You and I are going to drink a lot of coffee together. Like, borderline dangerous amounts of coffee.
So, first things first. Pour yourself a mug and I’ll introduce myself real quick.
My name’s Jordan — but everyone calls me “J” — and I’m a 27th degree black belt in chugging coffee.
I’m also strength & nutrition coach, I hold several powerlifting world records, and I’ve been fortunate enough to have my writing featured in a variety of outlets like CNN, the Huffington Post, and Schwarzenegger.com.
But listen.
This channel isn’t for fame, publicity, cash, props, fist bumps, likes, pings, pows or whatever else there is.
It’s a place where you and I can chat.
I’ll never sugar coat, lie, or beat around the bush. I’ll tell you everything exactly as I see it. Some stuff you might like. Others you might not.
And that’s totally cool.
Either way, my goal here is to create a discussion. A place where you and I can get together, exchange ideas, and motivate each other to be better every day.
Like I said, we’re gonna drink a lot of coffee together — borderline dangerous amounts — but I’m excited. Because there aren’t too many online communities in which the sole purpose is to inspire and motivate one another.
And that’s exactly what you and I are going to do here.
To your success,

Apple Crisp Recipe - no butter - low fat dessert
Here’s a butter-free low fat apple crisp recipe for anyone looking to reduce fat but still enjoy dessert. I eliminate the butter in this dessert recipe and substitute healthy safflower oil instead. I take it easy on the refined sugar by using sweeter apples. You can peel the apples if you prefer, but I like to leave the apple skins on for added texture and nutrition. How to Make an Easy Apple Crisp
Quarter apples and cut out the core, then slice apples into ¼” thickness.
Heat 1 Tbsp of oil in a pot on medium high heat and add apples. Reduce heat to medium and cook apples about 5 minutes until they just begin to soften.
Turn off the heat and add the ginger, lemon juice, and lemon zest. Toss with the apples.
Combine the sugar, cinnamon, and cornstarch and then toss with the apple/ginger mixture.
Lightly oil the bottom and sides of an 8” X 8” baking dish and spread the apple mixture evenly.
In a bowl, combine all of the topping ingredients and mix together well.
Distribute the mix evenly over the apple base.
Bake uncovered in an oven preheated to 350˚F for about 50 minutes to 1 hour.
Once the topping is browned and the edges begin to bubble, the crisp is done.
Remove from the oven and let sit about 30 minutes before serving.

Low Carb Apple Crisp: Grain Free, No Added Sugars, Gluten Free (9 g net carb/serving)
This low carb apple crisp recipe is grain free, added sugar free, gluten free. It's full of the flavors of fall... spiced apples, a crispy spiced topping. Please note that apples do naturally contain sugars and therefore carbohydrates which is why I call this a low carb recipe. It is MUCH lower in carbs than a traditional apple crisp recipe as I've used no added sugars.
Get the full recipe, low carb baking tips and nutrition facts on my website at:
The Ingredients for Low Carb Apple Crisp
Keto baking can be VERY finicky. I can't tell you how many times I get a text or call from a friend who's tried a recipe but swapped out ingredients for other ingredients. Unfortunately, baking the keto way means sticking to the script. I test these recipes over and over again using all kinds of different ingredients. (And as you know, these ingredients aren't cheap!)
Sweeteners
This recipe will work with a number of sweeteners. Here are my favorites:
Bocha Sweet
Monk Fruit Sweetener
Alternative Flours
I use two alternative flours in this recipe. Coconut flour and almond flour are NOT interchangeable. Coconut flour is absorbent while almond flour is not. They bake very differently but both are a staple in a low carb kitchen. You can choose to omit the coconut flour from the filling if you are using a sturdy baking apple like a granny smith. Here are my favorite alternative flour brands.
Coconut flour
Almond flour

Healthy Apple Crisp - No Fat or Butter Added!
Most apple crisp is made with lots of butter. Yes, most might be healthier than a lot of desserts but I was on a mission to make one that didn't include oil or butter. I am very happy with how this healthy apple crisp turned out! Pretty sure this recipe would be totally acceptable for Dr. McDougall's Diet, like the Starch Solution.

