This is my grandma's recipe for bread pudding. It is very delicious!
6 c. milk
6 eggs
3/4 tsp. salt
1-1/2 c. sugar
3 tsp. vanilla
8 c. bread (torn into little pieces)
Cinnamon (to taste)
Raisins (optional)
Scald milk. Place eggs in large mixing bowl. Stir in salt and sugar. Add hot milk. Add bread, vanilla and cinnamon. Place into 9 x 13 pan. Bake at 350 degrees about an hour. Just before removal from oven, spread about 3 tablespoons of butter over entire surface.

How To Make Old Fashion Danish Apple Rye Bread Dessert Called Bondepige med slør ????
???? This old fashion Nordic apple dessert is refreshing & delicious served cold. Similar to the Danish Æblekage but made with Rye Bread instead. The Danish name for this dessert is called Bondepige med slør . Perfect homemade dessert to serve to your friends and family during the summer time! ???? ????
As well this old fashion dessert is a cheap & convenient way to use leftover apples and breadcrumbs. If you have homemade applesauce, breadcrumbs and whip cream you are ready to go! Plus it is a No Bake Recipe! ???? ???? ????
♥ Ingredients ♥
• toasted rye bread crumbs ( see our video)
•4 apples, 3 tablespoons of water, 50 grams of sugar
•1 cup lingonberry, raspberry or strawberry preserves plus additional for garnish
•1 cup of whipped cream for garnish and as an accompaniment
• grated chocolate
Instruction:
First stage is either to make your own applesauce or use applesauce from a jar. We prefer to make our own applesauce as it is less runny. A firmer chunkier applesauce holds better with this dessert. The breadcrumbs are less wet with a firmer applesauce. If you want to make your own applesauce, see our Danish applesauce recipe.
Next you need to make whip cream in a small bowl with a handheld mixer. You can set it a side and keep it in the refrigerator until you are ready to use the whipped cream.

The final stage is to assemble the Æblekage. In either individual size glasses or a large pretty glass bowl we need to layer the golden breadcrumbs and the applesauce. Make sure to have a clear glass because it is so pretty to see the layers! First layer is the golden breadcrumbs and spread it across. Next layer is the applesauce.
Repeat the steps until you are at the top. The last layer is the whipping cream. Spread the whipped cream across the entire surface from glass rim to glass rim. Final step is to add a tablespoon of preserves on top such as either lingonberry, raspberry or strawberry preserves. Also, as you are layering the proportions are quite forgiving, so feel free to experiment. Refrigerate until ready to serve.
We like to serve the delicious dessert with either a cup of coffee and/or a glass of port. For extra garnish we usually have a a bowl of preserve and a bowl of whipped cream on the coffee table. That way folks can add more flavoring to their liking. ☕ ????

Amazing French Apple Charlotte Recipe! | The Perfect Thanksgiving Dinner
French Apple Charlotte is a versatile Thanksgiving recipe that is sure to please your guests! Chef Anna Olson will teach you all the steps you'll need to make this amazing dessert, just follow along with the recipe below!

Serves 6 to 8
Ingredients
6 tart, firm apples (such as Granny Smith)
¼ cup (60 g) unsalted butter, plus extra, for the dish
¼ cup (50 g) granulated sugar
zest and juice of 1 orange
¼ cup (60 mL) apricot jam
10-12 slices egg bread, crust removed
Directions
1. Preheat the oven to 375 F (190 C). Generously butter a 6-cup (1.5 L) charlotte dish (or a soufflé, or other straight-sided baking dish). Cut a circle of parchment to fit into the bottom of the dish and butter this generously as well.
2. Peel, core and slice the apples. Heat a sauté pan over medium-high heat and add the apples and butter, stirring often, until the apples no longer have juice cooking out, about 10 minutes. Add the orange zest, orange juice and sugar and cook a few minutes more, until the sugar has fully dissolved. Stir in the jam until it has melted and the sauce is a glaze consistency, then remove the pan from the heat and set aside while preparing the dish.
3. Cut pieces of bread to line the bottom and sides of the buttered dish (try and create a pretty pattern at the bottom, since this will be the top.) The sides can have rectangles of bread, slightly overlapping, and reserving a few slices for the top of the charlotte. Fill the dish with the apples (it is OK if they are still warm) and press down gently to pack them into place. It is OK, if the apples do not fill the dish entirely. Cut a piece of parchment into a circle big enough to rest directly on the apples and cover the exposed bread with a piece of foil, if needed.
4. Bake the charlotte for about 30 minutes, until the outside of the bread is toasted and golden brown, then remove from the oven and peel off the parchment circle. If the apples do not come to the top of the pan, fold over the toasted tops of the outside ring of bread slices to cover the apples, and fill in any gaps with the reserved bread, trimming to fit (if the apples do come to the top, then cover the top of the charlotte completely with the reserved bread.) Return the charlotte to the oven for another 15-20 minutes, until the top layer of bread is toasted.
5. Cool the charlotte to lukewarm (about 90 minutes) before inverting onto a platter. Slice the charlotte to serve in wedges (it will slice like apple pie.)
If preparing ahead of time, line the charlotte dish with bread and prepare the filling ahead, but do not fill until it is time to bake the charlotte.

