Fast and Easy Cherry Turnovers
These cherry turnovers are so easy to make. What makes them so fast is the fact that you can buy the cherry pie filling and puff pastry in the grocery store so there is no additional fuss or muss. The most difficult part is allowing the pastry to thaw. I often make them up for dinner parties and they are great for afternoon tea or coffee. Believe me, your family and friends will love them.
I use pistachios in the recipe, but it is completely up to you. You can use walnuts, pecans or leave the nuts out completely. I just like the additional crunch the nuts add to the turnovers. In this recipe, we simply add a dusting of confectioner's sugar to the turnovers, but a glaze could be made up as well. Both provide a touch more sweetness to the dish, as I find the pie filling is not quite sweet enough for a dessert. A bit of sugar could also be added to the cherry pie filling too.

1 Puff Pastry Dough
1 Cherry Pie filling, 21oz can
1 egg white, lightly beaten
For the Vanilla Glaze:
1 1/2 cups powdered sugar
2 tbsp milk
Preheat oven to 375 degrees F.
Unwrap both of the puff pastry doughs and cut into 8 squares (4 from each dough).
Place a heaping tablespoon or two of cherry pie filling in the center of each square. Brush the edges of the squares with the egg white and fold over to enclose the pie filling.
Bake on an un-greased baking sheet for 20 to 25 minutes, or until puff pastry is golden brown.
Let cool on a wire rack. Mix Powdered sugar with milk to make a glaze and drizzle on top turnovers. Enjoy!

Woah woah woah, cherry turnovers? You know we had to make LJ’s cherry turnovers! ???? Part II of our baking series. You can’t go wrong with a delicious cherry turnover recipe. YES! We're making our own butter crust. No store bought! And yes! a homemade cherry filling. It's worth it! :)

Makes 6-8 turnovers
WE RECOMMEND USING A SCALE FOR ACCURACY/CONSISTENCY
11oz all purpose flour
1 ½ tsp salt (we used pink Himalayan salt)
2 tsp sugar
8oz unsalted cold butter [cut into small cubes] (2 sticks)
3.5 oz cold water
In a bowl, add in the flour, salt, sugar, and cold cubed butter. With a stainless steel bladed dough blender, break apart the butter into the flour. Press and mix until your flour mixture reaches small crumb consistency. There should still be chunks of butter but not too big*. Then add in the cold water and mix well until the flour is hydrated. Transfer to your work board and knead just until the dough forms a ball. Make sure not to overwork the dough or else you will get a tough crust. Then wrap it in plastic wrap and store in the fridge for at least 30 minutes to 1 hour. After it has rested in the fridge, transfer back onto your floured board and roll it out to about 1/8 inch thick. If you want precise rectangles, use a ruler to help you cut. We were able to get 12 individual rectangles which makes 6 turnovers. Save the leftover scraps and re-roll to make more.
*Little chunks of butter will create flakes in the crust which is what you want. Buttery flakiness goodness :)
12oz (2 cups) pitted dark sweet cherries [we used frozen, make sure to thaw before using)
1/2 cup granulated sugar
1 tablespoons lemon juice
2 tbsp cornstarch
½ tsp vanilla extract
In a pot, add in the thawed cherries, sugar, lemon juice, and cornstarch. Mix well until the cornstarch has dissolved. Then turn on the heat and stir and cook until the cherry mixture has become thick. NOTE: Keep mixing so you don't burn the bottom! Once it has thicken, turn off the heat, add the vanilla extract, stir and LET IT COOL completely before filling.
PREHEAT OVEN to 375'F
Add about 2 tbsp of the cherry filling onto the center of the rectangle crust (DO NOT OVERFILL). With the top crust, add egg wash to help seal it to the bottom crust. Make sure to also cut 3 slits on the top crust layer before attaching it to the bottom crust. Once you have cut the slits and egg wash the top crust, flip it over to seal it with the bottom crust. Press down the sides to seal and then with a fork, press down the sides to fully seal it. Finish with egg wash on the very top and then bake in a preheated 375' F oven for 12 minutes. After 12 minutes, reduce the oven temperature to 350'F, rotate and bake for another 12 minutes or more until the crust in nice and golden (depending on your oven, time will vary so keep an eye on it!) Let it cool for 10 minutes before consuming. Enjoy!
And yes! You can make a strawberry filling if you don't like cherries. But trust us, you don't want to mess with this one. It's GOOOOD :)

Cherry Turnover Recipe
1 Box Puff Pastry (2 sheets)
1 (20 Oz) Can Cherry Pie Filling
1 Tablespoon Water
3/4 Cup Powdered Sugar
1 Tablespoon Water
1/2 teaspoon Vanilla Extract
How to Make Homemade Cherry Turnovers with Puff Pastry
How to make cherry turnovers. Easy and simple homemade cherry turnovers. Better than store bought and not any more expensive.
Yields 8 turnovers.
1 Pack Puff Pastry Sheets
1 Can Cherry Filling (or any filling you would like)
Follow Puff Pastry instructions for thawing and use.
Lay out both sheets and cut into 4's.
Fill with about 2 TB filling.
Brush edges with egg whites, fold over and gently press to seal.
Bake at 375 for about 25-26 minutes. I set timer for 20 and watched closely from there.
Bake to golden brown.
Use 1 cup powered sugar and add 1 tsp vanilla. Add a splash of milk to make a thick pudding consistency. I used a sandwich baggie and placed the icon in there. Then cut off the top of the baggie and use to ice turnovers.
MAKE SURE TURNOVERS ARE COMPLETELY COOLED BEFORE ICING.

