This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

How to Make Apple Crisp
***Please note that this apple crisp recipe actually calls for 1 CUP and NOT 1/4 cup of oats! I don't know where my mind was in that moment but please use 1 cup of oats (though if you don't like oats you can get away with 1/4 cup) ****

Full printable recipe (with metric/weight measurements):
Ingredients
2 lbs apples cored, peeled and sliced no thicker than 1/4” (905g)
1/4 cup light brown sugar 50g
1 Tablespoon lemon juice
1 Tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
Crisp
9 Tablespoons unsalted butter melted
3/4 teaspoon vanilla extract
3/4 cup all-purpose flour 95g
1 cup old fashioned oats 100g
1/2 cup light brown sugar tightly packed 100g
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
Instructions
1. 00:11 Preheat oven to 375F (190C) and lightly grease a 9x9 or 11x7 glass baking dish with butter. Set aside.
Combine sliced apples, brown sugar, lemon juice, flour, cinnamon, and salt in a large bowl. Give everything a good stir until all ingredients are combined and set aside while you prepare your crisp topping.
Crisp
1. 01:07 Prepare your topping by whisking together butter and vanilla extract. Set aside (you don't want the butter to be too hot when you add your sugar, so let it cool while you prepare your dry ingredients)
2. 01:29 In a separate bowl, stir together flour, oats, sugar, baking soda, salt, and cinnamon.
3. 02:05 Pour butter into flour mixture and use a fork to stir until mixture is combined and clumpy (don't over-stir, you want it to be crumbly, not paste-like). Set aside.
Assembly
1. 02:25 Give your apple mixture another good stir and pour evenly into your prepared pan.
2. 02:56 Use your hands to drop your crumble mixture evenly overtop your apple filling.
3. 03:16 Transfer to 375F (190C) oven and bake for 50 minutes or until topping is lightly golden brown and apples are tender when pierced with a fork. If topping is starting to become too dark and apples are still crisp, cover apple crisp with foil while continuing to bake.
Serve warm (preferably topped with ice cream!)
CAN I MAKE APPLE CRISP IN ADVANCE?
Yes, you can bake your apple crisp and store it as indicated above.
Alternatively you can prepare the apple portion and place in your prepared pan as instructed. Rather than baking, cover and refrigerate. Prepare the crumble topping also as instructed (without baking) and store that in a separate airtight container and refrigerate as well. When you are ready to bake, uncover your apples and sprinkle with the prepared topping (it might be a little firm, just break it up with a fork) and bake according to recipe instructions.
HOW TO FREEZE APPLE CRISP
Prepare the apple crisp as instructed and assemble in a baking pan (I like to use disposable foil pans when freezing my apple crisp). Cover well and transfer to the refrigerator. Freeze up to 3 months. When ready to bake, transfer your apple crisp to the refrigerator and thaw for several hours or overnight and then bake in 350F oven as indicated in recipe instructions.
If you want to freeze an apple crisp that’s already been baked, then first allow it to cool completely to room temperature, then cover tightly with plastic wrap and foil and freeze for up to 3 months. Thaw apple crisp in the refrigerator and then bake in 350F oven until warmed through (about 20 minutes).

EASY APPLE CRISP IN A CAST-IRON SKILLET
Serves 6-8
Print Recipe on Blog:
INGREDIENTS:
7 cups (1050g) Gala Apples, peeled, cored and cut into wedges
2 tbsp (30ml) fresh lemon juice
1/3 cup (65g) white sugar
2 tbsp (15g) cornstarch
1 tsp (5ml) pumpkin pie spice or cinnamon (Click here to learn how to make Pumpkin Pie Spice at Home)
3 tbsp (45g) butter
1/3 cup (60g) brown sugar
¼ cup (60ml) water
Crisp Topping:
¾ cup (90g) flour
2 tbsp (23g) brown sugar
2 tbsp (25g) white sugar
¾ tsp (3.75ml) baking powder
large pinch salt
¼ tsp (1.25ml) cinnamon
8 tbsp (120ml) melted butter
¾ cup (65g) old fashioned oats
1/2 cup (75g) pecans, chopped
½ cup (75g) Heath toffee bits
METHOD:
Preheat oven to 375F (190C).
In a large bowl toss the apples with the lemon juice, white sugar, cornstarch and pumpkin pie spice. Toss with hands until everything is well coated and combined. Set aside.
In a 10-inch cast-iron skillet, melt 3 tbsp (45g) of butter, add brown sugar and whisk to combine. Transfer apple mixture to the skillet and allow apples to simmer on medium-low while you prepare the crisp topping.
In a medium sized bowl whisk together the flour, brown sugar, white sugar, baking powder, salt and cinnamon. Then add the melted butter. Stir to combine, then add the oats, pecans and toffee bits. Set aside.
At this stage check the apples, stirring occasionally, the liquid in the bottom should start the thicken as it heats and the cornstarch is activated. At this point pour ¼ cup of water over the apples. This will create more of a sauce for the apples to cook in while the crisp bakes, resulting in a nice syrupy mixture once it’s done.
Remove the skillet from the heat and add the crisp topping, sprinkling it evenly over the top.
Then place the skillet in the oven and bake for 30-35mins. The crisp will be golden brown and the juices will be bubbling underneath. Serve right away or, allow to cool completely, cover with foil and refrigerate.
Then 25 minutes before serving, remove the foil and add drizzle 3 tablespoons of water all over the top of the crisp (this will loosen the syrup that has congealed due to the refrigeration) cover with the foil and bake at 375F for 15 minutes. Then remove the foil and bake for another 10 minutes uncovered until topping is crisp and the juices underneath are bubbling.
Serve in small bowls with vanilla ice cream.

So, first things first. Pour yourself a mug and I’ll introduce myself real quick.

I’m also strength & nutrition coach, I hold several powerlifting world records, and I’ve been fortunate enough to have my writing featured in a variety of outlets like CNN, the Huffington Post, and Schwarzenegger.com.
But listen.

I’ll never sugar coat, lie, or beat around the bush. I’ll tell you everything exactly as I see it. Some stuff you might like. Others you might not.
And that’s totally cool.
Either way, my goal here is to create a discussion. A place where you and I can get together, exchange ideas, and motivate each other to be better every day.

1/4 cup ( 30g) old-fashioned rolled oats
3 tablespoons chopped almonds ( or pecans, walnuts etc)
2 tablespoons cornmeal (fine)
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup (60g) chilled butter, cut into small pieces
2 teaspoons cornstarch

METHOD
1. Combine flour, brown sugar, oats, almonds, cornmeal, salt and cinnamon in the bowl of a food processor;. Add butter, pulse 5 times or until the mixture resembles coarse meal. around 10 seconds.
2. Place it in the fridge until you need it. (It can be made ahead of time and kept in the fridge)
3. Peel and chop your apples into small pieces. Small pieces cook down much better.
4. Toss the chopped apples in the cornstarch, brown sugar and vanilla extract.
5. In an 8 inch baking dish (or small individual dishes) Add in your apples mix
6. Pile high because the apples cook down.