Low Sugar Apple Crisp - Healthy Apple Crumble Option
This is a bit lighter version of apple crisp (crumble). It has a healthy amount of apples and reduced sugar, I do not add sugar to apples. The way I sauté apples in their own juices makes the apples very sweet.
This apple crumble can be served with your favorite ice cream, whipped cream (recipe - ) or plain greek style yogurt (full fat a must).
Ingredients
- 2 large Golden Delicious apples (11 oz/312 g each)
- 1 tsp cinnamon
Crumble:
- 1/2 cup plus 1 tbs of old fashioned oats (54 g)
- 1/2 cup of All purpose flour (2 oz/56 g)
- 3 tbs butter (42 g)
- 2 tbs (1 oz/28 g) brown sugar
- 1/4 tsp salt
Bake at 375F for 20-25 minutes

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

Today we are making a vegan apple crisp! One of my favourite fall desserts. This is perfect to make for holiday dinners, or if you recently went apple picking and have a bunch left over. I love apple crisp in the fall- it reminds me of holiday dinners and family gatherings and is so warming and comforting. Find the recipe below!
Check out my cookbook:
RECIPE:

1/3 cup vegan butter or coconut oil

Stovetop Quick Apple Crisp (less than 500 calories!)
This is my non traditional version of apple crisp because I like to make things quick and simple - and just as delicious! Your perfect single serving will be ready in less than 10 minutes and will contain less than 500 calories. (Without the ice cream, it's only 220 calories!) If you have a few people around, just multiply the recipe and cook in a larger pan. The hardest part of this recipe... is NOT making seconds. :) If you substitute coconut oil for the butter, it's actually dairy free! Enjoy and when you make it, take pictures and send them to me at chefstef6@gmail.com!! When you make the topping of quick oats, brown sugar and cinnamon, be careful not to put the flame too high or you will burn it. Be safe and keep it on low. If you want to add some crushed walnuts, go for it! Nom nom nom.

How to Make Apple Crisp
***Please note that this apple crisp recipe actually calls for 1 CUP and NOT 1/4 cup of oats! I don't know where my mind was in that moment but please use 1 cup of oats (though if you don't like oats you can get away with 1/4 cup) ****
A great easy apple crisp recipe that's bound to be a favorite for seasons to come!

Full printable recipe (with metric/weight measurements):
Ingredients
2 lbs apples cored, peeled and sliced no thicker than 1/4” (905g)
1/4 cup light brown sugar 50g
1 Tablespoon lemon juice
1 Tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
Crisp
9 Tablespoons unsalted butter melted
3/4 teaspoon vanilla extract
3/4 cup all-purpose flour 95g
1 cup old fashioned oats 100g
1/2 cup light brown sugar tightly packed 100g
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
Instructions
1. 00:11 Preheat oven to 375F (190C) and lightly grease a 9x9 or 11x7 glass baking dish with butter. Set aside.
Combine sliced apples, brown sugar, lemon juice, flour, cinnamon, and salt in a large bowl. Give everything a good stir until all ingredients are combined and set aside while you prepare your crisp topping.
Crisp
1. 01:07 Prepare your topping by whisking together butter and vanilla extract. Set aside (you don't want the butter to be too hot when you add your sugar, so let it cool while you prepare your dry ingredients)
2. 01:29 In a separate bowl, stir together flour, oats, sugar, baking soda, salt, and cinnamon.
3. 02:05 Pour butter into flour mixture and use a fork to stir until mixture is combined and clumpy (don't over-stir, you want it to be crumbly, not paste-like). Set aside.
Assembly
1. 02:25 Give your apple mixture another good stir and pour evenly into your prepared pan.
2. 02:56 Use your hands to drop your crumble mixture evenly overtop your apple filling.
3. 03:16 Transfer to 375F (190C) oven and bake for 50 minutes or until topping is lightly golden brown and apples are tender when pierced with a fork. If topping is starting to become too dark and apples are still crisp, cover apple crisp with foil while continuing to bake.
Serve warm (preferably topped with ice cream!)
CAN I MAKE APPLE CRISP IN ADVANCE?
Yes, you can bake your apple crisp and store it as indicated above.
Alternatively you can prepare the apple portion and place in your prepared pan as instructed. Rather than baking, cover and refrigerate. Prepare the crumble topping also as instructed (without baking) and store that in a separate airtight container and refrigerate as well. When you are ready to bake, uncover your apples and sprinkle with the prepared topping (it might be a little firm, just break it up with a fork) and bake according to recipe instructions.
HOW TO FREEZE APPLE CRISP
Prepare the apple crisp as instructed and assemble in a baking pan (I like to use disposable foil pans when freezing my apple crisp). Cover well and transfer to the refrigerator. Freeze up to 3 months. When ready to bake, transfer your apple crisp to the refrigerator and thaw for several hours or overnight and then bake in 350F oven as indicated in recipe instructions.
If you want to freeze an apple crisp that’s already been baked, then first allow it to cool completely to room temperature, then cover tightly with plastic wrap and foil and freeze for up to 3 months. Thaw apple crisp in the refrigerator and then bake in 350F oven until warmed through (about 20 minutes).