17 oz package puff pastry 4 sheets
10 oz can of cherry pie filling
1 egg beaten
2 tablespoons water
cooking oil I use olive oil.
Lay the pastry sheets on a flat surface.
Unfold both sheets of the puff pastry dough. Cut each sheet into 4 squares, making 8 squares total.
Beat the egg in a small bowl along with the water to create an egg wash.
Use a cooking brush or your fingers to brush along the edges of each square with the egg wash.
Load 1 to 1 1/2 tablespoons of cherry pie filling into the middle of each square sheet. Do not overfill the pastry.
Fold the dough over diagonally to create a triangle and seal the dough. Use the back of a fork to press lines into the open edges of each turnover to seal.
Make 3 slits into the top of the crust to vent the turnovers.
Brush the top of each turnover with the egg wash. (You can also do this step after you have placed them in the air fryer basket.)
Spritz the air fryer basket with cooking oil and add the turnovers. Make sure they do not touch and do not stack the turnovers. Cook in batches if needed.
Air fry on 370 degrees for 8 minutes. I did not flip.
Allow the pastries to cool for 2-3 minutes prior to removing them from the air fryer. This will ensure they do not stick.

How to Make Fried Cherry Hand Pies
Fried Cherry Hand Pie - A delicious treat and huge upgrade to the supermarket variety's. A quick and easy crust that is no fuss and easy to roll out. The cherry filling is not just a sweet jam but packed with real tart cherries.
Crust - Makes 4 pies
1 cup flour
4 Tbls of frozen butter
1 large egg
Grate butter into flour and mix to combine
add beaten egg - stir
Add up to 5 Tbls of ice cold water - mixing after first 3
Additional water may be needed until dough comes together
knead briefly and cut into 4 equal pieces , wrap in plastic wrap and refrigerate at least 20 mins
1 1/2 to 2 cups of frozen tart cherries
1 Tbls of sugar
2 tsps of corn starch
pinch of salt
Sprinkle sugar over frozen berries in a microwave safe bowl
microwave 2 to 3 minutes until berries are thawed and juices released. Mixture should not be warm -but still cool
Strain juice and set berries aside
Mix in cornstarch to cool juice and microwave until bubbly and thicken approx 2 minutes Set aside
Remove dough and roll out to approximately a 5 inch circle
place a tbls of thickend juice in center of dough and then place 6 to 8 cherries
Wet edges of dough with a egg wash or water
Fold over dough and seal well with fork or fingers
Complete the rest and let chill in refrigerator while you bring the oil to temp.
In a deep fryer or large pot heat appropriate amount of oil to 375 degrees Fahrenheit. (I use a large dutch oven)
fry pies until golden brown - 2 to 3 minutes max
drizzle with glaze (Powdered sugar, milk and vanilla)

How to make cherry turnovers with puff pastry step by step:
0:00:00 - step 1: unpack the puff pastry dough
0:06:00 - step 2: split the dough sheet into 6 pieces
0:09:00 - step 3: place 1 tsp of semolina on each dough piece
0:13:00 - step 4: place 4-5 cherries on each dough piece
0:19:00 - step 5: do add 1 tsp of sugar to each dough piece
0:24:00 - step 6: sprinkle a pinch of cinnamon or cardamom powder over each dough piece
0:29:00 - step 7: turn each dough piece over
0:33:00 - step 8: press with a fork all non-attached sides to seal them

-Small rubber spatula:
1. In a large bowl add 8 oz of softened cream cheese, 1/4 cup of granulated sugar, 1 large egg yolk, 1/4 tsp of vanilla extract and the zest of 1 lemon. Make sure to only use the yellow part and avoid the white rind since its very bitter.
2. Alright now that you have all your filling ingredients in the bowl, beat it on high speed using an electric hand mixer until the filling is smooth and creamy.
3. Now set that aside and lightly flour your work surface. Then unfold 1 lb package of thawed puff pastry and begin rolling out each sheet of puff pastry lengthwise about 2 inches. so that they measure (9x11 inches).
4. Now cut off the top 2 corners of the puff pastry. And set them aside. Don’t toss them. Bake those along with the danish and eat them with some jam or Nutella.
5. Take your kitchen shears and begin making slits into the dough along both sides. You’ll want to make about 9-10 slits per side. See where the puff pastry is was folded into 3rds, make sure not to cut past that line.
6. Once you get to the last strip at the bottom you’ll be left with 2 flaps, just cut those off and set them aside to bake with the other corner scraps.
Add the cheese filling
7. Now split your cream cheese filling among both danishes, keeping the filling contained in the middle third of the puff pastry.
8. Now fold over the top flap and begin crossing over the strips for the braid. So you’ll want to just switch from right to left until you get to the last 2 strips. Fold the bottom flap up and cross the last 2 strips over.
9. Now you want to gently transfer the danishes over to a baking sheet lined with parchment paper.
10. Then make your egg wash by combing 1 egg with 1 tsp of water. Give a good thorough swish then brush it over the danishes using a pastry brush.
11. Now place the danishes in the oven and bake them at 400 degrees Fahrenheit for about 20 to 25 minutes or until they’re golden brown. Remove the cheese danishes from the oven and let them cool to room temperature.
12. In a small bowl combine 1/2 cup of powdered sugar with 2 tbsp of heavy cream. Once the pastry has cooled to almost room temperature you can begin drizzling the glaze on top.
