CREPE RECIPE
Ingredients
1 Cup / 125g Flour
½ tsp Salt
2 Eggs
1¼ Cups | 310ml Milk
2 tbsp Melted Butter + extra for cooking
Instructions
In a medium sized mixing bowl combine the flour and salt together with a whisk.
In a seperate smaller mixing bowl whisk together the eggs and milk.
Pour the wet ingredients into the bowl with the dry ingredients, a ¼ at a time, whisking together until smooth.
Pour the melted butter into the crepe batter and whisk until combined.
Cover the crepe batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour.
Heat a large frying pan or crepe pan over medium heat. Grease the pan with melted butter and pour in about a ¼ cup of crepe batter. Use a crepe tool or tip the pan around to spread the batter evenly.
Cook the crepe for 30 seconds to a minute or until the top has set, flip the crepe using a spatula and your hands and cook for a further 30 seconds on the remaining side.
Serve your crepes filled with your favourite filling.

RECIPE:
Crêpes with Lemon and Brown Sugar
Ingredients:
113g (1 cup) flour
34g (8 1/4 tsp) sugar
2g (1/3 tsp) salt
85g (2 each) eggs
245g (1 cup) milk
20g (1 1/2 tbsp) unsalted butter, melted
Brown Sugar for sprinkling
1 lemon
Tools:
Crêpe pan or nonstick pan
Large mixing bowl
Whisk
Spatula
Method:
1) In a mixing bowl, combine flour, sugar, salt with a whisk.
2) Add eggs and whisk until evenly combined. Stir in milk a little at a time so your batter becomes smooth and lump-free. Add melted butter and stir until combined. (TIP: you can also add a splash of rum or light beer to the batter to give it a little added flavor)
3) Melt a knob of butter or add vegetable oil to a crêpe or nonstick pan over medium heat (TIP: you can use a paper towel to spread a thin even coating of butter/oil in the pan, then save the towel to use for each crêpe). Pour in a 1/4 cup of batter, swirling to evenly coat the pan. Cook for 1-2 minutes until the edges start to dry, the center sets, and the bottom is lightly golden (you can use a spatula to gently nudge the edges away from the sides to check on the color). Flip and cook for 30 seconds-1 minute more, then transfer to a plate. Continue with the rest of the batter.
4) To serve: Sprinkle brown sugar onto the crêpe. Squeeze lemon onto the sugar to dissolve it, fold or roll up the crèpe, and enjoy!

Ingredients:
2 eggs
1 1/2 cups of milk (2%, 1%, Whole) (355ml)
1 tsp. of canola or vegetable oil (or one Tbsp. of butter, melted) (5ml)
1 cup of all-purpose flour (120g)
1/4 tsp. of salt (1g) (or 1/2 tsp. for savory) (2g)
1 tsp. vanilla extract (for sweet) (5ml)
1 Tbsp. of granulated sugar (for sweet)(12.5g)
This recipe makes 6 to 8 crepes depending on the size. Cook at Medium to Medium Hi heat on your stovetop - 350 to 375 F.

Hello and welcome back to in the kitchen with Matt. I am your host Matt Taylor. Today I am going to show you how to make crepes, or the French pronunciation I believe is crepe. I had a request to make a video on crepes, so here we go. Crepes are really easy to do, if I can do it, you can do it. Let’s get started. First some people like to do this in a blender, so I have a blender here, but I am going to do this with a hand mixer, you can use a stand mixer if you want, or you can use a whisk. But uh, let’s first start off with 2 eggs, 1 and 1 half cups of milk, this is 2 percent milk, but you can use 1 percent, or whole milk, if you like, 1 tsp. of oil this is canola oil, or you can use vegetable oil. Also some people like to substitute the oil with butter, take like a tablespoon of butter and melt it, and put it in there. All right I am going to blend this together well. And now I am going to add 1 cup of all-purpose flour, and 1 fourth tsp. of salt. And that is the base batter for crepes. If you are going to make a sweet crepe what I like to do, is I like to add 1 tsp. of vanilla extract, and one tablespoon of granulated sugar. If you are making a savory crepe, leave out the vanilla extract, leave out the sugar, and add an extra half tsp. of salt. Mix this together. There we go. Now if for some reason it is pretty lumpy and you can’t get the lumps out, you can throw this through a strainer. Now some people will chill this for about an hour in the refrigerator, I don’t do that, I don’t find it necessary, but you certainly can if you are having trouble with your batter. And now this batter is ready to go. All right I am going to turn the heat on the stove between medium and medium high. Now I just have an 8 inch non-stick skillet here, they do have a crepe skillet that you can buy, I will put a link down below if you want to get one of those, or they also have these little crepe making kits that you can get that are pretty cool, I will put a link down below in the description for those as well. Now once our pan is getting heated up, I am also going to take a little bit of butter, not a whole lot, and we will put it in the pan. I have ladle here and it holds about a quarter cup of batter, if you don’t have a ladle like this you can just use a quarter cup if you want, but this works really nicely.

