Almond Milk Tea & Coffee Jelly

TRADITIONAL CHINESE ALMOND JELLY RECIPE!! | VEGAN 杏仁豆腐
So as I had mentioned, there are sweet apricot kernels (identified by the Chinese characters 南杏 meaning southern almond) and bitter apricot kernels (identified by the Chinese characters 北杏 meaning northern almond). It is the SWEET SOUTHERN APRICOT KERNELS that you want to buy because, as with many pit fruit seeds, there is a certain amount of cyanide in them, and that includes the normal almonds we get from the store. Northern Chinese bitter almonds/apricot kernels contain an unsafe amount of cyanide. It is a good idea to wash and soak any kernels you use as that gets rid of some of this and cooking helps as well. If any of you cannot find sweet apricot kernels - i put a link below - or do not feel comfortable using it, just use normal western almonds and add some almond extract.

Light and refreshing, Almond Jelly is a classic Asian dessert of almond-flavored jelly that can be eaten on its own or usually paired with lychee or other fresh or canned fruits.

3 cups of water
1 pouch clear jelly powder (gulaman/agar-agar) - - 25g (see Note 1)
1 cup milk
1/4 teaspoon almond extract
1/3 cup sugar - - adjust as preferred
1 can whole lychees with the liquid syrup - - 565 grams
Note 1. Gelatin powder can also be used and I would recommend using Knox but you may have to adjust the amount, 1 envelope =2 cups of water, so you will need 3 envelopes. The procedure is also different. You just dissolve the gelatin in hot water or and refrigerate for 2 hours or until set. Whatever you use, follow the package instructions.
Easy Healthy Almond Jelly
Super easy almond jelly recipe.
I was always impressed when boba shops made their own almond jelly. Let me tell you a little secret... it's not that hard. In this recipe, I use agar agar instead of gelatin because it's vegan and has a firmer texture than gelatin. Something about having animal products in my desserts irks me a bit.
1 cup milk (any kind you want: almond, whole milk, oat milk)
3/4 cup water
1 tsp agar agar (
2 tbsp sugar
2 tsp almond extract (
Add milk, water, almond extract, sugar, and agar agar to a pot.
Bring mixture to a boil, whisking frequently.
When it starts to boil, remove it from stove and pour it into a glass container.
Let it reach room temperature & then stick in the fridge for 1 hr.
Take care to chop it into nice little cubes & you're ready to put it in boba tea or a fruit salad.

CHINESE ALMOND TEA (杏仁茶)
We are going to cook almond tea today. It is a very popular chinese dessert.
I am using 150g of sweet almond (南杏) and 50g of bitter almond (北杏). Bitter almond is added as it can relieve cough and reduce phlegm. Alternatively, you may use all sweet almond.
Soak the almond and a quarter cup of rice overnight.
Drain away the soaking water, rinse and add 2 cups of fresh water.
Grind in a blender. Strain using a piece of cheese cloth. Squeeze to ensure that we get all the almond milk out.
Repeat and blend a second time using another 2 cups of water.
Cook over medium heat, keep stirring and bring it to a gentle boil.
When it starts to boil, add one of cup of fresh milk and add sugar to taste. I am adding 3 tablespoons of sugar.
Let it continue to simmer for another 2 minutes. The almond tea will thicken as we cook. The consistency of the tea will depend on the amount of rice we use. Add more rice if you want a smoother, thicker and silky consistency. This is how we like it.
It will continue to thicken as it cools.

Almond jelly is a traditional dessert, can be serve either as a cold summer dessert or a warm winter comfort food. Although it's called Almond Jelly, but it's actually made with apricot kernels. Apricot kernels can be found at bulk food section or at health food store. Remember bitter apricot kernels have to be cooked before consumption!!! The reason for combining both gelatin and agar is to achieve both melt in you month texture and the crunchy distinctive from agar.
- The cloth I use to strain the pulp is use for making tofu, can be replace with super fine cheese cloth or fine mash strainer instead.

