Sour Cream Coffee Cake

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
1 1/2 cups granulated sugar
3 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/4 cups sour cream
2 1/2 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
For the streusel:
1/4 cup light brown sugar, packed
1/2 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into pieces
3/4 cup chopped walnuts, optional
For the glaze:
1/2 cup confectioners' sugar
2 tablespoons real maple syrup
Directions
Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

BETH’S SOUR CHERRY CRUMB CAKE
Makes 1 loaf

INGREDIENTS:
¾ cup (180g) of butter, softened
1 cup (200 g) sugar
2 eggs, room temperature
2 tsp vanilla extract (10 ml)
2 1/2 cups (300g) flour
2 tsp (10 ml) baking powder
½ tsp (2.5 ml) baking soda
1 tsp (5 ml) salt
1 1/2 cup (350ml) sour cream, room temperature
1 cup (150g) frozen, pitted cherries
CRUMB TOPPING:
½ cup (60 g) of flour
1/2 tsp (2.5ml) baking powder
2 tbsp (25 g) sugar
2 tbsp (23 g) brown sugar
¼ tsp (1.5g) cinnamon
5 tbsp (75ml) melted butter
1 tsp (5 ml) vanilla extract
1/4 cup (40 g) of sliced almonds
GARNISH:
Powdered Sugar
METHOD:
Preheat oven to 350F/176C. Spay a 9 (23cm) x5 (13cm) loaf pan with baking spray.
Prepare the crumble. Whisk together the dry ingredients, then add the butter and the vanilla and stir until a wet crumble appears. Then stir in the almonds. Set aside.
Cream butter and sugar until very fluffy. Add eggs one at a time until combined. Add vanilla extract.
In a separate bowl whisk together flour, baking powder, baking soda, and salt.
Add the dry ingredients to the butter mixture in thirds, alternately with the sour cream. The batter will be thick and sticky!
Transfer half of the batter into the pan. For this, I like to use an ice cream scoop. Make 5-6 batter balls then smooth out with a spatula.
Then add a single layer of cherries on top, keeping them from touching the sides of the pan or they will stick.
Cover the cherries with the remaining batter (5-6 more batter balls) Smooth out and then top with all the crumble.
Bake on the lower third rack of your oven, this will prevent the crumble from getting too browned.
Bake 1 hour and 10 mins, check for doneness with a skewer it should come out clean when inserted into the center of the cake. Bake 5-10 mins more if needed.
Allow to cool for 30 mins. Then release the cake from the pan, dust with powdered sugar slice, and serve!
NOTE: If the top starts to become too brown at the 1-hour mark, cover loosely with a sheet of foil.

Old fashion bundt cake are awesome, however I want to try something NEW~
This bundt cake is FLUFFFFFFY, buttery and soft. The center is chocolaty and a bit of warmth from the cinnamon, this cake goes great with morning coffee and even a tea time snake. It just taste absolutely amazing!

Recipe:
Batter
200 g or 1 3/4 cup all purpose flour
1 1/2 tsp baking powder
1/4 and 1/8 tsp baking soda
1.4 tsp salt
1 stick of butter (113g or 8 tbsp)
200g or 1 cup fine granulated sugar
1 large egg (room temp)
1 large egg white (room temo)
2 tbsp vanilla extract
242g or 1 cup sour cream
You'll need a standard size bundt cake mold
It will yield 6 cups of batter
Chocolate Streusel Filling
40g or 3 tbsp light brown sugar
12g or 2 tbsp and 1 1/2 cocoa powder

