The Best Chocolate Babka Recipe (Chocolate Brioche Bread)
I don't know if I would call this recipe foolproof, but I would say that it is very consistent and extremely straightforward (and relatively easy) to make. This is a pretty classic chocolate babka with a buttery brioche dough twist. It's a rich bread with chocolate that swirls all through each slice. A huge crowd pleaser, and great for just about anything. If you're a fan of chocolate or bread, then this will be your best friend.

Ingredients you'll need:
3 1/3 cup (530g) all purpose flour
1/2 cup (100g) granulated sugar
3 teaspoons (10g) instant yeast
3/4 cup (175g) lukewarm water (90 degrees F)
3 large eggs
10 tablespoons (150g) unsalted butter, room temp
3/4 teaspoon (3g) fine sea salt
neutral tasting oil for greasing
6.5 oz (180g) dark chocolate (70 percent or higher)
1/2 cup (120g) unsalted butter
3/4 cup (105g) powdered sugar
1/2 cup plus 1 tbsp (42g) cocoa powder
*optional* freshly grated nutmeg (1/8 teaspoon)
small pinch of salt
How To Make Chocolate Babka with Breads Bakery
Edan Leshnick of Breads Bakery in NYC makes decadent chocolate babka in the Munchies Test Kitchen. Edan starts with the dough, made with whole milk, eggs, sugar, salt, vanilla, butter, yeast, and two kinds of flour. The mixture is blended slowly in a stand-up mixer to form the babka’s stretchy gluten texture.
After letting the it rest, Edan rolls the dough into a long, thin sheet, spreads on a layer of Nutella, and sprinkles in chocolate chips. Then, Edan rolls the dough tightly into a roulade to create lots of layers. After cutting his roulade in half, he braids the dough into its famous babka shape, places it into molds, and bakes. Finally, when the babkas come out of the oven, he covers the crust with his simple syrup resulting in a sweet, caramelized treat you won’t want to share.

This bread has it’s routes in Poland and was a popular treat within the Jewish community. The two main fillings are chocolate and cinnamon. But I am guessing that today the amount of fillings are only as endless as our imagination.
You can bake this in high sided baking tins or platted and laid on a baking tray. You can complete this bake in one day by proofing the dough at room temperature. However the taste really develops over time so if you can proof the dough in the fridge overnight it works really well.
Oven temp: 180c on the bake function - bake for 30 mins
500g All purpose white flour (13.2% protein)
10g Dried yeast
220g Full fat milk
100g White sugar
100g Unsalted butter
250g Roughly chopped 70% Cocoa chocolate
180g Unsalted butter
100g White caster sugar
2 Tbsp of Cocoa powder

Delicious Chocolate Nutella Babka | Easy Babka Recipe
Learn how to make an amazing Chocolate Nutella Babka! This Babka recipe is relatively quick and simple compared to most others out there. The Nutella and dark chocolate filling swirled into a rich, Brioche-like bread not only looks stunning but also tastes delicious! This is the perfect celebratory bread to bake around the holidays to share with your family and friends for a little something sweet and a lotta something yummy!