INGREDIENTS
Crêpe Suzette Serves 4
Crêpes
· 2 large eggs
· 3/4 cup all-purpose flour
· 1/2 cup milk
· 1/8 teaspoon salt
· 1/2 teaspoon sugar
· 1/3 cup cold water
· 1 tablespoon canola oil
· 1 tablespoon melted unsalted butter, plus more butter for the skillet
Orange Butter
· 6 tablespoons unsalted butter, softened, plus more for buttering
· 1/4 cup plus 2 tablespoons sugar, plus more for sprinkling
· 1 tablespoon finely grated orange zest
· 1/3 cup fresh orange juice
· 1/4 cup Grand Marnier
· 2 tablespoons Cognac
Savory Crêpe
· leftover chicken pot pie mixture
· grated parmesan
For the crêpes: In a medium bowl, whisk together the eggs, flour, milk, salt and sugar until smooth; the batter will be thick. Whisk in the water, oil and melted butter.
Heat a 6-inch crêpe pan or nonstick skillet and rub with a little butter. Add 2 tablespoons of the batter and tilt the skillet to distribute the batter evenly, pouring any excess batter back into the bowl. Cook over moderately high heat until the edges of the crêpe curl up and start to brown, 45 seconds. Flip the crêpe and cook for 10 seconds longer, until a few brown spots appear on the bottom. Tap the crêpe out onto a baking sheet . Repeat with the remaining batter to make 12 crêpes, buttering the skillet a few times as necessary.
For the orange butter: In a mini food processor, blend the 6 tablespoons of butter with 1/4 cup of the sugar and the orange zest. With the machine on, gradually add the orange juice until incorporated.
Preheat the broiler. Butter a large rimmed baking sheet and sprinkle lightly with sugar. Place 2 rounded teaspoons of the orange butter in the center of each crêpe. Fold the crêpes in half and in half again to form triangles; arrange on the prepared baking sheet, pointing them in the same direction and overlapping slightly. Sprinkle with the remaining 2 tablespoons of sugar and broil on the middle shelf of the oven until they begin to caramelize, about 2 minutes. Using a long spatula, transfer the crêpes to a heatproof platter. Meanwhile, in a small saucepan, heat the Grand Marnier and cognac. Ignite carefully with a long-handled match and pour the flaming mixture over the crêpes. Tilt the platter and, with a spoon, carefully baste the crêpes until the flames subside. Serve right away.

Oil for cooking
1 teaspoon Vanilla extract (optional)
For serving (optional):

Directions:
1. In a large bowl sift flour, add salt, sugar and stir.
2. In a separate bowl whisk eggs, vanilla extract and milk, until combined.
3. Gradually add the milk mixture into flour mixture and stir until incorporated and smooth. Pour in melted butter and whisk until combined. Let stand at room temperature for 15-30 minutes (or in the fridge).
4. Heat a small non-stick pan over medium heat. Add butter or oil to coat.
5. Pour about 1/-3-1/4 cup of the crepe batter, swirling it to evenly coat. Cook for 1-2 minutes, flip and cook for 30 seconds. Remove from the pan and repeat with the remaining batter. Remember to grease the pan between ease crepe.
6. Serving suggestion: spread 1-2 tablespoons of Nutella, top with banana slices, fold and serve.
7. Serving suggestion 2: spread 1-2 tablespoons cream cheese/sour cream, top with strawberries, fold and serve.

Ingredients
2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan
Directions
In a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.
Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days or in the freezer for up to two months. When using frozen crepes, thaw on a rack before gently peeling apart.
Cook’s Note
*Savory Variation Add 1/4 teaspoon salt and 1/4 cup chopped fresh herbs, spinach or sun-dried tomatoes to the egg mixture.
*Sweet Variation Add 21/2 tablespoons sugar, 1 teaspoon vanilla extract and 2 tablespoons of your favorite liqueur to the egg mixture.

The best food is homemade!
The French Crepe Recipe am sharing is very easy to make and a perfect option for breakfast/Brunch in the weekends.
I filled them with Nutella, strawberries, banana, blueberries, chocolate sauce and whipped cream. They were served with Maple syrup, jam, extra chocolate sauce and whipped cream topped with the strawberries and icing sugar.
CREPES RECIPE
Ingredients:
Eggs 2
Milk 300ml
Sugar 1 tsp
Flour 125g
Vanilla Powder 1 tsp
Butter 1 tsp + extra for cooking
Instructions:
- In a bowl add 2 eggs, milk, sugar and mix them well.
- Mix Flour and vanilla in another bowl.
- Then add the liquid mixture to flour and whisk to a smooth batter.
- Add melted butter and mix it well, the batter is ready.
- Heat up the medium warm pan and add 1 tsp butter, then add the batter to make a crepe. Cook each side from 1-2 minutes until golden.
- You can use the spatula to flip the crepe carefully.
- Serve with Sugar, Whipped cream, Nutella, Chocolate sauce, Maple Syrup, Jam, Strawberries, Blueberries, Raspberries and Bananas or your favourite filling.

