maple-flavored sauce.
Cool Summer Fruit Soup
2 tablespoons cornstarch
1 cup cold water
¾ cup pineapple juice
¾ cup maple-flavored syrup
1 teaspoon lemon juice
2 cups chopped fresh peaches
1 cup sliced fresh strawberries
1 cup fresh blueberries
In a large saucepan, combine ¼ cup water with 2 tablespoons cornstarch. Stir until cornstarch is dissolved in water. Add the remaining ¾ cup water, ¾ cup pineapple juice, ¾ cup maple-flavored syrup, and 1 teaspoon lemon juice. Stir to combine. Place over medium heat and bring to a boil, stirring constantly. Reduce heat and boil 1 minute. Remove from heat and allow to cool. Stir in 2 cups chopped fresh peaches, 1 cup sliced fresh strawberries, and 1 cup fresh blueberries. Cover with plastic wrap and chill for several hours before serving for best results. This is a great soup as an alternative to your everyday style of soup; it is also terrific when served as a dessert. Enjoy!!! --Betty

This is a very refreshing, light and aromatic Cold Soup that it's a pleasure to eat it. It has Watermelon, Tomatoes, Nectarines and Fresh Basil leaves and seasoned with a bit salt, pepper and extra Virgin olive oil. So simple to make it, give it a try!
Preparation time 15 minutes
Serves 5 to 6
Ingredients
500g Plum Tomatoes
2 big size of Nectarines
1.5 kg of Watermelon
1 big handful of Basil leaves
2 table spoons of Extra Virgin Olive Oil
½ tea spoon of Table Salt
Black Pepper at your taste
Finely Chopped French garlic for garnish

Mangoes Medium ripe (Firm) (Jamaican or pakistani )
2nos Malta Orange
1 Mint leaves 20g
Thai Red Chilli 1
Basil leaves 5gm
Cumin Powder 4g
Chaat Masala 4g
Olive Oil 10ml
White Onion 1 nos
Honey Dew Melon 1
Small Fresh Watermelon Juice 400ml
Apple Jelly 30g
Lemon Juice of 2
Lemons orange juice 60ml
Honey 10g
Tabasco 2 tsp
Microgreens to garnish
Method:
Dice the mango into cubes.
Fold in with finely diced onions, chilli, chopped mint and julienned basil leaves.
Sprinkle with the chaat masala & cumin powder. Scoop the melon to get small balls & toss in with the chaat masala, cumin and julienned basil.
Blend the water melon with the honey, small dash of tabasco & orange juice.
Take out Segments of orange & set aside.
Plate the mango mix in a ring on a plate & refrigerate.
To serve, pull the plate out, garnish with the segments, mint leaves & diced apple jelly.
Pour the extra chilled watermelon soup on the plate, at the table.

Healthy Fruit Soups - Quick & Easy Recipe
Mrs Bohra’s Kitchen presents a unique recipe today - the healthy fruit soup. In light of COVID 19, Mrs Bohra has innovated a soup with immunity boosting capabilities. The taste for these healthy fruit soups were meticulously developed after experimenting with a variety of fruits and ingredients. Today’s soup is a mix of Apple and grapes.
Ingredients:
Fruits (or a combination of fruits),
Almond Powder: 2 Tbsp,
Kalimirch (Black Pepper): 5-7 pepper corns,
Dalchini (Cinnamon): small piece,
Long (Cloves): 4-5 pieces,
Jaiphal (Nutmeg): 1 small piece,
Javitri (Mace): 1 small piece,
Badi Elaichi (Black Cardamom): few pieces ,
Tej Patta (Bay Leaves): 1-2 leaves,
Tulsi (Basil): 5-8 leaves

If we sick then Doctor gives us advice to take fruits... but Sometimes Fruits are very sour in taste.. That's why we suffer cough, Cold, Sneezing etc.. But I have a solution of this problem.. We can prepare fruits soup for family and friends... Because It is very healthy for our weaknesses... You must watch this video for Good health.. I used many fruits for this, like Concord grapes (काले अंगुर), Grapefruit (मौसंबी), Pomegranate fresh juice (अनार का ताजा रस), Black paper, Salt, Sugar, Jeera & Water... In this recipe I boiled all fruits, there fore Fruit must be sour less... You must watch this recipe for Good health.. Just prepare it for your family, friends and relatives... Keep your family healthy.. Control your weakness from it...

I इसके लिए कई फलों का इस्तेमाल किया जाता है, जैसे कोंकॉर्ड अंगूर (काले अंगूर), अंगूर (मसाम्बी), पेमेग्रानेट ताजा रस (अनार का ताजा रस), काली कागज, नमक, चीनी, जीरा और पानी ... इस नुस्खा में मैंने सभी फलों को उबलाया, वहाँ फलों को कम खट्टा होना चाहिए ... आपको अच्छे स्वास्थ्य के लिए यह नुस्खा देखना चाहिए .. बस अपने परिवार, दोस्तों और रिश्तेदारों के लिए इसे तैयार करें ... अपने परिवार को स्वस्थ रखें ... इसे अपनी कमजोरियों पर नियंत्रण रखें ...

Cold Fruit Soup - Game of Thrones
In this video we are making Cold Fruit Soup
Ingredients
1 medium cantaloupe, cut into chunks
1/2 cup fat-free plain Greek yogurt
1 tablespoon grated fresh ginger
1/3 cup lemon basil leaves or regular basil
Juice from one lemon
A Pinch sea salt
A pinch ground cinnamon or nutmeg
OPTIONAL
For garnish: drizzle of honey, mint leaves, basil leaves, crushed nuts, dollop of yogurt
