Italian Apple and Pear Cake with Raisins
This apple and pear cake is a variation from the Italian Umbrian specialty. It is rich in fruit containing at least 80 percent fruit and is deliciously soft and moist.
The addition of delicate pears and soaked raisins brings this recipe to another level.
The rum is totally optional, but if you like the taste of rum in your desserts, please add it in, you will love this.
Cover and refrigerate once cooled down, and it’s best to serve it warm. Try and use good quality cooking pears and apples for a better result.
For the cake pan, the size I used is a 9inch - 23cm spring form.
Enjoy my Italian Apple and Pear Cake with Raisins today!

Pear Upside Down Cake | Go Delicious
This cake is the definition of a soft and moist, not too sweet, but delicious cake. It takes a handful of ingredients and it’s so easy to make! The best part is the moment when you stop your breath to lift the pan up and discover how beautiful the cake you just bake is!
Here is what you need:
For the batter:
1 1/2 cup of flour
2 tsp. baking powder
Pinch of salt
110g. butter (~8tbsp.)
1 cup sugar
2 eggs (separated)
1/2 cup milk
For the topping:
50g. butter (~4 tbsp.)
1/2 cup brown sugar
2-3 pears (any variety will do)
Start by preheating your oven to 180 C. To make the batter, sift the flour, the baking powder and the salt and set aside.
In a clean bowl whisk the egg whites and set aside. In another bowl whisk together the butter and the sugar until pale and creamy, than add the egg yolks one at a time.
Once the egg yolks are well incorporated, add the flour and the milk, bit by bit, alternating between the one and the other, mixing continuously.
Fold gently the egg whites into the batter.
In an oven-safe pan melt the butter and add the brown sugar to caramelize. Once combined, start lining the slices of the pears in a circle until all the surface is covered. Gently transfer the batter on top of the pears trying not to disturb the pear slices.
Bake for 45 minutes, then while it is still warm flip the pan, having the serving dish on top of it, and pull up to discover the cake.
Enjoy!

Pear Almond Upside Down Cake Recipe ~ Noreen's Kitchen
Greetings! What do you do when the neighbor brings you bags and bags of home grown, organic, fresh pears? You start to think of all the things you can do with them that's what! Today I wanted to share with you a delicious recipe for a pear and almond upside down cake that is perfumed with ground ginger. This is amazing! You are totally going to love this one!
This is a very basic upside down cake, in that we are building a caramel, almond and pear topping on the bottom and then making a simple cake batter to go over top. While this bakes the caramel cooks into the pears and into the cake making an amazing gooey and delicious mess that you won't be able to resist.
You can make this with fresh or canned pears. Just make sure to drain the pears if you are using canned. You can use pecans instead of almonds to give this a different twist if you like, or walnuts too, or you can leave the nuts out altogether if that is your preference.
No matter how you make this, I hope you do make this cake! This is the perfect cake for a cool fall dessert with coffee or cocoa and even a dollop of cinnamon whipped cream or Mascarpone cream would be amazing as well!
I hope you give this pear and almond upside down cake a try and I hope you love it!
Happy Eating!

Someone told me how to make a dump cake with pie filling and a yellow cake mix..I wondered if I could do it from Scratch..yes i did and here it is!!
Pear and Almond Cake - Easy and Delicious
This delicious Pear and Almond Cake is the perfect all day treat. It's light, sweet but not too sweet and it's not at all dry. It's easy to make and can be made the day before you need it. The pears keep the cake moist and the almonds add texture.
This cake is basically a simple sponge with 3 whole pears added and you wont need any special tools to make it. The pears will take less than 5 minutes to peel, core and slice. The batter will take less than 10 minutes and you bake it for 35. You can feed 9-12 people depending on how generous you want to be with the slices. This cake will keep for 2 days (but trust me, it won't last that long - this cake is incredibly moreish!)
You will need
2 eggs
125g (1/2cup) Butter/Butter Spread/Marg
125g (1/2cup) White Sugar
50g (1/3cup) Self Raising Flour or Plain Flour aka All purpose Flour
100g (1cup) Ground Almonds
100g (1.5cup) Flaked Almonds - half for batter, half to sprinkle on the cake
3 Ripe Pears (peeled, cored, sliced)
1-2 teaspoons Milk
1 teaspoon Vanilla Bean Paste/Vanilla Extract
1-2 teaspoon Vanilla Sugar
*1/2 teaspoon Baking Powder (if using /All Purpose Flour)
Method:
1. Preheat your oven to (fan) 350F/180C or GM4
2. Mix butter and sugar until soft and light in a large bowl
3. Add vanilla paste (if using) and mix
4. Add eggs one at a time and mix after each addition
5. Add flour (and baking powder if needed) and stir until just mixed
6. Add ground almonds and mix
7. Add flaked almonds and mix
8. Add milk and mix
9. Pour batter into an 8 inch lined tin
10. Place pears on top, do not push the pears down far as the batter will rise around them
11. Bake in the middle of a preheated oven for 25 minutes- do not open the oven before the 25 minutes unless the cake seems to be browning too quickly
12. Remove the cake from the oven and sprinkle sliced almonds and vanilla sugar on top before returning to the oven for 10 minutes
13. Remove from the oven - cool in the tin for 15 minutes before taking the cake from the tin and cooling further on a cooling rack (tip -run a knife around the edge of the tin to loosen)
14. Dust with icing sugar if desired
15. Serve on it's own or with cream

