You’ll love these crisp apple fritters covered in glaze and chock full of apples. They’re an easy to make, basically foolproof treat you can whip up in a snap! It’s SO much easier to make than a donut since there’s no yeast, no rising, no waiting. Just mix it up, fry away, and enjoy!
My fritters have a touch of lemon inside and in the glaze to wake the flavors up but you can also roll in cinnamon sugar if that’s your jam.

Each flock of chicks:
Provides eggs and protein for nourishment
Boosts income through sales of extra eggs and offspring
Ensures security for generations through Passing on the Gift
Chickens require little space and can thrive on readily available scraps; this allows families to make money from the birds without spending much. And since a good hen can lay up to 200 eggs a year, your flock of chickens gift provides a steady source of nutrition and income.
20 Rhodes Yeast Dinner Rolls, thawed to room temperature
3 granny Smith apples, peeled and diced
1/2 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 egg, beaten
oil for deep frying
1 cup powdered sugar
1/3 cup milk or half & half
Pour oil 2 to 3-inches deep into a small sauce pan or an electric frying pan, and heat to medium high setting or 350° F.
Combine apples, sugar, cinnamon and nutmeg in a bowl. Transfer the mixture into a strainer over the bowl so excess juice can drain.
Spray counter lightly with non-stick spray. Roll each of two rolls into a 6-inch circle. Brush one circle lightly with beaten egg.
Sprinkle with 2-3 tablespoons of the apple mixture, avoiding the edges. Lay the remaining circle over the apple mixture and match up the edges. Seal thoroughly by pressing the edges together several times.
Fry until deep golden brown on both sides. Place on a rack to drain. Repeat with remaining rolls.
For glaze, whisk together powdered sugar and milk. Brush warm fritters with glaze and serve when glaze has set.

Vegetable or canola oil for frying
1 1/2 cups apples peeled, cored, and cut into 1/4” pieces 215g
1 teaspoon ground cinnamon divided
2 cups all purpose flour 250g
1/3 cup sugar 66g
2 Tablespoons brown sugar
1 Tablespoons baking powder
1 teaspoon salt
2 large eggs room temperature preferred
1 cup milk 235ml
2 Tablespoons unsalted butter melted and cooled several minutes
1 teaspoon vanilla extract
2 cups powdered sugar 250g
1-2 Tablespoons apple cider, water, or milk
1/4 teaspoon vanilla extract
1. 00:19 In a large bowl, combine flour, sugars, baking powder, remaining 1/2 teaspoon of cinnamon, and salt in a large bowl and whisk until well-combined.
2. 00:37 Crack your eggs in a separate bowl and use a whisk to beat until pale yellow and frothy (about 15 seconds). Add milk and vanilla extract and whisk together.
Slowly, while whisking, pour melted butter into wet ingredients and whisk until well-combined (mixture may look slightly curdled).
3. 01:22 Peel and slice apples. Combine your apples and 1/2 teaspoon cinnamon in a bowl and toss until apples are coated with cinnamon. Set aside.
4. 02:01 Pour wet ingredients into dry and use a spatula to fold ingredients together until about halfway combined. Add cinnamon coated apple pieces and continue to fold into batter until all ingredients are just combined.
5. 02:37 Set the batter aside and fill a Dutch oven or large saucepan 2-3 deep with oil for frying. Fix a candy thermometer to the edge (make sure it is in the oil but not touching the bottom of the pan) and set your heat to medium-low. Oil will need to reach 360-365F (175-185C) before you can continue.
6. 03:09 Once oil has reached temperature, use a large spoon or an ice cream scoop (this is my preferred method) to scoop about 3 Tablespoons of batter and *carefully* drop into the oil. Repeat with 2 more scoops of batter and fry each for 60-75 seconds on each side, or until golden brown.
Use tongs to remove apple fritters to a paper-towel lined plate and allow to cool several minutes before dipping. Be sure to allow the oil to return to the correct temperature before frying more fritters.
7. 04:13 Prepare your glaze by whisking together sugar, apple cider (or substitute) and vanilla extract until smooth. Dip fritters in glaze and transfer to cooling rack to allow glaze to set.
What Kind of Apples Should I Use to Make Apple Fritters?
My recommendation is to use an apple that's not too sweet nor too tart, and I like to use Gala, Fuji, or the ever-popular HoneyCrisp when making apple fritters.
Can I Store Apple Fritters?
Unfortunately, these apple fritters do not keep very well into the next day. For best taste, I recommend enjoying shortly after making and dipping them, like just as soon as the glaze has set and you can devour them without burning your mouth ????
Tips for Frying Apple Fritters
Not all frying oils are created equal. I recommend using vegetable, canola, or peanut oil when frying apple fritters.
You will need a thermometer to make sure your oil is at the correct temperature. When fitting it to the side of your pan, make sure that the tip of the thermometer is not touching the bottom of the pan -- it should be resting about mid-way through the oil, otherwise you could get an inaccurate reading.
I recommend frying apple fritters in batches of just 2-3 fritters. Adding the batter will cause the oil temperature to drop, and adding more than 2-3 fritters can make it drop so low that it will take a long time to fry and your apple fritters may be under-baked on the inside. Make sure that your oil temperature comes back to the right temperature range between batches.
Do a test batch first to get a good idea of when your apple fritters are finished frying. At the correct temperature, they should be fried until golden brown and this should be about 60-75 seconds on each side. However, if your oil is too hot they will fry much faster and could be golden brown on the outside and still raw and gooey on the inside. After frying your test batch, let the fritters sit for about 2-3 minutes (to completely finish cooking) and then cut one in half and take a peek to make sure that the center is fully cooked.