Professional Baker Teaches You How To Make CREPES!
Anna's favourite crêpes recipe is a variation on Crepes Suzette, a classic French dessert where the crepes are prepared tableside in an orange sauce. Here I warm the crepes in a caramelized pineapple sauce and top them with ice cream and fresh raspberries.

Recipe
Serves 6 to 8
Crepe recipe makes 8-10 large or 16-20 small crepes
Crepes:
150 g (1 cup) all-purpose flour
12 g (1 Tbsp) granulated sugar
250 mL (1 cup) 2% milk
2 large eggs
45 mL (3 Tbsp) vegetable oil
125 mL (1/2 cup) club soda
Assembly:
150 g (3/4 cup) granulated sugar
splash water
60 g (1/4 cup) butter
500 mL (2 cups) diced fresh pineapple
Juice of 1 lime
5 mL (1 tsp) vanilla extract
Vanilla ice cream and fresh raspberries, for serving
Directions
1. For the crepes, whisk the flour and sugar in a bowl and whisk in the milk, eggs and oil. Chill this for an hour before making the crepes. Right before making the crepes, whisk in the club soda (the batter will be thin).
2. Heat a crepe pan or non-stick skillet on medium heat and grease lightly. Ladle a little batter onto the centre of the pan and lift it to swirl it so that the batter covers the pan in an even layer in a circle. Return the pan to the heat and cook it until the top surface of the batter appears dry (matte). You may find that you have to fiddle with the temperature and the amount of batter to find “just right”. Gently lift and flip the crepe over, cooking it just 30 seconds. Remove this to a parchment-lined baking tray and continue with the remaining batter, greasing the pan lightly after each crepe. After the crepes have cooled, they can be stacked on top of each other and wrapped in plastic wrap. If using the crepes on the same day, leave them at room temperature. If you are making them ahead, freeze them and thaw on the counter when needed.
3. To assemble the dessert, have all of the ingredients measured and on hand, since you will want to prepare this in front of your guests and serve immediately. Fold the crepes into quarters arrange on a plate or platter.
4. Place the sugar and a splash of water in a large sauté pan over high heat. Let the sugar melt and bubble (shake the pan a little to ensure it melts evenly at first) until it just begins to caramelize, about 90 seconds to 2 minutes. Add the butter and stir this in vigorously with a wooden spoon. As soon as the butter has melted, add the pineapple, lime juice and vanilla and return this to a bubbling state over high heat, stirring gently. Push the pineapple towards the side of the pan and use a pair of tongs to drop in a few of the crepes and swirl and swish them in the sauce to warm them. Arrange 2 warmed crepes on each plate and spoon the pineapple sauce overtop. Top each plate with a scoop of ice cream and a sprinkling of raspberries. Serve immediately.

CREPES RECIPE | How to make Crepes
INGREDIENTS:
5 X large fresh eggs
100g sifted flour (you may need to add more as you go so keep some extra flour handy)
A pinch of table salt
Extra virgin olive oil
1 large glass of water
UTENSILS:
1 x small-medium deep fry pan
1 x whisk
METHOD:
1. Using one egg, crack open the top only so that just a small part of the egg shell breaks.
2. Pour the egg into the mixing bowl and put the larger piece of the egg shell to the side to use later on.
3. Crack open the other eggs as you normally would and add them to the bowl.
4. Using your whisk, best the eggs as much as you possibly can, for at least 5 minutes.
5. You should notice small bubbles form on top of the eggs.
6. Get the egg shell which you put aside earlier, and wash it out.
7. Fill the egg shell with water and add this to your eggs. Repeat 4 times.
8. Mix your eggs once again.
9. Add a generous pinch of table salt and 2 table spoons of extra virgin olive oil
10. Mix once again for another 3 minutes!
11. Add a portion of the flour and mix well.
12. Add another portion of the flour if the mixture is too dense.
13. You will need to judge the texture as it needs to be nice and smooth without being runny. It has to have an element of density to it.
14. The amount of flour you need will be based on the size of the egg you use and also the freshness as in Italy, I used to use farm fresh eggs and they were huge!
15. Using a large deep spoon, scoop up the mixture and pour it back in, to see if you are happy with the result.
16. Now, get your saucepan and place it on the stove top at a medium heat.
17. Pour some extra virgin olive oil into the pan and spread it around evenly.
18. Let the oil heat up and then roll your saucepan so that the oil covers the base and the edges and remove any excess oil.
19. Using a paper towel remove any remaining excess, making sure you leave just a small amount of the oil lining the pan.
20. You will see some small bubbles on the bottom of the pan and this will help stop your crepe from sticking to the bottom!
21. Put the paper towel to the side as you can use it later.
22. Using the deep scoop, fill it up with the crepe mix around half way and hold it in your hand.