Chocolate Nutella Babka
Makes 2 loaves
3/4 cup warm milk (NOT hot)
2 1/4 tsp (1 packet) active dry yeast
4 Tbsp granulated sugar, divided
2 ¾ c all purpose flour, divided
2 large eggs, room temp
5 T melted butter
1/2 tsp salt
1 tsp vanilla extract
½ tsp nutmeg
1 t vegetable oil
½ c powdered sugar
¼ c flour
4 T butter
Pinch of salt
⅔ - 1 C nutella, divided
⅓ c mini dark or semi sweet chocolate chips, divided
⅔ c sugar
⅓ c water
In the bowl of a stand mixer, add warm milk, yeast and 2 T sugar. Whisk it together and let sit 5-7 minutes until foamy. Add in ½ c flour and whisk to incorporate. Let sit another 15-20 minutes until mixture looks fluffy and bigger.
Add in remaining 2 T sugar, eggs, butter, salt, vanilla, and nutmeg and attach to stand mixer fitted with dough hook attachment. Turn on mixer and mix to incorporate. Start adding flour in about ½ c additions, waiting until previous addition is incorporated before adding in another. Make sure to scrape down sides of bowl and make sure dough is mixing evenly. Once all the flour is incorporated, leave the stand mixer on a medium-low speed and let it knead the dough for 5 minutes. Then turn dough out onto work surface.
Knead the dough by hand for 2 minutes until a nice, smooth ball has been formed thats springy to the touch. Lightly oil it with vegetable oil and put it back into the bowl of the stand mixer. Cover it with plastic wrap and let the dough rise in a warm place for 1-2 hours or until doubled in size.
While dough is rising, prepare the streusel topping by adding all the ingredients into a medium bowl. Using a fork or your fingers, work the butter into the dry ingredients until clumps start to form. Set streusel to the side.
Once dough has risen, punch it down and divide it into 2 pieces. Using a rolling pin, roll the dough out into a large rectangle, approximately 18” x 12”. Thinly and evenly spread ⅓ -½ c of Nutella over the surface of the dough, all the way to the left and right edges, the edge closest to you and leaving about ½” of free space at the top edge. Sprinkle with ½ the chocolate chips.
Starting at the edge nearest you, very tightly roll up the dough. The more tightly it’s rolled, the more Nutella stripes you’ll have in your bread and the better it will look. Once rolled, pinch the free edge of the roll closed onto the dough. Put on a cookie sheet and put in freezer for 10 minutes. Continue with second half of dough, repeating the filling and rolling process.
Once the dough has chilled, use a sharp knife to cut the roll down the middle lengthwise, revealing all the layers of filling. Make an “X” with the dough (filling side up) and then twist together one half of the “X”, then the other, pinching the ends and keeping the filling side up while twisting. (If you’re confused about this, watch the video!)
Transfer into a parchment-lined loaf pan and top with streusel. Cover with plastic wrap and let rise 30-45 minutes or until puffed but not completely doubled in size. Repeat with second loaf.
While dough is rising, preheat over to 350.
Once dough has risen, transfer loaf pans onto a baking tray and bake in preheated oven for 40 minutes or until dark golden brown on top
While babka is baking, make the sugar syrup by adding sugar and water to a pan over medium heat. Mix together until sugar is completely dissolved, then set to the side.
When babkas come out of the oven, immediately brush with sugar syrup. The syrup provides a beautiful shine and will help keep your babkas fresher for longer. Let breads cool completely before digging in (I know, it’s hard!).
Breads will keep at room temperature for 48 hours if tightly wrapped or can be frozen for up to 3 months. Serve warm or at room temp.

4 cups all-purpose flour, preferably King Arthur
1/3 cup plus 2 tablespoons sugar 2
teaspoons fine sea salt
1 cup whole milk, warmed
1 packet dry active yeast
1 large egg plus 1 large egg yolk
1 stick plus 2 tablespoons unsalted butter, cut into tablespoons, at room temperature
9 ounces milk chocolate, finely chopped
3 ounces bittersweet chocolate, finely chopped
1 1/2 sticks unsalted butter, cubed
1 1/2 cups finely ground chocolate wafer cookies
3 tablespoons honey
12 ounces bittersweet chocolate, finely chopped
4 ounces milk chocolate, finely chopped
1 1/2 sticks unsalted butter, cubed
2 tablespoons light corn syrup

Ube Babka Rolls | Ube Swirl Bread Rolls | Purple Yam Bread
Babka bread reimagined. This is my take on Ube Rabka Rolls. Been wanting to try a babka bread recipe so I thought, why not use ube jam?! Ube jam is a sweet Filipino dessert made from purple yam. This recipe did not disappoint! This is probably one of my favorite bread recipes now. Try my recipe below and let me know in the comments section what you think! Don't forget to like and subscribe!
2 1/4 cups bread flour
2 1/2 tbsp sugar
3/4 tsp salt
1 tsp instant yeast
180 mL milk
1 1/2 tbsp butter
160 g or 8 tbsp Ube Jam
Powdered sugar for dusting
1. Combine yeast with warm milk (30-40 °C)
2. Combine dry ingredients in a bowl
3. Stir milk into the dry ingredients
4. Knead dough on a work surface until well incorporated
5. Incorporate butter into the dough and knead
6. Do a window pane test to check if the dough is ready
7. Let the dough rest in a warm place for 1 hour
8. Scoop 20g or 1 tbsp of ube jam and shape them into balls (a total of 8 balls)
9. Chill the ube balls until firm
10. Degas the dough and divide into 8 equal pieces (you may use a scale)
11. Shape each piece into a ball then flatten with a rolling pin according to the video
12. Shape each ube ball into logs
13. Wrap the ube with the dough and flatten it with a rolling pin
14. Cut through the dough vertically and twist one end according to the video. Tuck each end towards the middle
15. Let the bread rolls rest in a warm place for 15 minutes
16. Bake at 350 °F for 17 minutes
17. Dust powdered sugar on top