Bake a cake for an afternoon tea or coffee morning. THIS PIE IS GOOOOOOOOD!!!! I will say it again! This pie is soooooo goooood!
Healthy, low in calorie sponge apple pie with a whole rye crust! It is filled with an enormous amount of yummy apples but no added sugar! AH-MAZING I tell ya!
Certainly is easier to buy a crust but it won’t taste the same as making this one.
What if you want to lead a healthy lifestyle? Then you should make this amazing sponge apple pie with rye flour and zero grams of sugar!

This sugar-free very tasty sponge apple pie without wheat flour could be a perfect dessert if you want to be in good health and eat yummy food! The recipe is really easy, it consists only of 4 ingredients!

If you serve it with berries or fruits the family will never notice it isn’t made with white flour or white sugar, NEVER. They will want seconds!

Ingredients:

Rye flour - 150 gr.
Eggs - 6
Apples - 2-3
Sweetener
⠀
Cooking process:
1. Preheat oven to 160 degrees C.
2. Peel, core and grate or slice apples.
3. Crack the eggs into 2 bowls. Yolks and proteins should be separate.
4. Using an electric whisk beat the proteins with a pinch of salt. It will take approximately 5-10 minutes. Proteins should be so thick that a spoon can stand in them.
5. Beat the yolks with sweetener until they are smooth and lighter.
6. Add a small amount of the beaten whites to a thick egg yolk, then add some flour and stir to lighten the batter. Fold in the remaining beaten egg whites and flour in equal portions.
7. Place the apple slices into a baking dish, gently pour the batter liquid over the apples. Pour slowly so that it does not run off.
8. Bake for 40 minutes at 160° until golden and the cake springs back when pressed.
RECIPE COMMENTARY:
Eggs have to be at room temperature, not cold from the fridge. If they are too cold, soak them for a few minutes in a bowl of warm water.
And that's all! Healthy quick, easy and very tasty sponge apple pie is ready!

Recipe
Makes two 9 ½ -x-5 ¼ -inch pullman loaves
Ingredients
Starter
2 ½ cups (300 g) dark or medium rye flour, plus extra for sprinkling
1 ¼ cups (310 mL) lukewarm water
2 Tbsp (30 mL) starter (from Pain de Campagne recipe) (OR 1 tsp instant yeast & 1 tsp honey)
1 tsp (3 g) ground black pepper
½ tsp (1.5 g) ground cardamom
Soaker
3 cups (140 g) torn-up pieces of day-old bread, including crusts (white or rye bread)
hot water, to cover
Dough
5 cups (750 g) bread flour
1 ½ cups (180 g) dark or medium rye flour
2 ¼ tsp (8 g) dry instant yeast
½ cup (125 mL) coffee, room temperature
½ cup (125 mL) extra liquid from the soaker
bread from the soaker (above)
2 Tbsp (30 mL) blackstrap molasses
1 Tbsp (15 g) salt
1 cup (170 g) cooked wheat, spelt or rye kernels (“berries”)
1 cup (150 g) roasted, unsalted sunflower seeds
1 cup (150 g) roasted, unsalted pumpkin seeds
¼ cup (40 g) flaxseeds
1 egg whisked with 2 Tbsp (30 mL) water
sunflower, pumpkin and flax seeds, for sprinkling
Directions
1. For the starter, stir the rye flour, water, starter (or yeast and honey), black pepper and cardamom until it makes a thick paste. Sprinkle a little rye flour on top (this prevents a crust from forming), wrap the bowl in plastic wrap and leave on he counter for at least 14 hours.
2. For the soaker, place the torn up bread pieces in a bowl and cover with boiling water. Let sit until cooled to room temperature. Squeeze out the bread and set aside and reserve ½ cup (125 mL) of the liquid for the final dough.
3. For the final dough, place the bread flour, rye flour and yeast in the bowl and give it a quick stir. Add all of the starter, coffee, reserved soaker liquid and the squeezed out bread, molasses and salt and mix this on low speed for 5 minutes, then add the cooked grain kernels, sunflower, pumpkin and flax seeds and continue to mix on low speed for an additional 10 minutes (the dough will be sticky). Cover the bowl (or place in a separate bowl) with plastic wrap and let rise for just 30 minutes.
4. Turn the dough out onto a generously floured work surface, dust the dough with flour and divide it in half. Flatten each piece and then roll up in a loaf shape. Place each loaf in a greased 9-x-5-inch (2L) loaf pan and cover them with a tea towel, letting them rise for an hour.
5. Preheat the oven to 350 F (180 C). Brush each of the loaves with eggwash and sprinkle with seeds. Use a serrated knife to cut a line down the length of the loaf. Bake the loaves for an hour, until the top is a deep brown. Immediately turn the loaves out of their tins to cool completely on a cooling rack.
The loaves can be enjoyed fresh, or kept for a few days, well wrapped (they make great toast)

