Spinach and Chicken Casserole
* 3 cups cooked Rice
* 1 1/2 cups Heavy Cream
* 8 oz. Cheddar Cheese
* 1 lb. Cooked Chicken Breasts (cut into chunks)
* 10 oz. Spinach
1. Preheat oven to 350º F.
2. Cook rice and set aside.
3. In a pot over medium heat, add cream and cheese and stir until smooth.
4. Lower temperature. Add spinach, rice, and chicken and stir until well coated.
5. Add to a 2 quart casserole dish.
6. Cover and bake for 30 minutes.

Creamy Chicken Casserole (with pasta and spinach)
6 oz uncooked egg noodles
1 tbsp olive oil
1/4 cup chopped onion
1/4 cup chopped red bell pepper
1-10z package frozen spinach thawed and drained
2 boneless chicken breasts, cooked and chopped into bite sized pieces ( about 3/4 of a pound)
1 small can of sliced mushrooms drained
2 cups shredded cheese (your choice) original recipe called for Swiss
3/4 cup half and half light cream
8oz (1 cup) sour cream
2 eggs lightly beaten
1/2 tsp salt
1. Preheat oven to 350F, cook noodles according to package directions, drain and aside. Spray a 13X9 inch baking dish with nonstick cooking spray.
2. Heat oil in large skillet over medium-high heat. Add onion and bell pepper, cook and stir 2 minutes or until onion is tender. Add spinach, chicken, mushrooms and cooked noodles, stir to blend.
3. Combine cheese, sour cream, half and half, eggs and salt in medium bowl, blend well.
4. Add cheese mixture to chicken mixture, stir to blend. Transfer to prepared baking dish, Bake at 350F for 30-40 minutes until heated through.

800g chicken breast, sliced thinly
250g mushrooms, sliced
salt and pepper for seasoning
1/4 cup butter
2-3 garlic gloves
1 tbsp flour
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
1/4 tsp pepper
2-3 cups spinach, chopped

We are almost finished with our Thanksgiving recipes. Can you believe it? This is my spinach casserole, or as my family calls it spinach souffle. I hope you all will try it. It brings something tasty and delicious to the party.
10 oz. frozen chopped spinach, thawed and rung dry
8 oz. shredded monterrey jack cheese
4 oz. cream cheese
1/2 stick of salted butter
1/4 c. milk
1/4 c. flour
pinch of nutmeg
salt and pepper to taste
Preheat oven to 350 degrees. Grease a small casserole dish with butter or oil. Combine all ingredients and place in casserole dish. Bake for 30 minutes. Even the kiddos will eat their spinach with this recipe.

Anyone who has ever been to TGI Friday's knows that spinach and artichoke dip is a classic on their menu. If you love the flavors of that dip, then you are going to love the flavors of this casserole! Think spinach artichoke dip with chicken mixed in topped with a crispy cheesy crust and you have what I am sharing today! The bonus is that if you are on a low carb or keto diet, then this is definitely something you are going to want to try! This is creamy, cheesy and full of chicken and definitely full of flavor. This casserole is inspired by everyone's favorite, spinach and artichoke dip. Sadly, when you are trying to stay on track and be good with your diet, you can't have the bread and some of the veggies that they typically serve with that. So this casserole is the perfect answer. I took my recipe for slow cooker spinach artichoke dip and amped it up to make this delicious dinner casserole. It also heats up beautifully the next day for lunch!
This starts with chicken. I poached three chicken breasts and cubed them up but you could start with a rotisserie chicken from the grocery store, just remove the meat and cube it up. One small chicken should be just right. Next I used two, 15 ounce cans of artichoke hearts. Mine are packed in brine and were called small on the label. There are different sizes of artichoke hearts and sometimes you can even find them quartered. It is my experience that the canned ones are cheaper than the frozen. I cut mine in half for the casserole to make for easy dishing. A 12 ounce bag of frozen spinach comes next. Follow the directions and steam it in the microwave then squeeze out the excess liquid before adding into the mixture. Too much water is going to make this casserole sloppy an unappealing.
The main ingredients out of the way, now on to the flavor! I have also decided to add 1 pound of Cremini mushrooms sauteed in some butter with fresh garlic and one medium sweet onion. This brings seriously flavor and great bulk to the casserole. I seasoned this up with onion powder, garlic powder, cayanne pepper, salt and black pepper. I also added some Italian seasoning.
The creamy part starts with one brick of cream cheese and adds in mayonnaise and sour cream for good measure! This stuff is really good! Mozzarella and Parmesan cheese finish everything off, inside and out.
When you get all this mixed together just pop it in the oven for about a half an hour and you are ready to enjoy a delicious, low carb, keto friendly spinach artichoke and chicken casserole that will knock your socks off! Add a side of cauliflower rice or some spaghetti squash if you are trying to get super healthy or simply add some noodles or rice on the side for a delicious meal anytime. This dish is even awesome for company! Your guests will be asking fo the recipe.
I think that a can of chopped water chestnuts as well as a bit of chopped, roasted red pepper would be a great addition to this dish. I have one daughter who hates both of those things so I left them out. She was not a fan of this dish so next time I am going all in!

