2 cups whole milk, divided
½ cup sugar
⅓ cup unsweetened cocoa powder
4 teaspoons cornstarch
3 large egg yolks
2 teaspoons vanilla extract

In a large mixing bowl combine the egg yolks, ½ cup milk, cornstarch, vanilla and salt. Whisk to combine, then whisk in the chocolate mixture, stirring constantly so as not to cook the eggs. Return contents to the pan and place back over medium heat. Whisking continuously, bring contents back to a boil, then reduce heat and simmer for two to three minutes or until mixture thickens. Transfer pudding to a bowl, cover with plastic wrap directly on the chocolate and refrigerate overnight to cool and set up.

⅓ cup, 70g, white sugar
1 tablespoon, 13g, cornstarch
1 tablespoon, 15ml, lime juice
1 teaspoon, 5ml almond extract
pinch kosher salt
½ teaspoon red food coloring, optional
Combine all ingredients in a saucepan over medium heat. Bring contents to a simmer, and simmer for several minutes or until mixture thickens. Transfer contents to a bowl, cover and refrigerate overnight.
Layer parfaits with chocolate pudding on the bottom, then whipped cream and finally the cherry pie filling. Add another dollop of whipped cream and garnish with chocolate cookie crumbs. Serve immediately.

Parfait refers to two types of frozen dessert; in France, where the dish originated,
parfait is made by boiling cream, egg, sugar and syrup to create a custard-like puree
which is not necessarily served in a parfait glass.

To make a Pudding and Cake Parfait: In a tall glass, such as an ice cream glass, wine glass, dessert dish,
or even tall drinking glass, put a scoop of pudding.

Continue to layer the pudding and cake in the glass until the glass is almost completely full.
Top with whipped cream. Garnish as desired, using chocolate shavings, chopped nuts, fresh strawberries, or maraschino cherries.
To make a Berry Parfait: In a tall glass, create a layer of fresh berries, such as blackberries. Frozen berries are not desirable for this recipe.
On top of the blackberries, put a layer of strawberries. Cutting the strawberries in slices makes them easier to eat, rather than leaving them whole.
On top of the strawberries, put a layer of blueberries.
Top with whipped cream parfait|parfait recipe|parfait dessert|easy desserts. Garnish as desired, using chocolate shavings or chopped nuts.

FOR THE FROZEN YOGURT
- 1 1/4 cups + 2 tablespoons whole milk
- 3/4 cup heavy cream
- 2 tablespoons corn syrup
- 2/3 cup sugar
- 1 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 1 quart whole fat Greek style yogurt
- 1 recipe sour cherry jam (ingredients below)
FOR THE SOUR CHERRY JAM
- 1 3/4 cups fresh or frozen sour cherries
- 1 cup + 2 tablespoons sugar
- 4 tablespoons lemon juice
FOR THE FROZEN YOGURT
In a 4 quart saucepan, whisk 2 cups milk, heavy cream, corn syrup, sugar and salt. Set over medium heat.
While the milk mixture is heating, whisk the cornstarch and reserved 2 tablespoons milk until smooth. Set by the saucepan.
As the mixture comes to a low boil, whisk to ensure all the sugar is dissolving. Allow to boil slowly for 2 minutes. Remove from heat and whisk in the cornstarch mixture. Return to heat and whisk until the ice cream is bubbling throughout.
Remove from heat and stir in the vanilla extract and Greek yogurt.
Let cool to room temperature, 20 minutes. Then pour into an airtight container.
Chill at least 6 hours.
When the ice cream base has chilled, remove from the refrigerator and pour into ice cream maker.
Follow the instructions with your maker as they can vary depending on the manufacturer. Insert the paddle and churn until thick. In a KitchenAid ice cream attachment, this takes about 25-30 minutes.
When the ice cream has churned, scoop it into an airtight freezer container, layering with the sour cherry jam (recipe below).
Freeze 4-6 hours before enjoying to ensure it is at a good scooping consistency.
FOR THE SOUR CHERRY JAM
In a 2 quart saucepan, combine the cherries, sugar and lemon juice. Stir and bring to a boil over medium-high heat.
When at a boil, turn heat to medium and continue to cook until slightly thickened, 12-14 minutes.
Remove from heat and cool to room temperature.
Store in an airtight container in the refrigerator until read to use. This will keep in the refrigerator for up to 2 weeks.

