Ingredients:
To Make streusel topping and centre.
1 1/2 cups all-purpose flour
1 cup brown sugar
1 1/4 teaspoons ground cinnamon
1 tsp salt
175 gms cold unsalted butter, cut into small pieces
1 1/2 cups chopped toasted walnuts
To Make The Cake
2 cups all purpose flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup caster sugar
115 gms unsalted butter, softened
2 large eggs or 3 small ones
1 1/2 tsp vanilla essence
1 cup sour cream (Check my video on how to make your own homemade sourcream)
5 tbsp milk
1) To Make streusel topping
Mix together flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon salt.
Cut in butter using a pastry cutter or rub in with your fingers until small to medium pieces form.
Mix in 1/2 cup of chopped walnuts. Refrigerate until ready to use.
2) To Make the streusel center:
Mix together remaining 1/2 cup brown sugar, 1/4 teaspoon cinnamon, and 1 cup walnuts. Set aside.
3) Preheat oven to 180 degrees C and Butter a 9-inch cake tin.
4) To Make the cake:
Sift the flour, baking powder, baking soda, and 1/2 teaspoon salt into a large bowl.
5) Beat butter and caster sugar until pale and light. Beat in eggs, one at a time and beat till creamy, then add vanilla essence. Gradually add in flour mixture, alternating with sour cream, beginning and ending with flour.
Continue to beat until well combined.
Add 2 tbsp milk.
6) Transfer half the cake batter into the pan. Sprinkle streusel center mixture evenly over batter.
Top with remaining cake batter, and spread evenly. Sprinkle streusel topping evenly over batter.
(If there is excess topping, you can save this for later use for another cake like a vanilla or a coffee cake)
7) Bake until cake is golden brown about 55 to 60 minutes depending on the heat in your oven.
8) Transfer pan to a wire rack, and let it cool for approximately 25 to 30 minutes. This cake is best had when it’s slightly warm.

Ingredients
Streusel
½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
Directions
Streusel
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
Cake
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

INGREDIENTS
We all commented on how easy this SOUR CREAM COFFEE CAKE is to make. Follow Judy’s straightforward instructions to the letter and you’ll have stellar results.
Make sure the butter and eggs are at room temperature for best results. Using soft butter ensures the sugar almost melts into it when you beat them together, and we find using room temperature eggs makes for a fluffier batter.
SOUR CREAM AND TOPPING
We made the cake once just to test out the recipe, then again with a few adjustments, namely using an organic sour cream from a local dairy in Prince Edward County. Upon tasting it, we instantly understood that the recipe is all about the sour cream. Oh wait, it’s also about chocolate!
A coffee cake with chocolate needs to really deliver on that cocoa flavour. For best results, we suggest using premium quality chocolate along with the sour cream. Choosing a higher quality takes the flavour off the charts.
Judy mentioned that the topping can be tweaked to accommodate people’s taste; she has made it without the coconut, with less cinnamon, and so on. On the second attempt, we doubled the quantity of topping and loved it.
SERVING IT UP
Like us, you will probably find yourself making this recipe again and again, it’s that good. One warning: serve smaller pieces from the get-go because everyone will ask for seconds!

This recipe for easy apple coffee cake with a yummy streusel or crumb topping is so yummy! Although there is no actual coffee in the cake, it is commonly called coffee cake because people over the years have enjoyed a slice with a cup of coffee. I don't drink coffee, but enjoy mine with milk. If you want a normal coffee cake, you can leave the apples out and don't put the crumble or streusel on the top. Either way, this cake recipe is super easy to make, if I can do it, you can do it. Let's get baking!

1/2 cup buttermilk or use normal milk (120ml)
1/2 cup white granulated sugar (100g)
1/4 cup butter or oil (57g)
1 1/2 cups cake flour or all-purpose/plain flour (180g)
1/4 tsp. baking soda (1g) leave it out if using normal milk
1 tsp. baking powder (5g) double it if using normal milk

Caramelized apples:
3 medium apples, grated
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon (15g) butter
2 tablespoons (30ml) milk
1 tablespoon (20g) honey or brown sugar
Crumble:
3 tablespoons (37g) brown sugar
3 tablespoons (45g) butter
1 teaspoon vanilla extract
3 tablespoons (20g) ground almond
1/2 cup (65g) flour
1/2 teaspoon cinnamon
Cake:
3 eggs
1/2 cup + 2 tbsp (125g) sugar
3/4 cup + 1 tbsp (200ml) oil
3/4 cup + 1 tbsp (200ml)
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups (250g) all-purpose flour
2 teaspoons baking powder
Directions:
1. Preheat oven to 350F (175C). grease 9-inch (23cm) round baking pan lined with parchment paper and greased.
2. Caramelized apples: peel and grate the apples, then stir with the lemon juice and set aside.
3. Place butter, honey and milk in a pan and melt, stirring frequently over medium heat. Add grated apples and cook, stirring frequently, for about 4-5 minutes. Remove from heat and let cool.
4. Crumble: Combine the ingredients for the crumble topping together in a small bowl and Crumble together using your finger tips or a fork. Place in the fridge while making the cake.
5. Cake: in a large bowl or in bowl of stand mixer, whisk eggs, sugar and vanilla extract. Whisk until doubled in volume. Gradually and oil and milk while whisking. Add flour, baking powder, salt and stir until combined.
6. Pour the batter to the prepared pan, spread the caramelized apples on top, then sprinkle the crumble on top.
7. Bake for 35-40 minutes. Let cool for 10 minutes in the pan, release from the pan and let cool completely.

