1/16 ts : Mace
1 c : Milk, Scalded
1/2 : Yeast Cake
1 : Egg
1/4 c : Shortening
3 1/2 c : Flour; Sifted
1/4 c : Sugar
1/16 ts : Cardamom
1/4 ts : Salt

Almond Buttercake. A must have cake recipe in your repertoire. This cake recipe uses the creaming method and easy recipe to make. With any creaming method recipe, the key is mixing the butter and sugar until light and fluffy. Always take the extra step to scrape the side of the mixing bowl. Enjoy a slice of almond buttercake with a dusting of icing sugar and spoonful of whipped cream. Your next favourite cake recipe is waiting for you to try.
Ingredients:
¾ cup (170gm) Unsalted butter(cut the butter into small pieces)
1 ¾ (380gm) caster sugar
3 eggs (room temperature)
1½ tsp vanilla extract
2 ½ (300gm) cake flour or low protein flour
½ tsp salt
2 tsp baking powder
1 cup(240gm) fresh milk (let the milk come to room temperature)
1 cup(50gm) sliced almond( you can use slivered almond also)
2 tbsp icing sugar
Instructions:
1.Preheat oven at 356F/180c, line the baking tray with baking paper
2.Weight all the ingredient individually
3.Weigh cake flour, baking powder, salt and sift them. Keep aside
4.Add semi soft butter to mixer and mix for 2 minutes at low speed
5.Add the caster sugar and mix for 10 minutes at medium speed(remember to scrape the side of mixing bowl)
6.Add in the eggs, one by one (scrape the side of mixing bowl in between adding the eggs)
7.Add in half of sifted dry ingredients at low speed.
8.Genlty pour half of fresh milk(scrape the side of mixing bowl)
9.Add in the balance dry ingredients and milk
10. Add in vanilla extract and sliced almond
11.Pour the batter into baking tray, tap a few times and sprinkle a handful of sliced almond on top
12.Bake at 356F/180c for 30 minutes
13.let the cake cool on cooling tray for 30 minutes and dust with icing sugar before serving

Easy Soft Coffee Pound Cake – Since I did the cotton coffee cake last couple weeks, someone had requested a coffee pound cake instead. It’s pretty similar to my ultimate butter cake I did 2 years ago, just very slight difference from that version. If you’re not new at my channel, you’re probably very familiar with my pound/butter cake recipe. Hope you’re inspired to make this. Enjoy!

Ingredients:
I am using 7x7x3-inch
2 ½ tsp instant espresso
45g [3 tbsp] whole milk, hot
226g [1 cup] unsalted butter, softened
180g [3/4 cup + 2 tbsp] fine sugar
4 large eggs
210g [1¾ cup] cake flour
½ tsp baking powder
¼ tsp salt
60g [1/2 cup] walnuts, chopped
Instructions:
1. Preheat oven at 160°C/320°F.
2. Cut the butter into slices or chunks for easy softening. Add into a large bowl and set aside.
3. Dissolve the instant espresso coffee in hot milk. Mix until well dissolved, set aside.
4. Sift the flour, baking powder and salt. Set aside.
5. In a large bowl of softened butter, add sugar. Use a spatula to bind the 2 ingredients together so that the sugar will not fly everywhere. With an electric mixer, mix until creamy, fluffy and pale. This will take about 3-4 minutes. Occasionally scrape the bowl to ensure even mixing. Continue mixing until creamy, fluffy and pale.
6. Add the eggs, one at a time. Mix on low speed until well combined.
7. Fold in the sifted dry ingredients in a few batches. Don’t add all at one go, it will cause lumps and dense cake later.
8. Towards the end, add in the coffee mixture in 2 batches, alternate with the dry ingredients. Continue folding until combined. Do not over mix.
9. Transfer the batter into a 7x7x3-inch pan, greased and lined with parchment paper. Use the spatula to spread the surface evenly.
10. Add the chopped walnuts onto the surface.
11. Bake in preheated oven at 160°C/320°F for 50 min or until the inserted skewer comes out clean.
12. Let the cake cool completely before cutting.