Tom Sellers, Michelin star chef from Restaurant Story, creates three recipes
The first dish is a dish that has been on the menu since the opening: scallop with cucumber. Raw scallop marinated and served with balls of cucumber and cumber ash (cucumber skins are charred on Big Green Egg to make an ash which the cucumber is rolled in) the scallops are then served with a horseradish and dill dressing.
The second dish is a Pink Lady apple that is scooped out, filled with shredded raw beef, rye bread and diced apple and then topped with an apple gel and summer truffles served on ice.
The last dish is flower custard: a simple vanilla custard served with flowers.

In Denmark, we grew up having the Danish Kringle on special occasions. My family would go to the bakery and pick up a fresh tasty Kringle. Then, bring it back to have on the dining room table and serve with coffee or hot chocolate with it.
One of the wienerbrød we are making today is the Danish Kringle. This homemade Danish Kringle is a butter-layered Danish pastry shaped like a pretzel made from a yeast dough and filled with a marzipan mixture. However, the Danish Kringle can be made of different types of dough too.
Danish Pastry (Kringle) Recipe:
Dough Ingredients:
•3 1/2 cups flour
•12 oz butter
•2/3 cup milk
•1/2 cup heavy cream
•1/4 cup sugar
•2 eggs
•1 tblsp bread machine yeast
•1 tsp cardamom
•1/2 tsp salt
•1 tsp vanilla extract
Filling Ingredients:
•3/4 cup sugar
•8 tbsp butter
•8 oz. almond paste
Topping Ingredients:
•2 tblsp pearl sugar mixed
•2 tblsp chopped almonds

APPLE AND OAT POT
// Ingredients
1 cup Unsweetened Almond Milk
1/2 cup Oats
1 Apple
1 tbsp Chia Seeds
Handful Unsalted Pistachios
Handful Rasins
1/2 tsp cinnamon
Glass Jar with Lid
1. Simply place all of the ingredients into the jar and mix.
2. Add a little more almond milk if needed, and shake the jar.
3. Keep in the fridge overnight, and then the oats and chia seeds would’ve soaked up the milk by the morning!
Long-Lasting
GRANOLA
// Ingredients
2 cups Oats
1 cup Almonds
1 cup Pecans
1/2 cup Pumpkin Seeds
1 cup Mixed Dried Fruit (apricots, prunes, figs, raisins)
1/2 cup Coconut Chips
1/2 cup 100% Pure Maple Syrup
1/4 cup Coconut Oil
1. Pre Heat oven to 170 degrees celsius.
2. Melt the coconut oil in a saucepan over a low heat.
3. In a large bowl, mix together the melted coconut oil and maple syrup before stirring in the oats, almonds, pecans and pumpkin seeds.
4. Pour into a baking tray, and pat down so it’s evenly spread. Bake for 15 minutes.
5. Remove from oven and mix in the dried fruit and coconut chips and bake for a further 5 minutes or until golden.
6. Allow to cool, then transfer into an airtight container. Serve with almond milk or coconut yogurt topped with berries for a delicious breakfast.
Weekend Brunch
CREAMY GARLIC MUSHROOM ON TOAST
// Ingredients
5 Chestnut Mushrooms, sliced
1/4 can Coconut Milk (use the thick part)
1 Slice Rye Bread
1 Clove Garlic, minced
Squeeze Fresh Lemon
Fresh Chives
1 tsp Mixed Dried Herbs
Salt and Pepper to taste
Optional - 1/2 can Baked Beans
1. Fry the mushrooms and garlic with some coconut oil for about 5 minutes or until the mushrooms are cooked.
2. Pour in the coconut oil, lemon juice, dried herbs and salt and pepper and stir.
3. Cook for a few minutes until the sauce has reduced.
4. Heat the baked beans now if you are using.
5. Toast the rye bread. Slice in half and serve with the creamy mushrooms on top.
6. Roughly chop the chives and sprinkle over the top, with the baked beans served on the side.