For the brioche dough:
115 ml lukewarm water
115 ml whole milk
70 g + 1 tbsp granulated sugar
1 packet of dry instant yeast (about 5-7 g)
630 g all-purpose flour
1 large pinch of salt
1 tsp vanilla extract
170 g melted butter
2 large eggs
For the chocolate and hazelnut filling:
170 g bittersweet chocolate
170 g room-temperature butter
100 g granulated sugar
50 g pure cocoa powder
100-150 g hazelnuts
For the syrup:
100 g granulated sugar

Saftiger Hefezopf mit Schokolade und Nüssen - Chocolate Babka recipe - Challah recipe
Dieser flaumige und besonders saftige Hefezopf wird auch als Babka, Bobka oder Baba bezeichnet. Dabei handelt es sich um einen Brioche-ähnlichen Hefekuchen, der beispielsweise in Polen, Bulgarien, Mazedonien, Albanien und Rumänien beliebt ist. Auf den ersten Blick wird sich der eine oder andere vielleicht denken: „Dieses Geflechte bekomm‘ ich nie hin“, aber keine Angst. Dafür sind ja meine Videos da und mittlerweile weiß sogar meine Tochter (6), wie man eine Babka flechtet, also bekommt ihr das locker hin.
500 g Mehl
260 ml lauwarme Milch
80 g Butter
50 g Zucker
1 Ei und 1 Eigelb
½ Würfel Frischhefe (=20 g) oder 1 Pkg. Trockenhefe (=7 g)
80 g Puderzucker
40 g Kakaopulver (ungesüßt)
150 g Zartbitterschokolade oder Kuvertüre
120 g Butter
120 g gemahlene Haselnüsse
2 geh. EL Nuss-Nougataufstrich
1 Eigelb und 2-3 EL Sahne
500 g flour
pinch of salt
260 ml lukewarm milk
80 g of butter
50 g of sugar
1 egg and 1 egg yolk
½ cube fresh yeast (= 20 g) or 1 sachet instant dry yeast (= 7 g)
80 g of powdered sugar
40 g cocoa powder (unsweetened)
150 g dark chocolate or couverture
120 g of butter
120 g of ground hazelnuts
2 heaped tbsp hazelnut spread
1 egg yolk and 2-3 tbsp cream
Combine flour and salt in a mixing bowl. Combine milk, sugar and butter and warm them up (the milk has to be lukewarm, not hot). Add eggs and yeast and whisk. Add the liquid ingredients to the dry ones and mix until fully incorporated. The dough will be sticky (that’s ok). Transfer it to a floured surface, form a ball, put it into a greased bowl, cover and let sit in a warm place for an hour or until doubled in size (I use my oven - 30 degrees celsius). Shortly before the dough has risen, start preparing the filling. Combine chocolate and butter in a bowl and melt over a bain marie. Sift the powdered sugar and the cocoa. Add the ground hazelnuts and the melted chocolate. Put the risen dough on a floured surface and weigh it. The whole dough should have around 960 g. Divide it into 2 pieces, each around 480 g. Roll one piece of dough into a rectangle of 35 x 25 cm. Cover the dough with half of the filling. Gently roll the dough up and repeat with the second piece of dough and remaining filling. Using a bench scraper or a knife, carefully cut each log vertically in half, making sure the seam is side down. Follow the following steps using the video. When the babka is shaped, transfer it to a baking sheet and a 27-29 cm round cake pan. Brush with a mixture of egg yolk and cream and bake at 200 degrees celsius for 35-40 min. If too brown on top (after 20-25 min) cover with alu foil and continue baking. Let cool completely.