This skillet cake is a great after dinner baking project! The cake comes together quickly, and bakes up easy in a cast iron pan. It's dense, moist, and rich from the addition of creme fraiche… and the almond extract doesn't hurt either!
Serves 8 to 10
Ingredients:
1/2 cup (125 mL) melted butter
1/4 cup (60 mL) creme fraiche
1½ cups (375 mL) sugar, plus 1½ tsp (7 mL) for sprinkling
2 eggs
1½ cups (375 mL) all-purpose flour
1 pinch salt
1 tsp (5 mL) almond extract
1/3 cup (75 mL) slivered almonds
Method:
Preheat the oven to 350° F (180º C).
Butter a 10-inch cast-iron skillet.
Cream together the butter, creme fraiche, and 1½ cups of the sugar.
Add the eggs and beat until well-incorporated.
Add the almond extract, salt, and flour. Mix well, then pour into the prepared skillet.
Sprinkle the cake with almonds and remaining sugar.
Bake for 30 to 40 minutes, until golden brown.
Cool before serving.

- almond paste - 4 oz (114g)
- unsalted butter - 8 oz (230g)
- white sugar - 3/4 C (150g)
- brown sugar - 1/4 C (55g)
- egg - 1
- vanilla - 1 tsp
- almond extract - 1/2 tsp
- salt - a pinch
- AP flour - 1 3/4 C (210g)
Topping
-- egg yolk and water (for brushing top)
-- egg white
-- sugar - 2 T (25g)
-- sliced almonds - 1 C (85g)
Bake 350° 40 - 45 minutes until the top is golden brown. Cake will be soft but will solidify somewhat as it cools.

Easy Almond Coffee Cake, part 1
This is a very almondy flavoured coffee cake
REcipe is:
1/2 cup butter or margarine
3/4 cup sugar
2 eggs
1 cup milk
2 cups flour
2 tsps. baking powder
2 tsps. almond extract
Almond Topping:
1 cup sugar
1/2 cup butter or margarine
1 and 1/2 tsps. almond extract
1 tsp. cinnamon
1 cup slivered almonds, optional
Cream butter and sugar ilna large bowl. Add eggs, milk, flour, baking powder, and almond extract. blend well. Pour into 8 inch x 8 inch pan, greased. Spread topping evenly over the butter and bake at 350 o F . oven about 30 minutes. Let cool. Enjoy! This cake will do best if you press the topping slightly into the top of batter before you bake it, so it doesn't spill over the edge of pan.

1) For additional flavor and variety, add frozen peaches, blueberries or apples, this will make it even more delicious. Or you could toss in some fresh fruit just before putting in the pan.
2) You can substitute the plant based yogurt with apple sauce as well.
3) Use the same batter to transform this coffee cake into muffins.
4) If you prefer it extra sweet, make a glaze: combine 1/4 cup coconut condensed milk with 2 tablespoons of plant based milk. Mix until smooth and drizzle over cooled cake.

ALMOND BUTTER CAKE
Simple preparations of almond butter cake

Rich Almond butter cake
200grm ground Almond
50grm self raising flour
250grm pure butter (i'm using Golden Chan in this recipes)
200grm castor sugar
1tsp vanilla essence
Note: I'm not using Almond flavor/ essence because I already use 200grm ground Almond)
5 eggs (grade A)
100ml milk
method
- Beat sugar and butter until fluffy and creamy
- Add in egg one at a time (beat until fluffy)
- Add in vanilla essence, mix well
- Add in flour and beat well, add in ground Almond (three batches) alternately with the milk
Leave for 15minutes to allow the Almond to soak
Pour into 8inch baking pan (greased with butter, line with parchment paper)
Bake for 50min or until your stick comes out clean

HOW TO ALMOND BUTTER RECIPE
3 cups almonds
1/4 tsp kosher sea salt (optional)
Pre heat oven to 250.
Place almonds on a rimmed baking sheet and warm in the oven for 12-15 minutes. If you want a roasted flavor, leave the almonds in the oven a little longer until they are warm and golden brown.
*note: you can skip this step but I find the warm almonds turn into almond butter faster then room temperature almonds, so I prefer to start with them warm.
Place warmed almonds into your food processor and pulse a few times until the almonds have begun to break down. Then let the processor run, stopping whenever you need to scrape the almonds off the sides of the processor.
Once the old release from the almonds it will become very smooth and creamy. This is what you are looking for. Be patient, it can take anywhere between 15-25 minutes.
