Jaffna Powder:-
Dry Roast and Grind:-
½ cup coriander seeds
¼ cup cumin seeds
1 tbsp fennel seeds
½ tsp fenugreek seeds
3 piece cinnamon
8 cloves
½ tsp cardamom seeds
15-20 curry leaves
1 tsp peppercorns
2 tsp chilli powder
Sri Lankan Curry:-
2 onions ground
3-4 tomatoes
2 tsp ginger garlic paste
2 green chillies
2 tsp Jaffna curry powder
1 tsp turmeric
1 tsp pepper powder
½ tsp. fenugreek seeds
½ tsp. mustard seeds
2 tbsp. fresh coconut
400 ml. coconut milk
Handful of curry leaves
1-2 tsp tamarind paste
Salt to taste
Method:-
The Marination:-
Mix turmeric powder and lemon juice with the fish and keep aside.
The Curry:-
- In a wok heat coconut oil and add mustard seeds, cinnamon stick, pandan leaves, curry leaves, onion, ginger-garlic paste, tomato, turmeric powder, salt to taste, chilli powder, Jaffna powder, red chilli, grated coconut, water and tamarind powder. Cook for 5 minutes and add coconut milk.
- Now add the marinated fish to the curry and put the lid on. Simmer for 5-7 minutes.
- Serve piping hot.
Delicious and fragrant Sri Lankan Fish Curry is ready to serve!

WHAT YOU NEED
800 g monkfish loin
1 tbps Hellmann's Real Mayonnaise
1 small bunch rosemary, chopped
1 small bunch parsley, chopped
2 lemons
1 tablespoon olive oil
Pepper
WHAT YOU DO
Start by cubing two large fillets of monk fish. Sharpen the thicker end of a rosemary stem with a paring knife, or if available, buy a packet of bamboo skewers
Marinate the cubes of monkfish in a bowl with olive oil, salt & pepper, garlic, and parsley.
In a bowl, mix Mayonnaise and lemon zest to create a delicious dip for later.
After fifteen minutes, thread the cubes onto the rosemary branch, and pop the skewers onto the barbecue, not for too long, as monkfish can cook quite quickly, even for fish.
Serve with the quinoa salad or the slaw from the vegan burger. Delightfully light, delightfully delicious.

Serves: 4
Ingredients:
1 tbsp vegetable oil
1 large onion peeled and diced
4 cloves of garlic peeled and grated
3cm chunk of ginger peeled and grated
1 long red chilli sliced
1 green chilli sliced
6 kafir lime leaves
2 tsp ground turmeric
1 tsp ground coriander
2 tomatoes diced
400ml water
1 x veg stock cube
300ml coconut cream
400g monkfish tails diced
100g chopped French beans
1 bunch of coriander
Method:
- Pre heat a large frying pan on the stove an drizzle in the vegetable oil, then add the onions cook out till you get a little colour.
- Then add the garlic, ginger and curry spices.
- Pour in the water and bring to the boil, drop in the veg stock cube and cook out till it dissolves.
- Now pop in the lime leaves to release the flavour then reduce by half
- Pour in the coconut cream and bring up to a simmer.
- Drop in the diced monkfish and poach for 10 to 15 minutes in the sauce.
- Finally add the green beans, chillies and cook out for a few minutes.
- Just before you serve stir in the coriander.
- Ladle into serving bowls. If you like serve with boiled rice or flat breads.

????Takamaru Fresh Fish Store serves some of Tokyo’s finest fish delicacies. Among their delicacies is monkfish, a very rare fish that is hard to find in Tokyo, even in big fish markets. Monkfish liver (ankimo) is typically considered the tastiest part of the fish and was even listed on CNN’s 2011 list of the World’s 50 Most Delicious Foods. We were fortunate enough to get a taste of this dish, which is not a typical menu item at Takamaru Fresh Fish Store. Monkfish hotpot is a bit more common than monkfish liver, frequently eaten during the winter months in Japan.

Mamma's monkfish - Recipes from Spain
Ingredients (2 people):
- 3 onions
- 3-4 garlic cloves
- 400 gr monkfish
- 4-6 prawns
- Flour
- Parsley
Start chopping 3 onions. On the recipe I used only one, and I was short. Chop 3 or 4 garlic cloves. Chop a bunch of parsley.
Add olive oil in a casserole, and when the oil is hot add chopped onions and garlic. Also add salt and pepper if you like. Cook with the fire set low, moving frequently.
When the onion is cooked, add salt to the monkfish and cover with flour. Add the monkfish and the prawns to the casserole. Cook them at low fire, turning monkfish and prawns several time. Once cooked add chopped parsley and serve.

