Ingredients:
Caramelized apples:
3 medium apples, grated
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon (15g) butter
2 tablespoons (30ml) milk
1 tablespoon (20g) honey or brown sugar
Crumble:
3 tablespoons (37g) brown sugar
3 tablespoons (45g) butter
1 teaspoon vanilla extract
3 tablespoons (20g) ground almond
1/2 cup (65g) flour
1/2 teaspoon cinnamon
Cake:
3 eggs
1/2 cup + 2 tbsp (125g) sugar
3/4 cup + 1 tbsp (200ml) oil
3/4 cup + 1 tbsp (200ml)
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups (250g) all-purpose flour
2 teaspoons baking powder
Directions:
1. Preheat oven to 350F (175C). grease 9-inch (23cm) round baking pan lined with parchment paper and greased.
2. Caramelized apples: peel and grate the apples, then stir with the lemon juice and set aside.
3. Place butter, honey and milk in a pan and melt, stirring frequently over medium heat. Add grated apples and cook, stirring frequently, for about 4-5 minutes. Remove from heat and let cool.
4. Crumble: Combine the ingredients for the crumble topping together in a small bowl and Crumble together using your finger tips or a fork. Place in the fridge while making the cake.
5. Cake: in a large bowl or in bowl of stand mixer, whisk eggs, sugar and vanilla extract. Whisk until doubled in volume. Gradually and oil and milk while whisking. Add flour, baking powder, salt and stir until combined.
6. Pour the batter to the prepared pan, spread the caramelized apples on top, then sprinkle the crumble on top.
7. Bake for 35-40 minutes. Let cool for 10 minutes in the pan, release from the pan and let cool completely.

Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.

Streusel
½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
Directions
Streusel
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
Cake
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

Sour Cream Coffee Cake

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
1 1/2 cups granulated sugar
3 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/4 cups sour cream
2 1/2 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
For the streusel:
1/4 cup light brown sugar, packed
1/2 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into pieces
3/4 cup chopped walnuts, optional
For the glaze:
1/2 cup confectioners' sugar
2 tablespoons real maple syrup
Directions
Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

Ultimate Apple Crumble Cake
Ultimate Apple Crumble Cake – Another of my favourite. The caramelized apple and sauce just melt in your mouth with the cake. The sweetness of the caramel flavour is delicious, you would want more after one piece. Butter cake alone might be a little flat and boring, but adding the caramelized apples makes the cake another level. It’s not that hard to make if those of you already know my butter cake recipe. Just additional work on the caramelized apple, and the rest are pretty easy. I hope you’re inspired with make this. Enjoy!

Ingredients:
I am using a 7-inch pan, with loose base
Crumble
28g (2 tbsp) unsalted butter
40g (1/3 cup) cake flour
40g (3 tbsp) fine sugar
Pinch of salt
40g (6 ½ tbsp) almond flour
½ tsp cinnamon powder
Caramelized Apple
4-5 apples, mine are medium size apples
100g (1/2 cup) fine sugar
1 tsp cinnamon powder
2 tbsp lemon juice
½ tsp salt
Apple crumble Cake
180g (1 ½ cup) cake flour
½ tsp baking powder
¼ tsp salt
113g (1/2 cup) unsalted butter
100g (1/2 cup) fine sugar
2 eggs
1 tsp vanilla extract
2 tbsp whole milk
Instructions:
Crumble
1. In a food processor, add both the flours, sugar, salt, and cinnamon powder. Pulse a few times to get a quick mix. Add butter. Pulse few times or until it gets a crumbly texture. Do not over pulse as it will become a clump.
2. Refrigerate until it is needed.
Caramelized Apple
3. Peel the apple skin and cut into chunks. I like mine smaller chunks but not too much as the apples will shrink tremendously.
4. Place the chunk apples into a pot. Add sugar, lemon juice, cinnamon powder and salt. Cook the apple over medium heat. Mix the apples until all the ingredients are evenly combined. Stir occasionally. The apples will produce much juices. Keep cooking until the juices are thickened, volume reduced and caramelized.
5. The apples will shrink and looked much less.
6. Set aside for few minutes to cool. Refrigerate until it is needed.
Apple Crumble Cake
7. Preheat oven at 170°C/340°F.
8. Sift all the dry ingredients, and set aside.
9. In a large bowl, add butter and sugar. Mix until creamy, fluffy and pale. This will be about 3-5 min.
10. Add in the eggs, one at a time. Mix until well combined. It will look curdle, it’s normal.
11. Add in the sifted dry ingredients in 2 batches. Fold in with a spatula, do not over mix.
12. Add in the milk. Fold in until combined.
13. Use a 7-inch pan, greased and lined with parchment paper.
14. Pour half the batter into the pan.
15. Add half the caramelized apples. Lay them evenly.
16. Add the remaining batter.
17. Add the remaining caramelized apples.
18. Add in the crumble on top. Spread them evenly.
19. Bake in preheated oven at 170°C/340°F for 50-60 min.
20. Once the cake is baked, remove from the pan. Set aside for cooling.
21. The cake is ready to cut and serve.