Upside Down Pear/Apple Tart With Yummy Cardamom Syrup
Or, as the French might say, Poire/Pomme Tarte Tatin. This is a fun tart to make – because it’s made in a frying pan (skillet) and then baked upside down. Who’d have thought it? In fact, it’s a great way to make a juicy cake and still have perfectly cooked pastry (no one likes a soggy bottom, do they?). Pears like ours – still a bit hard to eat raw – are perfect because they are cooked till soft and that brings out all the flavours. Definitely a technique to keep..

This is a great dessert when you want to rustle up something quick, this pear upside down cake is a take on that classic pineapple upside down cake we all love. There are so many ways to do this dessert, some involving caramels but this no frills version is great served with ice cream or custard. So give it a try.
To make this dessert you will need the following:
- 3 conference pears depending on the size, you could use almost any pear though so pick your favourite if you prefer, peels and de-core.
- 190g plain flour
- 2 tsp of baking powder
- 1 tsp of ground cinnamon powder, don't be tempted to add too much
- 1/4 tsp or a good pinch of salt
- 125 ml of whole milk, got to be whole, unless you want to be healthy
- 1 1/2 tsp of vanilla extract, really no point in using pods here, you could even leave this out if you don't have any at home but it does make a difference
- 110g of unsalted butter
- 200g light brown sugar
- 2 large eggs
Enjoy :)

How to make Chocolate and pear upside down cake.
Pear and chocolate are a classic combination and this easy cake makes a delicious end to a dinner party. Best served warm with plenty of cream, this rich chocolate sponge is turned upside-down to reveal a ring of soft, caramelized pears.
Ingredients
6 small ripe pears (roughly 600g), peeled, quartered and cored
25g butter, melted
30g caster sugar
single cream, to serve (optional)
For the sponge
60g cocoa powder
190g salted butter, softened, plus extra for greasing
2 tbsp vegetable or sunflower oil
100g low-fat natural yogurt
1 tsp vanilla extract
200g caster sugar
100g light soft brown sugar
225g self-raising flour
1½ tsp baking powder
3 eggs
Serves 12
20 mins to prepare and 1 hr 25 mins to cook, 10 mins to cool
393 calories / serving
Method
Preheat the oven to gas 4, 180°C, fan 160°C. Put the pears in a baking dish with the melted butter and caster sugar; toss to coat. Bake for 25 mins or until just tender. Remove and set aside until cool enough to handle.
Grease a 20cm round springform cake tin and line the base with nonstick baking paper. Arrange the pears in a tight circle over the base, with the thin ends in the centre. Drizzle over any juices from the baking dish.
Mix the cocoa with 100ml boiling water until smooth. With an electric whisk, beat the butter, oil, yogurt, cocoa mix, vanilla, sugar, flour and baking powder in a large bowl for 2 mins until smooth and fluffy, then beat in the eggs one at a time. Pour over the pears and shake gently to level out.
Bake for 1 hr-1 hr 10 mins or until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool for 10 mins in the tin before turning out onto a serving plate, so the pears are facing up. Serve warm with the cream drizzled over, if using, or leave to cool completely.
Tip: You can bake the cake up to 2 days in advance, making it perfect for a dinner party. Store in an airtight container until ready to serve.
If short on time, you can skip step 1 and use tinned, quartered pears instead. Drain from their juice and arrange straight in the tin as above.