300ml Milk (10.1 fl oz)
100ml Water (3.4 fl oz)
40g Granulated Sugar (1.4 oz)
1½ tbsp Chinese Almond Powder (apricot kernel powder)
* be sure not to confuse this with regular almond powder
2 tbsp Water
5g Gelatin Powder (0.2 oz)

20g Granulated Sugar (0.7 oz)
80ml Hot Water (2.7 fl oz)

- 4 large eggs, separated and at room temperature
- ¼ cup icing sugar (32 g), sifted, plus extra for dusting
- 1 tsp (5 mL) vanilla extract
- ⅒ tsp salt
- 2 Tbsp (25 g) granulated sugar
- ¾ cup (96 g) cake and pastry flour
- ⅔ cup (160 mL) raspberry jam
1. Preheat the oven to 350 F. Line the bottom of a 15-x-10-inch jelly roll pan with parchment paper.
2. Place the egg yolks and icing sugar in a large bowl or in the bowl of a stand mixer fitted with the whip attachment and whip until the yolks have doubled in volume and hold a ribbon when the whip is lifted, about 4 minutes. Whip in the vanilla.
3. In a separate, or cleaned bowl, whip the egg whites with the salt first on low speed until foamy, then increase the speed to high and pour in the granulated sugar, whipping until the whites hold a medium peak.
4. Sift half of the flour into the yolk mixture and fold in using a whisk, then fold in half of the whipped egg whites. Repeat with the remaining flour, and then change to a spatula to fold in the last of the whites until evenly incorporated. Spread the batter into the prepared pan, taking the time to ensure the batter is level.
5. Bake the cake for about 12 minutes, until the cake springs back when gently pressed in the centre. Let the cake cool for about 2 minutes on a cooling rack, then loosen the sides with a spatula. Sift a layer of icing sugar over the surface of the cake and cover with a clean tea towel. Place a second cake pan over the towel and quickly invert the cake, removing the pan it was baked in. Peel off the parchment paper and dust this surface with icing sugar. Roll the cake up from the 10-inch side with the towel and let it cool completely (cooling it rolled sets its “memory” so the cake won’t crack once filled).
6. Stir the raspberry jam to soften. Unroll the cake and spread an even layer of jam over the cake. Roll the cake back up again, dust the top with icing sugar. Cover and store at room temperature until ready to serve.
7. The cake can be prepared up to a day in advance and stored, wrapped and unrefrigerated.

RECIPE: Almond Lychee Jelly Drink
Growing up, we had this drink during celebrations. It's a fragrant, sweet drink that is basically a Chinese inspired gulaman. It uses a few ingredients and very easy to make.
1 can lychee (565 g)
1 packet white unflavored gulaman powder (25 g)
2 cups sugar
2 tbsp sugar
1 tbsp fresh milk or evaporated milk
1. Make the gulaman first because it needs to cool and set. Drain lychee and reserve the syrup. Over medium heat, put 1.2 liters of water in a pot and then add 1 cup of lychee syrup. Then slowly drizzle gulaman powder while whisking or stirring. Continue to whisk as the liquid heats up. Then add 2 tbsp of sugar and 1 tbsp milk while still whisking. The milk will only provide color or opacity and not flavor. Add 1 tsp of almond extract. Continue stirring until it boils. When it boils, turn of heat and transfer into a container and allow to cool completely. Once cool, put in the fridge to set.
2. Make the sugar syrup. In a pot or sauce pan, pour 4 cups of water and dissolve 2 cups of sugar over medium heat. Stir until sugar dissolves. When it boils, turn of heat and add 1 tsp almond extract. Allow to cool.
3. Tear lychee into smaller pieces. When the gulaman is set, cut into cubes.
4. Assembly times. In a pitcher, pour 2 cups of sugar syrup, 1 cup of lychee syrup, half of the lychee, 3 cups of gulaman, and 1 liter of water. Add 1/2 tsp of almond extract and stir. Adjust according to preferred sweetness. Serve with ice and enjoy!

I am very sorry about my recent inactivity. There's been a lot happening and I've been trying hard to keep up. And to top it off, I did have to attempt this recipe 3 times. I had problem with the lighting in some of the footages and then at other times, the recipe failed when the lighting was good. I'm very sorry for being late and thankful for those of you who stuck around. Anyway, here is my newest video and I really hope you guys will enjoy it. As christmas approaches, work will be very busy for me but I'll try my best to keep up with my content here.
This is another dessert recipe. It's the almond tofu or also called almond pudding sometimes. It's very simple to make and very delicious and refreshing. This recipe can be vegan if you substitute the gelatine powder with some agar agar.

Here's how to make coffee jelly 2 ways. It's an easy recipe if you want to have coffee jelly for bubble (milk) tea drink add-ins or as a plain dessert. Coffee jelly in drinks are very popular in Asia and can be used instead of BOBA.