Ingredients:
2¼ cups (200g) Rolled oats
1¼ cups (100g) Quick oats
1/2 (170g) cup Honey/maple syrup
1 1/3 cups (270ml) Milk
2 Egg
1½ teaspoons vanilla extract
3 tablespoons (40g) Coconut oil
1 teaspoon Baking powder
1/4 teaspoon Salt
1 teaspoon Cinnamon
50g Dried cranberries
50g Raisins
50g Dried apricots
Butter for greasing
Directions:
1. In a large bowl mix all the dry ingredients and set aside.
2. In separate bowl, whisk all the wet ingredients.
3. Pour the wet mixture over the dry ingredients and mix until combined. Let sit for 15-20 to absorb the liquids.
4. Preheat the oven to 360F (180C). prepare 8-inch pan – line with parchment paper and grease the edges with butter.
5. Pour the batter into the pan and bake for 35-40 minutes or until golden brown.
6. Let cool on a wire rack for 10 minutes, then Release from the pan and let cool completely
Notes:
• All the ingredients should be in room temperature.
• You can use any kind of dried fruits.

Triple Apple & Buckwheat Muffins
Makes 12 muffins
These muffins are only sweetened with apples and dates. We make our own apple sauce and even though it is unsweetened, it tastes very sweet and works perfect in this recipe. Since these muffins are not overly decadent, we enjoy them both as weekend breakfast and weekday dessert. If you know that you like your muffins more on the sweeter side, you can reduce the apple sauce and replace the reduced amount with maple syrup.
Dry ingredients
1 cup / 100 g almond flour
1 cup / 100 g rolled oats (use cert. gluten free if intolerant)
2/3 cup / 75 g buckwheat flour
2 tbsp arrowroot (or potato starch)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground cardamom
½ tsp ground ginger
½ tsp sea salt
Wet ingredients
160 ml / 2/3 cup plain unsweetened yogurt or plant yogurt
80 ml / 1/3 cup coconut oil, butter or olive oil
10 fresh soft dates, pitted and mashed
3 large eggs (or 3 tbsp chia seeds mixed with 9 tbsp water)
1/2 cup / 120 ml apple sauce, unsweetened (see below for instructions hot to make your own)

Preheat the oven to 400°F / 200°C. Grease a muffin pan with oil or butter or line it with muffin tins. Add all the dry ingredients to a food processor or blender and process on high speed so the oats turn into coarse flour and all ingredients are mixed. Transfer to a large mixing bowl. Add eggs, yogurt, coconut oil, dates and 1/3 cup / 80 ml of the apple sauce (save the rest for later) to the food processor or blender and mix until smooth, and then transfer to the mixing bowl with the dry ingredients. Grate two of the apples and add them to the batter. Divide the batter into the muffin tins filling them only half way up. Drop a heaping teaspoon of apple sauce in the middle of each muffin and then cover with the remaining batter. Slice the remaining apple thinly, brush the slices with oil and place one or a few slices on top of each muffin. Dust with cinnamon. Bake for about 18-20 minutes. Let cool for a bit before taking them out of their tins and they will release easier. Enjoy!
Apple Sauce
Homemade apple sauce is dead simple and if you choose a sweet variety of apples, no other sweetener is needed.
1 lb / ½ kg organic apples
¼ cup / 60 ml water
1 tsp lemon juice
Core the apples, cut them in ½ inch / 1 cm dices and add to a large sauce pan on medium heat together with the water. Bring to a boil and then turn down the heat slightly. Let simmer for 20-25 minutes. Use a hand blender to mix it smoothly. Add lemon juice and stir around to prevent the color from going brown. Store in air-tight glass jars the fridge for about a week or in plastic containers in the freezer for-like-ever.