BLUEBERRY CRUMB CAKE RECIPE
Makes 9 squares

INGREDIENTS:
½ cup (120g) of butter
¾ cup (150g) sugar
2 eggs
1 tsp (5 ml) vanilla
2 cups (240g) of flour
2 tsp (10 ml) baking powder
½ tsp (2.5ml) salt
½ cup (120 ml) milk
2 cups (300g) fresh blueberries
Topping:
1 cup (200g) of sugar
½ cup (120g) flour
1 tsp (5 ml) cinnamon
½ cup (120g) butter
METHOD:
Preheat oven to 350F (175C).
Spray a square 10” x 10” (25cm x 25cm) pan with baking spray. Set aside
In the bowl of an electric mixer beat together butter and sugar until smooth and fluffy, add eggs one at a time and beat well until light and fluffy, add vanilla. Set aside.
In a small bowl combine flour, baking powder and salt whisk together. Add flour mixture in thirds, alternating with the milk until a batter forms. Remove bowl from the mixer.
Fold in blueberries. Transfer batter to pan. Set aside.
In a small bowl whisk together the topping. Add the sugar, flour and cinnamon. Whisk to combine. Cut in butter with hands until small crumbs form. Sprinkle topping on top of batter until a layer is formed and batter is fully covered.
Bake 40-45 mins until golden brown and a toothpick comes out clean. Allow to cool completely. Run sharp knife along perimeter of cake to loosen before removing it. Cut into 9 squares and serve!

Makes 12
INGREDIENTS:
4 eggs
¾ cup (180 ml) canola oil
6 tbsp (90 ml) melted butter
¾ cup (150 g) sugar
½ cup (120 ml) water
2 cups (240 g) flour
2 ½ tsp (12.5 ml) baking powder
¾ tsp (4 ml) salt
½ cup (75 g) chopped pecans
For Interior Swirl:
1 tbsp (15 ml) instant coffee granules
2 tbsp (30 ml) unsweetened cocoa
3 tbsp (45 ml) white sugar
For Crumble:
2/3 cup (80 g) flour
4 tbsp (60 g) brown sugar
¼ tsp (1.25 ml) cinnamon
¼ tsp (1.25 ml) baking powder
4 tbsp (60 ml) melted butter
METHOD:
Preheat oven to 375F/(190C)
Combine eggs, oil, butter, sugar and water in a large bowl and whisk until smooth.
In a separate bowl combine flour, baking powder and salt. Whisk to combine.
Add the dry ingredients to the wet ingredients in thirds, until combined. Don’t over mix.
In a small bowl combine cocoa, instant coffee, and sugar, whisk to combine and set aside.
In another small bowl combine flour, sugar, cinnamon, baking powder, and butter. Whisk with a fork to combine.
Prepare a muffin tin with baking spray, covering inside of wells and lightly spray top of pan too since muffins will rise up and slightly cover the top.
With an ice cream scoop, spoon in half a scoop of batter into the muffin well, top with 1 tsp (5 ml) of the filling, cover with second half scoop of batter. Take a knife and gently swirl interior to distribute filling. Top with 1 tbsp (15 ml) of crumb topping.
Repeat process until all the wells are full. Bake for 16-17 mins until golden brown and risen.
Allow to cool slightly. Dust with powdered sugar if desired ☺

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

- 1/2 banana mashed
-1/2 cup oats
-2 tbsp cocoa powder
-1 tbsp of maple syrup
-1/2 tsp of vanilla
-1 pinch salt
-1/4 cup of almond milk
-1/2 tsp baking powder

Bake at 400 for 20 mins
BANANA BREAD OAT CAKE @nikswellness on IG
-1/2 cup rolled oats
-1 tb chia seeds
-1/2 scoop vanilla protein
-1 banana
-2/3 cup almond milk
-1 tsp baking powder
-dash of salt
-cinnamon
Blend chia seeds and oat in a blender, add to baking pan
Add 1 mashed banana and 1/2 scoop of vanilla protein

Put in oven for 20-22 mins

-5 strawberries
-1 tsp baking soda
-1/4 cup almond milk
-3 tbsp egg whites

INGREDIENTS
12 tablespoons unsalted butter
2/3 cup sugar (brown or white or a combination)
1 1/2 cups all-purpose flour
INSTRUCTIONS
Grate cold butter into a large bowl. Alternately, you can dice it small.
Add sugar: use all brown or all white or a combination to make 2/3 cup. Use whatever combination you like (I like using 1/3 cup each brown and white).
Add flour and then, using a pastry cutter, work the butter into the flour and sugar until the mixture forms coarse crumbs.
Use crumble as recipe directs, on a fruit pie or on muffins or coffee cake. Bake as directed in recipe.

This Apple Walnut Caramel Cake is a mouthwatering rich dessert, full of flavor and texture, perfect for any time of the year. Soft and moist apple cake layers topped with a crunchy caramelized walnuts, filled with dulce de leche buttercream and topped with salted caramel sauce. The caramel walnut shards I used to decorate the cake not only look amazing but bring an amazing crispy touch too.

Walnut Crunch
1/2 cup (100g) light brown sugar
5 tbsp (70g) butter
3 tbsp (40ml) whipping cream
1 cup (100g) walnuts/pecans, toasted if desired and chopped

This fruit-filled coffee cakes starts with a simple box cake. Add sour cream, a little cherry pie filling and some toasted almond glaze, and you’ve got a cake that’s out of this world! And it’s so simple to make at home, you may never go to the bakery again.

1 pkg. (2-layer size) white cake mix
1 tsp. ground cinnamon
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
3 eggs
1/4 cup water
1 can (20 oz.) cherry pie filling
1/2 cup PLANTERS Sliced Almonds, toasted
1 cup powdered sugar
4-1/2 tsp. milk
Let's make it:
1. Heat oven to 350°F.
2. Beat first 5 ingredients with mixer until blended; pour into 13x9-inch pan sprayed with cooking spray. Top with spoonfuls of pie filling.
3. Bake 35 min. or until toothpick inserted in center comes out clean; sprinkle with nuts. Cool 10 min.
4. Mix sugar and milk until blended; drizzle over cake. Cool completely.