Babka Recipe: (Source and Inspiration:
325g Bread Flour
325g Pastry Flour ( If you don't have a pastry flour, try putting 1:1 ratio of All purpose flour and cake flour )
1/4 Tsp Salt
10g Active Dry Yeast
170ml Warm Milk
2 Large Eggs
120g Unsalted Butter ( Room Temp )
1/2 Tsp Vanilla Extract
We bought around 400g of chocolate spread from the market, I suggest buying a bit more so you will have extra if you run short on fillings.

Babka Bread | Chocolate Swirl Bread | Cinnamon Swirl Bread | The Home Maker Baker
Easy, delicious and soft Nutella Chocolate Swirl Bread and Cinnamon Swirl Bread, traditionally known as Babka Bread. It is super moist and just melts in one's mouth. You can make it in any flavour but in the video, I have shared two of my most favourite. The Cinnamon one in particular tastes like a Cinnabon, so it is a must-try if you are a fan like me!
The key to making these perfect and for that soft melt in the mouth texture is raising them in a controlled environment. Hot and humid preferably. For that, I would suggest covering it with a damp tea towel and putting it in the oven(while off) to rise with a pot of hot water.

500 g bread flour
215 g sourdough starter ( levain)
215ml warm milk
113 g butter
100 g sugar
4 g salt
10 g honey
1 teaspoon vanilla
50 g butter
100 g chocolate
35 g brown sugar
16 g cocoa powder
80 g water
72 g sugar
Bake for 30 minutes at 375 degrees F or until it will look gold and brown.

Fluffy dough with raspberry flavor inside! This is my favorite recipe for this delicious raspberry Babka. You should try to make it! ????

For the dough:
340 g all-purpose flour
120 g melted butter
100 ml lukewarm milk
80 g sugar
1 tsp vanilla extract
10 g dry yeast
Zest of 1 lemon
½ tsp salt
For the jam:
200 g frozen raspberries
150 g sugar
20 ml brandy
50 g pistachios

How to Make: Cinnamon Babka
1/2 cup Milk warm
1/4 cup Organic Coconut Sugar
2-1/4 tsp Active Dry Yeast
1 tsp Vanilla Extract
1-3/4 cups Organic Ivory Wheat Flour
1/2 tsp Salt
1/2 cup Butter soft
3/4 cup Organic Coconut Sugar
2 tsp ground Cinnamon
1/4 tsp Salt
1/2 cup Butter soft
1 Egg White
1/2 cup Organic Coconut Sugar
1/2 cup Water
Combine warm milk and 1/4 cup coconut sugar in a large mixing bowl. Add yeast and let sit for 5 minutes to activate.
Add egg, vanilla, and flour to the yeast mixture and mix on low with a dough hook for 3 minutes or with a spoon for 5 minutes, until a dough forms.
Add salt to the dough and, if using an electric mixer, increase speed to medium. Begin to add pieces of the soft butter, mixing all the while. When the butter has fully incorporated into the dough, continue to mix on medium speed for 4 more minutes or by hand for 6 - 8.
Transfer dough to a clean bowl coated lightly with oil. Turn dough over to evenly coat with oil, cover with plastic wrap and refrigerate overnight.
Line a 9x5-inch loaf pan with parchment paper and lightly oil; set aside.
To make the filling, combine coconut sugar, cinnamon, and salt. Add soft butter and mix into a paste. Add egg white and thoroughly mix; set aside.
Place chilled dough on a well floured surface. Roll out to an approximately 15x20-inch rectangle, taking care to keep the surface floured to stop the dough from sticking.
Spread the filling out evenly over the entire surface of the dough. Carefully roll up the dough snugly.
Cut the dough down the center, lengthwise, with a sharp knife and turn each half face-up. Gently twist the two pieces over each other, keeping the exposed layers face-up. Carefully transfer the bread twist to the prepared loaf pan.
Cover the pan and let rise in a warm place until doubled in size, about 90 minutes.
While the dough is rising, preheat the oven to 350°F, then make the syrup by combining 1/2 cup of coconut sugar and 1/2 cup of water in a small pot. Bring to a boil, then reduce heat and let simmer until all sugar has dissolved. Let cool.
Bake the dough until an internal temperature of 190°F has been reached, about 45 minutes. Remove the bread from the oven and immediately pour the syrup over the loaf. Let cool completely before removing from the pan.