Soft, fluffy cake with a gooey cinnamon center and golden, buttery crumble. 3 layers of decadence that pairs perfectly with coffee or tea and served as breakfast, snack or dessert.

1½ c unbleached flour
2 ts baking powder
½ ts fine salt
¼ c canola/veggie/coconut/grape seed oil
½ c brown sugar
1 ts vanilla extract
1 room temperature egg
¾ c whole or buttermilk
Filling
½ c brown sugar
1½ ts cinnamon
Crumble
⅓ c unbleached flour
½ c sugar
¼ ts fine salt
¼ c unsalted, softened butter
¾ ts cinnamon
Instructions
In the first bowl, sift together the flour, baking powder, and salt.
In the second bowl, whisk together the oil, sugar, vanilla, egg, and milk until foamy.
Slowly combine the 2 bowls {sprinkle the first/dry bowl in thirds into the second/wet bowl. Do not over mix}
In a greased cake pan, spoon in half the batter.
Sprinkle with the brown sugar and cinnamon mixture and spread the rest of the batter evenly on top.
To make the crumble, combine everything together {it's important that the butter be soft} and dot generously on top of the cake.
Bake at 350 for 17-21 minutes.
Cool and allow to set before slicing/serving.

Hi Bold Bakers! One of my favorite things to teach is how to make the things you think you can only buy at your local store. My Classic Coffee Cake is definitely like what you can buy in the store — but better and easier to make than you think. How to Make Coffee Cake
This is the best, softest coffee cake you'll ever have, with a sweet cinnamon ripple and a crisp brown sugar streusel.

Ingredients
1/2 cup unsalted butter softened (113g)
8 oz cream cheese softened (225g)
1 cup light brown sugar tightly packed (200g)
1/2 cup granulated sugar (100g)
2 large eggs
1 1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour (335g)
2 teaspoons baking powder
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 cup buttermilk (120ml)
Cinnamon Swirl
1/4 cup sugar (50g)
1 1/2 teaspoon cinnamon
Streusel Topping
1 1/3 cup all-purpose flour (175g)
1 cup + 2 Tbsp brown sugar packed (225g)
3 Tablespoons granulated sugar
4 1/2 teaspoons cinnamon
1/4 teaspoon salt
10 Tablespoons unsalted butter melted (140g)
Glaze (optional)
1/2 cup powdered sugar (65g)
2-3 teaspoons milk
Instructions
1. 00:12 Preheat oven to 350F and lightly grease and flour a 13x9 baking pan.
2. 00:20 In stand mixer, or using an electric mixer in large bowl, cream together butter and cream cheese.
3. 00:43 Beat in sugars until light and fluffy.
4. 00:56 Add eggs, one at a time, beating until combined. Scrape down sides and bottom of mixing bowl with rubber spatula.
Stir in vanilla extract.
5. 01:09 In a separate, medium-sized bowl, whisk together flour, baking powder, cornstarch and salt.
6. 01:33 Gradually add flour mixture to wet ingredients, alternating with buttermilk, until all of the flour mixture and buttermilk have been combined.
7. 02:25 Spread about half of the batter into prepared pan (batter will be thick).
8. 02:33 Quickly whisk together sugar and cinnamon for cinnamon ripple layer in a small bowl and sprinkle it evenly over the batter.
9. 02:55 Dollop remaining batter over the cinnamon sugar layer and use a knife to spread evenly overtop. It's OK if you end up disturbing the cinnamon sugar layer a bit, it will be a nice swirl when it bakes. Prepare your streusel topping.
Streusel
1. 03:10 Melt butter in a medium-sized bowl on 10 second increments (stirring between) until just melted (you don't want it to be too hot, if it does get too hot allow to cool.
2. 03:21 Use a fork to whisk together your flour, sugars, cinnamon, and salt. Pour melted butter over mixture and use a fork to stir until combined (mixture should be crumbly).
3. 03:54 Sprinkle streusel evenly over batter.
4. 04:03 Bake on 350F for 40-50 minutes (check doneness with a toothpick inserted in center).
Allow to cool before cutting and serving.
Glaze (optional)
1. 04:17 If desired, make glaze by whisking together powdered sugar and milk. Drizzle over cooled coffee cake.