Professional Baker Teaches You How To Make APPLE FRITTERS!
Apple Fritters are on the menu in Chef Anna Olson's amazing kitchen, and she is going to teach you how to make this delicious recipe from scratch! Follow along with the recipe below!
Subscribe for more video recipes:
2 medium tart apples, peeled and coarsely grated
1 tsp (2 g) lemon zest
2 Tbsp (30 ml) lemon juice
3 Tbsp (36 g) sugar
pinch ground cinnamon
2/3 cup (160 ml) sour cream (full fat)
½ cup + 2 Tbsp (125 g) sugar
2 large eggs, separated
1 ¾ cup (255 g) all-purpose flour
1 tsp (3 g) baking powder
1 tsp (3 g) ground cinnamon
¼ tsp (1 g) ground nutmeg
¼ tsp (1 g) salt
2 ½ Tbsp (30 g) unsalted butter, melted
vegetable oil, for frying
icing sugar for dusting
1. Toss the grated apple with the lemon zest, juice, and the cinnamon and let sit a few minutes (to soften the apple).
2. Whisk the sour cream, ½ cup of the sugar and egg yolks to blend. Stir in the grated apple (including any juices). In a separate bowl, sift the flour, baking powder, cinnamon, nutmeg and salt. Stir this into the sour cream mixture until blended, then stir in the melted butter. Whip the egg whites until foamy then add 2 tablespoons of sugar and continue whipping until they hold a soft peak. Fold the whites into the batter and use right away.
3. Pour the oil into a tabletop deep fryer following manufacturer’s instructions (or into a large, deep pot so that it is only filled about 3 inches). Heat the oil to 350 F (use a candy thermometer if cooking doughnuts in a pot). Have a baking tray lined with paper towel, with a cooling rack placed over it. Use a small ice cream scoop and carefully drop scoops of batter into the oil, making sure there is enough room between them to cook evenly. Cook the fritters for about 3 minutes on each side, then remove using a slotted spoon and let drain and cool for at least 10 minutes before dusting and enjoying.
The fritters can be enjoyed warm or at room temperature on the day they are cooked.