Keto Chicken, Spinach, Mozzarella, and Cream Cheese Casserole —In The Kitchen Episode 2
INGREDIENTS YOU NEED
2 large boneless skinless chicken breasts, cut horizontally
8 oz cream cheese, softened
2 cup spinach, rinsed
1 tablespoon olive oil
4 oz Mozzarella cheese, shredded
3 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes, optional
1/2 teaspoon Italian seasoning, optional
1. To prepare the spinach chicken casserole: Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplock bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken breasts are covered in the marinade, set aside for 10-15 minutes on the counter while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).
2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil and set aside.
3. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken breasts and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top.
4. Bake the spinach chicken casserole for 20-30 minutes. Chicken casserole is done when cooked through to an internal temperature of 165˚F (75°C). Serve the spinach chicken casserole warm with a side of cauliflower rice, or baked veggies. Enjoy!

Stuffed Creamy Spinach Chicken
3-4 Chicken Breast (boneless skinless)
8oz cream cheese
10oz frozen spinach (thawed)
1 1/2 mozzarella cheese
3 garlic cloves ( chopped)
1 tbsp onion powder
1 tbsp garlic powder
2 tbsp Italian seasoning
Preheat Oven 400 Degrees
Please wash your chicken. If the chicken breast is too thick, place between two pieces of plastic wrap and pound with a rolling pin. Then take a knife and fillet or slice chicken horizontally but not all the way through. Season the inside with garlic and onion powder. Close and season outside and both sides with salt, pepper, and Italian seasonings. Then sit chicken to the side to marinate for 20-30 mins. In a medium-size bowl add room temperature cream cheese. Thaw the spinach and squeeze out any access water or liquid and add to the cream cheese. Then add the mozzarella cheese and black pepper. Mix with a spatula. Then add chopped garlic and mix together again until all is combined. Then take each chicken breast and stuff each with 2-3 spoonfuls of spinach and cream cheese filling. You can use a toothpick to seal the edges to prevent filling from coming out if you like. Heat olive oil in a cast iron skillet over high medium heat until really hot. Then lower to medium heat and place no more than two chicken breast at a time. Cover with a lid and cook for 8-10 mins to form a crust and golden brown. Then very gently and carefully flip the chicken over and cook for another 8 mins with the lid on. Then place in the oven (lid off) and bake for 15 mins until chicken is thoroughly cooked. Then allow the chicken to rest for 10 minutes. EAT AND ENJOY!

2 lbs chicken breast (boneless and skinless)
1/4 tsp seasoned salt
1 tsp garlic powder
1 tsp salt-free lemon pepper
8 oz (227g) cream cheese (softened)
4 oz (118g) shredded cheese of choice (I used pepper jack cheese)
4 oz spinach (sautéed)
8 oz fresh chopped mushrooms (sautéed)
2 Tbsp to 1 full envelope onion soup dry mix (or to taste)
**BAKE @400ºF / 204ºC for 15 minutes or until internal temp
reaches 165ºF /74ºC

Spinach Artichoke Chicken

2 tablespoons salted butter
2 tablespoons olive oil
4 thin-cut chicken breasts (chicken cutlets)
Kosher salt and freshly ground black pepper
1/2 red onion, diced
2 cloves garlic, minced
Two 8-ounce jars quartered artichokes, drained
3/4 cup white wine
3/4 cup heavy cream
1 cup grated Parmesan
One 4-ounce jar diced pimientos, drained
3 cups baby spinach
1/2 lemon, juiced
Fresh basil leaves, for garnish
Warm bread, for serving
Heat the butter and olive oil together in a large nonstick skillet over medium-high heat. Sprinkle the chicken on both sides with salt and pepper, then add them to the skillet. Cook until nicely browned and cooked through, about 3 minutes per side. Remove to a plate.
Add the onion and garlic to the skillet and stir until slightly softened, about 30 seconds, then add the artichokes and cook, stirring, until the artichokes are hot and the onions are translucent, 1 to 2 minutes. Pour in the wine and stir, then add the cream and more black pepper, if desired, then stir again. Let the sauce come to a simmer, then add the Parmesan and cook for a minute to thicken.
Add the pimientos, spinach and lemon juice, then stir until the spinach has wilted, for a minute or so. Nestle the chicken back into the skillet, spooning a little sauce over the top. Garnish with torn basil leaves and serve with warm bread.