Cinnamon Streusel Coffee Cake
This is my favorite cake and my most popular cake!
Ingredients:
STREUSEL TOPPING AND CENTER
1 3/4 cups flour
1 cup packed light brown sugar
1 1/4 teaspoons cinnamon
Pinch of salt
1 1/2 sticks cold unsalted butter, cut into small pieces
3/4 cup coarsely chopped pecans
3/4 cup coarsely chopped almonds
CAKE:
1 stick unsalted butter, room temperature
2 cups flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
Pinch of salt
1 cup sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 cup sour cream
FOR GLAZE:
1 cup powdered sugar
2 tablespoons whole milk
For the streusel topping, mix nuts, flour, sugar, cinnamon, and salt together. Then add in your cold sliced butter. Pulse mixtures using a food processor or work the butter into the dry ingredients using two butter knives. Butter knives is recommended to get the perfect streusel. Chill streusel while making cake batter.
For cake batter, start off by creaming room temperature butter in a mixer for about two minutes, then add in white sugar and mix until fluffy(about 2 minutes).
Add 2 eggs; one egg at a time beating after each one.
Add in vanilla
Last, add in sour cream and flour alternating sour cream and flour.
Grease tube pan
Add half the cake batter into pan and spread evenly, then add half streusel topping.
Add rest of cake batter covering streusel. Add the rest of streusel on top.
Bake cake for 50-55 minutes on 350F until golden brown or toothpick comes out clean.
To make glaze, mix milk and powdered sugar together until smooth.
When cake is warm and cooled drizzle glaze over cake

Ingredients
Streusel
½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
Directions
Streusel
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
Cake
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

How to Make a Crumb Cake for Breakfast || Mini Bundt Pans
These mini bundt crumb cakes are absolutely scrumptious! I would highly recommend trying this recipe out, you WON’T be disappointed. These would be delicious as a dessert or they would go well with breakfast (similar to a coffee cake), along with scrambled eggs and bacon.
This recipe made 6 mini bundt cakes.
For the Cake
1/2 cup (1 stick) butter, softened
1 cup granulated sugar
2 large Eggs, at room temperature
1 teaspoons Pure vanilla extract
1 1/2 cups All-purpose flour
1/4 teaspoon Baking powder
1/4 teaspoon Baking soda
1/2 teaspoon salt
1/2 cup Sour cream, at room temperature
For the Crumble Topping
1/8 cup Light Brown Sugar
1/4 cup All-purpose flour
1/2 tablespoon Ground cinnamon
1/8 teaspoon Salt
2 tablespoons Unsalted butter, cold and in cubes
1/4 cup Almonds, sliced
For the Glaze
1 cup Confectioners Sugar
1-2 tablespoons Milk
Instructions
Step 1
Preheat oven to 350°F. Heavily grease your mini bundt pans.
Step 2
Prepare the crumble topping by mixing all the dry ingredients. Then add the cold butter and pinch with your fingers until you form a crumble. Add the almonds. Set aside.
Step 3
In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar at medium speed for about 3 minutes, until light and fluffy. With the mixer at low speed, add eggs, one at a time and vanilla.
Step 4
In a separate bowl, combine all the dry ingredients and mix well. With the mixture at low speed, add flour mixture to butter mixture until just combined. Add sour cream and mix until all ingredients are combined. Do not over beat.
Step 5
After you’ve heavily oiled your pans.
Start by adding some of the crumb topping to each mini bundt cake pan, then add the batter, filling each pan up to about 3/4 full. Finish by adding some more of the crumb topping to the top of each one.
Bake for 15 minutes, until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the pan and then carefully remove from pan and transfer to a baking rack allowing to cool completely.
Step 6
In a small bowl, stir together powdered sugar and milk. Adjust the amount of milk until the glaze has a drizzling consistency. Drizzle over cakes and serve.

Ingredients for Coffee Almond Cake:

- 8 oz castor sugar
- 8 oz plain flour
- 4 eggs
- 4 tbsp milk
- 2 tsp baking powder
- 2 tsp vanilla essence
- 2 tsp instant
coffee powder
- pinch of salt
- slivered almonds
Ingredients for coffee glaze icing:
- 1/2 cup powdered/icing sugar
- 2 tsp instant coffee powder
- 2 tbsp milk
- 2 tsp butter at room temp
- pinch of salt
Raspberry Cream Cheese Layered Coffee Cake
This rich coffee cake is layered with cream cheese and raspberries and swirled with a ribbon of cinnamon sugar. The final touch? A buttery brown sugar streusel!
Coffee cake will keep for 3 days stored in an airtight container stored at room temperature.