Apple Jelly Inserts
1.2 cups (300g) organic apple juice or golden delicious (or similar varieties) juiced out from a juicer
3 Tbsp (50g) limoncello or manzana verde (green apple liquor)
1 ounce (30g) cristalized ginger, minced (optional)
2 Tbsp (20g) sugar
1/2 Tbsp (6g) apple pectin
2 grams gelatin sheet
10 ounces (300g) organic granny smith apple, cut into small dice
1/4 squeezed lemon juice.
Soak gelatin in cold water to soften and drain. Mix sugar and pectin; set aside. Warm up apple juice, limoncello, ginger and vanilla. Mix in the sugar-pectin mixture. Bring to boil and simmer for 2 minutes. Remove from heat, whisk in gelatin. Transfer apple jelly onto a small baking tray lined with plastic wrap. Let cool and chill completely. Meanwhile, peel and dice green apples into small cubes (brunoise) and toss in lemon juice and chill.
In a food processor, smooth out the chilled apple jelly and add about 2 ounces / 60g diced apples; give a few more pulses. Remove apple jelly mixture from the food processor and fold in remaining diced apples. Scoop out and fill the mini demi-sphere silicone mold and freeze completely. Unmold apple inserts (wear disposable gloves) and seal them by 2 and shape into 1 ounce (30g) spheres. Freeze asap.
White Chocolate Vanilla Mousse
0.8 (180g) whole milk
1/2 tsp (3g) vanilla powder or paste
0.2 ounce (6g) gelatin sheets, softened
12 ounce (350g) white chocolate couverture*, melted
1.5 cups (360g) heavy cream, whipped to soft peaks.
*Couverture chocolate is a very high-quality chocolate that contains a higher percentage of cocoa butter than baking or eating chocolate. In addition to taste better, it is also much easier to work with.
Soak gelatin sheets in cold water for about 5 minutes or more; drain and set aside. Meanwhile, melt white chocolate over water-bath, (the bottom of the bowl should not touch the boiling water). Stir every so often. Do not over heat chocolate; remove once just melted. Heat up milk and vanilla (no boiling nenessary). Turn off heat and mix in gelatin and add melted chocolate. Give a good emulsion using an immersion blender. Let cool to 86ºF (28/30ºC), fold in whipped cream. Use immediately. More @ brunoskitchen.net

2 Tbsp (30 mL) instant tapioca
1 Tbsp (15 mL) lemon juice

For the crust:
Place the flour, sugar, salt, and frozen cubed butter in a food processor.
Pulse the mixture just until the butter & flour look like fine bread crumbs.
Turn the processor to on, and slowly drizzle in the ice water until a ball of dough starts to appear in the mixer bowl. Stop the processor - you don't want to overwork the dough.

Preheat oven to 450°F (230°C).

Whisk together sugar, cornstarch, lemon juice and vanilla; pour over cherries and stir to coat.
On lightly floured surface, roll out half of the pastry and fit into 10 (23 cm) deep dish pie plate; pour in cherry filling.
Roll out top crust and cut into 1 (2.5 cm) wide strips.
Weave strips over filling to form lattice top.
Trim pastry and brush some egg wash under each strip where it meets bottom pastry edge; press with a fork to seal.
Brush lattice with egg and sprinkle pie with sugar.
Bake on baking sheet 15 minutes, then reduce temp to 375°F (190°C) and bake for 65 to 70 minutes or until pastry is golden and filling is bubbly and thickened.
