German Red Cabbage with Apples | Apfelrotkohl

Apfelrotkohl | German Red Cabbage with Apples
Commonly served in Fall and Winter as a side dish.
When refrigeration was a problem, vegetables were harvested and either pickled or put into cold cellars to preserve them over the cold months. Spices were expensive, so were reserved for special occasions.
The spicing is a little like Lebkuchen (Gingerbread) spicing. Often the sauce of the roast was thickened with stale gingerbread, so the similarly seasoned dishes went well together. Nothing was ever wasted.
This is my family’s Christmas side dish, served with dumplings and a apple/rosemary stuffed goose.
Tip: count how many cloves you put into the pot, makes removing all of them before serving easier....if you can find them at all. (The guest, that bites into one of them, will let you know)
Cooking takes about 45 min. The cabbage should still be a little firm, not totally soft and mushy.
1 red cabbage
1 sour apple, (like Granny Smith)
1 yellow or white onion
1 large pat of butter, margarine or bacon grease dash of red wine or apple juice
1 Bay leaf
Salt & pepper to taste
Apple cider vinegar (added at the end of cooking)
1. Peel apple, cut into quarters and core, then slice thinly
2. Peel onion, cut in half and slice thinly
3. Cut the cabbage into quarters, remove the core and slice thinly
4. Melt the fat in a pot
5. When the fat has melted, add all the ingredients, except vinegar and
stir to combine
6. Cook on medium heat, stir frequently to prevent burning
7. During cooking, the color of the cabbage will change from dark purple
to a washed out purple.
8. At the end of the cooking time, add a dash of vinegar and watch the
color return to its deep purple, and to add a bit of tartness
9. Remove the spices that are whole
10. Serve as a side dish
Tip: freezes very well. Just defrost, heat and serve.

Braised Red Cabbage With Apples and Cranberries | Episode 13
Here is my braised red cabbage with apples and cranberries recipe.
I’ve been making braised red cabbage with apples and cranberries for years! It can be made one or two days before you need it and just reheated slowly. I usually make a big batch and freeze it in small containers, that way I always have some available. It’s great for Bonfire night and even Christmas as the acidity of the flavours goes so well with turkey. It is also great with venison and pork. I say – there’s nothing more comforting than sausage and mash paired with braised red cabbage with apples and cranberries.
- 1kg Red Cabbage
- 450g Onions (chopped small)
- 450g Cooking Apples (peeled, cored and chopped small)
- 130g Frozen Cranberries
- 1 Garlic (crushed)
- 1/4 tsp Nutmeg
- 1/4 tsp Cinnamon
- 1/4 Ground Cloves
- 3tbsp Brown Sugar
- 3tbsp Red Wine Vinegar
- 15g Butter
- Salt and Pepper
1) Remove the large outer leaves of the red cabbage, cut into quarters and remove the woody stork.
2) You can either chop it using a slicing blade on a food processor or chop by hand into easily eaten pieces. You do not want big chunky pieces as it makes it awkward to eat.
3) Now add all the other ingredients including the spices, sugar and vinegar. 4) Season with salt and pepper and stir until all the ingredients and mixed together evenly.
5) Put the butter on top.
6) So that your lid is nice and tight-fitting, put a square of greaseproof between the top of the pot and the lid.
7) Put in the oven at 150C/Gas mark 2 for 2-2 1/2 hours stirring a couple of times during cooking.
8) If freezing cool completely and put into containers that suit the size of the meal you are cooking.
9) Don’t forget to label and date. It is so easy to think you will remember, but if you are like me, you can always find something undated and labelled at the back of the freezer.
10) This amount serves 10-12 people.

Braised red cabbage is sweet, sour, tender and buttery. It's an easy healthy side dish to serve alongside side roasted chicken or fish. I first tasted braised red cabbage at Houston's restaurant and have been making it at home ever since.
The combination of cabbage, onions and apples along with the sour vinegar and sweet honey, will have you and your family wanting to add this recipe into your weekly menu.
Braised red cabbage is also great for St. Patricks Day or to add to your weekend meal prep.

BRAISED RED CABBAGE RECIPE
1 tablespoon pastured butter
1 small onion, thinly sliced
2 green apples, chopped
2 cloves of garlic
1 small head of red cabbage (about 2 pounds)
¼ cup balsamic vinegar
2 tablespoons honey
¼ cup goat cheese
Salt and pepper to taste
Melt butter in a cast iron skillet, large sauté pan, or dutch oven over medium high heat.
Add onions along with a pinch of salt and saute for 6-8 minutes, or until the onions are translucent.
Add apples and garlic to the pan. Season with a little more salt and pepper, stir and cook for 2 minutes.
Next, add in the red cabbage, balsamic vinegar, honey and a splash of water. Season again with salt and pepper, and gently stir everything together.
Allow the cabbage to slowly simmer on the stove top for 30 minutes, stirring every so often. If the pan seems dry, add more water as needed (the water will evaporate as the cabbage cooks).
Once the cabbage is tender and buttery, transfer to a serving dish and top with dollops of goat cheese and fresh chopped parsley. Enjoy!
If you want to keep this recipe vegan, replace the butter for coconut oil, sprinkle in some sugar in place of the honey, and skip the goat cheese.

1 large granny smith apple, slivered
1 small head red cabbage, sliced
4 T basil, chiffonade/sliced
½ c. walnuts
½ c. feta cheese crumbled
Salt and pepper to taste
Toss together ingredients in a large bowl.
Lemon Lime Dressing:
Zest and juice of 1 lemon
Zest and juice of 1 lime
4 T olive oil
Salt and pepper
Whisk together dressing ingredients and pour over salad. Enjoy!

Wintertime has its own beautiful ways of nourishing our bodies covered in fluffy blankets and cold weather sweaters. And while nature dearest stands asleep and quiet like a princess banned from the ever-living and joyful ones by a dreadful sleeping curse, we find our means of survival through harshest times of ice and blowing wind in frozen roots and sloppy soups.
Meanwhile, somethere in a kitchen right downtown against the runniest of waters, life occurs in the guise of cabbage, apples red and love.

Wintertime red cabbage with apples and raisins
half head of red cabbage
2 red onions, julienne
6 cloves of garlic, crushed and minced
3 red apples, cored and sliced
handful of raisins
juice from one lemon
sprinkle of chilli flakes
1 tsp of brown sugar
2 tsp apple cider vinegar (I used sage infused)
dried thyme, 1 tsp
black ground pepper
spring onion for seasoning
1. mix apples and lemon juice to prevent oxidation;
2. heat olive oil and soften onion;
3. stir in garlic until fragrant (about 30 seconds), sprinkle chilli flakes;
4. add apples and cabbage;
5. let everything cook at low heat for about 10 minutes; stir from time to time;
6. add brown sugar, apple cider vinegar and thyme; stir;
7. add 1/3 - 1/2 mug of water if you prefer your cabbage soft and steamy;
8. turn off the heat and add salt and pepper to taste; stir well;
9. let it rest for 10 minutes to allow flavour to sink in;
10. season with chopped spring onion if possible.
