3 ripe bananas
¼ cup canola oil (may substitute vegetable oil) (60ml)
¼ cup unsalted butter melted and cooled at least 5 minutes (60g)
½ cup sugar (100g)
½ cup light brown sugar tightly packed (100g)
2 large eggs room temperature preferred
1 Tablespoon vanilla extract
2 cups all-purpose flour (250g)
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup buttermilk (60ml) room temperature preferred
1/2 cup all-purpose flour (65g)
1/2 cup brown sugar (100g)
1/4 teaspoon salt
1/4 cup unsalted butter, cold (60g)
Preheat oven to 425F (220C) and line a muffin tin with paper liners*
Place peeled bananas in a large bowl and use a fork or a potato masher to mash them - bananas should be well-mashed.
Add canola oil and melted butter and stir well.
Stir in sugars until well-combined.
Add eggs and vanilla extract and butermilk and stir well. Set aside.
In a separate bowl, whisk together your dry ingredients -- flour, baking powder, baking soda, and salt.
Add dry ingredients to your wet batter and gently fold in until ingredients are just combined (don't over-mix the batter!).
Portion batter into prepared muffin tin, filling each liner 3/4 of the way full. Set aside and prepare your Streusel topping.
Streusel Topping (optional)
Combine flour, brown sugar, and salt in a medium-sized bowl and use a fork to stir the ingredients together.
Using a pastry cutter, cut in your cold butter until the butter is well-worked in and your mixture resembles coarse crumbs.
Sprinkle streusel topping evenly over each muffin.
Bake muffins on 425F (218C) for 8 minutes and then reduce the oven temperature to 350 (175C) (do not open the oven door or remove the muffins, just leave them in and reduce the temperature) and bake another 7-8 minutes on 350F (177C). A toothpick inserted in the center of the largest muffin should come out clean or with few moist crumbs (no wet batter) to test for doneness.
Allow muffins to cool before enjoying.

BASIC BANANA MUFFIN RECIPE:
• 2-3 overripe bananas
• 1/4 cup melted butter
• 3/4 cup brown sugar
• 2 large eggs
• 2 teaspoons baking powder
• ½ teaspoon salt
• 1/2 teaspoon ground cinnamon (optional)
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• ½ cup milk

1️⃣ 00:00:11 - Preheat oven to 450 degrees. Line a muffin tin with 12 paper liners. Lightly grease paper liners with nonstick cooking spray.
2️⃣ 00:00:28 - In a large mixing bowl, use a hand mixer to cream together bananas, butter, and sugar, about two minutes.
3️⃣ 00:01:20 - Beat in eggs until combined. Add in the baking powder, salt, cinnamon (if using), and vanilla and mix briefly.
4️⃣ 00:01:58 - Add in half of flour, mix with hand mixer until just combined, then add in the milk, stirring to combine. Scrape the bottom and sides of the bowl and add in the remaining flour until just combined. Fold in chocolate chips or nuts (if using).
5️⃣ 00:02:39 - Divide the batter up amongst the 12 muffins. Divide the batter up equally amongst the 12 muffins, filling almost to the top of the muffin tin.
6️⃣ 00:03:01 - Bake in the preheated oven for 5 minutes. Reduce the oven temperature to 350 degrees and continue baking another 14 to 16 minutes, until a toothpick inserted into the center comes out clean.
7️⃣ 00:03:17 - Let muffins cool for 5 minutes in the pan before removing them and transferring to a wire rack to cool completely.

My Banana Cake Muffin Recipe will give you a nice tasting moist muffin bread that you will surely like.
DONT THROW YOUR MUSHY OVER RIPE BANANAS ????????
Super Moist Banana Muffin
1 cup banana mashed
1 cup sugar
2 pieces raw eggs
1/2 cup cooking oil
1 tsp teaspoon salt
1 tsp vanilla essence
1 1/2 cups all purpose flour
1 tsp baking soda
Combine all the dry ingredients starting with the flour, sugar, salt, and baking soda.
Mix the dry ingredients thoroughly until everything is evenly distributed.
Add the other ingredients (eggs, mashed bananas, cooking oil, vanilla essence) then mix well with the dry ingredients until a batter is formed.
Grease the pan and pour-in the mixture.
Preheat oven at 350 degrees Fahrenheit then bake the mixture for an hour.
Remove from pan from the oven then allow to cool down for a few minutes. Transfer the banana muffin on a serving plate. Serve and Enjoy????

2 large eggs (room temperature)
3/4 packed cup (170 g) light or dark brown sugar
2 tsp vanilla extract
1 stick (113 g) unsalted butter (softened)
1/3 cup (75 g) greek yogurt or sour cream
1 3/4 cup (220 g) all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup chopped walnuts (optional)
Makes 16 to 18 muffins baked at 350º F / 176º C for 20 to 23 minutes
Makes one loaf in a 9x5 inch pan baked at 350º F / 176º C for 60 to 65 min

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12 cup muffin tin with cooking spray or coat with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour milk mixture over oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cup and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked though. Allow to cool and then store in an airtight container in the fridge for up to a week.
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them on the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on the bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins or raspberries. Stirring them into the batter is certainly an option if you want more flavor thought the muffin cup.

1/4 cup melted unsalted butter
Dry ingredients mixed in separated bowl:
2 cups whole wheat flour
1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda
1/4 cup dried cranberries
1/4 cup chopped walnuts
Additional ingredients: Cooking oil for greasing the baking dish.
First you will have to mash ripe bananas. You can use fork for this process. Add egg and melted unsalted butter. Mix using kitchen mixer. In another bowl combine all dry ingredients and then add them to the wet ingredients mix. Mix everything well until consistent batter. Grease the muffin baking dish with your choice of cooking oil or as I did with coconut oil. Pour batter on the baking dish. Preheat oven and then bake at 400 F / 205 C for 25 minutes. Cool muffins before serving. Muffins should regain their shape (bounce back) after delicately pressing their top surface. You may experience a lot of fun making this together with your kids at home. I personally like to bake when I'm more stressed out - somehow baking relaxes me. At this time of the year I like to add some cranberries and walnuts to my recipes but you can easily substitute those ingredients with you favorite components. Hope you enjoyed this video recipe. 1 large egg
1/3 cup of extra virgin olive oil
1/2 cup of milk
1/3 cup of chopped walnuts
some extra chopped walnuts
