Asparagus sauce Fleurette (easier then hollandaise)
Join my online French cooking classes ????????: In this video tutorial we learn how to make Asparagus sauce Fleurette (asparagus with a sauce Fleurette). This is one of the many derivative sauces based on a the mother sauce Hollandaise with the addition of cream to provide a silkier texture. In contrast to the Hollandaise, this is a one pot sauce! In my opinion, not only is it easier to make, but it tastes better too.
The name Fleurette comes from the type of French cream is used. Creme Fleurette is a full fat cream widely used in France.
Note: In the video I have halved the quantities outlined below

Ingredients needed (for 4 people)
20 asparagus (roughly 5 per person)
For the sauce Fleurette:
2 egg yolks
125 grams of french style unsalted butter
100 ml of creme Fleurette (heavy whipping cream with 35 % fat content)
The juice of half a lemon
1 pinch of salt and pepper
1 pinch of cayenne pepper
Cooking time for the Asparagus:
20 minutes in boiling water for white asparagus and 15 minutes or less for green asparagus.
The boiling water has to be salted with 12 grams of salt per litre of water.

Sauteed Asparagus - How to cook in three easy steps
Sauteed asparagus with garlic is an elegant dish served in high-end Chinese restaurants. In this article, I want to share with you the quick and easy method of how to saute asparagus with garlic in less than thirty minutes.
RECIPE:
(Cook's notes at )
Ingredients:
300g asparagus
4 cloves garlic
2 tbsp vegetable oil
The stir fry sauce (A)
3 tsp light soy sauce
1/4 tsp dark soy sauce
1 tsp sugar
1 tsp salt
1/4 tsp ground white pepper
1 tsp sesame oil
1 tbsp rice wine (optional)
1 tbsp of water
Cornstarch slurry: (B)
1/2 tsp cornstarch
1 tbsp water
Instructions:
- Cut off roughly 3cm from the bottom of each spear of asparagus.
- Peel off the stringy exterior of the bottom half until they got into the tender interior.
- Blanch the asparagus in boiling water for thirty seconds or until the interior turns to semi-transparent.
- Place it immediately in ice water.
- Coarsely chopped a few cloves of garlic, and sauteed until it turns aromatic.
- Add the blanched asparagus, sauteed over high heat for a minute.
- Combine all the ingredients in (A) to make the stir fry sauce. Add to the asparagus.
- Cover the pan for one minute.
- Add a sufficient amount of the cornstarch slurry to thicken the sauce. Serve.

How to cook white asparagus – Asparagus recipe
How to cook white asparagus – Asparagus recipe
Recipe for 800g / 2 big or 4 small servings
(31kcal/100g)
Ingredients:
about 20x Asparagus, white (1kg)
2 tsp Salt (18g)
3 tsp Sugar (18g)
about 2L Water (2kg)
Appropriate sauces:
- Melted Butter
- Sauce Hollandaise
- Mayo
- Yoghurt and Herb Sauce
Preparation method:
- Wash the white asparagus and cut off about 2cm at the end of the asparagus.
- Put the asparagus flat on your chopping board and peel from about 2cm under the top to the bottom of the asparagus.
Always start peeling on the edge which is made by peeling. This way the asparagus stays round.
- Boil up about 2l of water with 2 tsp of salt and 3 tsp of sugar.
- Boil the asparagus in the water for 10min (very thick asparagus for 13min).
Keep turning them over in the water from time to time.
- Prick the asparagus with a knife to check if they are cooked, they should feel soft.
- Remove the asparagus from the water and serve immediately.
Notice:
- Depending on the thickness of the asparagus the cooking might take longer, thin asparagus takes 8min, normal 10min and very thick one 13mins.
- You can make delicious asparagus soup with the cut offs and peelings.
The freshly cooked asparagus taste best with a variety of sauces: Melted butter, Sauce Hollandaise, Mayo or a light yoghurt-herb sauce.
Preparation time: 15min
Cooking time: 10min
Start to Finish: 25min
Shelf life:
You can keep the cooked asparagus for about 2-3 days in the fridge.
White asparagus also test very good cold.
To freeze the asparagus is not recommended, it is okay if you want to make soup later.

Asparagus with Cream Sauce
Do you love Asparagus? Looking for a new way to prepare your asparagus? This asparagus with cream sauce is a very simple recipe to prepare. You will need fresh asparagus, lemon, and a few more ingredients to make this lovely side dish.
Asparagus with Cream Sauce
1 to 1/2 pounds Asparagus washed and trimmed
3 tablespoons unsalted butter
2 tablespoons diced shallots
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
Saute butter and shallots together over medium heat, cook the shallots until they are almost done. Add in asparagus. Coast the asparagus in the butter. Cook the asparagus so that changes color. This will depend upon the thickness of the asparagus. Add a squeeze of lemon, and stir in the lemon juice. Cook for 5 minutes more. Remove asparagus from the pan. Pour the sauce over the asparagus if desired.

ingredients:
1½ lb. ASPARAGUS
1 small LEMON (zest and juice)
2 Tbsp OLIVE OIL
½ tsp FENNEL SEEDS
½ tsp MUSTARD SEEDS
3-4 cloves GARLIC (or more...go for it, dude)
1 inch GINGER (which should end up being between 1-2 Tbsp thinly sliced)
SALT and PEPPER to taste
When buying asparagus, thin is better than thick. Choose firm spears. Avoid asparagus that has a wrinkled skin, or tips that are wet and greasy looking. Rinse and drain the asparagus spears, then chop into 1 inch pieces. When slicing, leave the tops of the spears intact so they don't fall apart while cooking. Heat olive oil on medium heat in a skillet. When oil is hot, add mustard and fennel seeds and stir for 20-30 seconds--not long at all. Add garlic and ginger--a lot of ginger; I use about 1 inch, thinly sliced--about the size of a fish scale. Stir skillet 1 minute, lower heat if necessary.
Stir in asparagus. Add salt and pepper to taste. I like my asparagus to retain a bit of crunch--who likes mushy asparagus?--so this dish doesn't take long to cook. Saute for about 4 minutes and the dish will be done. From the time you add the seeds to completion, the cooking time will only be about 5 minutes--of course you can extend the cooking time if YOU DO like softer asparagus (crazy!)--but everybody likes what they like, so namaste, man. About a minute before the dish is done, add the lemon zest. When the asparagus is crunchy or soft the way you like it, and you're ready to get it off the heat, add the lemon juice, stir, and serve.
It's a great dish and a perfect side for a nice steak (or whatever).

Oven-Roasted Asparagus is coated in a lemon garlic sauce and cooked in a 400-degree oven until perfectly crisp and tender. Serve this low-carb, vegan, and Whole30 dinner recipe for a quick, easy, and healthy side dish.
RECIPE:
INGREDIENTS:
1 lb. asparagus spears tough ends removed
1 ½ Tbsp. olive oil or avocado oil
½ tsp. salt
¼ tsp. black pepper
1 garlic clove crushed
½ lemon juice and zest
INSTRUCTIONS:
Preheat oven to 400 degrees.
Remove the tough ends of the asparagus spears by snapping at the junction where the hard and tender parts meet. Repeat with all asparagus spears.
In a small bowl whisk together the oil, salt, pepper, and crushed garlic.
Place asparagus spears on a parchment paper-lined baking sheet.
Brush garlic oil over all sides of the spears using a pastry brush.
Bake asparagus in the preheated oven for 11-13 minutes, or until tender and bright green.
Just before serving zest half of a lemon and squeeze juice over the asparagus. Enjoy!