Part 2 - American Sour Cream Coffee Cake
American Sour Cream Coffee Cake - Lisa (The Yummy Yank) makes her all-time favourite cake.
It's out of the oven now - and Lisa's making the glaze - and glazing.
Glaze ingredients:
250 grams icing sugar
Add liquid of choice to get to desired consistency. Liquid can be a liqueur, milk, orange juice, water etc

Lisa's Favourite Sour (soured) Cream Coffee Cake:
This is an American classic. This cake is not coffee flavoured, it is called coffee cake, as it is to be had with a cup of coffee. This recipe is filled with cinnamon and chopped pecans, but you can change the nuts and spices to your taste. Just be sure to keep to the same quantities and chop the nuts finely.
Serves 10-12
250 grams unsalted butter, softened,
550 grams granulated sugar.
2 free range large eggs
250 grams plain flour
300ml soured cream
1 Tablespoon pure vanilla extract
1 Tablespoon baking powder
Pinch of salt
220 grams nuts (such as pecans, walnuts, almonds, hazelnuts) finely chopped
1 Tablespoon ground cinnamon
Preheat the oven to 350 degree F, 180 degrees C, Gas Mark 4
Grease and flour 10 bundt pan.
Beat the butter and 400 grams of the sugar in bowl of electric mixer until light and fluffy.
Add the eggs one at a time, beating well after each addition. It will appear curdled. That's ok. Next add the sour cream and vanilla.
Sift together the flour, baking powder and salt.
Fold the dry ingredients into the creamed mixture and beat until just blended. Do not over beat.
In a separate bowl, mix the remaining 150 grams of the sugar with the nuts and cinnamon.
Pour about half of the cake batter into the well greased pan and spread evenly. Sprinkle half of the nut mixture evenly over the batter, then cover with the remaining batter, spread it evenly and top with remaining nut mixture. Press the nut mixture down gently, so that they stick.
Bake for 1 hour or until a skewer inserted into the centre comes out clean. Leave to cool in pan for about 10 minutes before turning out on to a wire rack to cool completely. Serve warm with a cup of coffee.
***If top is getting too brown, cover with foil and continue baking until done. This is a very moist cake, so it is hard to over bake.
You can also make an optional glaze for this cake.
125 grams icing sugar
2 Tablespoons milk or water.
Mix together and add liquid slowly until you reach desired consistency.
Drizzle over top of cake if desired.
German Poppy Seed Cake Recipe - Mohnkuchen
This German poppy seeds cake (Mohnkuchen) is a very delicate cake with crisp bottom, rich and gentle filling and golden, crisp crumble on top. Special cake for any occasion. There are many different variations for this poppy seed cake with different kind of fillings, streusel and additions. This version is easy to make, with basic ingredients and very delicious.

Ingredients:
For the dough:
2 cups (250g) Flour
1/2 cup (115g) Butter
1/2 cup (100g) Sugar
1/4 teaspoon Salt
For the filling:
750ml Milk
1 cup (250g) Ricotta cheese
7 tablespoons (100g) Butter
3/4 cup (150g) Sugar
1 cup + 1 Tbsp (150g) Poppy seeds
1 cup (140g) Semolina
1 teaspoon Vanilla extract
1 Egg
1/4 teaspoon Salt
Directions:
1. Preheat oven to 350F (175C).
2. Make the dough: in a food processor place flour, sugar and salt. Pulse until combined. add butter and process until crumbs are formed. Press 2/3 of the mixture into bottom of 9-inch (23cm) springform pan. Refrigerate while making the filling.
3. Make the filling: place milk, butter and sugar to a saucepan. Heat until butter is melted and sugar dissolves, bring to a boil.
4. When the mixture begins to boil, gradually add semolina, stirring constantly. Add poppy seeds. Keep stirring until the mixture thickens. set aside to cool.
5. In a large bowl beat ricotta cheese, vanilla extract and egg until creamy and smooth. Add chilled poppy seed mixture to the cheese mixture and stir until combined and smooth.
6. Pour the filling over the chilled crust, then spread the remaining dough on top.
7. Bake for 50-60 minutes, until golden. Remove from oven, let cool completely in the pan, then refrigerate for at least 1 hour.
Notes:
• Instead of ricotta cheese you can use cottage cheese/cream cheese or any other soft cheese.
• To the filling you can add raisins and walnuts.