MONKFISH PICCATA WITH ARTICHOKES AND KALE
1 1/2 pounds monkfish, bone removed and cut into 8 round medallions
Kosher salt and freshly ground black pepper
1 cup Wondra flour or all-purpose flour
1/4 cup extra-virgin olive oil, plus 3 tablespoons
1 red onion, thinly sliced
1 bunch kale, chiffonade
4 baby artichokes, trimmed. sliced paper thin and in acidulated water
3/4 cup dry white wine
2 tablespoons tiny capers
Juice of 1 lemon
1 bunch flat-leaf parsley, finely shredded
1. Season the fish medallions well with salt and pepper. Place the flour in a shallow bowl or on a plate. Dredge each piece of fish in the flour, patting off the excess.
2. In a 12 to 14 inch sauté pan, heat 1/4 cup of the olive oil over high heat until smoking. Working in batches, if necessary, to avoid overcrowding the pan, cook the monkfish in the hot oil, turning once to brown both sides evenly and cook through, about 4 minutes per side.
3. Meanwhile, in a separate sauté pan, heat 2 tablespoons of olive oil over medium high heat and cook the onion for about one minute, until softened slightly. Add the kale to the sauté pan and cook until just slightly toasted, about 3 minutes, and season with salt and pepper. Remove from heat and set aside.
4. Drain the artichokes and season with salt and pepper , then add them to the sauté pan with the monkfish, making sure to place them on the bottom of the pan. Add white wine to the pan and swirl for about one minute. Add the capers, lemon juice, and parsley. Stir and remove from heat.
5. Spoon the kale onto the plate, place the monkfish medallions on top of the kale, and then spoon the sauce and artichokes over the top . Serve immediately.

Today I am making crispy fried fish with a homemade lemon herb tartar sauce. This recipe is similar to a beer battered fish with out the beer.
INGREDIENTS
2 to 3 lbs Cod Fish
salt and pepper to preference
1/2 cup all purpose flour for dredge
OIL for frying
BATTER INGREDIENTS
1 3/4 cup (250 g) all purpose flour
1 tsp onion powder
1 tsp paprika
1 tsp lemon pepper
2 tsp baking powder
1/2 tsp salt
15 oz (450 ml) mineral water
LEMON HERB TARTAR SAUCE (I did not weigh ingredients)
1 1/2 cups mayo
1 to 2 TBSP sweet relish
juice of half of large lemon
1 TBSP lemon zest
2 TBSP fresh chives
1 TBSP fresh dill
1/2 to 1 tsp lemon pepper
1/4 tsp onion powder

2 pinches saffron strands
150 ml double cream
1 handful fresh coriander
1knob butter
400 g fresh baby spinach

What is Thai food? Every country in the world has its own food profile. It reflects its culture, environment, ingenuity and values. In the case of Thailand, these words come to mind: intricacy; attention to detail; texture; color; taste; and the use of ingredients with medicinal benefits, as well as good flavor.
Thai food is internationally famous. Whether chilli-hot or comparatively blands, harmony is the guiding principle behind each dish. Thai cuisine is essentially a marriage of centuries-old Eastern and Western influences harmoniously combined into something uniquely Thai. The characteristics of Thai food depend on who cooks it, for whom it is cooked, for what occasion, and where it is cooked to suit all palates. Originally, Thai cooking reflected the characteristics of a waterborne lifestyle. Aquatic animals, plants and herbs were major ingredients. Large chunks of meat were eschewed. Subsequent influences introduced the use of sizeable chunks to Thai cooking.
With their Buddhist background, Thais shunned the use of large animals in big chunks. Big cuts of meat were shredded and laced with herbs and spices. Traditional Thai cooking methods were stewing and baking, or grilling. Chinese influences saw the introduction of frying, stir frying and deep-frying. Culinary influences from the 17th century onwards included Portuguese, Dutch, French and Japanese. Chillies were introduced to Thai cooking during the late 1600s by Portuguese missionaries who had acquired a taste for them while serving in South America.
